Each snack is great for a quick pick me up between meals that any lazy cook can make! The energy balls are amazing for on the go, post workout and for taking to school or work. They’re tasty and pack a nutrient punch! These are a great healthy alternative for any occasion. The baba ganoush is perfect to have as a dip with pita bread and other veggies for an easy, delicious snack. You can make this in a larger batch and store in the fridge for up to a few days after making. The decadent nutella is our slightly healthier version of the store bought jars. Depending on how long you blend this for you can have a smooth or slightly crunchy consistency - whichever you prefer! Spread this on toast or onto fruit for a satisfyingly sweet snack to curb the chocolate cravings. We hope you love each of these recipes! They’re... Simple Easy Delicious Healthy 100% plant-based and vegan Enjoy these tasty snacks any day of the week! Recipe Baba Ganoush Ingredients 2 medium eggplants Juice and zest of 1 lemon 4 tablespoons tahini ¼ tsp of zaatar pinch sea salt 1 tablespoon of extra virgin olive oil (for garnish Pinch zaatar (for garnish) Method Preheat the oven to 180 C Fan. Place the aubergines on a baking tray and roast for 30-40 minutes until very soft, set aside to cool. Cut in half and peel of the skin, add to a food processor. Add the lemon juice and zest, tahini, zaatar and salt and process until smooth. Garnish with olive oil and zaatar, serve with veggies and pita bread. Nutella Ingredients 200g hazelnuts, preferably blanched 250g chocolate, about 70% cocoa (or see above) 75g maple syrup 3 tbsp powdered coconut milk 350ml coconut cream ½ tsp vanilla extract Pinch of salt Method Preheat the oven to 180 C Fan. Place the hazelnuts on a roasting tray and roast for 10 minutes. While the hazel nuts are roasting, place the chocolate in a bain marie and heat until melted, set aside to cool slightly. Add the maple syrup, powdered coconut milk and coconut cream to a saucepan. Bring to a boil and set aside. Place the toasted hazelnuts in a food processor and process till smooth. Add the melted chocolate, coconut cream mixture, vanilla and salt. Process until completely smooth. Pour in to a jar and allow to set in the fridge for a few hours Energy Balls Ingredients 100g rolled oats, 25g pumpkin seeds 25g sesame seeds 25g desiccated coconut 50g pecans, chopped 100g medjool dates, pitted Pinch of cinnamon 50g maple syrup 150g tahini 1 teaspoons of Sea salt 1 teaspoon vanilla extract 25g chocolate, chopped Method Preheat the oven to 180C Fan. Place the oats, pumpkin seeds, sesame seeds, coconut and pecan on a baking sheet and toast for 5- 10 minutes. Set aside and allow to cool. Place the dates, cinnamon, maple syrup, salt and vanilla in a food processor and puree. Remove and add to a mixing bowl. Add the cooled toasted oats, seeds and nuts and the chopped chocolate. Mix well together using your hands or a wooden spoon. I’ve never tried using a liquid sweetener before. If you try it, maybe use 1 tbsp less plant milk and see how you get on. For example, if you give the cabbage pieces a lot of space on the sheet they will cook really fast, for only around 10 minutes. Hope i am not confusing anybody haha just keep an eye on your oven → serves 1 as a snack, 2 as a side #3 No Bake Protein Cookies 3:55 4 tbsp quick cooking oats a pinch of salt 2 ½ tbsp protein powder (choc, vanilla, caramel flavored) 1 tsp ground flax seeds 1 ½n tbsp unsweetened cocoa powder* 1 medium banana ~ 90g = 3.17oz 3 tbsp peanut butter 3 - 4 tbsp chocolate chips optional: extra sprinkles or chopped nuts for the finish *if u want a more intense chocolate flavor, add another ½ tbsp cocoa If you want the dough to be sweeter, add 1-2 tsp powdered