How Authentic KISIR is made, a classic Turkish Bulgur Salad


Today we're making Kisir, a favorite bulgur salad from Turkey, this version from the city of Hatay is packed with flavors, giving it a unique tangy and herby flavour. This is a must have recipe for every household in Turkey and one of the most served side dishes in large gatherings. Usually served with tender lettuce leaves, the classic version has a reddish color due to chili and tomato paste mixture. Please consider subscribing and help my channel to improve for better content: 🤍 Follow me on: Instagram: 🤍 Ingredients: • 2 cups bulgur (fine bulgur) • 2 tbsp Turkish tomato paste • 3 tbsp Turkish chili paste • 80 ml pomegranate molasses (extra to garnish) • 1.5 cups water (room temp.) • 1/2 cup olive oil, 100 ml • 2 tsp salt • 3 tsp chili flakes • 2 tsp ground cumin • 1 bunch of parsley • 1 bunch fresh mint • 8 spring onions • Juice of a lemon (optional) • Lettuce leaves, tomato slices and pickled cucumber to garnish and serve Instructions: 1. Add 2 cups of bulgur into a large mixing bowl or tray 2. Add 2 tbsp tomato paste and 3 tbsp chili paste. 3. Gradually and slowly add water while kneading and mixing it 4. Continue kneading and adding room temp water (1.5 cups in total) until the bulgur is evenly mixed with the paste and has a nice red color. Note: Some recipes suggest soaking the bulgur in warm or hot water, but I prefer the old school method with cold (room temp) water, which results in a better texture and enhanced flavor. 5. Once the bulgur is nicely mixed, red and fully absorbed the water, add the salt, cumin and the chili flakes 6. Add 50 ml of the pomegranate molasses and continue kneading and mixing until combined. We will use the rest of the pomegranate molasses for the garnish 7. Once all ingredients are blended, add ½ cup olive oil and mix for another 3 – 4 minutes to combine 8. The final texture should be soft but still fluffy not sticky like a paste 9. Roughly chop the green parts of the green onions and finely chop the white parts 10. First add the chopped green onions and mix to combine and blend the flavors 11. Finely chop the parsley and the mint leaves and add into the bowl 12. Now gently mix the chopped parsley and the mint to combine without overworking the herbs 13. Serve with tender lettuce leaves, tomato slices and pickled cucumbers and garnish with the remaining pomegranate molasses. 14. Eat in a lettuce or wine leaves wrap with tomato slices and pickles. Add lemon juice to taste. Note: In some recipes, lemon juice is also used at the beginning, but this classic recipe usually does not have lemon juice as it's mainly flavored with pomegranate molasses. It is important to mix the greens without squeezing too much. • Add 5 tablespoons pomegranate sour to increase acidity. If you do not have pomegranate sour or molasses you can use lemon juice instead of it. You can always add some more olive oil if you want to. • Cover the bottom of a large plate with lettuce. Tip: you can add some raisins to give it a sweet kick.

It’s perfect for hot summer days and is super quick to prepare. Lekkerste 'kisir' salade (bulgur salade) maak je zelf!


KISIR | KISIR SALADE |Zo makkelijk is het om "kisir" salade te maken. Dit maak je door hele fijne Bulgur te gebruiken, wij noemen dit "ince bulgur"/fijne bulgur. Je hebt de volgende ingrediënten nodig om de "kisir" te maken. 1e basis: (voor 4 personen) 1 glas Kisir (ik gebruik merk Duru) 1 glas gekookte water om de bulgur te wellen 1 theelepel zout (of 2 theelepels) 1 citroen of citroensap mag ook 2 eetlepels (liefst Turkse) tomatenpuree 2 eetlepels Granaatappelstroop (Nar Eksisi is dit in het Turks) 1 theelepel Pul Biber, je mag ook verse chili peper gebruiken Optioneel: 1 theelepel Isot (donkere pul biber) 1 theelepel Sumak (zure gedroogde besjes gemalen) Heb je geen Isot en Sumak in huis, gebruik dan anders sambal/zwarte gemalen peper. Deze kruiden en granaatappelstroop geven "pit" aan je de salade. 2e deel..Inhoud groenten: Ik heb enkele groenten uit mijn eigen gebruikt, zoals je kan zien in de video. Je kan eigenlijk allerlei andere groenten gebruiken wat je lekker vindt. Je kan zelfs verse muntblaadjes/koriander toevoegen als je die in huis hebt. Gewoon lekker uitproberen...koken is lekker op gevoel. Je kan ook een kant en klaar sla zakje gebruike...fijn snijden. Ik heb de volgende ingrediënten gebruikt: - paar takjes peterselie - enkele blaadjes " lamsoor" (zure smaak) - verse oregano blaadjes - verse citroenmelisse blaasjes - 1 zoete paprika - 2 lenteui - krulsla - 1 kleine rode ui - 1/2 komkommer

