MIXED PAKORA - Monsoons are incomplete without this :) Once you have the basics right, kripsy snacks wont be a challenge anymore!! * 🍽️𝗔𝗠𝗔𝗭🥘𝗡 𝗦𝗛🍳𝗣 🍽️ RB Store - 🤍 Kitchen Appliances - 🤍 Knives I use - 🤍 * Let's help 𝘽𝙖𝙣𝙙𝙚𝙡 𝘾𝙝𝙚𝙚𝙨𝙚 get its GI Tag 𝗖𝗹𝗶𝗰𝗸 𝗵𝗲𝗿𝗲 𝘁𝗼 𝘀𝗶𝗴𝗻 𝗺𝘆 𝗽𝗲𝘁𝗶𝘁𝗶𝗼𝗻 - 🤍 * ⏩𝓢𝓾𝓫𝓼𝓬𝓻𝓲𝓫𝓮 𝓱𝓮𝓻𝓮: 🤍 * 𝗖𝗵𝗲𝗰𝗸 𝗼𝘂𝘁 𝘁𝗵𝗲𝘀𝗲 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 𝘁𝗼𝗼: * For more fantastic recipes, check out the Ranveer Brar App 📲 📲𝐀𝐧𝐝𝐫𝐨𝐢𝐝 - 🤍 📲𝗶𝗢𝗦 - 🤍 * MIXED VEG PAKORA Preparation time 10-15 minutes Cooking time 20-25 minutes Serve 2-4 Ingredients For Batter 1 ¼ cup Gram flour, बेसन Salt to taste, नमक स्वादअनुसार ¼ tsp Carom seeds, अजवाइन 1 tsp Baking soda, बेकिंग सोडा ½ cup Water, पानी 1 tbsp Curd, beaten, दही Water, पानी 1 tbsp Rice flour, चावल का आटा 1 ½ tsp Oil, तेल For Stuffing Bhavnagri Chili 100 gms Paneer, grated, पनीर 1 tbsp Coriander leaves, finely chopped, धनिया पत्ता Salt to taste, नमक स्वादअनुसार 2 tsp Green chutney, हरी चटनी 2 tbsp Nylon sev, सेव ½ tsp roasted Coriander seeds, crushed, धनिया के बीज 6-7 Bhavnagri chillies, भावनगरी मिर्च For Pakora 2 medium size Onion, rings, प्याज 100 gms Paneer, cut into medium size cube, पनीर 1 large Potato, medium slice, आलू 1 Tomato, slice, टमाटर For Bhajiya 1 medium size Onion, slice, प्याज 1 medium size Potato, thinly julienned, आलू ¼ cup Spinach, shredded, पालक ½ tsp roasted Coriander seeds, crushed, धनिया के बीज ¼ tsp Fennel seeds, सौंफ़ ¼ tsp Cumin seeds, जीरा ¼ tsp Carom seeds, अजवाइन Salt to taste, नमक स्वादअनुसार 2 Green chillies (chopped & less spicy) हरी मिर्च ¼ tsp Turmeric powder, हल्दी पाउडर 1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट ⅓ cup Gram flour, बेसन Other Ingredients Oil for frying, तेल तलने के लिए Nylon sev (for coating) सेव 2-3 Green chillies (slit & less spicy) हरी मिर्च Process For Batter In a bowl, add gram flour, salt to taste, carom seeds, baking soda, water as required and mix it well. Now, add beaten curd and mix it, add water as required and make smooth batter. Add rice flour, oil and mix everything well and keep it aside for 9-10 minutes. For Stuffing Bhavnagri Chili Slit the chillies and keep it aside for further use. In a bowl, add paneer, coriander leaves, salt to taste, green chutney, nylon sev and mix it well. Now, add roasted coriander seeds and give it a good mix. Stuff the prepared mixture in the bhavnagri chillies. Keep it aside for further use. For Pakora Cut the onions, potatoes and tomatoes into medium size slices. Now, cut the paneer into medium size cubes. Slit the bhavnagri green chillies into the middle and keep it aside for further use. For Bhajiya In a bowl, add all cut vegetables, roasted coriander seeds, fennel seeds, cumin seeds, carom seeds, salt to taste, green chili and mix it well. Squeeze the vegetables properly and remove the excess water. Now, add turmeric powder, ginger garlic paste and mix, then add gram flour and mix everything properly. Keep it aside for further use. For Frying Dip the potatoes, onion, paneer, and tomato slice into the batter and fry on moderate heat Once the vegetables are half done, remove and keep it aside. Now, dip the stuffed bhavnagri green chillies into the batter and coat with a nylon sev and place into hot oil, once green chillies are cooked well, remove it on a absorbent paper and keep aside for further use. Now, add bhajiya mixture in small parts and deep fry until it’s crisp from all the sides Remove and keep it aside for further use. Add green chili into batter and place into hot oil and fry until nice crispy texture on it. Now, deep fry the half done pakoras on moderate heat until crispy. Full written recipe for Kanda Bhajiya Prep time: 10-15 minutes Cooking time: 10-15 minutes Serves: 3-4 people Ingredients: ONION | प्याज़ 3-4 MEDIUM SIZED SALT | नमक TO TASTE KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TSP GRAM FLOUR | बेसन 1 CUP WATER | पानी AS REQUIRED Method: To make the perfect kaanda bhajiyas, its very important to cut the onions in a certain way. Cut the top & bottom of the onions & divide it into two equal halves by keeping the cut side down. Further peel the onions & cut them length wise in