For healthy soup and salad recipes, watch more of the Basics: 🤍 Download free recipes from Chef Meredith Laurence: 🤍 Follow Blue Jean Chef on Facebook: 🤍 Classic Caesar Salad Serves 4 Ingredients: 2 egg yolks juice from ½ lemon ¼ teaspoon salt freshly ground black pepper 1 teaspoon anchovy paste ½ to 1 clove garlic, finely minced or mashed into a paste ½ cup canola oil ¼ cup olive oil 4 thick slices of Italian bread, cut into 1-inch cubes olive oil salt and freshly ground black pepper 3 or 4 hearts of Romaine lettuce, washed and dried Parmigiano-Reggiano cheese Directions: 1. Make the croutons by pre-heating the oven to 375ºF (or pre-heat the air fryer to 370ºF). Toss the cubed bread in a bowl with the some olive oil, salt and freshly ground black pepper. Spread the cubes out on a baking sheet and toast in the oven for 10 to 15 minutes or until nicely toasted (or air-fry for 5 minutes). 2. Make the dressing by whisking the egg yolks, lemon juice, salt and pepper together. Add the anchovy paste and garlic and whisk well. Slowly drizzle in the oils, whisking constantly. Add very slowly at first, so that the sauce doesn’t break. Whisk patiently, adding the oil slowly until all the oil has been incorporated. 3. Cut the Romaine leaves into bite-sized pieces (or leave them whole if desired). Toss the lettuce leaves with some of the dressing. Toss the croutons in at the last minute and plate. 4. Using a vegetable peeler, peel big shavings of Parmigiano-Reggiano cheese on top and serve with some freshly ground black pepper. Lighter Caesar Salad Serves 4 Ingredients: juice from ½ lemon (about 2 teaspoons) ¼ teaspoon salt freshly ground black pepper 1 teaspoon anchovy paste ½ clove garlic, finely minced or mashed into a paste ¼ cup plain natural yogurt 2 teaspoons olive oil a couple dashes of Worcestershire sauce 4 thick slices of Italian bread, cut into 1-inch cubes olive oil salt and freshly ground black pepper 3 or 4 hearts of Romaine lettuce, washed and dried Parmigiano-Reggiano cheese Directions: 1. Subscribe ► 🤍 Crazy enough Caesar salad originated in Tijuana, Mexico by an Italian named Caesar Cardini. Cardini moved to California in the early 20th century and often times during prohibition he, like many others, would head to Tijuana for a drink. He quickly opened a restaurant and a few years later created the Caesar Salad. Who got that story right? Ingredients for this recipe: • 2 heads of cored romaine lettuce cut into 1 ½” pieces • ½ cup shaved parmesan cheese • 1 croutons recipe • 1 Caesar dressing recipe (there will be some leftover) • sea salt and fresh cracked pepper to taste Serves 8 Prep Time: 5 minutes Cook Time: 0 Procedures: 1. In a large bowl add in the lettuce, cheese, croutons salt, and pepper. 2. Using a spoon add the desired amount of dressing to the inside of the bowl around the lettuce touching the bowl (see video). 3. Thoroughly toss the greens using tongs until the lettuce, cheese, and croutons are coated in the dressing and serve. Chef Notes: Make-Ahead: This recipe is meant to be eaten as soon as it is mixed together with the dressing. it can however be made the day before if the lettuce, dressing, cheese, and croutons are kept separate covered in the refrigerator. How to Store: Place each ingredient in its own plastic container or bag and keep in the refrigerator for up to 3 days. This recipe will not freeze. Feel free to add in more dressing, croutons, or Parmesan cheese as you see fit. Be sure to serve the salad immediately after tossing in the dressing. If there is another romaine lettuce shortage, green leaf or red leaf lettuce as a substitute will work. Kale is sometimes used as a substitute or as the main green in this recipe. Transfer this to a bowl and add the mustard, lemon juice and Worcestershire sauce. Whisk to combine. Add the egg yolk and while whisking vigorously, add the olive oil in a slow, steady stream to emulsify. Start with ¼ cup of oil and add to the consistency desired. Add the parmesan and season with black pepper. This dressing is enough for one 1-2 heads of lettuce (traditionally Romaine) and should be used right away.