KISIR - TURKISH BULGUR SALAD 👇 INGREDIENTS: * 2 glasses of fine bulgur * 1.5 glasses of boiling water (enough to rise a little above the bulgur) * VEGETABLES TO BE CHOPPED: 2 tomatoes, 5-6 mini-colored peppers, 1/2 green pepper, 1 red onion, 1/2 bunch of scallions, 1/2 bunch of parsley * 1/4 glass of olive oil * 1 lemon juice * 1/4 cup Pomegranate Syrup * 1 teaspoonful of sweet pepper paste * 1 teaspoonful of tomato paste * 1 teaspoonful of sumac * 1/2 teaspoon of salt * 1/2 teaspoon of black pepper HOW TO MAKE: - Add 1.5 glasses of boiling water into 2 glasses of fine bulgur and leave it to rest covered with a cloth for about 15-20 minutes. - Cut all the vegetables into small pieces (2 tomatoes, 5-6 mini-colored peppers, 1/2 green pepper, 1 red onion, 1/2 bunch of scallions, 1/2 bunch of parsley) - Add olive oil, lemon juice, pomegranate syrup, pepper paste, tomato paste, sumac into the bulgur and mix well. - Finally, add all the tiny chopped vegetables and mix again. - Place it on a serving plate and decorate with a few fresh parsley. Ingredients: 450 gr fine bulgur, 300 ml hot water, 1 teaspoon cumin, 1 teaspoon salt, 1 teaspoon chili pepper, 1 teaspoon black pepper, 1 teaspoon red pepper flakes, 125 ml oil, 1 lemon juice, 1 tbsp pepper paste, 2 tablespoons tomato paste, 1 grated onion, 1 bunch finely chopped parsley, 2 finely chopped cucumbers, 1 finely chopped tomato, 7 finely chopped lettuce. Kısır Recipe: Pour 450 bulgur, 1 teaspoon of salt, 300 ml of hot water into a bowl. Mix well, cover, and let it rest for 30 minutes. After 30 minutes, uncover the bulgur and add 1 teaspoon of cumin, 1 teaspoon of chili pepper, 1 teaspoon of black pepper, 1 teaspoon of isot (or red pepper flakes), 125 ml of oil, 1 squeezed lemon juice, and add tomato and pepper paste. Add 1 shredded onion, and mix for 3 minutes, then mix 1 bunch of finely chopped parsley, 2 finely chopped cucumbers, 1 finely chopped tomato, 7 finely chopped lettuce mints, and serve.

ULUCINAR In this episode, I'd like to share with you my version of 'KISIR' (kus-uhr) recipe, one of the most popular dishes in Turkish cusine. It is very easy to make, budget friendly and so yummy! It is usually served at tea time, with other dishes but it makes a great picnic food too. We also love to eat KISIR as a side dish, even the day after its made. I believe its flavor gets better, as the salad rests one more day. To stay tuned upcoming videos SUBSCRIBE here: 🤍 INGREDIENTS 1 cup fine bulgur 1 cup hot water 1 large onion, finely chopped 1 medium tomato, pureed in a blender 1 cup of each: chopped parsley and green onion 1 clove garlic 1 real tablespoonful tomato (or sweet pepper) paste 1/2 cup freshly squeezed lemon juice 1/4 cup pomegranate sour sauce (or lemon juice) A pinch of granulated sugar Sweet paprika, cumin Salt & pepper Olive oil 6-7 lettuce leaves DIRECTIONS Combine 1/4 cup olive oil and 1 clove chopped garlic, in a large pan. Heat the pan over medium low heat. Once sizzling, remove garlic, add the chopped onion. Sprinkle a pinch of salt and pepper. Sautee over medium heat for about 6-7 minutes or until tender, stirring occasionally. Sprinkle 1 tsp or to taste sweet paprika, mix. You can also add some hot paprika if desired. Add tomato paste and cook for about 1-2 minutes, stirring constantly. Add pureed tomato, mix. Add 1 cup hot water. Sprinkle a pinch of granulated sugar, mix well. Simmer over the lowest possible setting, for 5 minutes. Sprinkle 1/2 tsp salt and cumin, a pinch of black pepper. Mix then turn off the heat. Add bulgur, mix well. Cover and let stand for about 30 minutes. Making sure to mix occasionally. In the meantime, rinse the lettuce leaves, pat dry and place on a serving dish. When bulgur is tender, add the chopped greens, mix. Add lemon juice and pomegranate sour sauce. Season to taste. Drizzle with a good amount of olive oil, let KISIR shine :) Mix gently, check for the seasoning. Transfer into the serving dish, over the lettuce leaves. Cover and chill for a few hours before serving.
