Full written recipe for Restaurant Style Dal Makhani Recipe Sabut urad dal 250 grams (whoe black gram lentil) Water to rinse & soak Water to cook – 4-5 litres + as required For the tadka: Desi Ghee - 4tbsp Ginger garlic paste - 2 tbsp Deghi/ kashmiri red chilli powder - 3 tbsp Fresh tomato puree - 500 grams Salt to taste White butter - 4 tbsp A pinch of homemade garam masala (optional) Toasted kasuri methi - 1/2 tsp White butter - 3 tbsp Fresh cream - 1/2 cup Method: • Wash & rinse the dal really well. You will have to scrub the dal between your palms so that all the impurities are discarded & also the dal will slightly loose its color. You will have to wash the dal for 3-4 times, I washed it for 3 times. • Once the dal is washed & the water is clear, add enough water to soak & soak the dal for a minimum of 4-5 hours or overnight. • Once the dal is soaked, drain the excess water & now add the dal into a large vessel. • Add enough wate & bring the water to a boil. • Now lower the flame & cook the dal for 60-90 minutes. Stir in intervals but with very light hands & not in very short intervals. • I do not add the salt early into the dal & prefer to add it in the tadka & towards the end. • Scum will start to form on the top, remove & discard. • Once the dal is cooked well, you should be able to crush the dal between your fingers very easily & you should feel the starchy goodness squeezing out of the dal. • You can continue to cook the dal until you prep the tadka or set it aside. • You can also cook the dal in a pressure cooker for 4-5 whistles & you would require lesser water as per your pressure cooker requirements. For the tadka: • Add desi ghee into a vessel, now add in the ginger garlic paste. Cook on low flame for 2-3 minutes. Now add in the red chilli powder & cook om low flame for a minute. Remember to not burn the chilli. If you feel the heat is too high, just sprinkle some water to avoid the burning of the chilli powder. • Now add in the fresh tomato puree, salt to taste & cook on medium to high flame until the tomatoes are cooked really well & the ghee is released. • Now set the dal again on a flame & add the tadka to it. • Mix well & now add the white butter, you can add unsalted butter as well, or use normal butter & adjust the salt accordingly. • Now cook the dal on low flame for 30-45 minutes, longer the better. Keep stirring in intervals. • Use a whisk or a wooden mathani to mash the dal to a consistency you like. The more you mash, the creamier would be the texture. • After about 45 minutes, add toasted kasuri methi powder, a pinch of garam masala which is optional but do add because we did not use any whole spices. Mix well. • Now lower the flame to the minimum & finish with white butter and the fresh cream. • Mix gently & cook for 4-5 minutes. • The dal is ready to be served. • Remember, this dal tends to thicken very quickly so whenever you feel that the dal is very thick, add HOT water, remember the water should be hot, even when you cook this dal in advance the dal will be really thick if it gets cold, reheat, adjust the consistency with hot water, bring to a boil before you serve. Add water as required, garlic juice, degi red chili powder, turmeric powder, coriander powder. Add salt to taste and unsalted butter mix everything well. Cover it with the lid