Preheat medium sauté pan over medium heat. Add squeeze of olive oil, and place tenders in pan. It's ok if they're cozy in the pan. We're searing and steaming. Cover and allow to cook for about 5min. Flip tenders, cover again, and reduce heat to low to cook for another 2-3min. Tenders are done when internal temp reaches 145F/62C. Remove from pan and allow to res briefly. Wipe oil out of pan, increase heat to med-high, and add 50g or 1/4c oil. Once shimmering, add breadcrumbs. Toss to combine. Add pinch of salt. Continue stirring and tossing while cooking to a nice golden brown for about 60 seconds. Remove from pan and allow to dry and cool on a towel. CAESAR DRESSING: ▪1 large egg ▪45g or 1/2c grated parm ▪30g or 1 can of oil packed anchovies, rinsed well (SUBSTITUTE 25g Worcestershire if you don't like chovies + add 15g more parm) ▪1 clove garlic ▪50g or 3 1/2Tbsp lemon juice ▪10g or 2tsp water ▪275g or 1 1/4c neutral oil (canola, light olive oil, avocado, etc) Add all ingredients except oil to tall sided container and blend with immersion blender until solids are broken down then slowly stream in oil while blending. TO ASSEMBLE SALAD (for 2 large salads): Add lettuce, chopped capers, 4 very large pinches of grated parm, 4 very large pinches of breadcrumbs, chicken tenders (chopped), and top with 4-6+ spoons of caesar to your taste. ORIGINAL CAESAR'S SALAD RECIPE: (From San Diego Union Tribune/Article by Michael Gardiner) Serves 4 20 romaine lettuce leaves 3 tablespoons minced anchovies 3 tablespoons minced fresh garlic 1 tablespoon Dijon mustard 2 tablespoons Worcestershire sauce 1 tablespoon lime juice 1 egg yolk 3/4 cup extra virgin olive oil 3 tablespoons grated Parmesan cheese 4 large oven-baked garlic croutons Fresh ground black pepper Clean the romaine lettuce leaves and crisp them in a refrigerator for at least one hour. In a wooden bowl combine the anchovies, garlic, mustard, Worcestershire sauce and lime juice and whisk with a wooden paddle until it forms a paste. Once the ingredients are combined, beat in the egg yolk to give the dressing texture. Continue mixing and add the olive oil slowly in a thread until you have reached the desired volume and texture. Add whole romaine lettuce leaves to the bowl and gently roll them until they are coated with the dressing. Serve on a platter and top with the Parmesan cheese and croutons. Add freshly ground pepper to taste.

For the Caesar dressing: Beat the egg yolks in a large mixing bowl. Add the lemon juice, Worcestershire sauce, anchovy and garlic and whisk to combine. Slowly drizzle in the olive oil until the mixture emulsifies. Season with salt and pepper. Cover and refrigerate until ready for use. For the croutons: Cut the baguette on an angle to create thin, oval slices about 1/4-inch thick. On a large baking sheet, arrange the slices evenly. Brush the bread with olive oil and top with the Parmesan and thyme. Season with salt and pepper. Bake until the Parmesan is melted and the croutons are golden brown around the edges, 5 to 7 minutes. Remove from the oven and allow to cool. Store in an airtight container if not using immediately. For the salad: Core the romaine and trim the top 1/2 inch off the leaves. Fan the leaves out on a serving plate (or chop into 1/2-inch pieces if you prefer). Sprinkle the Parmesan over the lettuce and drizzle the dressing on top. The Caesar Salad - a popular restaurant lunch dish. It’s been adapted a few times from the original which was more of a side dish. Today, we’re going to make it the way I like to eat it - as a main with crispy skin chicken and crispy bacon. I’ve listed the ingredients and recipe below, follow along and make it at home! Ingredients Salad - Chicken breast - Baby gem lettuce (traditionally done with romaine lettuce) - French stick - Streaky bacon - Eggs - Parmesan cheese - Room temp water Dressing - 2 egg yolk - Grated parmesan (around 20g) - 3 anchovies - 1 heaped tsp Dijon mustard - Worcestershire sauce - 100ml olive oil - Juice of half a lemon - 1 clove garlic, finely grated - 3 turns of the pepper grinder Prep your proteins and croutons 1. Fill a small saucepan with water and place over high heat to boil (this is for your eggs) so it’s ready to go for step 5. 