Het is een eeuwenoud fermentatie gerecht, dat door bijna elke Koreaanse inwoner wordt gegeten: Kimchi. En in Nederland is het langzaam aan een opmars begonnen, mee groeiend op het succes van fermenteren in de professionele keuken. Wij gingen op onderzoek uit en vroegen de mannen van Uit het vuistje in Arnhem of zij hun specialiteit Kimchi voor ons konden maken. In de geweldige locatie Kweekland in Arnhem, toveren de heren Felix Tangelder en Sebastiaan Hetterschijt het 'rode goud' tevoorschijn. Beginnend met het aansteken van wierook, gaan ze direct van start met het snijden van de ingrediënten en het inzouten van de Chinese kool. Daarna gaat de pap op het vuur, worden de wekpotten volledig ontvet. En gaan daarna alle ingrediënten in de wekpot om minimaal twee dagen op kamertemperatuur zijn eerste fermentatie te starten. Na de paar dagen op kamertemperatuur, gaat de wekpot de schuur in en wordt hij pas echt lekker na een maand daar te hebben gefermenteerd. Das Geheimnis des Kochens von Kim Chi in Reismehl. Koreanisches Kohl-Kim-Chi ist ein knuspriger, leckerer und herzhafter Snack. Sie werden dieses einfache würzige Chinakohl-Rezept lieben. Ein schnelles Rezept, das jeder kochen kann. Dieses leckere Rezept, nach dem ich Kim Chi koche, wird jeden lieben, der es probiert. Kochrezept und Zutaten: 4-5 Chinakohl. Kohlwurzeln, schneiden und halbieren. Schnitte mit einem Messer machen. kohl in kaltes Wasser tauchen. dann belasten. Grobes Salz. jedes Kohlblatt salzen. 30 Minuten stehen lassen. Den Kohl umdrehen und umfüllen. weitere 30 Minuten stehen lassen. bis jetzt kachen wir Reisbrei. 600 ml Wasser. 2 Esslöffel Reismehl. 7-8 Minuten bei schwacher Hitze kochen. 2 Esslöffel Zucker. abkühlen lassen. 4 Radieschen. 1 Karotte. 2 Birnen. 1 Bund Frühlingszwiebeln. 1 Zwiebel. 220 g Knoblauch. 80 g Ingwer. 400 g scharfe Paprika. 150 mi Austernsauce. Kohl noch einmal umdrehen und weitere 30 Minuten ziehen lassen. So sollte die Flüssigkeit den Kohl verlassen. Kohl in kaltem Wasser abspülen. Wechseln Sie das Wasser. Den Kohl noch einmal in kaltem Wasser abspülen. Kohl abseihen. Verteilen Sie jedes Grünkohlblatt und fügen Sie Gemüse hinzu. nach 1 Woche können Sie mit dem Essen beginnen. Tiefgekühlt lagern. SIMPLY KOREAN: the BEST KIMCHI recipe '포기김치'