and cook on medium flame for 4 to 5 whistles or until the dal is 80 % cooked. For Ginger Garlic Paste In a grinder jar, add garlic cloves, ginger, green chili, salt to taste, oil and grind into a smooth paste and keep aside for further use. For Masala In a pan, add cumin seeds, black peppercorns, salt to taste, dry fenugreek leaves and dry roast on medium flame for 2-4 minutes. Transfer it into a grinder jar and grind into a fine powder and keep aside for further use. For Tempering In a heavy bottom pot, add ghee, once it's hot, add prepared ginger garlic paste and saute it well. Add degi red chili powder, a pinch of asafoetida and saute well. Add fresh tomato puree, salt to taste and saute well on medium flame for 4-5 minutes. Add boiled dal and cover it with the lid and cook for 5-10 minutes on medium flame. Stir in between, with the help of a ladle mas the dal. Remove the lid, finish it with unsalted butter and mix well, add prepared masala, dry fenugreek leaves and give it a last boil and switch off the flame. Daal Makhani Recipe in English Ingredients: - Black Lentil boiled 1 cup - Red Kidney Beans boiled 2-3 tbsp - Butter 3 tbsp - Oil 1 tbsp - Ginger Garlic (g/g) Paste 2 tsp - Coriander Leaves 2 tbsp - Green chilies chopped 2 - Salt to taste or 1 ½ tsp or to taste - Red Chilies powder 1 tsp - All Spiced mix powder 1 tsp - Cumin Seeds 1 tsp - Cream ½ cup - Julienne Ginger 2 tbsp - Fenugreek leaves ½ tsp - Tomatoes chopped 4 medium - Onion chopped 1 medium - Water 1 Cup (according to required consistency) Directions: - In a pan add oil and butter. When hot add cumin and fry. Now add onion and fry till light gold. - Now add GGP, green chilies, tomatoes, and all the spices and mix well, when water 1/4th left add lentil and kidney beans and mix and mash till lentil and beans breaks. - Now add water according to desired consistency and keep mashing with the help of spoon till mix well. - Add cream, ginger and fenugreek leaves and simmer for 2-3 minutes. - Serve with Naan Or Zeera Rice. Please note that for creamy texture, you can grind tomatoes and onion mixture and boil lentils until very soft. Daal Makhani in Urdu Ingredients: - Kali Daal boiled 1 cup - Rajma/Lal Lobia boiled 2-3 tbsp - Makhan 3 tbsp - Tel 1 tbsp - GG Paste 2 tsp - Taza Dhania 2 tbsp - Hari Mirch chopped 2 - Namak to taste or 1 ½ tsp or to taste - Lal Mirch powder 1 tsp - Garam Masala powder 1 tsp - Zeera 1 tsp - Cream ½ cup - Julienne Adrak 2 tbsp - Kasuri Methi ½ tsp - Tamatar chopped 4 medium - Piyaz chopped 1 medium - Pani 1 Cup (according to required consistency) Directions: - Pan main makhan aur oil shamil karein aur jab garam hojaye to is main piyaz shamil karein aur halka sunhera karlein. - Ab is main GGP, hari mirch, Tamatar aur tamam masala daal ke bhoonay. Jab 1/4th Pani reh jaye to is main daal aur lobia/rajma daal kea chi tarah mash karein ke daal aur lobia tootne lag jaye. - Is main apni marzi ki consistency ke mutabiq paani shamil karein aur saath saath mix karte rahein. - Akhir main cream, adrak aur kasuri methi daal ke 2-3 min ke liye dump e rakhein. - Naan ya Zeera wala chawal ke saath pesh karein. Agar daal buhut ziada smooth and creamy chahiye tu tamatar aur pyaz ke mixture ko ek dafa grind karke wapis cholhe pe le aaye. Daal aur lobia ko bhi apni marzi ke hisab se ziada boil karlen.

