With very little cleanup and a fast, delicious meal in under 30 minutes, one-pan meals will be your new go-to recipes that will become a staple in your household. Add cauliflower florets in boiled water and cook until tender, 10 minutes. Drain well, and mash with a potato masher until smooth. Stir in cream cheese and milk and season with salt and pepper and mash until completely combined and creamy. Set aside. In a large skillet over medium heat, heat oil. Add onion, carrots, and garlic and cook until softened, 5 minutes. Add ground beef and cook until no longer pink, 5 minutes more. Stir in frozen peas and corn and cook until warmed through, 3 minutes more. Season with salt and pepper. Transfer the mixture to oven glass dish and top with an even layer of mashed cauliflower and bake 20 minutes or until is golden. Garnish with parsley and serve. 2 Beef egg muffin 170 calories (4 serving) Ingredients 1 lb ground lean beef 1 tsp onion powder 1 tsp garlic powder 1 tsp paprika salt and black pepper 3 egg white 3 eggs 1 tbsp parsley salt and black pepper 1 medium tomato 1 oz grated mozzarella Preheat oven to 390°. In a medium bowl, add the beef, salt, pepper, garlic powder, onion powder and paprika. Use hands to combine. set aside. In a separate bowl, add the eggs, salt and pepper and whisk until combined. Add the chopped tomatoes, mozzarella and parsley. Set aside. Divide the meat among the muffin tin openings, pressing to form cups. Pour some egg mixture into each meat cup. Bake for 30 minutes. Allow to cool before serving. 3 High protein beef cauliflower fried rice 310 calories (1 serving) Ingredients 1 tsp olive oil 1 1/2 cup riced cauliflower salt and black pepper 5 oz ground lean beef 1 garlic 3 oz broccoli florets 1 tsp soy sauce salt and black pepper 4 veggie spinach rolls 60 calories (5 serving) Ingredients 8 oz frozen spinach leaves 3 egg whites 1 egg 1/4 low fat mozzarella cheese salt and black pepper 1 clove garlic 1 tsp olive oil 1/2 onion 1/2 red bell pepper 1 medium carrot shredded 1.5 tbsp parsley Preparation Preheat oven to 400° F (200° C). Thaw the spinach and squeeze out the water. Mix spinach, 3 egg whites, mozzarella, half the salt, and pepper in a mixing bowl. Place parchment paper on a baking sheet and spray with cooking spray. Move the spinach mixture to the sheet and press it flat, about 8x12 inches in size and roughly ½ an inch thick. Bake for 15 minutes. When done, set aside to cool on a rack. Finely chop onion and parsley. Grate the carrots. Fry the onions and garlic in a skillet with oil. Add carrots and parsley and let it simmer for about 2-3 min. add the other half of the salt, and pepper and mix briefly. Flip the spinach mat and take the skillet off the heat and add an egg. Mix it all together and spread the filling over the now cool spinach mat. Roll up the spinach mat and filling. Bake for 25 minutes. Cut it into 5 slices. 5 Stuffed bell pepper rings with veggies 90 calories (4 serving) Ingredients 2 bell peppers 1 tsp olive oil 1 clove garlic 1/2 onion 1 mushroom salt and black pepper 4 oz ground turkey 1.5 tbsp parsley 1 egg white 1/4 tsp italian seasoning 4 tbsp tomato sauce Preparation Pre-heat the oven to 350° f. Slice bell peppers into rings. Finely chop up bottomsto be added into the turkey mixture. Heat oil in a medium skillet and saute garlic onion, mushroom, chopped bell pepper, for about 5 minutes or until the onion becomes translucent. Stir in the salt, pepper. Transfer mixture to a large bowl and add in turkey, egg, parsley, italian seasoning. Mix thoroughly. New Meal Prep Video - High protein & moderately low carbs! Did you think I was gone, like it or not, I’m back!! And I have a bunch of new meal prep plans, recipes, and ideas that I can’t wait to share! As I get back into the swing of things, like recording and editing it may take a few videos to get