Happy Bolillo Baking!! 😋 PLEASE SEE THE TIPS BELOW ❗️ Special Thank you! to Baker 🤍panaderiapasoapaso go give him a follow 🤗 Bake at 380 degrees (f) for 20 to 22 minutes *recipe will yield 12 to 14 bolillos Ingredients 6 cups of AP flour or “00” 3 1/2 cups water (🛑Tip below) 2 1/2 Tbsp instant dry-rise yeast 1/2 cup butter shortening or butter 1/2 Tbsp sugar 1 Tbsp salt (sea salt) Optional for red bolillos add 1/2 cup chili powder + 2 Tbsp of Mexican oregano Ingredients for tortas- Carnitas, mayo, beans, lettuce, pickled onions, tomato, guacamole, queso fresco, Instant pot carnitas recipe- 🤍 Salsa verde recipes- 🤍 Refried beans recipe- 🤍 ⚠️ IF you are in high humidity!!! start by mixing your dough with 2 1/2 cups of water. Once well combined you can see if you need more water. If dry start by adding 1/4 of a cup at a time, mix for another 2 minutes and adjust as needed. The dough should not be super sticky! Cloud and I are here to help and want to make sure you all are successful in your bread-making. Climate and flour will make it or break it, so take your time. You got this!!! Tip❗️ High altitude bake at 385 degrees (F)- everyone else at 380 Degrees (F) 🛑 Since everyone's climate is different I suggest you start with 3 cups of water. Once everything is hydrated and mixed; You can decide if you need the remaining 1/2 cup of water. Your All Purpose flour may be different than what's available in the US. If in doubt, choose a flour that has between 11-12% protein and you should be in good shape! ALSO if you have never made bread before, this dough is 78% hydration and will be slightly sicky. Use 75 less grams water in the final dough and it will be much easier to handle. PREFERMENT (POOLISH) 150g or ROUGHLY 1 C. AP FLOUR 150g or ROUGHLY 2/3C. WATER (ROOM TEMP) 1 small pinch YEAST - let the poolish ripen on counter 4-24 hours, preferably at least 16 DOUGH 280g or 1 1/4C.WATER (98F) 2g or 1/2 TSP YEAST ALL OF THE POOLISH 350g or 2 1/4 C. AP FLOUR 50g or ROUGHLY 1/3 C. WHOLE WHEAT FLOUR 10g or roughly 1.5 TSP KOSHER SALT BAKING TIMES/ TEMPS METHOD 1: 525 the whole time for 14-18 minutes (spray loaf for steam) METHOD 2- Preheat Dutch Oven at 500 for 30-40 minutes, bake at 500 covered for 12min and 485 uncovered for additional 8-12 depending on oven and desired color. METHOD 3: Preheat Dutch Oven at 485-500 for 30-40 minutes, bake at 485 covered for 18 minutes, and 485 uncovered for additional 25-30 depending on oven and desired color. In a large bowl combine with your hands the flours and water until completely mixed together. Let rest for 10 minutes. 2. Next, sprinkle the salt and yeast overtop and mix it into the dough by pinching, stretching and folding the dough over for 4 to 5 minutes. 3. Cover and rest the dough in a warm dark place for 15 to 20 minutes before folding the dough over 5 to 6 times. 4. Cover and rest for 45 to 60 minutes and then fold the dough over 5 to 6 times again. 5. Cover and rest for 2 hours or until it has tripled in size. 6. Dust a clean surface with flour and place the dough onto it. Sprinkle the top with flour and fold the dough over in thirds 3 to 4 times and then begin to mold the dough into a ball by cupping around the dough into the bottom. 7. Place the dough into a floured Benetton and cover and rest for 60 minutes. 8. In the meantime, place a small Dutch oven pot into the oven on 475° for at least 30 minutes. 9. Flip the dough right into the hot Dutch oven pot, cover it and return it to the oven and bake for 30 minutes 10. Let cool for 20 to 30 minutes before slicing and serving.

