Full written recipe for Jalebi Prep time: 10-15 minutes (excluding fermentation time) Cooking time: 20-25 minutes Serves: 6-8 people Batter Ingredients: SOUR CURD | खट्टा दही 100 GRAMS WATER | पानी 80 ML REFINED FLOUR | मैदा 500 GRAMS WATER | पानी 325-350 ML WATER | पानी 8 TBSP Method: Take a deep stock pot or a vessel & add the sour curd & 1/3rd cup of water into it, now using your hands or a whisk mix the water & curd to make buttermilk. Further add the refined flour into the vessel & combine well. Once combined, add the remaining water in two batches & mix really well while continuously whisking it, no big clumps of refined flour should remain in the batter. The amount of water required will depend upon the moisture that will be present in the curd that you will be using so adjust 10-15 ml of water accordingly. Once you have whisked the batter & it forms into a semi-smooth batter, wipe the edges of the vessel then splash water on the surface of the batter & smoothen it out completely. Now cover the vessel with a lid & keep it in a warm place to ferment, the duration of the fermentation will depend upon the climate, in winters it might take upto 12-15 hours but during summers it might only take 8-9 hours for the batter to ferment. The batter will fluff up slightly once fermented & it will smell a sour, it will also develop a few bubbles on the surface. Once your batter has fermented mix it well again using a whisk or your hands & then you will have to adjust the consistency. You will have to add 8 tablespoons of water approximately, so keep adding the water using a tablespoon while whisking it continuously to incorporate air in the batter. The batter should become completely smooth & lacy, the consistency of it should be semi thick, if the batter is too thick then your jalebis will turn out soft & soggy, if your batter is too thin then you won’t be able to shape them properly & they will turn out to be completely flat. Once your batter is ready, pour it into a piping bag or a squeezy bottle. Sugar Syrup Ingredients: SUGAR | शक्कर 1 KG WATER | पानी 450 ML SAFFRON | केसर A FEW STRANDS ORGANIC FOOD COLOUR | आर्गेनिक फूड कलर 1/2 TSP LEMON JUICE | निंबू का रस 1/2 TSP Method: Add the sugar & water into a deep pan then switch on the gas flame to high & cook until all the sugar melts. Once the sugar melts add the remaining ingredients & cook the sugar syrup until it reaches almost one string consistency. To check the consistency, dip a spatula or a spoon in the sugar syrup then remove it out & let it cool down slightly, then take some of the syrup on your index finger & pinch it using your thumb, when you pull your thumb away a string of the sugar should form & then break immediately. Switch off the flame once your sugar syrup is ready, make sure you keep the sugar syrup warm when you dip fried jalebis in it. Frying Ingredients: OIL | तेल AS REQUIRED Method: Before frying the jalebis you will have to keep a small set up ready, you will require - a pair of tongs to fry the jalebis, a perforated spatula to dip them in sugar syrup & sieve to transfer the dipped jalebis. Pour oil into a flat-bottomed deep pan, the level of the oil should only be an inch from the surface. Heat the oil to 160C or until it gets moderately hot. Once the oil is hot, cut a 1mm hole in the piping bag. To shape the jalebis, move your hand in 2.5 circles & then moving on to shape the next jalebi in the same way, make jalebis according to the surface area of the pan, you can even change the number of circles as per your preference. Once you have shaped the jalebis in oil, fry them until they turn light golden brown from both sides over medium flame. Once fried, remove the jalebis from the oil & immediately dip them into the warm sugar syrup, keep them submerged in the sugar syrup for 30 seconds then transfer them into a sieve so that all the excess sugar syrup drips off. Turn off the flame and set aside till in use. For Khameer Jalebi ● Mix refined flour, yeast, gram flour & water in a bowl. Set aside