Kerala Fish Curry is a dish which has a separate fan base. The very popular Meen Mulakittathu, also known as Kottayam Style Meen Curry is an all time favourite of any food lover. This hot, spicy and tangy side dish is the best when cooked in an earthen pot. It is usually served the next day of preparation. It is a choicest dish to be served with rice meals and can be incorporated with Chappathis and Parottas as well. Ingredients Mackerel fish – 1 kg Shallots – 7 to 8 nos Tomato –nos Ginger – 1 nos Garlic – 6 to 7 nos Curry leaves – 3 sprigs Green chilli – 3 nos Tamarind – small ball Turmeric powder -1 tsp Coriander powder – 1 ½ tsp Red chilli powder- 2 tsp Fenugreek powder – 1 tsp Mustard seed – 1 tsp Salt – 1tsp Oil- 3 or 4 tb Method Heat oil in a pan add shallots and saute for 4 to 5 minutes, remove from pan and keep a side. Then add tomatoe for the hot oiled pan and fry for 5 to 6 minutes and set aside. Then chopped the tomato ,set aside. Take a small bowl add tamarind and water soak for some minutes. Then grind fried shallots and tomatoes into fine puree ,set aside. Heat oil in a heavy mud pot add mustard seed and fenugreek seed, lets crackled. Add chopped ginger , garlic , curry leaves and green chilli , saute them well. Then add curry powders like turmeric powder, coriander powder and red chilli powder , saute them well. Add grinded shallots and tomato puree mix them well. Pour some water ,combine them well Then pour tamarind soaked water and salt ,mix them well. Cover and boil them well for 6 to 7 minutes. Ingredients Sardine fish – 1 kg Ginger – 1 nos Garlic – 5 or 6 nos Shallots – 9 to 10 nos Green chilli – 3 nos Curry leaves – 3 sprigs Tomato – 2 nos Red chilli powder – 1 ½ tbsp. Turmeric powder – 1 tsp Malabar tamarind -4 or 5 nos Fenugreek seed – 1 tsp Mustard seed – 1 tsp Oil – 3 or 4 tsp Salt – 1 or 2 tsp Method Firstly ,we have to cut , clean and wash ,set aside. Take a bowl add Malabar tamarind and water ,soak them well. Then we have to crush ginger and garlic set aside. Take a bowl add red chilli powder and water ,mix them well and set aside. Heat oil in a pan add mustard seed and fenugreek seed ,lets them crackled. Add chopped shallots ,green chilli ,curry leaves and ginger garlic paste ,saute them well. Then add chopped tomato and saute till they become soften. Then pour red chilli water mix and combine them well. Add turmeric powder and salt saute them well. Then add soaked Malabar tamarind and cleaned sardine fish ,mix ,cover and cook them well. Finally sprinkle some curry leaves and cook for five minutes. Remove from fire and set aside. Malabar Fish Curry | Fish Curry with Coconut Milk | Fish Curry Kerala Style | Boneless Fish Gravy| Fish Curry in Coconut Gravy | Kerala Fish Curry | Fish Curry | Fish Recipe | Fish Curry by Spice Eats Ingredients for Malabar Fish Curry: (Tsp-Teaspoon; Tbsp-Tablespoon) Boneless fish fillets - 500 gms (Basa, Cod, Haddock,Sole or Catfish) For the Tempering: - Mustard Seeds- 3/4 tsp - Cumin Seeds- 3/4 tsp - Fennel Seeds- 1/2 tsp - Curry Leaves-15-20 nos Spice Powders: - Turmeric Powder- 1/2 tsp - Red Chilli Powder- 1.5 tsp - Kashmiri Chilli Powder- 2 tsp - Coriander Powder- 1 tsp - Cumin Powder- 1/2 tsp Other Ingredients: - Onions, chopped- 2 medium (150 gms) - Ginger Garlic paste- 2 tsp - Red Tomatoes sliced- 2 small (120 gms) - Green Chillies, slit- 3-4 - Tamarind Juice- 4 tbsp - Thick Coconut Milk- 1 cup (200 ml) - Refined oil- 3-4 tbsp Preparation: - Wash and cut the boneless fish fillets into 2 inch pieces. - Chop the onions, slice the tomatoes and slit the green chillies. - As for the coconut milk, you can use