#SAMBAR #VEENASCURRYWORLD Sadya is incomplete without our sambar ..So dears, here comes an easy recipe .. Ingredients Chana Da or Toor Dal l - 1/2 cup Turmeric powder - 1/4 tsp Onion - 1 small or 1/2 of 1 medium Asafoetida -1 small piece (or) 1 tsp powder Carrot - 1/2 Pumpkin - 4 to 5 pieces Cucumber - 4 to 5 pieces Cluster beans - 4 Yam - 4 to 5 pieces Drumstick - 1 Tamarind - lemon size Shallots -15 Garlic-1 clove Green chilli - 2 Tomato - 1 medium Ladies finger - 4 Curry leaves - 1string Sambar powder - 2 1/2 tbsp Chilli powder - 1/2 tsp Coriander powder -1 tsp Asafoetida powder - 2 pinch Fenugreek powder - 2 pinch Coconut oil-1 tbsp Salt Water For seasoning Mustard seeds -1/4tsp Fenugreek seeds - 2 pinch Dry red chilli - 3 to 4 Curry leaves - 1string Sambar powder- 1/2tbsp Method Wash and soak the tamarind in water U can Soak dal for 1 hour and pressure cook by adding enough water ,turmeric powder,asafoetida ,salt and all the vegetables except ladiesfinger,tomato and shallots. Cook for 1 whistle in medium flame.(if the dal is not cooked ,cook until cooked well ) Then open the cooker .. Meanwhile heat 1 tsp of coconut oil and saute shallots and garlic till it become transparent. Reduce the flame and add turmeric powder,chilli powder,coriander powder. When the raw smell goes,add 2 tbsp of sambar powder Keep the remaining 1/2tbsp aside Saute till the raw smell goes Add fenugreek powder and asafoetida powder Add plenty of curry leaves Keep them aside Open the cooker after releasing the pressure and add tamarind water,roasted onion mix,tomato,ladies finger,green chilli and jaggery. Add enough hot water,if required Allow to boil for about 10 minutes in medium flame . Check the salt and sourness .. It should reduce its quantity by 1/4th of the total quantity Now heat coconut oil ,add dry red chillies,splutter mustard seeds ,fenugreek seeds,curry leaves one by one and finally the remaining 1/2tbsp of sambar powder. Turn off the gas and add the seasoning into the sambar Mix well and close the cooker for few minutes. Do not put the weight on the lid. So the easy and tasty Sambar is ready to serve - Hello Friends .. Toor dal - 1 cup Potato -2 nos Elephant foot yam - 1/2 pieces Banana- 2 nos Onion - 2 nos Shallots - 6 or 7 nos Drum stick - 2 nos carrot - 2 nos Taro root - 1 nos Brinjal -2 nos curry leaves - 3 or 4 sprigs Grated coconut - 1 cup Tamarind - small ball Cumin seed - 1 tsp Fenugreek seed - 1 tbsp Asafoetida powder - 1 tsp Turmeric powder - 1 tbsp Salt - 1 or 2 tsp Oil - 3 or 5 tbsp Method Firstly ,we have to peel and wash the vegetables. Cut them well and drain ,set aside. Take a pan add chopped vegetables and curry leaves Pour some oil and turmeric powder . Heat a pan add grated coconut ,dry red chilli, cumin seed and fenugreek seed ,saute them well Pour some oil and sauted them well. Roasted till they turn golden brown . Remove from fire and set aside. Heat a pan with vegetable and water . Add cleaned toor dal and cook them well. Crush dry red chilli into fine powder Then add grounded coconut and other ingredients into fine paste ,set aside Then add some salt to the vegetable cooking pan. Take a bowl add tamarind and water ,soak them well. Then add the tamarind water into the sambar pan and mix them well. Then add asafoetida powder and mix well. Then add water to the roasted ground paste and mix well. Then add the paste to the cooking pan and boil them well. Heat oil in a pan add mustard seed ,let them splutter. Add dry red chilli,shallots and curry leaves ,fry them well. Then pour fried sauted ingredients into the sambar pan and mix them well. Serve the tasty sambar with meals .

