How to Make Sushi Rice Description: Learn how to make perfect Sushi Rice with this easy recipe from Yutaka! Our presenter, Akemi Yokoyama, is a Japanese cooking instructor teaching both beginner and advanced cooking courses in Japanese cuisine. Ingredients: - 1 cup Japanese Sushi Rice (=200ml in volume) - 220ml water (1.1 times the volume of the rice) - Sushi Vinegar 40ml (slightly short of ¼ of the volume of the rice) You need: - Large bowl - Spatula or wooden Spoon - Fan - Small or medium pot with lid Instructions: 1. Add a small amount of water to the rice in a pot in the sink, move the hand in a circular motion while the fingers crumble the rice. Rinse off with cold water. Repeat the process 4-5 times or until the water becomes clear. Use a strainer or colander to drain. Put the rice back into the pot. 2. Add the measured water to the rice, put the lid on firmly. 3. Bring to a boil over high heat, then reduce the heat to the lowest setting and simmer for 15 minutes. Keep the lid. Turn off the heat and rest for 10 minutes. Keep the lid on. 4. Transfer the rice into a large bowl. Pour 40ml sushi vinegar over the rice. Mix gently with a spatula by diagonally cutting into the rice to avoid damaging the grains. Turn over occasionally. Keep fanning to cool them down quickly. How to make Sushi Vinegar Ingredients: 9 tbsp Rice Vinegar 6 tbsp Sugar 1 tbsp Salt Always maintain 9:6:1 proportion Instructions: 1. Add the ingredients to a jar. Close the lid tightly and shake. Rest for 5 – 10 minutes, and repeat the process several times until the mixture becomes transparent. The sushi vinegar can be kept in a dark, cool cupboard for several months.

You need to follow my steps as the video but make the rice dance on a ring at it's highest level but then completely move the pot to a second ring that is "already" set to 2, so it is already cooled down, cover tightly for 10 minutes. Leaving it on the high ring just won't work, it might as well be on high for the whole cook. On my electric hot ring, I found 2 seemed to work best, for the same 10 minutes.. You may need to use 1 but I suggest as mine worked with 2, try it. Sushi Rice Ingredients Rice * 2 cups Japanese sushi rice(I used Koshihikari produced in Shibata-City, Niigata from the rice factory NEW YORK) * 1.8 cups water Seasoning * 1/4 cup rice vinegar(unseasoned) * 2 tbsp sugar * 1 tsp salt * 4 inch square kombu Instructions 1. Thoroughly wash and drain rice under water until the water is no longer cloudy(3-4 times). 2. Let the rice dry for 10 minutes. 3. Soak the rice in the 1.8 cups of water for 15 minutes(the ratio of rice to water should be 10:9). 4. Cook rice in a rice cooker. 5. Heat rice vinegar, sugar, salt and kombu until the sugar and salt are dissolved. 6. Let the seasoning sit at room temperature until the rice is ready. 7. In a large bowl or Japanese hangiri, combine the hot rice with the vinegar mixture(if you are using a hangiri, make sure to moistened it with water. 8. Cover the rice with a damp towel and let sit at room temperature for about an hour. 9. Serve the rice when it is slightly warmer than room temperature. 10. I used the sushi rice to make a chirashi bowl, but feel free to make whatever you like!

