How to Perfectly Fry an Egg Every Single Time


Bring your favorite breakfast diner to your home and learn how easy it is to make perfect fried eggs every single time. Fried eggs are one of the most fundamental basic recipes out there. Cooking with eggs, in general, is very foundational in the culinary world, and frying eggs are a great and easy way to prepare and eat them. Frying eggs are simply cooking eggs in a small amount of fat in a hot skillet until the desired internal yolk temperature is achieved. Ingredients for this recipe: • 3 eggs • 2 tablespoons oil • salt and pepper to taste Serves 3 Prep Time: 2 minutes Cook Time 3 minutes Procedures: 1. Crack the eggs into small separate bowls. Be sure they are free of any shell particles and set aside. 2. Next, add the fat to a non-stick sauté pan and heat at low to medium heat for about 1 minute or until hot. 3. Add 1 egg and cook to your desired internal yolk temperature. See notes! 4. Season with salt and pepper and serve. Chef Notes: Sunny-Side Up Egg – Cook at low to medium heat in a pan with oil for 1 minute Over Easy Egg - Cook at low to medium heat in a pan with oil for 45 seconds on one side and then flip and cook for a further 20 to 25 seconds. Over Medium Egg - Cook at low to medium heat in a pan with oil for 90 seconds on each side. Over Hard Egg - Cook at low to medium heat in a pan with oil for 2 to 2 ½ minutes per side. Make-Ahead: These are meant to be eaten as soon as they are done cooking. How to Reheat: It’s hard to reheat these, but you can do so by gently frying them in some hot oil or in the microwave. How to Store: They store ok covered for up to 2 days. They will not freeze well. It does not matter what color eggs you use for this recipe.

Cantonese style Scrambled Eggs (黄埔炒蛋)


Whampoa stir-fried eggs! This is a classic egg dish and - what's for me at least - my very most favorite way to scramble an egg. One of the cool things about this egg frying method is that you can add in an assortment of other ingredients - when they're other stuff added in, it's generally referred to as '[whatever] huadan'. In the video we show you a simple sort with Char Siu barbecue pork and Chinese yellow chives, but feel free to get creative. A bit fuller of a recipe is over here on /r/cooking, if you prefer: 🤍 INGREDIENTS - 5 medium eggs - Seasoning for the eggs: 1/2 tsp salt, 1/2 tsp sugar, a slurry of 1 tsp cornstarch (生粉) mixed with 1 tbsp water, optional 1/2 tsp liaojiu a.k.a. Shaoxing wine (料酒/绍酒), 1 tsp toasted sesame oil (麻油), 1/8 tsp white pepper powder (白胡椒粉), 1/8 tsp MSG -or- chicken bouillon powder (味精/鸡粉). Quick note that more traditional than the 1 tsp toasted sesame oil would be to add melted lard in the mix. You can definitely do that too, but I personally find it slightly redundant in the amount of lard I'm frying in. Totally up to you - if you feel strongly on the subject, add in, let's say... 2 tsp of melted lard. - Lard, for frying. In the video I said 1.5 tbsp, but let's go 2 tbsp (I decided to measure again after cutting the footage, apologies it's one of those things I always eyeball). You can use butter for this too - preferably something clarified like ghee or clarified butter. I also tested this with bacon grease, which is delicious, but definitely gives everything an 'American breakfast' flavor. - Add-ins: Char Siu BBQ Pork (叉烧), ~60g; Jiuhuang yellow chives (韭黄), ~20g -or- the white portion of, I dunno, ~4 scallions. Optional, of course. If you're thinking about getting creative with you add-ins, I'd say that the quantity I like adding - if you don't mind me getting all grandmother with this recipe - is somewhere around a 'handful's worth'. If you want to get fusion-y with your ingredients, remove the Shaoxing wine and toasted sesame oil from the ingredient list (you can swap with relevant equivalents if you like, or just skip them). If you are adding something very salty as an add-in, be mindful of the salinity here - when I do this with smoked Chinese bacon, I'll cut the salt back to 1/4 tsp. PROCESS - Optional: separate the whites and yolks, whisk the whites until large bubbles start to form. - If using any add-ins, cook your add ins. For us, we toasted the Chinese yellow chives for 2 minutes in a dry wok (note: Chinese yellow chives are very different from Western chives, do not toast your western chives for two minutes), and stir-fried the Char Siu for ~1 min - Once you're almost ready to fry, add the whites back to the yolks. Whisk again. If you did not separate the eggs, whisk for ~1 minute or until you start to see big bubbles. - Add in the seasoning. Quick whisk. - If you have any add-ins, add the add-ins. A proper dish of scrambled eggs should tumble out of the skillet into soft, creamy curds. But great scrambled eggs require finesse. In fact, scrambled eggs might just be the easiest dish everyone gets wrong. The first mistake is assuming that nature knows best. Just because an egg contains a set ratio of whites to yolks doesn’t mean you should follow suit. Whites are rich in proteins (which help turn liquid eggs into a semisolid when cooked) as well as water, while yolks provide the fat and the flavor. We found that adding a couple extra yolks not only enriches the egg flavor, but also helps stave off overcooking, because the extra fat and emulsifiers in the yolks raise the coagulation temperature. For the same reason, we prefer half- and-half instead of the usual milk. More fat means less chance of overcooking the eggs—and richer flavor. The right technique is just as important. Most novice cooks use too much heat and the eggs turn out tough and watery. Excess heat actually wrings moisture out of the eggs (much like a sponge), leaving tough curds in a sea of unappealing liquid. That said, a blast of heat is essential to convert some of the moisture in the eggs to steam. (it’s the steam that makes scrambled eggs fluffy.) We recommend starting the eggs over medium-high heat and then turning the heat to low. if working on an electric stovetop, use a second burner (heated on low) to create scrambled eggs that will be a revelation, even to seasoned cooks. 4 Key Tips for Scrambled Eggs: Crack Cleanly: There’s nothing worse than bits of shell in the finished dish. Don’t crack eggs on the rim of a bowl. A flat surface, such as the counter, ensures the cleanest break. Scramble Thoroughly But Gently: Many cooks mistakenly think that “scrambled” refers to the cooking method. In fact, the eggs are scrambled (to combine the whites and yolks) before they go into the pan. Don’t bother with a whisk or mixer, which will overbeat the eggs; a fork is the simplest and best tool for the job. Small Nonstick Pan + Butter: You could make scrambled eggs in a conventional pan (cooks did for many centuries), but nonstick makes it so much easier. A well-seasoned cast-iron pan can work and is the best alternative if you don’t use nonstick. For eight eggs, we use a 10-inch pan—crowding the eggs in the pan traps steam and ensures fluffy results. Use an 8-inch pan when cooking four eggs (or less). Whatever the pan material or size, don’t bother making scrambled eggs unless you’re willing to use butter. The Right Fold: Despite what you might think, the eggs shouldn’t be stirred constantly while they cook. Instead, fold them with a rubber spatula into a tidy (and high) pile that traps steam. More steam means more volume. So, for light, tender eggs, be gentle and use a rubber spatula.