readymade or make fresh coconut milk after grinding coconut flesh with water and extracting the milk. Process: - Heat oil in a pan and first add the mustard seeds, cumin seeds, fennel seeds and curry leaves. - Give a stir and then add the chopped onions. Also add 1/2 tsp salt. - Fry on medium heat for 10 mins till light brown in colour. - Now add the ginger garlic paste, mix and fry on low heat for 2 mins. - Now add the sliced tomatoes, mix and fry on medium heat for 1 min. - Now add all the spice powders, 1/2 tsp salt & the tamarind juice. Give a mix and cook on medium to low heat for 5 mins till the tomatoes are completely mashed, spices are cooked and oil separates. - Now add the coconut milk and 250 ml water and cook for 2-3 mins till oil separates. - Now add the fish pieces, give a gentle stir and cover & cook on low heat for 10 mins. Ingredients King fish - 1kg Shallots - 7 to 8 nos Green chilli - 3 or 4 nos Ginger - 1 nos Garlic - 5 or 6 nos Curry leaves - 2 or 3 sprigs Tomatoes - 2 nos Grated coconut - 2 cup full Red chilli powder - 2 tbsp Coriander powder - 1 tbsp Turmeric powder - 1/2 tbsp Dry red chilli - 3 or 4 nos Fenugreek seed - 1 tsp Salt - 1 or 2 tsp Oil - 2 to 3 tbsp Method Take a bowl add one cup of grated coconut and water . Squeeze them thoroughly, then drain the thick coconut milk and set aside. Again, we have used squeezed, grated coconut and water. Mix them well, drain the thin coconut milk, and set aside. Take a plate and add grated coconut, red chilli powder, coriander powder, and turmeric powder,set aside. Then we have to grind the masala like grated coconut, ginger ,garlic, red chillies powder, turmeric powder mix, etc., into a smooth paste. Take a pan , add the grinded coconut masala. Then add thin coconut milk and mix them well. Add green chilli ,curry leaves ,tomatoes and salt ,mix them well. Then place the masala pan on the heat. Cover and boil them well. Remove the lid and check whether the masala is well boiled or not. Then add kingfish and mix them well. Cover and cook till the fish become well cooked . Then add thick coconut milk and mix them well. Remove from fire and set aside. Heat oil in a pan ,add mustard seed ,let them spluttered Add dry red chilli ,fenugreek seed and shallots. saute and fry them well. Remove from fire and pour the fried mixture into the fish curry pan and mix them well. Serve the tasty Spicy King fish curry with Boiled tapioca.

Onion Masala paste: - Onion, cubed- 2 medium (150 gms.) - Ginger chopped- 1” piece - Garlic cloves- 6 - Cumin Seeds- 1 tsp Spice Powders: - Turmeric Powder- 1/2 tsp - Red Chilli Powder- 2 tsp Other Ingredients: - Tomato purée or paste- 3 tbsp (readymade) - Coconut Milk- 1 cup (225 ml) - White Vinegar- 2 tsp - Refined Oil- 3 tbsp - Salt- 1 tsp Preparation: - Make a paste of the cubed onions, peeled and chopped ginger, peeled garlic and cumin seeds. Remove and set aside. - Chop the green chillies and wash & take out the curry leaves. - For the coconut milk you can use readymade coconut milk or make fresh coconut milk from fresh coconut at home. - For the fish, take boneless fish fillets and cut them into thick slices. Process: - Heat oil in a pan and add the mustard seeds. Once it splutters, add the curry leaves and the chopped green chillies. - Give a stir and then add the Onion paste. Give a mix and continue to fry on medium heat for 7-8 mins till light brown in color. - Now add the tomato purée, give a mix and fry on low heat for 2 mins. - Now add the Turmeric, Red Chilli Powder and salt. Give a mix and fry on medium heat for 2-3 mins after adding 3 tbsp water till oil separates. - Add