sugar or coconut sugar. However the melted chocolate gives it a nice level of sweetness, so that may not be necessary. → yields 5 - 6 cookies #4 Spicy Sesame Rice Bites 5:20 1 handful frozen korean rice cakes (or however many u want to eat) a drizzle sriracha (or whatever hot sauce you prefer) for the tahini sauce: 2 tbsp white tahini 1 tbsp soy sauce 1 ½ tsp maple syrup 1 tbsp white wine vinegar if needed: 1-2 tsp warm water optional: roasted sesame seeds or bagel seasoning for the top → serves 1 #5 Molasses Yogurt Bowl 6:17 4-5 heaping tbsp unsweetened soy yogurt 1 tbsp peanut butter (crunchy) 1 banana 1 tsp molasses #6 Leftover Crunch Wrap 6:54 Inspired by the Enchilada Crunch Wrap Recipe - from my Cookbook ALL DAY VEGAN ! a bit of oil for the pan 3-5 tortilla chips, store bought or homemade 1 warmed tortilla wrap (medium to large size) 1 tbsp dip of choice (vegan cream cheese / hummus / tahini spread) 3-4 pieces flavored tofu (fried, smoked, i did store bought deep fried tofu from my local asian food store) small handful of greens 1 tbsp extra add-ins: vegan kimchi, grated carrot, cherry tomatoes, pickled vegetables, vegan cheese … → serves 1 #7 Cold Silken Tofu 8:40 1 tbsp olive oil 1 tsp sesame oil 1 spring onion 1 tbsp white wine vinegar a dash of red pepper flakes a dash of pepper ¼ tsp sesame seeds 1 tbsp soy sauce 1 tsp agave syrup 1 400g block silken tofu (14oz) → Alternatively use smoked tofu (cold or fried), tempeh (cooked) or boiled potato chunks as a base for this dressing ! → serves 1, 2 as a side Music 🎵 Intro: 🤍 fluhalp: 🤍 trees and lucy: 🤍 soho: 🤍 Emi Choi - On Your Mind - 🤍 Floyd Fuji - INSIDE - 🤍 (outro) Zopeh Belafonte - your the one i would keep - 🤍

Some of these vegan snack recipes are super simple and require almost no prep while a couple of them are more fancy and require a little bit of time and effort. Add on the other toppings and enjoy! Chocolate Banana Protein Bites 1 ½ cup oats 1/2 cup pumpkin seeds ½ cup pecans 1/2 cup cacao powder 1/2 cup Vegan Complement protein powder (optional) 3 tbsp unsweetened almond milk 5 medjool dates 2 bananas 1 tsp vanilla 1/4 tsp almond extract (optional) Ants on a Log Celery sticks Nut or seed butter Raisins Chop the celery into 2-3 inch pieces. Top with nut or seed butter and raisins. Stuffed Dates Medjool dates Nut or seed butter Unsweetened cacao chips Take the pit out of the dates and split them in half. Stuff the dates with nut or seed butter. Melt the unsweet cacao chips and drizzle over the top. Enjoy and store in the refrigerator. Place all ingredients to a food processor and blend until a ball of “dough” forms. Roll into balls. Sprinkle with cacao powder. Store in an airtight container in the refrigerator for 1-2 weeks or freeze for up to 3 months. Enjoy! Hummus 2 can chickpeas (drained and rinsed) 2 tbsp tahini Juice from 1 lemon 1-2 tsp cumin 1 clove garlic 1/2 tsp salt Iced Aquafaba or water as needed Blend all ingredients in a food processor. I’m 🤍mina_rome on Instagram Check out my 58 Recipe EBOOK: 🤍 Shop my Meal Planner: 🤍 More Healthy Dessert Recipes here: Part 1: 🤍 Part 2: 🤍 Part 3: 🤍 Instagram: 🤍mina_rome 🤍 Shop my Meal Planner: 🤍 Email: minarome.yt🤍gmail.com Website: 🤍mina-rome.com INGREDIENTS & NOTES: #1 Tahini Chocolate Frosting/Fudge Bites 3 tbsp white tahini 2 ¼ tbsp unsweetened cocoa, more if needed 2 tbsp liquid sweetener (date, rice, maple syrup) 1 pinch of salt a few drops vanilla aroma (or ½ tsp vanilla extract) 1-2 tbsp cocoa powder or shredded coconut to roll your bites in, if desired → freeze for 10 minutes for a thick chocolate frosting / dip → freeze for at least 20 min for chocolate balls (around 30 min is best I’d say, but that depends on your freezer! 