Varutharacha Sambar is a delicious Kerala Style Sambar Recipe that is made from roasted coconut homemade sambar powder that adds to the authenticity and flavor of the sambar. The aromas from the ground spices when combined along with tamarind water and cooked lentils, make this sambar very delicious and festive. An Onam sadya is incomplete without the freshly prepared spicy Varutharacha Sambar. It gives the whole meal a definition and lifts the Sadya to a new dimension. Ingredients: Ingredients for the Sambar Curry 1/2 cup dal 125gm 2 Drumstick , cut into 2 inch pieces 200gm Lady Finger , cut into 1 and ½ inch pieces 4 Tomato , diced 150gm Shallots , whole or cut into half 1-1/2 cup Tamarind Water 1 teaspoon Turmeric powder 5 Green Chillies , slit lengthwise 5 sprig Coriander Leaves , freshly chopped Salt , to taste Ingredients for Homemade Roasted Coconut Sambar Powder 1 cup Fresh coconut , grated 2 teaspoon Coriander powder 4 Dry Red Chillies 1/4 teaspoon Methi Seeds 1/4 teaspoon Asafoetida 1 Curry leaves , few 1 teaspoon Coconut Oil Ingredients for Seasoning 2 teaspoons Coconut Oil 1/2 teaspoon Mustard seeds 2 Shallots , finely sliced (optional) 2 Dry Red Chillies 1 sprig Curry leaves Instruction To begin making the Kerala Style Varutharacha Sambar recipe, we will first prepare the Homemade Roasted Coconut Sambar Powder. Heat oil in a heavy bottomed pan and add fenugreek seeds. Roast till lightly browned. Add in the split urad dal and chana dal. Roast until they turn golden brown. Once the dals turn brown add the asafoetida and fry for a few seconds till aroma comes through. Transfer this to a bowl and leave to cool. In the same pan, roast the coriander seeds and dry red chillies. Roast until till they give out a nice aroma and and the red chillies are lightly browned and roasted. Now add in the curry leaves and grated coconut and fry till the coconut turns brown (take care not to burn the coconut). Keep aside to cool. Once cooled grind all the ingredients in a spice grinder until all the dals and spices are ground into a coarse powder like texture. You can optionally add some water to grind to a fine paste. Once the powder is ready, the next step is to prepare the Varutharacha Sambar. In a pressure cooker add in the tamarind water, turmeric powder, salt and all the vegetables. Add a cup of water and cook until you hear two whistles. Turn off the heat and allow the pressure to release naturally. Turn the heat on medium and begin to simmer the Varutharacha Sambar for about 5 to 6 minutes. While the sambar is simmering, we will now get the seasoning ready. Heat coconut oil in a small pan; add in the mustard seeds and allow it to crackle. Add finely sliced pearl onions and saute until they turn soft and light brown in colour. Add the dry red chillies and curry leaves and fry for a few seconds until the red chillies are roasted. This will take about 20 seconds. Pour the seasoning over the simmering Varutharacha Sambar and garnish with chopped coriander leaves.Turn off the heat and keep the sambar covered for about 10 to 15 minutes before you serve. Serve Varutharacha Sambar along with Carrot and Beans Thoran, Steamed Rice and Elai Vadam for a weekday meal. I this video I will show you, how to make Kerala sambar at home easily? What is authentic south Indian Sambar? Authentic south Indian sambar is made with tuvar dal and a lot of vegetables, tamarind, herbs, and masalas. The key part of the south Indian sambar recipe is tadka. Authentic Sambar is totally different from other sambars that you see outside of Kerala. Kerala's authentic sambar will be thicker and it has a different authentic flavor. In this video, I will show you all the tips to make perfect sambar. Please note my Hindi is not perfect so if you guys have any questions or doubts then you can ask me in the comment box. Vegetables Used Drum stick Ladies Finger Carrot Raw banana Yam Cucumber Beans Potato Onion Taro(chembu) Tamarind Ingredients Coconut oil – 1ltr