Watch more How to Make Rice & Grains videos: 🤍 According to Japanese tradition, aspiring sushi chefs must spend years perfecting their sushi rice before they're even allowed to cut fish. So consider this a head start. Step 1: Rinse rice Place the rice in a mesh strainer and rinse it under cold running water. Pick out any debris you might find in the rice, such as weird little pebbles or odd-looking grains of rice. Step 2: Soak rice Place the rinsed rice in your 2-quart pot and fill the pot with water until it's about one inch above the rice. Let this soak for 30 minutes. Step 3: Rinse rice again Place the soaked rice back in the strainer and rinse it again under cold running water until the water runs clear. Step 4: Boil rice Place the rinsed, drained rice back in the saucepan and add 2 1/4 cups of cold water. Cover the pot, place it over high heat, and bring it to a boil. Step 5: Turn down heat Once at a boil—you'll see steam and bubbles escaping from under the lid—turn the heat down to the lowest possible setting. Step 6: Let rice simmer Let the rice simmer for 20 minutes. Set a timer and don't lift the lid to check on the rice until it goes off. Tip If there's still water in the pot after 20 minutes, put the lid back on and let the rice cook a few more minutes until all the water is absorbed. Step 7: Boil mixture While the rice is cooking, place the rice vinegar, salt, and sugar in the smaller, 1-quart pot and bring it to a boil on medium high heat, stirring regularly until the salt and sugar dissolve. Add the konbu to the vinegar mixture and turn off the heat. Set the pot aside to cool. Step 8: Let rice sit Once the rice has absorbed all the water, turn off the heat and let it sit for 15 minutes with the lid still on. Step 9: Spread out rice Dump the rice into a large non-metal bowl and spread it out with a wooden spoon so it will cool down faster. Tip Don't scrape the bottom of the pot—any dried, crusty bits of rice will add a funny flavor and texture to your sushi. Step 10: Pour mixture Remove the konbu from the cooled vinegar and slowly pour the mixture over a spoon into the cooked rice, gently stirring and tossing to combine and cool it.That's it; you've just saved yourself years of practice! Finally, our how to make sushi rice video has arrived! Sorry it's take so long but we didn't know so many of you were interested in a tutorial on how to make sushi rice. There are many videos out there on this subject so here's Master Sushi Chef Hiroyuki Terada's version. Here's the recipe: 250cc Rice Vinegar 10oz Sugar (by volume) 1 oz Salt (by volume) 3"x2" Seaweed sheet. Mix in a plastic container and store in the fridge. After the sugar dissolves, it will be ready to use. To make rice, use 16oz (by volume) of short or medium grain rice, wash 3 - 4 times, strain and then add 16oz of water. Cook in a rice cooker for 25 minutes or when done. Add 4oz of the seasoned rice vinegar and you're done! Instant Pot Sushi Rice Koshihikari Rice on Amazon: 🤍 🤍 Both of these brands sell much smaller packages on amazon, but you'll pay more per pound for smaller packages. Equipment: = The instant pot I use is Duo: 🤍 After making this video I found out that one of the Instant Pot models (LUX), doesn't have a low pressure setting. My rice preset does 12 min at low pressure and LUX does 10 minutes at high pressure. That's way too long. If you have the LUX model, I wouldn't recommend using the rice preset. You can try doing 5 minutes on high pressure, but I can't guarantee the results. Scaling the recipe: = The ratio of water to rice changes if you are cooking larger quantities. The Chopping Block's Chef Mario Scordato demonstrates how to prepare Sushi Rice. 4 cups sushi rice 1 cup rice vinegar 2 tablespoons sugar 2 teaspoons sea salt 1. Wash the rice. • Place the sushi rice in a large bowl and allow cold water to run over the rice while agitating with your hands. • When the bowl fills, gently pour off the cloudy water, being careful to not pour out any rice. • Repeat 2 more times. • Allow water to continue to run over rice until it is clear. 2. Soak the rice. • Allow the rice to soak, covered, in cold water for a minimum of 20 minutes. This can be done the day before and soaked overnight in the refrigerator. • When ready to cook, drain water very gently, DO NOT STRAIN. • When soaked properly, rice should very white and opaque, and can be broken very easily. 3. Cook the rice. • Transfer the rice to a saucepot or the insert for your rice cooker. • Cover with cold water until it comes up to your first knuckle on your index finger while your hand is laying flat on the rice. • If using a rice cooker, place the insert in the cooker, close the lid and turn it on. • If using a sauce pot, place pot on stove over high heat, uncovered. Bring to a boil and allow to continue to boil for 1 minute. Cover and reduce the heat to low. Cook on low for 15 minutes. Turn the burner off and allow the pot to sit on the stove for an additional 15 minutes. DO NOT LIFT THE LID! 4. Season the rice. • To make the seasoning mixture, combine rice vinegar, sugar and sea salt. Heat gently in the microwave or in a saucepan to dissolve. Allow to cool before using. • To season the rice, you'll need a wide pan such as a rectangular 9” x 13” or bigger for this job. Make sure your seasoned vinegar is ready, and if you have a rice paddle, that is the way to go. • With your rice paddle, scrape the sides of the rice steamer or your rice pot so you can just tip the bowl over and the rice will fall out of the vessel. Place it in your 9” x 13” pan and start to separate the mass. • Add 1/3 cup seasoned rice vinegar to the rice at a time and begin to cut through with your rice paddle. It’s very important to break up the rice clumps but not mash the grains. All you are doing is allowing hot air to escape and the rice vinegar to penetrate into the grains and give your sushi rice wonderful balance sweet, salty, and sour flavors. 5. Never refrigerate the cooked rice before rolling sushi. Just cover it with a damp towel and hold at room temperature.

Make Sushi Bar Quality Sushi Rice at home. Use to make your favorite Sushi Rolls, Nigiri, Poke Bowl or top with your favorite cooked seafood or meat. Add 2 cups of short grain sushi rice to a pot and turn the heat on to medium high. Now add 2.5 cups of water and bring to a boil. As soon as the water starts to bubble, turn the heat down to the lowest possible setting and cover with a lid. Cook for 15 minutes. When the 15 minutes is up, turn the heat off completely and let the rice continue to steam for another 10 minutes. Do not open the lid. You don't want any steam to escape. For the seasoned vinegar, add of Rice vinegar, of sugar and 1 teaspoon of salt. Whisk until the sugar is dissolved. When the rice is done steaming, transfer it to a baking dish and spread it out evenly. Pour the seasoned rice vinegar evenly over the rice and gently mix with a rice paddle or a spoon. The rice will absorb all of the vinegar as it cools. Make your own sushi rolls or top with your favorite seafood.