thin slices, the slices should neither be too thin nor too thick. After cutting the slices, separate the layers of onions using your hands, similarly cut & separate the layers of all onions & transfer them into a bowl. Further add salt to taste & kashmiri red chilli powder, mix well & coat the onions with chilli powder & salt. Then add the gram flour in small batches & mix well, then add a splash of water & gently knead the onions with the gram flour until everything comes together, your mixture for kaanda bhajiya is ready. Heat oil until it gets moderately hot or 170 C, the oil should not be extremely hot or else the bhajiyas will fry from outside & remain raw in the middle. To fry bhajiyas dip your hand in cold water & scoop out a small portion of the mixture & drop it into the hot oil without shaping it, drop all the bhajiyas in hot oil similarly, make sure that you don’t form the bhajiya into a roundel otherwise you won’t achieve the perfect texture. Fry them over high flame without stirring them for the first 30 seconds the fry them over medium – low flame while stirring at regular intervals until they turn golden brown & crisp. Once they turn golden brown, fry them over high flame for 30 seconds, doing this will prevent the bhajiyas from soaking the oil. Once fried, transfer them into a sieve so that all the excess oil drips off. Your perfectly fried crisp kaanda bhajiyas are ready. Kaande ki chutney Ingredients: ONION | प्याज़ 1 LARGE SIZED (CHOPPED) KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च 3 TBSP SALT | नमक 1/2 TSP HOT OIL | गरम तेल 5-6 TBSP Method: Add the chopped onion into a bowl along with kashmiri red chilli powder & salt, then pour hot oil over it & mix it well. Sprinkle all the dry spices and freshly chopped coriander, chillies and ginger into the bowl and then sieve in the gram flour - mix together using your hand. Add a small amount of water a little at a time to create a thick batter that coats all the vegetables. Squeeze the mixture through your fingers to ensure all the spices mix through. Do not leave the batter and vegetable mixture for too long before cooking. Test your oil is hot enough by dropping a little batter into the oil. If it browns and rises immediately then it is ready. Very carefully drop in spoonfuls of the mixture into the oil and fry until golden brown. Using a slotted spoon move the pakora around, be careful not to overcrowd the karahi. Once golden brown and crisp remove from the oil and set on some kitchen paper.

Then fry the Onion Pakoras in the medium heated Oil. Crispy Onion Pakoras will get ready so easily in few minutes. For Chutney,take some Coriander Leaves, Mint Leaves, Green Chilies, Ginger, Lemon Juice, Cumin Seeds, Salt, Black Salt and some thick and whisked curd. Grind it and then put some more Curd and grind it again. Restaurant Style Chutney will get ready. Take some Coriander Leaves and Mint Leaves and grind them. They are sold by street vendors and served in restaurants in South Asia and UK. It consists of items, often vegetables such as potatoes and onions, coated in seasoned gram flour batter and deep fried. The pakora is known also under other spellings including pikora, pakoda, pakodi and regional names such as bhaji, bhajiya, bora, ponako, and chop. Pakoras are made by coating ingredients, usually vegetables, in a spiced batter, then deep frying them. Common varieties of pakora use onion, Masoor Dal (Lentil), chicken, arbi root and leaves, eggplant, potato, chili pepper, spinach, paneer, cauliflower, mint, plantain or baby corn. Remove and crush them using a rolling pin and keep aside for further use. For Bhajia 1. In a bowl add raw mango, spinach, onion, prepared masala, salt, turmeric powder, asafoetida, green chillies, ginger-garlic paste and mix everything properly and keep aside for 5-10 minutes. 2. Meanwhile in kadhai heat oil. 3. Now in the mixture add gram flour, rice flour and minutes of oil and baking soda, mix everything properly. 4. Fry small portions of the batter in medium hot oil until golden brown. Baja is a popular street food easy to make by frying a batter consisting of simple ingredients, usually enjoyed hot with chutney or hot sauce. 