(약 10-15분) 반죽의 한덩어리를 떼어내 늘려보았을때 끊어짐이 없이 얇게 늘어나고 손가락이 불투명하게 비춰지면 손반죽을 마무리해줍니다. 3. 반죽을 매끈하게 둥글리기 해준 후 깨끗한 볼에 담아주세요. 윗면을 덮고 따뜻한 곳에서 30분 1차 발효시간을 가집니다. 4. 1차발효가 끝난 반죽을 작업대로 옮겨줍니다. 반죽을 눌러 가스를 제거해준 후 6분할 해줍니다. 분할한 반죽을 밀대를 사용해 약 20cm 로 밀어 길게 만들어주세요. 위에서 아래로 반죽을 말아주며 길다란 타원형 모양을 만들어줍니다. (자세한 디테일은 영상을 확인해주세요.) 윗면을 덮고 20분 중간발효 시간을 가집니다. 5. 중간발효가 끝난 반죽을 4번과 같은 방법으로 다시 한번 더 모양을 만들어 줍니다. 반죽의 이음매 부분이 트레이의 바닥으로 가게 한 후 따뜻한 곳에서 반죽이 1,5-2배로 부풀때까지 2차발효시간을 가집니다. (약 40-50분) 6. 굽기 15분 전 - 수건을 오븐용기에 넣은 후 뜨거운 물을 충분히 담아주세요. 오븐의 바닥에 용기를 넣은 후 250도로 충분히 예열해줍니다. (예열시간 15분) 2차발효가 끝난 반죽 윗면에 쿠프나이프를 사용해 길게 컷팅을 내줍니다. 그리고 반죽 윗면에 분무기로 물을 충분히 뿌려주세요. 굽기직전 오븐을 열고 오븐안을 분무기를 사용해 물을 골고루 뿌려줍니다. 오븐의 온도를 200도로 내리고 13-15분 구워줍니다. Stick to the recipe rigidly, the quantities are very important for successful results 2. Use scales for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate 3. Use proper white bread flour with at least 12% protein, check the ingredients list on the side of the flour bag, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour, plain or all purpose flour is not strong enough for making bread. 4. Fresh Homemade French Baguettes are simply amazing! These french bread/baguettes are light and airy with a crusty exterior and a very soft and chewy interior. While it's a challenge to make "real" baguettes at home, this version is probably as close to an artisan bakery version as you're going to find. The ingredients in baguettes are pure simplicity: flour, water, salt, and yeast. Baking Tray Amazon link:🤍 Ingredients for making french bread/baguttes : Flour: 700 g Salt: 2 Tsp Instant yeast: 1 and 1/2 Tsp Water: 530 ml Method: Step 1 Prepare the dough. In to a large bowl,add all the dry ingredients and give it a good whisk to make sure everything is well combined. Pour water and mix them together.Make sure there are no dry patches in the dough. Step 2 First proofing (2 hours) Cover the dough with a plastic film and keep it in a warm environment for 2 hours or until the dough get doubled in size. Keep it in the refrigerator. Step 3 Divide and preshape the dough Take the dough out of refrigerator and divide the dough (The total weight of the dough will be approximately1200 g)The dough is sufficient to make 5 baguettes of 250 g each. Make round dough balls out of each by pulling the edges into the center. Cover with a damp cloth and let it rest for 45 minutes. Step 4 Shape the dough balls into baguette. Working with one piece at a time, flatten the dough slightly then fold it nearly (but not quite) in half, sealing the edges with the heel of your hand. With the seam side down, cup your fingers and gently roll the dough into a log (size matching your pan). Step 5 Final proofing Place the logs seam-side down onto a lightly greased or parchment-lined sheet pan or pans; or into the folds of a heavily floured cotton dish towel (or couche). Cover them with lightly greased plastic wrapper a damp cloth, and allow the loaves to rise until they're slightly puffy . The loaves should certainly look lighter and less dense than when you first shaped them, but won't be anywhere near doubled in bulk. This should take about 45 minutes to an hour at room temperature (about 68°F). Towards the end of the rising time, preheat your oven to 450°F . If your french baguette bread have risen in a dish towel or couche, gently roll them (seam side down) onto a lightly greased (or parchment-lined) baking sheet on to a non stick baking tray. If you plan on baking them on a baking stone, roll them onto a piece of parchment, and lift the parchment onto a baker's peel. Using a baker's lame (a special curved blade) or a very sharp knife held at about a 45° angle, make three to five long lengthwise slashes in each baguette. Step 6 Bake the french bread/ baguettes Load the french bread/baguettes into the oven. If you’re baking on a stone, use a baker’s peel to transfer the baguettes, parchment and all, onto the hot stone. Carefully pour the boiling water into the cast iron pan, and quickly shut the oven door. The billowing steam created by the boiling water will help the baguettes rise, and give them a lovely, shiny crust. Bake the baguettes — on the pan, or on a stone — for 24 to 28 minutes, or until they're a very deep golden brown. Remove them from the oven and cool them on a rack. Storing Baguette Baguettes are best when they are fresh out of the oven.Authentic Baguettes have a very short shelf life..It's a daily bread and should ideally be consumed the day of use. (Who can wait anyway?) If you need to store bread for longer periods of time, you should