for 6-7 hours to ferment. ● Once the batter ferments, beat it once again and mix. ● While mixing the ingredients, the batter will remain thicker than the usual batters as the starch will break down while fermenting and the batter will get thin. For Instant Jalebi - ● In a mixing bowl combine refined flour, baking powder, vinegar, yogurt and mix well. Set aside for 5-7 minutes. ● Add ½ cup water and whisk till there are no lumps. ● Now whisk for 2 mins so the air incorporates. For Making Jalebis- ● Fill the prepared batter in piping bag or ketchup bottle. ● Heat oil for deep frying in a wide mouth pan. ● Form round whirls working closely from outside to the centre. ● Fry the jalebis till golden in colour. Remove the jalebi and immediately steep in prepared sugar syrup. ● Soak the jalebis for 3-4mins. Remove and arrange on a plate. ● Repeat till all the batter is used up. For Jalebi: -In lukewarm water,add sugar and instant yeast,mix & let it sit for 15 minutes. -In bowl add flour, orange food color,ghee melted,gram flour,yeast mixture,water and make a batter of desired consistency. Let it rest for 10 minutes and consume immediately (within 10-15 minutes). -Now pour this batter in the sneezing bottle. -In frying pan, heat desi ghee and squeeze the bottle and make centric rings with the batter. -When one side is cooked, turn over and fry the other side. -After frying, immediately put the fried jalebis in the sugar syrup. The sugar syrup should be slightly warm when you add jalebis in it. -Turn over after a minute so that both sides are coated with the syrup. -Keep them in the sugar syrup for about 2-3 minutes. -Remove jablebis with the help of tong and shake lightly so that excess sugar syrup. -Jalebi is ready to serve. Keep the pan on the gas & cook it. Put Saffron in it & cook it until it becomes sticky. Turn off the flame. For Batter, Take a bowl & put All-Purpose Flour, Curd, Baking Powder in it & mix it. Put Food Colour in it & make a paste. Pour hot Ghee in the batter & mix it well. Take a cone & put the mixture in it. Keep kadhai on the gas & put Ghee in it. Make Jalebi in it & keep the flame slow. Then after 1 min turn the Jalebi & turn the flame high. Take out the Jalbei & put it in the Sugar Syrup then after 1 min take out it in the plate. In the same way make all the Jalebies. Jelabi texture, crispy out side, juicy inside will treat you in every crunchy bite. Let us see, how to make homemade crunchy juicy Jalebi Recipe. Ingredients: Maida (All purpose flour) 1/2 Cup Corn flour 1 Tbsp Curd or yogurt 2 Tbsp Ghee 2 Tsp Turmeric powder or food color (A pinch) Water 1/4 Cup (Approx) Baking soda 1/6 Tsp (Little less than 1/4 Tsp) Sugar syrup: Sugar 2 Cups Water 1 Cup Cardamom 4 Procedure: 1.In a mixing bowl add Maida, corn flour, curd, ghee, food color and water. Make smooth thick batter. 2. For Sugar syrup: Add sugar and water in a pan boil for 7-10 minute(Might vary depends on the intensity of heat you use) or until the syrup reaches sticky consistency. 3.Add cardamom powder and food color. Turn off and keep aside. 4.Just before making jalebis add baking powder in the batter, combine well. 5.Transfer the prepared batter to a squeeze bottle or piping bag(Any polythin cover to your comfort). 6.Heat oil for frying. Oil should be piping hot while making jalebis. 7.Squeeze the bottle to make jalebis as shown in the video. 8.Turn the burner immediately to low heat and fry jalebis well on both sides in low heat until they become crispy. 9.Transfer hot jalebis (Jilebis) immediately to warm sugar syrup. Soak for a minute and transfer to a plate. 10.Repeat for the rest. Important tips & tricks: *Squeeze bottle is the very good choice for making perfect jalebis. *If your jalebis or not puffing up, that means oil heat is not sufficient. *If the jalebis are not holding the shape in oil and become too porous, add flour to thicken the batter and make jalebis. *Keeping oil level as 1/4 inch depth would be easy for you to make jalebis. *Sugar syrup consistency & temperature: 1. Sticky consistency is the perfect consistency for this sweet dish. 2. If the sugar syrup is too thin then the jalebis would become soggy. 