If you know me at all, you know that I have a deep rooted obsession with anything kimchi. Kimchi in every form, any way, any day.. I can bathe in it. Nothing makes me happier than the pungent smell of kimchi that immediately makes my mouth water. I have been making kimchi practically my whole life. Originally with my grandmother of course- but now at my restaurants, we are producing over 100 pounds of kimchi PER WEEK. Yes, I think I can say that I am pretty well versed in kimchi making. I am planning on doing many kimchi videos, as I have over 100s of recipes that I can share just on kimchi itself. (i'm not kidding when I say I have an obsession). This traditional POGI KIMCHI is good enough to say that it is one of the best - considering this is based off my grandma's recipe. But also, I feel accessible and easy enough to replicate for a home cook. Although, not going to lie.. this is by no means a 'shortcut' or 'easy' kimchi recipe. You still have to do your part and not skip any steps or miss any ingredients. That's the heart of Kimchi, the love and effort you put into it. It is truly, truly a labor of love. So i'd say, you want to make REALLY good kimchi and need to start somewhere? Try this recipe and then by the time you are ready to level up- I should have V.2 Kimchi up by then- maybe even a whole season on JUST KIMCHI (hopefully^^). Hope you enjoy it. POGI Kimchi 2 tablespoons sweet rice flour 1/2 cup rock salt 1 head of Napa cabbage, quartered length-wise 1 bunch of scallions, cut into 2-inch pieces ½ of asian pear ½ of onion 1 thumb size piece of ginger 6 cloves of garlic 1/4 cup of salted shrimp (saewoo juht) 1/4 cup of anchovy fish sauce 1/4 cup of lance fish sauce 1/4 cup of plum extract 1 red finger chile 2 cups of Korean red chili pepper flakes (gochugaru) Instructions: 1. In a small saucepan, add the rice flour and 2 cups of water over high heat. Bring to a boil, and then reduce the heat to medium-low. Cook for 20 minutes, whisking constantly, until the liquid is thickened to a ribbon-like consistency and you can see the bottom of the pan while whisking. Set aside to cool. 2. Combine 1 cup of water and the rock salt in a large bowl. Stir the mixture together until the salt is dissolved. Add the Napa cabbage inside the bowl and rub rock salt on every leaf. Leave them there for 5 hours, then flip them and leave them there for another 5 hours. After 10 hours, drain all the excess of water. 3. in a blender combine apple, onion, ginger, garlic, red chile pepper and blend until very smooth 4. Add the mixture into a large bowl, add the scallions, salted shrimp, anchovy fish sauce, lance fish sauce, plum extract, rice glue, gochugaru, and mix everything well to become a paste. 5. Add the cabbage into the bowl with the paste, and rub the paste into every single leaf. 6. Tightly pack the kimchi into jars or containers with tightly fitting lids, or cover tightly with plastic, making sure it is not exposed to the air. Allow the kimchi to sit at room temperature for at least 2 days, or longer if you desire a stronger flavor. Then put it in the refrigerator for another 5 days.

Making traditional kimchi for the first time for my husband


TRADITIONAL KIMCHI My husband loved this and prefers this over how I’ve been making it.! Recipe from 6 lb Napa cabbage 1/2 cup kosher salt PASTE 2 cups water 2 TBSP glutinous rice flour 2 TBSP sugar SPICES & VEGGIES 1/2 cup minced garlic (~30 cloves) 2 tsp minced ginger 1/2 cup fish sauce 1/4 cup fermented shrimp 2 cup korean pepper flakes (gochugaru) 1 cup carrots, matchsticks 2 cups radish/ daikon, matchsticks 12 stalks scallion, chopped 1. Cut Napa cabbage in half (tip: cut at the base and pull apart the leafy ends) 2. Now on each half of your cabbage, cut a 2 inch slit at the base— leave the leaves in tact. 3. Dunk your Napa cabbage (halves) in water to get them wet. Once wet, sprinkle kosher salt between each leaf. Make due to leave Napa cabbage in tact. 4. Leave cabbage to rest for 2 hours. Flip every 30 minutes. Water will start to release and Napa cabbage will shrink in size. 5. After 2 hours, thoroughly rinse Napa cabbage under cold water. At this point, separate each halves of your Napa cabbage so now they’re 1/4 While your Napa cabbage has been salting for 2 hours, prepare the rest. 6. To make the paste: in a small pot, combine 2 cups water and 2 TBSP glutinous rice flour. Cook over medium heat for 10 minutes or until it starts to bubble. Mix well. Once bubbling, add 2 TBSP sugar and cook for another minute. Once everything is combined, remove from heat and allow to cool. 7. Now in a large mixing bowl, combine all of your ingredients under SPICES & VEGGIES along with the PASTE you made in step 6. 8. Once you’re kimchi paste is made, spread some of it between each Napa cabbage leaves. 9. Place Napa cabbage in a container. You can enjoy immediately or leave at room temp for 2 days before refrigerating.