Mustard seed -1tsp Turmeric powder -1tsp Curry leaves -4sprigs Asafoetida powder -3 pinches Fenugreek seed -1/2 tsp Dried red chilli -2 to 3 slit Red chilli – 1 tbsp Coriander powder -3/4 the tbsp Salt – to taste Method Wash the dal and add it in a pot ,along with 4or 5 cups of water. Then add turmeric powder and 1 tsp of oil, and cover with lid and allow to cook Then open the lid and add chopped vegetables, curry leaves ,asafoetida ,fenugreek powder,salt to tasteand add tamrind water to the pot or vessel,and cover with lid and cooked for 15 minutes. Take a pan add mustard seed start to pop it ,then add onion ,dry red chilli, then sauté for minute,add chilli powder and coriander powder,then mix well(masala mix) Then the above masala mix is added with dal and vegetable vessel .remove from heat and serve with Want to find a full list of the ingredients and cook this dish by yourself? Ingredients Toor daal : 1 cup Drumsticks : 2 no (cut lengthwise) Potatoes : 2 (large, cubed) Tomato : 2 (medium, chopped) pearl onion : Handful (cut into halves) shallots -2 (medium, sliced thickly Carrot- 2 (medium,cubes) Beans-5 or 6(medium,chopped) Pumpkin-(large, cubed) Cucumber-(medium, chopped) Green Chilly : 2-3 (slit,lengthwise) Tamarind : Gooseberry sized (soaked in half a cup of hot water for 10 mins) Grated Coconut : 1 cup Coriander seed : 2tsp Dry Red chilli : 4 or 5 nos Fenugreek :1 tsp Asafoetida powder : 1 tsp Mustard seeds : 1 tsp Curry leaves : 1 sprig Oil :2tbsp (preferably coconut oil) Salt –to taste Water for cooking Method : First we take a heavy bottom mud pot,add toor daal with water, cook on a medium flame for 12 to 13 minutes till the dal becomes mushy and soft. Then we mash the dal well with a spoon , Cover and keep aside. Heat oil in a pan add dry red chilli and coriander seed saute well for some minutes Add fenugreek seed and grated coconut , Stirring well roast the coconut till it becomes golden, remove the pan from fire ,and keepaside. Once the roasted coconut masala become warm. Grind this to a fine paste adding enough water, don’t make it too thick or watery. soak tamarind in a water. Cover and keep aside for 10 to 12 minutes. Later squeeze the pulp from the tamarind with your fingers and add in the bowl. Keep the tamarind pulp aside. Take a heavy mud pot ,add vegetables like carrot, beans, potato, pumpkin, tomato, cucumber ,green chilli, drum stick etc… Again we add water, curry leaves and salt mix well and cover and cook for couple of mins .. Now we add asafoetida powder, and tamarind water mix well and cook for some minutes. Again we add cooked dal and roasted grinded coconut masala in to the pan mix and cook well Remove from fire and keep a side. Again we heat oil in a pan add mustard seed, Once the mustard seeds crackle, Add dry red chilli ,pearl onion and curry leaves Stir and fry till the red chilies change their colour. Then we pour the tempering ingredients in the sambar. Cover and keep aside for some minutes , Then stir and serve Kerala sadhya special sambar with meals Enjoy the taste of sambar…. Kerala Sambar Recipe: Toor Dal - ½ Cup Turmeric Powder - ½ tsp Water - As Needed + 2 Cups Tamarind Extract: Tamarind - ½ lemon size Water - 1 Cup For Masala Paste: Coconut Oil - 2 tsp Fenugreek Seeds - ¼ tsp Coriander Seeds - 1 tbsp Dried Red Chilli - 6 nos Curry Leaves - 10 nos Asafoetida - ½ tsp Grated Coconut - ¼ Cup Water - ½ Cup Other Ingredients: Coconut Oil - 2 tbsp Mustard Seeds - ½ tsp Curry Leaves - 10 nos Shallots - 20 nos / ½ Cup Tomato (chopped) - 1 no Drumstick (chopped) - 2 nos White Pumpkin (chopped) - ½ Cup Brinjal (chopped) - ½ Cup Turmeric Powder - ¼ tsp Salt - 1 ¼ tsp Water - 4 Cups Cooking Instructions: 1. Soak the tamarind in 1 Cup of water for 20 mins. 2. Wash and drain the toor dal. 3. In a pressure cooker, add the washed toor dal, turmeric powder, water and pressure cook for 7 whistles. 