the coconut milk and 200 ml water, give a mix and cover & cook on low heat for 5 mins till oil separates. - Now add the boneless fish pieces and give a mix. Cover & cook on low heat for 10 mins. - Add the white vinegar, shake the pan to give a mix. Authentic Kerala Dishes with my personal Touch 😍 Ingredients Fish – 3 Mackerel Raw Mango – 1 Chilly powder – 3 tsp Kashmiri Chilli powder – 2 tsp Coriander powder – 2 pinch Green chilly 2 Turmeric powder – ½ tsp Water – 4 cups Curry leaves Shallots – 5 Ccoonut oil – 2 tsp Grated Coconut Ginger Salt Method Cut the fish into small pieces and clean the fish. Take grated coconut in a grinder jar and add 2 tsp Kashmiri chilly powder, ½ tsp turmeric powder, 3 tsp chilly powder , coriander powder and grind it to a paste. Take a clay pot add the ground mix . add 4 glasses of water. Mix it well. Add 3 crushed shallots and ginger. Mix . add salt. Bring it to boil on medium flame. Close the lid. Add the sliced mango pieces and the fish. Mix well and close the lid. Cook for 15 mins. Add crushed ginger and curry leaves.Add 2 green chillies. Let it boil. Take a small saucepan add some coconut oil saute some shallots. Roast it till golden brown. Add some curry leaves and add it to the fish curry. Mix well. This Avoli Varutharacha curry is then savoured with a scrumptious Poricha Pathiri and boiled rice. Chef Nair also serves up a unique mackerel fry, Ayala Valli Kurumulagu, flavoured with strings of green pepper pearls at Garam restaurant in the lush settings of The Raviz Kadavu, a stunning resort nestled on the banks of the legendary Chaliyar River just outside Kozhikode. AYALA VALLI KURUMULAGU This delightful twice-cooked fish is moist and flavoursome. I've never tasted mackerel prepared like this before. you taste the tartness of the lime, the whisper of the cheriya pepper, sweetness of the shallots and the flavour of the fish that rounds off everything. Eat with the pumpkin leaves if you're looking to get some fiber into your system. AVOLI VARUTHARACHA CURRY The fish has soaked up the robust flavours of roasted, hand-ground masala, you can taste the toasty, creamy notes of the coconut, the earthy flavours of the coriander and the sharp edge of the tamarind. The poricha pathiri makes for a scrumptious accompaniment to this delicious fish curry, as would some local boiled rice. RECIPE FOR AVOLI VARUTHARACHA CURRY Serves 4 For the fish marinade: Black pomfret 500 gms (after cleaning) Rock salt 1 ½ tsp Tamarind water 100 ml For the ground masala: Coconut oil 30 ml Shallots 50 gms Garlic 25 gms Desiccated coconut 200 gms Coriander seeds 40 gms Whole dried red chilli 4 nos. Curry leaves 10 gms Turmeric powder 1 tsp Coriander powder 2 tsp Chilli powder 1 tsp For the fish curry: Coconut milk (50ml) at the finish to balance the dish. Tomatoes, 2 nos. Curry leaves 5 gms For tempering: Coconut oil 30 ml Mustard seeds 10 gms Fenugreek seeds 5 gms Thin slices of shallots 30 gms Bits of coconut 25 gms Curry leaves 10 gms Whole red chilli 2 nos. Method of preparation: Marinate the fish with rock salt and tamarind water. Keep aside for 30 minutes. Saute the ingredients for ground masala till golden brown. Add turmeric, red chilli and coriander powder into the mix. Remove masala mixture from fire and allow it to cool down. Make a fine paste, mix this masala into the marinated fish. Add two whole tomatoes, quartered into mix it well add curry leaves. Put back on fire and allow it to simmer on a medium flame. Occasionally, gently stir the curry until the fish is cooked. Finish the preparation by adding coconut milk to balance the flavours. Make a