freeze it. The best way you can store a baguette is by freezing them. Step 1 Prepare a fresh baguette for freezing as soon as possible after baking. Let the baguette cool completely. Place it in an airtight freezer bag, squeeze out the extra air and zip it closed. If the baguette is too long to fit into the bag, cut it into pieces. Step 2 Store the baguette in the freezer until several hours before you need it. Step 3 Remove the frozen baguette from the freezer bag, wrap it in a tea towel and thaw it on the counter for two hours, or until fully thawed. Step 4 Heat the thawed baguette in the oven at 200 degrees Fahrenheit for a few minutes to warm it, if desired. Don't leave it in the oven for longer than a few minutes or it will dry out. -Ingredients- 200g bread flour 100g whole wheat flour 1.5 teaspoon of salt 1 teaspoon yeast 1 teaspoon honey 50ml warm water 200ml water some olive oil - recipe- 01. Mix together whole wheat, bread flour and salt well 02. Mix lukewarm water and yeast (you can also add honey ) and mix it with flour 03. Let it rest for more than 12hours. 04. Put some olive oil on the surface of the dough. 05. Gently stretch, fold and shape the dough. 06. Let it rise for another 45mins, Again stretch the dough and cut it into 8pieces 07. Stretch, fold and shape the dough as a small ball 08. Put or spray olive oil on the loaf and cover it with plastic wrap 09. Let it rest for another 30mins 10. Allow the butter to melt and stir to dissolve the sugar and salt. - When the mixture has cooled off to between 100°F and 110°F, add 6 cups of flour and the instant yeast. Using the dough hook on the mixer, knead the dough on medium speed for 5 minutes. - After the dough has kneaded, stop the mixer and check the dough. If it is shaggy and sticking to the sides of the bowl, add 1/4 cup of the reserved flour. Work the flour into the dough for 2-3 minutes and check again, adding more flour as needed. - When the dough starts to clear the sides of the mixing bowl and cling to the dough hook, remove it from the mixer. Sprinkle 1 tbsp flour on the counter and knead the dough, pushing it away, then folding it back on itself, and repeating the process. The dough should slightly stick to the counter when sitting but easily become smooth when being kneaded. - Place the dough in a lightly oiled large bowl and cover. Set the bowl in a warm place, such as an oven that has been warmed to 100°F and turned off. Allow the dough to rise until doubled, 1 to 1 1/2 hours. - Once the dough has risen, punch it down. Split into two even amounts. Working with one piece at a time, roll the dough into a 10-inch by 13-inch rectangle. Roll the dough up lengthwise, like rolling cinnamon rolls or a jelly roll. Pinch the seam tightly as well as the ends to seal. Set the loaf on a parchment-lined baking sheet pan with the seam side down and the pinched ends placed underneath the loaf. Repeat with the second piece of dough. - Beat the egg in a small bowl until smooth. Brush the loaves with the beaten egg. Sprinkle with sesame seeds if using. Use a sharp knife to make five diagonal 1/2-inch deep cuts in each loaf. Place the loaves in a warm place to rise for 1 hour. Also, preheat the oven to 375°F. - Once the dough has risen, place the loaves in the preheated oven. Bake for 20-30 minutes until the bread is a deep golden color on the top and bottom. Crusty Bread Rolls how to Recipe Demonstration in Bakery Makes about 15 x 2oz Rolls for Home Bakers recipe: Ingredients 907g 32 oz strong bread white flour 14g 0.5 oz salt 7g 0.5 oz sugar 14g 0.5 oz malt flour 36g 2oz Fresh yeast 7g 1 oz olive oil 566g 20 fl oz warm water Prep release spray Flour, for dusting Method 1. Place warm water and yeast in mixing bowl, mix around with hook in bowl, add in flour, malt, sugar, salt and oil. 2. Mix well on 1st speed for 1 min and then on 2nd speed for about 6 mins until firm dough, adding more water as required. 3. Should be elastic dough. 4. Place the dough in a bowl & cover and put in a warm place until the dough doubles in size (around 10 - 20 mins can be longer if cold). 7. Knock back rest for about 10 mins 8. Remove the dough from the bowl and start cutting into 4oz pieces and spit into 2 this makes a 2oz roll 7. Mould the dough pieces into round shape and rest. 8. Place the rolls onto baking tray and cover with clean cloth or best thing is proving box with some warm water in it, and put into a warm place until the rolls have doubled in size about 60 mins Preheat the oven to 220C/425F 9. Bake for 10 - 15 minutes or until golden-brown 10.