3. Do not let the sugar syrup to reach string consistency. That will ruin the texture and taste. 4. Sugar syrup should be medium hot to warm while you are dropping the fried jalebis. 5. If the sugar syrup is too hot then jalebis would lose it's crispness. 6. If the syrup is cold or lukewarm jalebis would not absorb the syrup. 7. Temperature: Temperature plays very important role in making perfect jalebis. So adjust the burner now and then to avoid burning the jalebis. 8.Do not use baking soda more than 1/6 Tsp. Jelabis are crispy tubes filled with syrup but jangris are softer . Jelabis and jhangris are different and are not even related. Jelabis are made from maida while jhangris are made from urad dal. You can make it quickly and it tastes just awesome. It remains crunchy for longer time. Do try this recipe at home and drop a comment for me. You also can like, share and subscribe. Ingredients: For Jilabi: • 1 cup Fine rava • 1/2 cup Curd / Yogurt • 1/4 cup Maida • 1/2 cup Water • 1/2 tsp Baking powder • Yellow food color • Oil for frying For Sugar Syrup: • 1 cup Sugar • 1 cup Water • 1/4 tsp Cardamom powder Method: For Sugar Syrup: • In a sauce pan take sugar and add water. • Bring it to boil on high heat. • When sugar dissolves and the syrup begins to boil, lower down the heat to medium and cook for about 10 minutes. • After cooking for about 10 minutes check the consistency. • The sugar syrup should be just sticky. We are not looking for any thread consistency syrup. • Make syrup as we make for gulabjamun. • Turn off the gas and add cardamom powder. • Mix well and sugar syrup is already. For Jilabi Batter: • Take rava into a blender jar and blend it in blender for about a minute. • Do not blend rava into powder. Keep its coarse texture. • Transfer the blended rava into a bowl. • Add maida and mix well. • Add curd and mix everything well together. • Try to avoid freeze cold curd. Use curd that is at room temperature. • Add water and mix well. • The consistency of batter should be medium or flowig, neither too thick nor too thin. • If you make thin batter then jilabi may break in oil or it won’t retain shape of jilabi while frying in oil. • If the batter is thick then it will be difficult to press. • Add food color and mix well. • Cover and rest the batter for about 30 minutes. • Add baking powder and mix well. • Baking powder helps in making jilabi light. Take a zip lock bag or any other simple plastic bag. • You also can cleasn and use a milk bag. You also can use jilabi mold. • Transfer the batter into the bag. For Making Jilabi: • Heat up oil for frying jilabi. • When oil is enough hot, lower down the heat to medium to low. • Cut a small corner of the batter filled bag and drop jilabi into hot oil. • Turn it round and bring the end at the center and cut the jilabi. • Fry jilabi on low to medium heat only. • Fry from one side on low to medium heat for about 3-4 minutes. • Flip over and fry form other side for another 3-4 minutes. • Take the jilabi out with the help of a skewer, shake off excess oil and transfer it into hot syrup. • Make sure the syrup is hot while dropping hot jilabi into it. • Let it soak into syrup for about 2 minutes. • Take the jilabi out into a dish. Rava jilabi is already. Tips: • Use raw rava only. Do not use roasted rava at all. If you use roasted rava the jilabi will dissolve in hot oil. • You can use 1/4 tsp baking soda instead of baking powder. • Blending rava in mixer helps in giving nice smooth texture to jilabi. Jilabi don’t have coarse texture. • Fry the jilabi on low to medium heat only. If you fry jilabi on too high heat then it will immediately change its color and the jilabi will be soft. It won’t be crispy. • If you want your jilabi crispy then fry jilabi on low to medium heat for at least 3-4 minutes from each side. • Drop hot jilabi in hot syrup it that it will be nicely soaked into jilabi.