1 hour max) → store in the fridge! → yields 5 balls, serves 1 - 2 #2 Stove Top Cherry Crisp for the topping: 1 1/2 tbsp cashew/almond butter 1 ½ tbsp vegan butter 3 tbsp coconut sugar 1 teaspoon vanilla ¼ tsp salt a handful of almonds, chopped ⅔ small cut oats (60g) 1 tbsp ground flax seeds for the filling: 2 cups frozen cherries (300g) 1 tsp cornstarch 2 tbsp water → serves 3 → vegan yogurt, ice cream, cream ... for serving #3 Pumpkin Cheesecake Dip 2 tbsp vegan cream cheese 1 tbsp pumpkin purée (or to taste!) a dash or two of cinnamon or pumpkin pie seasoning 2 tsp maple syrup 2 rice cakes, some fruit or vegan cookies to serve this with → serves 1-2 #4 Coffee Caramel Sauce 1 cup soy/oat/coconut cream or full fat coconut milk (250ml) a generous pinch of salt 1 tsp vanilla 50g + 1 tbsp coconut sugar (¼ cup + 1 ½ tbsp) optional: 3 tbsp strong coffee or 1-2 tsp instant coffee powder → bring to a boil, then let simmer together for 10-15 min over medium heat → serve with some fruit, vegan yogurt, coconut ice cream … → serves 4 as a sauce (keeps in the fridge for 4 ish days) #5 Beetroot Lava Cakes 1 1/2 cups spelt flour (180g) ½ cup ground almonds (55g) ½ cup coconut sugar (115g) 3 tbsp unsweetened cocoa powder 1 tsp espresso/coffee powder 1 tsp baking powder ⅓ tsp salt ⅓ cup sunflower seed oil (80ml) 100g dark chocolate, cut into chunks (3.5oz) 1 beet, pre cooked (bought it pre-cooked already) 1 ½ cups non dairy milk (375ml) → also oil for greasing the pans and/or muffin liners → this is a bit more effort, but, for a cleaner look I ended up first oiling the muffin molds and then laying them out with 2 (about 12 cm long) strips of parchment paper, adding them in a cross pattern to be able to lift them out easily after baking → serve them RIGHT AWAY if you want the melty lava cake experience, otherwise the centre will be still fudgy, but perhaps not liquid anymore → yields 11-12 cakes Chocolate Melting: Either use the microwave (microwave the chocolate for 30 sec, stir the chocolate, repeat until melted) OR place the bowl inside the preheating oven for about 5 min or until about half the chocolate has been melted. Then take out the bowl carefully. Leave it on your countertop and let it sit for a few extra min, then stir until melted fully. Or use a waterbath? Leave it in the comment section! #1 Chocolate and Peanut Butter Protein Bars 1/2 cup oats (45g) 1/3 cup vegan vanilla protein powder (40g) or if you want less of a protein powder-y flavour do only ¼ cup (25g) and add like 2 tbsp more oat flour - or skip the protein powder and do ½ cup + ⅓ cup of oat flour (78g). a generous pinch of salt 1 tbsp flax seeds, ground 1/2 cup natural peanut butter (120g) 1/4 cup apple sauce (62g) 1/2 tsp vanilla 3 tbsp rice, agave, maple or date syrup 1-2 tbsp non dairy milk, if needed 100g dark vegan chocolate, melted (optional add 1 tsp of coconut oil for the bars to have a glossy look) (3.5oz) Notes: → the protein powder I use is very sweet itself because it has stevia in it, taste test the mix before shaping it into bars to see if it's sweet enough for you → dip the bars into a deep dish plate filled with the melted chocolate before letting them sit on some parchment paper → yields 8-10 bars #2 Hummus Yogurt Toast 2 pieces of toast hummus unsweetened soy yogurt (i did about 1 tbsp per toast) cucumber herby salt or other spices of choice → serves 1 #3 Tofu + Grapes tofu, raw (or smoked 👀) grapes lemme know your thoughts on this one haha #4 Sweet Potato Müsli Bars 1 large sized sweet potato or two smaller ones (~ 400g) a big handful of nuts, chopped (would recommend almonds or pecans the most) generous pinch of salt ¼ tsp cinnamon ½ tsp baking powder 1 cup oat flour (100g) 4-5 tbsp small cut oats, add more if needed 2-3 tbsp raw cane sugar or coconut