Get the recipe here: 🤍 Ingredients For the crust: 1/2 pound (#4) phyllo pastry at room temperature (10-11 sheets) 4 ounces (114g) unsalted butter, melted 1/4 cup granulated sugar ground cinnamon For the Filling: 4 oz (114g) unsalted butter, melted 1 cup light or dark brown sugar 1.2 cup maple syrup 1/4 cup honey 1/2 teaspoon salt 1 teaspoon pure vanilla extract 1/2 teaspoon ground cinnamon 3 eggs at room temperature 2 tablespoons heavy cream 2 tablespoons all-purpose flour 250g pecan halves Instructions Preheat the oven to 350 °F, 180 °C. Make the Filling: In a mixing bowl combine the sugar, flour, cinammon, and mix together. Add the remaining filling ingredients and whisk together. Coarsley chop 100g (about a cup) of the pecans and add to the filling. Set aside and prepare the crust. Assemble the Pie: Grease the bottom and sides of a 9-inch tart pan. Place it into a half-sheet baking pan. Layer the phyllo sheets into the pan. Drizzle butter over each layer. Sprinkle a tablespoon of sugar over every 3rd layer and dust cinnamon on top. Mix the pecan filling one more time and pour it into the center of the phyllo layers. Arrange the pecan halves on top of the filling. Gather the phyllo that is hanging outside of the pan and tuck it into the side of the pan to create a border. Brush the border with butter. Bake the pie on the center rack for 45-55 minutes. The filling will be mostly set and will jiggle slightly in the center. Allow the pie to cool completely, carefully transfer it to a serving platter and serve. Today let's learn to make some super tasty and crispy Baklava, which is a rich, sweet dessert pastry made of layers of filo filled with chopped nuts and sweetened and held together with syrup. It is characteristic of the cuisines of Turkey, Egypt, and the broader Middle East. But today we are making this sweet with Samosa Sheets. ►Ingredients Samosa Sheets - 30 - 35 Sugar - 1 cup Water - 1 cup Lemon - Half Cinnamon stick - 1 Pistachio - 1/4 cup Almonds - 1/4 cup Cashews or Walnuts - 1/4 cup Melted Butter - 1/2 cup ►Method 1. Make a sticky sugar syrup. 2. Take each samosa sheet apply melted butter and sprinkle powdered nuts. 3. Roll it and press it from both sides and make wrinkles. 4. Place it on a baking tray and apply more butter on top before baking. 5. Bake it in a 180-degree preheated oven for 40 - 45 minutes. 6. Add sugar syrup when it is still hot. 7. κοτόπιτα Get this recipe and more on my website: 🤍 Serves 12: For the roasted chicken: 1 whole roasted chicken 1/4 cup olive oil salt and freshly ground black pepper 1/4 cup dried oregano 1 teaspoon cumin powder pinch of crushed red pepper flakes (optional) For the filling: 1/4 cup olive oil 1 large onion, diced 2 garlic cloves, whole 2 bell peppers, diced 1 teaspoon fresh thyme or rosemary other optional vegetables: chopped carrots, sliced mushrooms salt and freshly ground pepper pinch of crushed red pepper flakes 1 cup crumbled feta cheese 1 cup shredded parmesan cheese 1 cup grated gouda or mozzarella cheese For the béchamel sauce: 2 cups whole milk 1/4 cup olive oil 1/4 cup all purpose flour salt and freshly ground pepper 1/4 teaspoon ground nutmeg 2 eggs For the crust: 1 pound phyllo dough, thawed and at room temperature 1/2 pound unsalted butter, melted a few tablespoons of sesame seeds Preheat the oven to 400 degrees Fahrenheit, 200 degrees Celsius. Wash the chicken with cold water and pat it dry. Make sure to remove anything that may be inside the cavity. Pour the olive oil over the chicken and season both sides with the herbs and spices. Cover the chicken with aluminum foil and bake for 40 minutes. Remove the foil and bake uncovered 40 additional minutes or until the chicken is fully cooked. Allow to cool completely. In the meantime make the filling by cooking the garlic cloves with the diced onions and oil in a pan for about 15 minutes or until soft. Add the diced bell peppers, season with some salt and pepper and cook 5-6 minutes or until they soften and release their juices. When the chicken is cool enough to handle, remove the meat and set the bones aside to make broth another day. Shred the meat or chop it. About 4 cups are needed for this recipe. Add the meat and the sautéed pepper mixture to a large bowl and mix well to combine. Make the béchamel sauce by combining the olive oil and flour to a saucepan. Cook over medium heat while whisking until it becomes slightly toasted. Add the milk, salt. pepper, and nutmeg. Whisk well to combine. Take care to not add too much salt. There will be lots of cheese in the filling which is already salty. Bring the mixture to a boil and continue whisking until it thickens enough to coat the back of a spoon. Remove from heat and add about a cup of this mixture to the eggs. Whisk to incorporate and to temper them. Add the egg mixture to the saucepan and whisk well to combine. Pour the béchamel sauce into the mixing bowl with the filling. Add the cheeses and mix well. Add some fresh thyme and taste to see if any more salt and pepper is needed. I always add a pinch of crushed red pepper flakes. It's up to you to do the same or to just leave it out. Set the filling aside. Note: Phyllo dough comes in various thicknesses. The thinner the phyllo, the more sheets will be in a pack. The thicker phyllo will have fewer sheets since it is sold by weight. I usually buy the #4 thickness. Any phyllo will do. Preheat the oven to 350 degrees Fahrenheit, 170 degrees Celsius. Remove the phyllo from its packaging. Separate it into 2 equal stacks. One will be for the bottom and the other for the top of the pie. I like to use a little more for the bottom and less for the top. It's a matter of personal preference. The pie will still be delicious either way. Brush the baking pan with melted butter. Take 2-4 sheets of phyllo and place them at the 12:00 position of the pan (as if you were looking at a clock)placing half in the pan and the other half should hang out of the pan. Drizzle some melted butter on top of the phyllo. Take 2-4 more phyllo sheets and place them at the 3:00 position of the baking pan, half in half hanging out. Drizzle them with some more melted butter. Take 2-4 more phyllo sheets and place them down in the bottom of the pan. Drizzle with melted butter. Take 2-4 phyllo sheets and place them at the 9:00 position of the baking pan. Drizzle with butter. Pour all of the filling onto the pan and cover it with the phyllo that is hanging outside of the pan. Drizzle with melted butter. Keep taking 2-4 stacks of phyllo and place them in the pan, tucking the edges in really well. Drizzle with melted butter until all of the phyllo runs out. Scour the pie into 12 equal pieces and pour the remaining butter all over the pie. Sprinkle the top with some sesame seeds. Bake 45 -60 minutes or until the pie is golden brown on top and the filling is bubbling. Sometimes, it can take 1 hour and 15 minutes to be ready. Allow the pie at least 20-30 minutes to rest at room temperature so that the filling sets and it will be easy to slice and serve.