4. Heat 2 tsp of coconut oil in a pan, add the fenugreek seeds and saute until aromatic. 5. Add the coriander seeds, dried red chilli, curry leaves and saute for 2 mins. 6. Add asafoetida, grated coconut and saute for a minute. 7. Once cool, add the sauteed mixture to a mixer grinder along with ½ Cup of water and grind it into a smooth paste. 8. Extract the tamarind juice from the soaked tamarind. 9. Heat 2 tbsp of oil in a Kadai, add the mustard seeds and let it splutter. 10. Add the shallots, curry leaves and saute till it gets translucent. 11. Add the tomato and saute till the tomatoes are soft. 12. Add the drumstick, white pumpkin, brinjal, turmeric powder, salt, 4 cups of water, mix well, cover and cook for 20 mins. 13. Add the cooked toor dal, ground masala paste, extracted tamarind juice and simmer for 5 mins. 14. Remove from the heat and serve hot with steamed rice. Varutharacha Sambar is a delicious Kerala Style Sambar Recipe that is made from roasted coconut homemade sambar powder that adds to the authenticity and flavor of the sambar. The aromas from the ground spices when combined along with tamarind water and cooked lentils, make this sambar very delicious and festive. An Onam sadya is incomplete without the freshly prepared spicy Varutharacha Sambar. It gives the whole meal a definition and lifts the Sadya to a new dimension. Ingredients: Ingredients for the Sambar Curry 1/2 cup dal 125gm 2 Drumstick , cut into 2 inch pieces yam-200gm ladies finger-200gm ash gourd-200gm 200gm Lady Finger , cut into 1 and ½ inch pieces 4 Tomato , diced 150gm Shallots , whole or cut into half 1-1/2 cup Tamarind Water 1 teaspoon Turmeric powder 4 Green Chillies , slit lengthwise 5 sprig Coriander Leaves , freshly chopped Salt , to taste Ingredients for Homemade Roasted Coconut Sambar Powder 1 cup Fresh coconut , grated 2 teaspoon Coriander powder 4 Dry Red Chillies 1/4 teaspoon Methi Seeds 1/4 teaspoon Asafoetida 1 Curry leaves , few 1 teaspoon Coconut Oil Ingredients for Seasoning 2 teaspoons Coconut Oil 1/2 teaspoon Mustard seeds 10 Shallots , finely sliced (optional) 6 Dry Red Chillies Instruction To begin making the Kerala Style Varutharacha Sambar recipe, we will first prepare the Homemade Roasted Coconut Sambar Powder. Heat oil in a heavy bottomed pan and add fenugreek seeds. Roast till lightly browned. Add in the split urad dal and chana dal. Roast until they turn golden brown. Once the dals turn brown add the asafoetida and fry for a few seconds till aroma comes through. Transfer this to a bowl and leave to cool. In the same pan, roast the coriander seeds and dry red chillies. Roast until till they give out a nice aroma and and the red chillies are lightly browned and roasted. Now add in the curry leaves and grated coconut and fry till the coconut turns brown (take care not to burn the coconut). Keep aside to cool. Once cooled grind all the ingredients in a spice grinder until all the dals and spices are ground into a coarse powder like texture. You can optionally add some water to grind to a fine paste. Once the powder is ready, the next step is to prepare the Varutharacha Sambar. In a pressure cooker add in the tamarind water, turmeric powder, salt and all the vegetables. Add a cup of water and cook until you hear two whistles. Turn off the heat and allow the pressure to release naturally. Turn the heat on medium and begin to simmer the Varutharacha Sambar for about 5 to 6 minutes. While the sambar is simmering, we will now get the seasoning ready. Heat coconut oil in a small pan; add in the mustard seeds and allow it to crackle. Add finely sliced pearl onions and saute until they turn soft and light brown in colour. Add the dry red chillies and curry leaves and fry for a few seconds