It's that time of the year once again. We're here to celebrate a Chinese New Year, and what better way to do it than to eat at some of the best Chinese restaurants in Las Vegas. I've been wanting to do this video for awhile anyway, so what better time than to do it for Chinese New Year, the year of the Tiger for 2022. I'm going to show you places where you can get mapo tofu, dumplings, lamb, handmade noodles, pecking duck, pork belly, and a little surprise that not even I was expecting. Sichuan is one of the greatest cuisines of China, and the world, known for numbing Sichuan peppercorn, chili oil, layers of fermented and pickled ingredients, and huge amounts of flavor. I was very excited to go on an ultimate Sichuan Chinese street food tour to learn more about this fascinating cuisine. Here’s the main food and restaurants we ate at in this video: ShiEr Qiao Baozi - One of the most common things to eat for breakfast in China is baozi, and this corner little restaurant is extremely popular and their family favorite spot for baozi in Chengdu. The minced pork version, which is their main one, is probably the best baozi I’ve ever had. The meat filling was delicious, but really it was the bread, the dough that stood out. Total price - 24 RMB ($3.38) Duck Blood Snack - One our way to the market, we had another Sichuan street food classic, coagulated duck blood drenched in chili oil. Delicious. Total price - 7 RMB ($0.98) Wang Ma Roast Rabbit - One of the most popular Sichuan Chinese street food snacks is roasted rabbit, shredded and loaded with chili oil, Sichuan peppercorn, and chili oil. What an ultra tasty snack. Half rabbit - 33 RMB ($4.65) Market - The market is vibrant and full of action and energy, and a perfect place to get a feel for the fresh ingredients used in Sichuan food cooking. The highlight for me was tasting fresh Sichuan peppercorn, both green and red versions, which were so pungent it was almost hard to breath from chewing on a few. Luckily, sugar reduces the effect of Sichuan peppercorn, and so we ate a persimmon. What a food experience! Noodles - One of the most well known of all Sichuan Chinese street food dishes are chili noodles, and so Anita brought us to one of her favorite spots. The noodles were cooked perfectly, then tossed in chili oil and herbs, with extra pork meat. They were unbelievably tasty. Price - 12 RMB ($1.69) per bowl Sifang Dumpling Shop - Finally, for the last morning snack before lunch, we ate some Sichuan dumplings, again, one of the most eat street foods of Chengdu. The dumplings were boiled, then seasoned with chili oil, garlic, and sesame seeds. This dish is equally famous as peking duck in China. However, it seriously is one of those "endangered dishes" that's slowly growing extinct. Cooking it does take time and patient. Also, because this dessert is really colorful and pretty, it represents luck and sweetness for the new year. As you know, we almost rarely cook on weekdays because of work. Usually we just dabao (get takeout) from the coffeeshops near our place and one of our favourite choices of dinner is economy rice or more fondly referred to as Cai Png in Hokkien. Everything can be ready within 20 minutes. Better and faster than take out. You can also take it to work as lunch because it reheats in the microwave really well. The flavor if impeccable, it is nutty, savory. The chicken is tender and soft. The noodles are very filling but well balanced with the veggies. INGREDIENTS 1 lb of fresh egg noodles 12 oz (340 grams) of chicken breast 1/3 tsp of salt 1/3 tsp of baking soda 1/2 tbsp of Chinese cooking wine (Amazon Link - 🤍 Black pepper to taste 3 cloves of garlic, sliced thinly 1/2 inch of ginger, julienne 4 oz of carrot, julienne 1/2 of a red bell pepper, julienne 3 mushroom, sliced thinly 4 oz of snap peas To Make The Sauce 1.5 tbsp of Soy sauce (Amazon Link - 🤍 1 tbsp of dark soy sauce (Amazon Link - 🤍 1 tbsp of oyster sauce (Amazon Link - 🤍 1 tbsp Hoisin sauce (Amazon Link - 🤍 1 tbsp of Chinese cooking wine (Amazon Link - 🤍 1/2 tbsp of pure Peanut butter (Amazon Link - 🤍 1/2 cup of water INSTRUCTIONS Slice the chicken breast thinly. Marinade with garlic, ginger, salt, Chinese cooking wine, black pepper, and baking soda. Baking soda will break down the meat fibers and tenderize the chicken. It will give you that melt in your mouth texture. Julienne the carrot, bell pepper. Slice the mushroom. Cut the scallions. To save time, you can buy a bag of pre-cut, mixed vegetables from the supermarket. In a sauce bowl, combine all the sauce ingredients thoroughly. The peanut butter makes the sauce creamier and thicker, helps the flavor to wrap around the ingredients. You have to break up the peanut butter a little bit first so it doesn't clump up. Bring a pot of water to a boil and cook the noodles until 80% done. Drain completely. Do not over cooked the noodles otherwise they will turn soggy when you finish them in the wok with that lomein sauce. Meanwhile, turn the heat to high and heat your wok until smoking hot. Toss in the marinade chicken and stir for 2 minutes or until it just changes color. Add all the vegetables except for the scallions. continue to stir for 1 minute. Add the well-drained noodles along with the lomein sauce. Keep stirring over medium heat until all the sauce is absorbed. As soon as the sauce is gone, you have to turn off the heat.