DIY Filo Cups I think the best part of pastry is often that crunch made possible by a small(😂😂😂) amount of butter or shortening. Sometimes the pastry dough can kind of overwhelm the filling or primary flavor. What's the solution? Filo dough! Paper thin sheets of dough that you butter and layer for the best crunch ever! They definitely allow the filling to shine through too. My mom would make all sorts of things with filo dough but the easiest way to use them IMO is to make little cups for the perfect party bites. I filled these with a tratitional Greek mixture of feta, dill, lemon, corriander and some American cream cheese 😀 Full recipe up on the blog!
Portokalopita (πορτοκαλόπιτα) Orange Pie 3 1/3 C sugar 2 1/4 C water 300ml orange juice 450g phyllo dough 3 eggs 1 C sugar Orange zest of 3 oranges 1 1/4 C oil 1 C milk 1 tsp baking powder 1 tsp baking soda 2 tsp vanilla essence Place sugar in a pot with water, orange juice and simmer for 5 to 10 minutes. Allow to cool. Fold the phyllo into an oven dish so that its airy. Bake in an oven for 1 hour until dehydrated at 100 C°. Boil 2 oranges in a pot for an hour. Take the phyllo dough out of the oven and break it up into fine pieces. In another bowl squeeze the two oranges in a bowl. Add the orange peels and pulp in a blender with the sugar. Mix well and then add the rest of the ingredients and beat until light and fluffy. Pour the orange mixture in a bowl and mix in the broken up phyllo pastry. Oil the baking dish with a bit of flour sprinkled and pour the mixture in and flatten it. Bake in a pre heated oven for 40 to 50 minutes minutes at 180°C. Get the recipe here: 🤍 Ingredients 1 pound (500g) #4 phyllo, thawed and at room temperature 3/4 lb (340g) unsalted butter, melted 3-4 roasted red peppers, diced feta cheese: as much as you want shredded mozzarella or gouda cheese: as much as you want 1/2 cup or more Panko breadcrumbs For the Meat Sauce: 1 and 1/2 - 2 lbs (about 500g) ground beef 1 large onion, finely chopped 1/4 cup olive oil 5-6 garlic cloves, grated 16 oz (450g) crushed tomatoes 1 teaspoon salt or more 1/2 teaspoon freshly ground black pepper or to taste 1 teaspoon ground sweet paprika 1/2 teaspoon crushed red pepper flakes (optional) 1 teaspoon crushed dried oregano or thyme Instructions Preheat the oven to 400 °F, 200 °C. Make the Meat Sauce: Ina. large pot over medium heat, add the onion with the olive oil and a pinch of salt. Cook the onons until soft and golden. Add the garlic and warm through. Add the ground meat, the seasonings (except for the thyme/oregano) and tomatoes. Mix together and cook over medium-high heat for about 25 minutes or until thickened. Remove from heat and add the oregano. Taste and adjust seasoning if needed. Add double the crushed tomatoes if you prefer a thicker sauce. Assemble the Pie: In a large baking pan (half-sheet pan will work or a roasting pan) add the breadcrumbs in an even layer. Divide the phyllo into 2 equal stacks. Layer the first stack in the pan and drizzle butter in between the phyllo layers (see video). Crumble some feta cheese into the center of the phyllo . Add the meat sauce on top. Spread the diced roasted peppers over the meat sauce. Top with shredded cheese. Fold the phyllo that is hanging outside of the pan over the filling. Drizzle butter between those layers as well. Gather each of the remeaining sheets of phyllo and create an accordion. Place them on top of the pie for a decorative, crunchy top layer. Brush and pour the remaining butter over the phyllo. Bake on the center rack for about 45 minutes or until golden. Allow the pie to rest for 25-30 minutes and serve. Kali Orexi! Notes Make Ahead Freezer Instructions: The entire pie can be assembled and frozen prior to baking. Once it is assembled, cover it with plastic wrap and then with foil and freeze for up to 2 months. When ready to bake either thaw in the refrigerator overnight and then bake it the following day as per the instructions or, remove the plastic and bake covered in a preheated 400 °F oven for 30 minutes. Uncover and bake until golden.