👇👇👇 RECIPE BELOW 👇👇👇👇 Ingredients: 1 Cup Gram Flour (Besan) 1/2 Cup All Purpose Flour (Note 6 if you are using self rising flour) 1 1/2 TSP Baking Powder (Note 1) 1 Small Onion (Optional) 1 TBSP Spring Onion (finely chopped) 2 TBSP Coriander Leaves (finely chopped) 1 Green Chilli (Optional) 3/4 Cup to 1 Cup Water or lesser (Note 3) Salt to taste Tomato and Coriander Chutney 1-2 Tomatoes ( Can also add more tomatoes) 1 Garlic Clove 1 Chilli Coriander Leaves Salt to taste Note: 1. You can also use Baking soda (bicarbonate of soda) instead of Baking Powder. The quantity will be lesser. Instead of 1 1/2 TSP Baking Powder use 1/4 TSP baking soda. 2. Why we sift the flour? Sifting the flour is optional. Doing so helps to distribute the dry ingredients and also to remove lumps. 3. Water might vary a little bit. Will be 3/4 to 1 Cup water or lesser depending on how you measure the flour. The batter should not be watery. Should be a semi thick consistency. 4. Mix the batter well, so that it you incorporate air in it. The bubbles in the batter and hot oil will make the bajia puff. 5. The oil should be on medium heat. Drop a little of the batter in the oil to test if the oil is hot. If the batter rise immediately, this means the oil is hot enough. Controlling the heat of the oil, while frying the bajia. If oil is too hot the bajia will turn brown fast and if not hot enough the bajia will not puff and will absorb lots of oil. 6. Can i use Self rising flour instead of all purpose flour? Yes, you can. 1 Cup of self rising flour 1/2 Cup gram flour (Besan) 1 Small Onion (Optional) 1 TBSP Spring Onion (finely chopped) 2 TBSP Coriander Leaves (finely chopped) 3/4 Cup to 1 Cup Water Salt to taste. 7. It consists of items, often vegetables such as potatoes and onions, coated in seasoned gram flour batter and deep fried.The pakora is known also under other spellings including pikora, pakoda, pakodi and regional names such as bhaji, bhajiya, bora, ponako and chop. Pakoras are made by coating ingredients, usually vegetables, in a spiced batter, then deep frying them. Common varieties of pakora use onion, eggplant, potato, spinach, plantain, paneer, bread, cauliflower, mint, tomato, or chili pepper. Full written recipe for Moong Dal Bhajiya Prep time: 15-20 minutes (soaking time: 4-5 hours) Cooking time: 8-10 minutes Serves: 4-5 people Ingredients: Split yellow dal | पीली मूंग दाल 1 cup Salt | नमक to taste Ginger | अदरक 1 inch (chopped) Green chillies | हरी मिर्ची 2-3 nos. (chopped) Curry leaves | कड़ी पत्ता 8-10 nos. (chopped) Black peppercorn | काली मिर्च 1 tsp (freshly crushed) Methods: Here i've taken yellow moong dal, washed it thoroughly and soaked it for 4-5 hours, once soaked well drain the water and use a sieve to drain off the excess water from the moong dal. Transfer it in grinding jar and use pulse mode & grind to make semi coarse paste, make sure to add no water, if you are facing problem while grinding, then only add very little water, make sure just to mix with spoon when you grind so it'll be grinded uniformly. Once grinded, transfer in a bowl and now, add salt, green chillies, curry leaves and freshly crushed black peppercorn. Make sure to use freshly crushed black pepper as it’s a game changer and it'll just uplift the taste of the vade. After adding all the ingredients mix well, make sure not to whisk a lot, the batter for the moong dal vade is ready. Now set oil for frying on medium high heat, once the oil is hot enough, dip your fingers in water and take small portion of the bhajiya batter and drop in hot oil, you do not need to shape them, they’ll form its shape once they go in hot oil. Fry the bhajiyas on medium heat until it turns crisp & golden brown in colour. Once fried remove it in a sieve and serve hot & crispy bhajiyas with special spicy coconut chutney. Lal nariyal aur pyaaz ki chutney Ingredients: Whole kashmiri red chillies | कश्मीरी लाल मिर्च 10-12 nos. Coconut | नारियल 1 cup Garlic | लहसून 4-5 cloves Onion | प्याज़ 1 medium sized Fresh mint leaves | पुदीना a small handful Green chillies | हरी मिर्ची 2-3 nos.