until the red chillies are roasted. This will take about 20 seconds. Pour the seasoning over the simmering Varutharacha Sambar and garnish with chopped coriander leaves.Turn off the heat and keep the sambar covered for about 10 to 15 minutes before you serve. ഈ ഓണത്തിന് നിങ്ങൾ ഇതുപോലെ സാമ്പാർ ഉണ്ടാക്കി നോക്കു നല്ല എളുപ്പത്തിലും രുചിയിലും തേങ്ങ വറുത്തു അരച്ച സാമ്പാർ Dal - 230g or 1 cup Water - 3 cups to cook dal Coconut oil - 2 tbsp + to fry asafoetida + for tempering Grated coconut - 2 ¾ handful Asafoetida - pieces Fenugreek seeds - ¾ tsp Coriander seeds - 3 tbsp Dried red chillies - 9 or as per taste Peppercorns - ½ tsp Turmeric powder 1 tbsp and 1 pinch Fenugreek seeds - 2 pinches Tamarind solution to taste Brinjal Carrot Pumpkin Cucumber Onion Tomato Kothamara payar Achinga payar Potato Drumstick Ladies finger Hi everyone, today I am here with a sambar recipe using coconut.. First, wash a cup of dal until the water runs clean and transfer it into a pressure cooker along with three cups of water and 1 tablespoon of coconut oil and let it cook until it softens. While the Dal is being cooked, add some coconut oil in a pan and fry a few pieces of asafoetida until it's done. Once the asafoetida is roasted, transfer it into another plate and then into the same oil add ¾ teaspoon of fenugreek seeds, 3 tbsp of whole coriander seeds, a few dry Red chillies as per your taste and half teaspoon of peppercorns and roast until aromatic. Into the same pan, add grated coconut and two shallots if you have, or chopped onions along with some curry leaves. Next, start roasting the coconut on a very low flame until the coconut starts to change colour to golden.. make sure to roast this on the lowest flame possible. When the coconut changes its colour to golden, add the roasted asafetida and 1 tablespoon of turmeric powder and roast gently. Once the turmeric powder turns aromatic, turn off the flame and transfer the mixture into another plate so that it doesn't burn from the heat of the pan. Once the coconut has been roasted, let it cool down and then grind it in a mixer grinder jar without adding any water at first, and then add a little water after the whole mixture is crushed to form a fine paste. Make sure to add only the required amount of water to grind it into a fine paste along with the roasted asafoetida as well. After the Dal has been cooked add the required vegetables to the dal, cut into chunks, along with green chillies as per taste. I am adding brinjal,carrot ,pumpkin, potato, cucumber, drumsticks etc. You can add any vegetables of your choice. After adding the vegetables add the prepared coconut paste along with some water for gravy, and to also cook the vegetables added. After adding all the vegetables, close the pressure cooker and pressure cook it for just one whistle or simply close it with the lid and cook it on a low flame as your time allows, until all the vegetables are done. After all the vegetables are cooked, add some tamarind water for sourness along with cut ladies finger and a few coriander leaves. Ladies fingers are added last because it takes very less time to cook. After adding the lady's finger do not close it with the lid and cook as the colour of the lady's finger will fade. While the ladies fingers are being cooked let's prepare the tempering for the curry by heating some coconut oil in a small pan and by popping a few mustard seeds. After the mustard seeds have popped, add two pinches of fenugreek seeds and roast well and then add a few dried red chillies and roast well in oil. Next add very finely chopped onions or shallots and a pinch of turmeric powder and roast until the raw smell of the turmeric powder goes away. Once the tempering is ready add it back to the sambar and mix well..!! The delicious sambar is now ready to be served!!