Easy and delicious garlic bread recipe 135ml water 12g white sugar 3g active dry yeast Mix and wait for 5 minutes 1 egg Whisk the egg with a fork Save about 10ml for later Mix well 300g All purpose or bread flour 3g salt Mix well 15ml olive oil Knead the dough Move to a work surface and continue to knead the dough Cover and rise until double size 50g softened salted butter 4 cloves of garlic Mash the garlic using a mortar and pestle Add the garlic to the butter 10g chopped parsley Mix well Loaf pan size: 9x5" Spread unsalted butter in the pan Deflate the air bubbles Sprinkle some flour Flatten the dough with a rolling pin The dough should be about 18x35cm Measure the width of the pan on the dough Spread the garlic butter on the dough 80g mozzarella cheese Roll up the dough from the short end Pinch the edges Cut the dough into 10 pieces Place the bread into the baking pan Cover and rise for 30-45 minutes Brush egg wash Bake for 25-30 minutes at 356F/180C Done! Today I'll be sharing a super delicious and quick flatbread recipe! 80ml milk 15ml yogurt Mix well 4g white sugar 1.5g instant yeast Mix well 7.5ml olive oil 150g All-purpose flour A pinch of salt Mix until the ingredients are combined Knead until the surface is smooth Add some oil to the bowl Cover and rise until double size Move the dough to a work surface Shape the dough into a ball Cut the dough into 8 pieces Take a piece of dough and shape it into a ball Repeat with the other pieces of dough Cover and rest for 10 minutes After 10 minutes Sprinkle some flour Flatten out the dough with a rolling pin The diameter is about 10 cm Place the dough in a baking pan lined with parchment paper Cover and rise for 30 minutes Bake for 6 minutes at 482F/250C The bread inflates in the center! I will be frying the other two pieces of dough This recipe can be baked or fried in a pan! Medium heat Place the dough in the pan without oil Flip over when the side is golden brown Continue to fry The bread also inflates when fried! IMPORTANT NOTE: You need to use flour with a high protein content to achieve the same results. I am using a non-speciality all-purpose flour with a protein content of 13.2% The protein content is very important as it contributes to building the gluten in the bread. You will not have the same result if you use a low protein flour such as 10% or 11%. For this recipe, I would not use flour with a protein content under 12.5%, but would ideally suggest flour in the region of 13% You can normally find the protein listed on the side of the bag in the nutritional details If you use flour with a lower protein content then you will probably find the dough is very wet and sticky and will not develop the gluten network required to hold the shape. There is no kneading as time will build the gluten network. There is also no reason to keep folding this dough. The final hydration is 71% and makes for very manageable bread dough. Please note that depending on the flour you use the “stickiness” may vary. My kitchen temp was in the region of 16-18c. My starter is fed at a ratio of 1:1:1 (Starter / water / flour) and therefore remains at 100% hydration making future recipe calculation easy. The flour is divided into 75% white flour and 25% wholewheat flour. Again, if you have any questions let me know in the comments. My banneton size: 25cm across the top length, 15cm across the top width, and 8cm deep. This was advertised as 500g banneton but for my use, I find 750g works best. My recipe works out to 762g which fits perfectly! Scheduling You can use the fridge to put the “brakes” on your baking schedule. For example, you could mix your dough at 17.00 and complete through to the end of the bulk ferment before going to bed at 23.00. In this case, you could cover your dough well, I normally use a plastic supermarket bag, and then pop it in the fridge overnight. The next day you would let the dough come back to room temperature and the shape and place it in the proofing basket. You can also refrigerate the dough while it is in the proofing basket and hold it overnight. Just remember that you will need to flour your basket very well as the dough may have more of a tendency to stick. You can bake your dough directly from the fridge with excellent results. There is no need to let it come back to room temperature.

Stir until dissolved, then add in the egg and salt. Add the flour one cup at a time. Once the mixture is too stiff to mix with a fork, transferred it to a well-floured countertop. Knead for 4-5 minutes, or until smooth and elastic. Add more flour if the dough is continues to stick to your hands. Shape the smooth dough into a ball and place in a bowl. Cover with a dish cloth and let rise in a warm place for one hour (or until the dough has doubled). Grease a standard-sized loaf pan (9"x5"). After the first rise is complete, punch down the dough and shape it into a "log". Place it into the loaf pan and allow to rise 20-30 more minutes, or until it starts to peek over the edge of the pan. Bake in a 350* oven for 25-30 minutes, or until lightly browned. Learning to calculate individual ingredients for a certain dough mass will make you fit the loaf in the tin every time. It will take out the guess work when making a certain number of breads of certain weight. Be it loaves or rolls, you will always know the exact amount of each ingredient needed. Loaf tins come in standard sizes for the most part. Usually in 0.5lb (225g) increments. I own tins that are 2lb (900g), 1.5lb (680g), 1lb (450g), and 0.5lb (225g). Saying that, the suggested weight will not always be a rule to follow. If you are making a lean dough that is not meant to be very light and fluffy, then you should make it according to the suggested weight of the tin. But if you are making an enriched loaf which will be rising high, then you should aim for a lower dough mass as it may climb out of the tin too much and not look very appealing. Rarely, would there be a case for using more dough than suggested on the tin. Perhaps if making a rye bread which can be quite dense. This formula is not only useful for making the loaf for the tin. When it comes to making several individual rolls or loaves, then these calculations will come in handy too.