tempering with the ingredients and ladle over the curry. Serve with hot rice or pathiri. ആവശ്യമുള്ള സാധനങ്ങള് 1 ചൂര മീന്- ഒരു കിലോ 2 ഇഞ്ചി- ഒരു വലിയ കഷ്ണം 3 വെളുത്തുള്ളി- 10 എണ്ണം 4 പച്ചമുളക്- അഞ്ച് എണ്ണം 5 കുടംപുളി- ആറ് എണ്ണം 7 കറിവേപ്പില- രണ്ട് തണ്ട് 8 മുളകുപൊടി- നാല് ടീസ്പൂണ് 9 മഞ്ഞള്പൊടി- അര ടീസ്പൂണ് 10 ഉലുവാപ്പൊടി- ഒരു ടീസ്പൂണ് 11 കടുക്- ഒരു ടീസ്പൂണ് 12 വെളിച്ചെണ്ണ – ഒരു ടേബിള്സ്പൂണ് തയ്യാറാക്കുന്ന വിധം 1 ചൂര മീന് വെട്ടി വൃത്തിയാക്കി ചെറിയ കഷ്ണങ്ങളായി മുറിച്ചെടുക്കുക. 2 ഇഞ്ചി, വെളുത്തുള്ളി എന്നിവ ചതച്ചെടുക്കുക. 3 പാത്രം അടുപ്പത്ത് വച്ച് ചൂടാകുമ്പോള് വെളിച്ചെണ്ണ ഒഴിച്ച് കടുക് ഇട്ട് പൊട്ടിക്കുക. 4 ശേഷം, ചതച്ച ഇഞ്ചിയും വെളുത്തുള്ളിയും അരിഞ്ഞുവച്ച പച്ചമുളകും കറിവേപ്പിലയും ചേര്ത്തിളക്കി വഴറ്റുക. 5 ഇതിലേക്ക് നാല് ടീസ്പൂണ് മുളകുപൊടി ചേര്ത്ത് പച്ചമണം മാറുന്നതുവരെ മൂപ്പിക്കുക, എന്നിട്ട് ആവശ്യത്തിന് വെള്ളവും ചേര്ക്കുക. 6 വെള്ളം ചേര്ത്തിളക്കിയതിനുശേഷം കുടംപുളിയും ആവശ്യത്തിന് ഉപ്പും ഉലുവാപ്പൊടിയും മഞ്ഞള്പ്പൊടിയും ചേര്ത്ത് തിളപ്പിക്കുക. 7 കറി തിളയ്ക്കുമ്പോള്, അതിലേക്ക് മുറിച്ചുവച്ച ചൂരമീന് കഷ്ണങ്ങള് ഇടുക. എന്നിട്ട് പാത്രം അടച്ചുവച്ച് വേവിക്കുക. 8 മീന് വെന്തുകഴിഞ്ഞാല് കറി അടുപ്പില് നിന്നും മാറ്റുക. 🤍Shabia’s Kitchen Hai Friends, In this Video I am going to share the recipe of KOTTAYAM STYLE RECIPE. Meen Mulakittathu, is a special fish curry quite famous for its perfect balance of spicy and sour flavours. Locally sourced tamarind is used in this dish for better flavour. This dish is easy to prepare and tastes spectacular with rice. This dish is a Red fish curry a.k.a. “Meen Mulakittathu” or “Meen Vevichathu”, which is the one of the easiest fish curry recipes in Kerala. Its authentic preparation involves cooking in a clay pot, as it is believed that the pot enhances the flavour of the curry. During the earlier days when refrigerators where not in use, this curry was prepared a day before and was left overnight in the clay pot for its real flavours to come out. The use of gambooge/kudampuli is another key ingredient which actually brings a smoky tanginess to the curry. Gambooge is a fruit which once ripe, is de-seeded, sun-dried, smoked and stored, and is later soaked in hot water a few minutes before cooking. I have also used Kashmiri Red chili powder which gives the bright red color to the curry while maintaining the spiciness. It is an absolute treat to all the fish lovers out here. Make Paste of: - Onion, quartered, medium ones- 2 nos. - Tomatoes, quartered, medium ones-3 nos. - Green Chilli - 1 big or 2 small as per taste To Marinate Fish: - Salt- 1 tsp - Turmeric powder-3/4th tsp - Red Chilli Powder- 1 tsp For the Curry: - Ginger garlic paste- 2 tsp - Coriander powder- 1.5 tsp - Cumin powder- 3/4 tsp - Red Chilli Powder- 1.5 tsp - Garam Masala Powder- 1/2 tsp (Link to our Garam Masala Recipe: 🤍 - Coconut milk- 1 cup - Coriander leaves, chopped- 2 tbsp - Salt- 1/2 tsp Oil - 3 tbsp & oil for pan-frying the fish pieces Preparation: - Marinate the fish pieces with salt, turmeric powder & red chilli powder. Mix well & set aside for around 30 mins. - Make a paste of the quartered onions, tomatoes and one or two green chillies. - Prepare coconut milk or use store-bought coconut milk. - Pan-fry the fish pieces in 2 batches. Remove & set aside. - Chop the coriander leaves. Process: - Heat oil in a kadai & add the onion-tomato-chilli paste. - Fry on medium to low heat for around 7-8 mins. - Add the ginger garlic paste. - Mix & continue to fry for another 15 mins on medium heat, till the paste is cooked & has a little grainy texture. Make sure that the masala doesn’t burn or become brown in color. - Add the red Chilli powder, Coriander powder, Cumin powder & 1/2 tsp salt and mix it well.