Put some Water in the Pressure Cooker and put the soaked Dal in it. Put some Salt, Red Chilli Powder, Black Cardamom, Ground Tomato, Butter Cube in it and give it 4-5 whistles and then cook it on slow flame for 5 mins. Then release its pressure open the lid and take out the Black Cardamom from it. put Milk, some Water in it gradually and mash the Dal with the masher. Then keep the dal for heating, and cook it on a slow flame for 5-10 minutes. For Tadka, put some Oil, Cumin Seeds, grated Ginger & Green Chilli, and Butter, Dried Fenugreek Leaves, Red Chili Powder then put the Tadka on the Dal. Garnish it with some Fresh Cream & Coriander Leaves. In this way, Dal Makhani will get ready. For Naan, take a steel bowl, put Wheat Flour by sieving it. Put Baking Powder, Baking Soda, Sugar Powder, Milk Powder, Oil, Curd & mix it well. Bind the soft dough using water. Knead the dough, cover it and keep it for 30 mins. After then make dough balls & roll them, put the grated Cottage Cheese/Paneer in it and cover it by applying some Water to it. Then roll it again, then apply Water on the backside of Naan. Cook the Naan on Tawa and cook it on the direct flame as shown in the video. Dal Makhani actually is a recipe inspired from the Ma Mothi dal- Rajma and Black Urad Dal, that is cooked in every Punjabi home. Dal Makhani was 1st created at the Moti Mahal Restaurant Darya ganj, New Delhi by 2 friends who came to Delhi from Lahore after the Partition. The idea was t ogive the rustic Dl a more ‘shahi’ taste and appeal as liked in Delhi. So they added the same gravy that they used to create the famous Butter Chicken, to the Dal and that is how Dal MAkhani was born. And today Dal Makhani can be found on the Menu of any Indian Restaurant all over the world! So enjoy the recipe! Thank you for watching! 💫 And don’t forget to subscribe here: 🤍 Recipe : Dal Makhani Ingredients: 1cup Blabk Urad Dal ¼ cup Rajma (chitra) 4-5 cups Water 100gms Butter 1tbsp Ginger, finely chopped 1 large Onion, chopped 1 tbsp Garlic, finely chopped Salt to taste 1st Tempering: 50g Butter 1 ½ cup Fresh tomato Puree 1½ tbsp Kashmiri Chilli Powder 1 tbsp Butter ½ tbsp Garlic chopped 1 tsp Kashmiri Red chili powder 2nd Tempering: 2 tbsp Butter 1 tbsp Garlic, finely chopped 1 tsp Kasuri methi ¾ cup Cream Method: Soak the dal & rajma together for at least 3 hours. Scrub the dal well and wash it clean. Add 5 cups water, chopped onion, chopped ginger and boil in a pressure cooker till dal splits and becomes thick (approx.. 6-7 whistles) Roughly chop the tomatoes and puree them. In a pan melt butter and the Kashmiri chili powder, stir and immediately add the tomato puree. Cook the tomatoes till they turn very thick & butter oozes out. Add the cooked tomatoes to the dal. Add salt to taste and more water as required. Cook the dal for at least 30mins. In a separate pan heat remaining butter and add chopped garlic. Brown the garlic and Add kasuri methi. Stir and immediately add it t to the boiling dal. Finish by adding cream to the dal, mix well and remove from heat. India's most famous dal Dal Makhani, an amazing dish from Punjabi cuisine is prepared with lentils and beans combined with fresh cream (malai), spiced and cooked to get a creamy texture that enhances the flavor of the dish 🤍 ingredients 250 grams Black grams 60 grams butter 1 tbsp coriander pdr 1 cup cream 1 tsp cumin 1 tsp garam masala whole or pdr 2 tbsp Ginger garlic paste 50 grams Kidney beans 1 tbsp oil 10 grams Red chilli powder 1 to taste Salt 5 number tomatoes pureed 1 piece turmeric optional Directions • Thoroughly wash black grams, bengal grams and kidney beans. Then soak it in water (2 glasses) for about few hours . and cook till dal is cooked to mashable consistency • 2heat oil in a heavy bottom pan. • add cumin ,garam masala(optional) ,you can skip garam masala and add little garam masala pdr at last . • Add ginger-garlic paste ,turmeric and add tomato puree and cook well for 10 min in medium flame covered • Add chilli powder, and salt. Cook until the mixture thickens into pulpy sauce (about 3 mins). • Then add cooked grams and kidney beans to the mixture. Heat for 4-5 minutes. You can add a little water if you find it too thick. • Add the remaining butter and cream and cook for 10 minutes. • Dal Makhani is ready to serve. you can increase the dal to tomato ratio if you want .
