Macaron Shell | French Method Whites 100g Sugar 90g *About 1/8 tsp of cream of tartar, mixed into the sugar if you want to add it Almond Powder 130g Powdered Sugar 130g Sift the powdered sugar and almond powder together. You can mix them in a food processor first to get an extra fine mixture, though it is not absolutely necessary. —Slowly add the sugar (and cream of tartar, if using) to the egg whites and whip to stiff peaks. If you are adding in a colorant, gel or powder, I recommend adding it in after you have added the sugar and before you have reached a stiff peak—about at 70% of the way done. —Fold the dry ingredients into the meringue in several additions. Continue folding and scraping the batter against the sides of the bowl to finish the macaronage process. The standard macaron recipe calls for a “ribbon” stage, where it will look like the batter flows like a ribbon off your spatula when you lift it from the bowl. —Transfer the batter to a piping bag fitted with a circle piping tip (803-806 are the usual sizes most bakers prefer for this). Pipe onto a prepared baking trayI prefer to pipe my macarons onto a silpat. Tap the trays to release any air bubbles and smooth the tops of the shells. —After piping the macarons, rest for 15-40 minutes depending on your location/humidity and bake (my convection oven likes one tray —placed in the middle of the oven— at 300F for 16 minutes18 minutes). Cool and match before filling. I like AmeriColor gel food coloring and The Sugar Art powdered food coloring for making macarons! 🤍 🤍 Haystack Chocolate Ganache 250g cream 20g honey 25g butter 35g peanut butter 200g 58% Chocolate 100g butterscotch chips Bring the cream to a scald and pour over the honey and chocolate and butterscotch chips. Mix to combine then emulsify in the butter and peanut butter with an immersion blender. Pour into a plastic wrap lined pan or container and cool completely before using. *If you don't use or understand grams, please use an online measurement conversion tool! Personally I think that recipes should be measured the way they are created, and I prefer the precise nature of using gram measurement* Thanks for watching and I'll see you next time! Ingredients: 20-22 macarons 3/4 cup almond flour 1 cup powdered sugar 2 egg whites (extra large egg) 1/8 tsp salt 1/2 tsp vanilla extract (optional) 1/4 cup sugar red and green food coloring Filling: 1/4 cup (4 Tbsp) unsalted butter (room temp) 1/2 cup powdered sugar 1/2 tsp vanilla extract (optional) a pinch of salt Icing: 1 cup powdered sugar 1 tsp fresh lemon juice 2-3 Tbsp milk #christmasmacarons #macaron #cookies #macaronswissmethod #recipemacaron #swissmacaron #tutorial ● Subscribe to my channel here: 🤍 ● Subscribe to my second channel here: 🤍 Instructions: 1.Sift 3/4 cup of almond flour and 1 cup of powdered sugar, set it aside. 2.Place 2 egg whites, 1/4 cup sugar, and 1/8 teaspoon salt in a heat proof bowl. Over a pan of simmering water, whisk the whites and sugar until sugar completely melted. (You can test the mixture by touching the mixture with your fingers, and if you feel any granules of sugar, just keep stirring mixture over the water bath. ) 3. Put the bowl on the table and beat egg whites and sugar with a mixer until you see stiff glossy peaks form. (It took me about 2-3 minutes, you can beat the egg whites for longer because it depending on the mixer.) *Do not over beat egg whites – over beating the egg whites will introduce more air and create an airy, hollow cookie. *If you under mix the egg whites macarons will not dry. 4.Add the sifted flour and powdered sugar and gently fold the batter until you see no more dry ingredients in. Divide the batter into two bowls. Color them with red and green food coloring. Fold the batter until it flows, like lava off the spatula or until ribbon formed. *Do not over mix or under mix your batter. *Over-mixed batter will result in flat discs, unlike light and fluffy cookies. 5.Transfer the batter into a pastry bags with a round tip. (I used #12 plain round tip you can use 1A and 2A too.) 6.Pipe 3/4'' round cookies onto a baking mat. Tap the baking sheet on a flat surface 10-15 times, this will get rid of any air bubbles and will prevent from cracks. If needed, use a toothpick to pop air bubbles and smooth out the shells. 7.Let the macarons sit at room temperature until the tops are no longer sticky to the touch and the surface is dry, 30 minutes to 1 hour, depending on the humidity. 8.Preheat oven to 300˚F. Place the tray on the middle shelf and bake 12-15 minutes. (Since every oven is different, you need to pay attention to how your cookies are baking and adjust the temperature and cooking time if necessary.) *Find what works best for you. :))) *In the middle of the baking process macarons, you need to open the oven door once to let off steam, and then close it. 9.Let the macarons cool down before filling. Icing: 1.In a small bowl combine 1 cup of powdered sugar, 1 tsp lemon juice and 2-3 tablespoons of milk. (The consistency should be flowing but not too liquidy. 2.Place the icing in a piping bag and apply snowflake patters onto the macarons. 3.Let them dry for 5-15 minutes. Filling: 1.Place 4 tablespoons of soft unsalted butter in a large bowl, beat for about 1 minute. 2.Add 1/2 cup powdered sugar, 1/2 teaspoon vanilla extract, and a pinch of salt, beat together on medium- high speed until well blended. 3.Pipe filling onto half of your macaron shell and sandwich gently with the second macaron shell. *They are best eaten after 24 hours since the flavors will be absorbed into the shell. This French macaron recipe makes a batch of the most dainty, delicate, and delicious cookies that will float right into your mouth and disappear. I’ve packed ALL my tips into this video to help you out because no there really isn't any one foolproof, easy macaron recipe, they are finicky little guys.... If your macarons aren't picture perfect they will still be delicious, so grab you ingredents and let's get baking! Recipe: 🤍 TOP TIPS FOR MAKING FRENCH MACARONS THE MERINGUE!!!! That meringue HAS TO BE STIFF! I had no idea French meringue could be whipped to such a thick marshmallowy consistency but all it takes is a bit of extra whisking. You’ll notice the meringue start to fill the whisk when you’re getting close to the right stage. Age your egg whites! Separate the eggs, place the whites in a clean glass, cover with plastic wrap and let them hang out in the fridge for a few days before using. This will dehydrate them and make them perfect for macarons. Sift, Sift, SIFT! Those larger pieces of almond flour will mar the surface of your macarons. Best practice is to sift then whiz in the food processor and repeat two more times. Discard the larger particles, don’t try to press them through the sieve. The mixing will take some practice, you will fold and fold the batter and then use the spatula to GENTLY press the batter against the bowl. You want to remove some of the bubbles but not to many… Continue this until it reaches a thick “lava” consistency. It should slowly fall off the spatula in ribbons and be able to form a figure eight without breaking. Pipe the macarons perpendicular to the surface. If your tip is pointing a bit in any particular direction when you pipe the macarons might be oblong or malformed. Add your coloring to the meringue after it reaches the soft peak stage. When you are finishing the piping motion stop squeezing the bag and pull up with a circular motion. The macarons will be best after 2-3 days resting in the fridge.