2. Then, start with a cold pan with some olive oil on the bottom. Turn the heat on. 3. Season your chicken breast with salt and place it skin-side down in the oil. Let the pan come up to temperature. Once it comes up to temperature, turn the heat down to low so we render the fat out slowly to get a crispy skin. 4. In another pan on the heat, add your bacon and a little bit of water (room temp). 5. Add your eggs to the (just) boiling water you prepped in the first step. Timer on for 6 minutes. Once they’re done, run under some cold water so they stop cooking. 6. Check the bacon and if the fat has rendered, flip it over to cook the other side. Flip again, just to get some extra colour on both sides. Remove from pan onto a plate with a paper towel. 7. Check your chicken and if it’s golden on the skin side, turn over. Check the temperature. Now, you can finish your chicken in the oven or in the pan depending on where the temperature is at. My chicken was only at 38°c so I finished it in the oven for 7-8 minutes at 180°c. 8. Next, task your french stick and slice about 1cm thick. Give them a little drizzle of olive oil and season with salt. Place in a 180°c oven for 10 minutes. Dressing 1. Add 2 egg yolks to a bowl, followed by 3 anchovies and smashed them up with a fork so you don’t get large lumps. 2. Add a heaped tsp of Dijon mustard, grated parmesan (around 20g), couple dashes of Worcestershire sauce, a small amount of grated garlic (optional), pepper and give it a mix. 3. As you’re mixing, pour in the oil one quarter at a time and mix until homogenous before adding the next amount of oil. 4. Finish with a squeeze of lemon juice and check the seasoning at the end. Make your salad 1. Carve your chicken. 2. In the same bowl as your dressing, add the washed lettuce and mix. 3. Arrange the lettuce in a serving bowl, followed by the croutons, bacon (broken. up), egg (chopped in half) seasoned in salt, chicken and one last shaving of parmesan. 4. Enjoy!

Mix well and spread on a baking tray lined with parchment paper. 3. Bake for 15-20 minutes or until golden brown and crunchy. Set aside 4. Make the dressing: on a cutting board, chop the garlic and anchovies into a paste. 5. Transfer garlic paste and anchovy paste into a large bowl. Add Dijon mustard, egg yolks, lemon juice and salt, whisk until combined. 6. While constantly whisking, gradually pour in the oil. Keep whisking until thick and smooth. Add grated parmesan and whisk. Taste and adjust the seasoning if needed. 7. Assembly the salad: Rinse and dry and the romaine lettuce. Then, cut or tear into bite-sized pieces. Place into a large bowl. 8. Add the croutons and parmesan shavings. Spread the dressing around the edges of the bowl (as shown in the video) and toss the salad to combine using tongs. (Opskrift herunder) Caesar salad 4 pers 1 stort romainesalathoved 2-3 håndfulde croutoner af landbrød, ristet i olie med hvidløg Parmesan i flager 4 stk. kyllingebryst Dressing 3 dl neutral olie 2-3 fed hvidløg 1 bæger pasteuriserede æggeblommer 1 tsk dijonsennep 4-5 stk. ansjosfileter i olie 2-3 spsk. revet parmesan 1 sjat Engelsk sauce Lime- eller citronsaft efter smag Lidt mælk salt og peber Begynd med dressingen. Kom alt undtagen olien i blenderen og kør mens olien tilsættes lidt efter lidt. Fortynd dressingen med lidt mælk. Ansjoserne er ret salte, så det burde ikke være nødvendigt med ekstra salt - men der må man smage sig frem. I hvert fald krydres der med peber og smages til med lime- eller citronsaft. Steg brødterningerne gyldne i olie tilsat lidt hvidløgsfed. Lad dem dryppe af på fedtsugende papir. Bank kyllingebryster let ud, krydr med salt og peber og steg dem i olivenolie på en pande. Rens salaten og skær den i mindre stykker. Tag halvdelen fra og vend den med dressing. Fordel den på fire tallerkener, kom lidt “ren” salat ovenpå og dryp med dressing. Fordel fjerkræskiver, parmesanflager og croutoner over salaten og servér den med ekstra dressing.