sugar 2-4 tbsp melted vegan chocolate → makes enough for a small square shaped baking tin, something like 8x8 inch (20 x 20 cm), basically the bars should be about 2 cm in thickness → yields 7-10 bars #5 Peanut Butter Apple Pudding 3-4 tbsp unsweetened applesauce 2 tsp natural peanut butter a pinch of cinnamon → serves 1 #6 Tahini & Date Snack either dates dipped into tahini or 1 tbsp of tahini 1-2 tsp date syrup or maple syrup (or adjust the tahini and syrup ratio to your liking) toast, cut into little triangles → serves 1 #7 Bean Wraps 1 cup kidney beans, rinsed and drained (180g) ½ onion, chopped (or just use a small one) spices of choice - I did: ½ tsp curry powder, ½ tsp paprika, ¼ tsp salt 2 large handfuls or 2 cups of fresh spinach, chopped ½ cup bread crumbs (60g) oil for the pan also 3-4 tortillas vegan cream cheese or hummus bbq or marinara sauce more fresh spinach yields 3-4 wraps 🎵 music 🎵 intro by MOSSS: 🤍 soft eyez: 🤍 🤍 Flughand: 🤍 Jake Cromwell - Criminal - 🤍 Garrett: 🤍 trees and lucy: 🤍 outro by Clans - Alibi - 🤍 Much love, Mina this video is not sponsored

INGREDIENTS 🥳 #1 Apple Nachos 1 apple, cut into thin slices a squeeze of fresh lemon juice a handful of granola and/or whole wheat cereal a small handful of dark chocolate chips a pinch of cinnamon 1 tbsp peanut butter serves 1 #2 Sunomono - ”Noodle” Salad 1 cucumber, cut into noodles 2 tbsp rice vinegar 2 tsp rice syrup or 1 1/2 tsp sugar 2 tsp soy sauce 1/4 tsp chili flakes 1 tsp toasted sesame seeds salt to taste serves 1-2 #3 Healthy Orange Chocolate 1 orange a dust of cinnamon a dust of unsweetened cocoa powder #4 Apricots and Peanut Butter Dried Apricots Peanut Butter #5 Mug Pancake 1/3 cup of all purpose flour (40g) 1/2 tsp baking powder a pinch of salt 1 tbsp of sugar 1 1/2 tbsp unsweetened apple sauce 1/4 tsp vanilla 1/2 tsp apple cider vinegar 3 tbsp non dairy milk coconut oil for the greasing toppings of choice like maple syrup, vegan butter, berries, nut butter etc. NOTES - make sure your mug is oven proof and able to hold at least 160ml (⅔ cup) - the applesauce can be subbed for 1 flax egg (1 tbsp semi ground flax seeds + 2 tbsp water → letting that sit for ~ 10 min, and the person who tested this recipe with the flax egg added 3 1/4 tbsp non dairy milk instead of only 3 tbsp) - I baked it for 20 min 🤍180C and then for 2-3 min 🤍210C to get that nice golden brown top → check after 18-20 min if yours needs to go longer with the higher temp, ovens can vary from what the testers on instagram said, try baking it for 1:45-2:00 min at 700-800 watt #6 Crunchy Coconut Chocolate Trail Mix a handful of your favorite healthy cereal a small handful of dried fruit of choice, like cranberries or raisins ~ 1 tbsp dark chocolate chips or cocoa nibs a small handful of raw or roasted almonds a small handful of coconut chips 1 serving as a snack or 2-3 if you use it as a smoothie topping #7 Vegan Feta and Plum Toast 1 English muffin vegan feta (i recommend Bedda or Violife) plum jam i think some arugula would go nice here as well, quite a fancy weird toast #8 Apple and Fennel Punch ⅔ cup fennel tea (160ml) ⅓ cup apple juice (80ml) serves 1 # 9 Black Bean Corn Cakes ½ cup black beans (120g) ~ 2 tbsp ketchup salt, pepper to taste if needed: a splash of water to adjust the consistency 2-3 corn or rice cakes or crackers or toast ½ avocado a squeeze of lemon juice a pinch of both salt and chili flakes serves 1-2 as a snack or 1 as a small meal (sub the rice or corn cakes for bread and you’ve got yourself a little meal) 🎵 tunes 🎵 intro by MyKey: 🤍 loopschrauber: 🤍 soho: 🤍 trees and lucy: 🤍 Nowyouknow - 🤍 Raf Bernardino - 🤍 Reggie San Miguel - 🤍 hana - 🤍 flipsum - 🤍 outro by cancel culture - 🤍 Much love, Mina This video is not sponsored