the feel and all that back, so just bear with me. The biggest thing I struggled with before recording and launching this video… The videos will get better, I think it definitely could have been better but didn’t want a few mistakes to stop me from posting the video. Plan to talk about that more a little later… Anyways, thank you to everyone who stuck around to support the channel and content, means a lot! Please leave comments and hope you enjoy! Meal breakdown and nutritional info for each meal are below! Groceries - La Banderita Carb Counter Tortillas - 5-6 Boneless, Skinless Chicken Breasts - 2 lb.96% Lean 7% Fat Ground Beef - Deli Turkey - Light Mayo with Olive Oil - Hearts of Lettuce - Cherry Tomatoes - Bell Peppers (Green, Orange, Yellow) - Brown Rice (Trader Joe’s Organic) - Light Shredded Mexican Blend Cheese (Trader Joe’s) - Quest Protein Chips (Ranch & Chili Lime) - Montgomery Inn BBQ Sauce - Light Creamy Ranch - Extra Virgin Olive Oil Cooking Instructions Shredded BBQ Chicken Recipe (how I should have done it) 1. Trim any excess fat from chicken. 2. Turn stove burner to medium-high heat and add a 1-2 tbsp Extra Virgin Olive Oil. 3. Once the pan is hot, add the chicken breasts and season with Salt, Pepper, and Smoked Paprika. Or use any seasonings you prefer. 4. Cook for only 1-2 minutes per side, just getting a quick sear on the chicken. 5. After searing each side, add the chicken to a slow cooker or instapot. 6. The add you’re BBQ Sauce. Could also add a splash of Chicken Stock if you wanted to make it even more moist and reduce chance of drying it out. 7. Then I usually just cook it on low or medium for several hours, if I have the time. To cook it faster, you can cook it on medium or high heat for less time, just don’t let it dry out. In the video I did high because of wanting to speed up the cooking process. 8. And then I just check it every 45 min - 1 hour, till chicken is cooked all the way through. Last thing I do is shred the chicken breasts and mix it all up . My Meals Beef, Rice and Veggie Bowls - 6 oz. Lean Ground Beef - 3/4 cup Peppers - 1/2 cup Brown Rice - Side of Shredded Cheese (little less than 1/4 cup) Protein(g): 49 Carbs(g): 30 Fat(g): 19 Total Calories: 492 Shredded BBQ Chicken Wraps (3 Lettuce wrap meals) - 6oz. Chicken - 3/4 - 1 cup Cherry Tomatoes - 2 pieces Lettuce - 1 Bag Quest Protein Chips - Side of Shredded Cheese (little less than 1/4 cup) - Side of Light Ranch (about 1 - 1/2 Tbsp.) Protein(g): 64 Carbs(g): 25 Fat(g): 16 Total Calories: 495 Shredded BBQ Chicken Wraps (2 Tortilla wrap meals) - 6oz. Chicken - 3/4 - 1 cup Cherry Tomatoes - 1 Low Carb Tortilla - 1/2 Bag of Quest Chips (will eat the other half later for snack) - Side of Shredded Cheese (little less than 1/4 cup) - Side of Light Ranch (about 1 - 1/2 Tbsp.) Protein(g): 60 Carbs(g): 26 Fat(g): 14 Total Calories: 465 Her Meals 2 Turkey wraps - 2.5 oz. deli turkey - 1 Low carb tortilla - Lettuce - 1 tbsp. Mayo and a little Mustard - 1 tbsp Light Shredded Cheese - 1 Bag Quest Protein Chips Protein(g): 39 Carbs(g): 19 Fat(g): 10 Total Calories: 311 Shredded BBQ Chicken Lettuce Wraps - 3.8-4 oz chicken - 5-7 tomatoes - 1 piece Lettuce - 1 Bag Quest Protein Chips - Side of Shredded Cheese (about 1- 1 1/2 Tbsp.) - Side of Light Ranch (about 1 - 1 1/2 Tbsp.) A new Mayo Clinic study shows low-carbohydrate diets are slightly more effective for weight loss than low-fat diets. "Our review found those following the low-carbohydrate diet lost about 2.5 to 5 pounds more than those following comparison diets, which usually were calorie-restricted and or low-fat," says Dr. Heather Fields, an internal medicine physician at Mayo Clinic and the study's lead author. Dr. Fields says, although no short-term negative health consequences were noted, the research did not examine the long-term implications of a low-carb diet.
