Bak Chor Mee (肉脞面) is a uniquely Singaporean dish that represents our love for pork! Honestly, it uses so many parts of a pig, from various parts of the meat, to even the liver. All this is great, especially when paired with the vinegar-braised mushrooms. Who can say no to this awesome noodly dish? Our method is to make this dish right in the old school way, by making use of lard to coat the noodles, for another level of taste to the noodles. Also, when cooking the liver, timing is especially important. Insta - 🤍the_modernchef Tiktok - 🤍the_modernchef Restaurant - 🤍meimeilondon Recipe: 200g minced pork 2-3 tbsp light soy sauce 2 tsp ground white pepper 300g fresh egg noodles (mee pok or preference) Butterhead lettuce (leaves washed) 500ml chicken stock (fresh or cubed) 2 spring onions (green part sliced) sea salt to season water Pork crackling, pork balls and crispy shallots to dress Mushrooms: 12-15 dried shiitake mushrooms (or flower mushrooms) 2 tbsp light soy sauce 1 tbsp fish sauce 4 tbsp oyster sauce (can use vegetarian version) 2 tsp caster sugar (or fine sugar) For sauce: 5 tbsp black vinegar 4 tbsp light soy sauce 2 tbsp Sambal tumis belachan (I use mei mei's : 🤍 2 tbsp shallot oil 1. Day before, marinate the pork with light soy sauce and ground white pepper. Refrigerate. 2. Next, soak the mushrooms in boiling water, then strain to remove the dust particles (you can keep this liquid but pass through a fine cloth), then add the remaining mushroom ingredients, top with more hot water, and set aside overnight. After 12 hours, slice the mushrooms. 3. Mix all the sauce ingredients together in a pan or bowl. 4. Heat up the chicken stock in one saucepan, and in another heat up some salted water and bring to a boil. 5. Using a noodle basket in the salted boiling water, cook the noodles for a minute or two (until preference) and then place them into a bowl with the sauce and lettuce leaves underneath. 6. Using the noodle basket again, cook the minced pork and pork balls in the chicken stock until it changes colour and is cooked through, around a couple of minutes. Add this to the top of the noodles in the bowl. 7. Top the noodles with pork crackling, crispy shallots, and braised mushrooms. Serve with the soup on the side for the "dry" version, or mixed all together for a "wet" version. Enjoy! Let's makan! There are many similar dishes in parts of China and Malaysia, but the real bak chor mee is, from what many say, a true Singaporean food. So I was excited to try it for the first time. Since I was staying not too far from Hill Street Tai Hwa Pork Noodles, which happens to be one of the most legendary hawkers selling the dish, Ying and I decided to try it one afternoon. To my surprise, the line wasn’t very long when we arrived, and there were just about 5 people waiting in line in front of me. So it only took about 5 minutes before I got my bowl of noodles. Bak chor mee, which is also called pork noodles, includes yellow egg noodles, which are tossed in a sauce of oil and chilies and vinegar, and then topped with a variety of different pork ingredients like minced pork, liver, and in this case a couple of meatballs and some wanton dumplings, and finished off with some green onions. I added in a few spoonfuls of diced bird eye chilies to the side of my bowl to kick the heat up a notch as well. After mixing up the noodles and all the sauce, I took a bite of my first bowl of bak chor mee. I’m a huge egg noodle lover, so I immediately enjoyed the egg noodles, which were slightly chewy and fresh. I also enjoyed the sauce, which was slightly spicy from the sambal and chilies, and especially balanced nicely with vinegar to give it a sour touch. It was similar to a bowl of wanton mee, but it had a different taste to it as well. I can’t really speak for other days and how busy Hill Street Tai Hwa Pork Noodles will be, but on a weekday in the middle of the afternoon, it wasn’t bad at all. And they serve a bowl of noodles that I think are worth making a queue for. Bak Chor Mee but Halal | easy Singaporean minced meat noodles


Today we’re making Bak Chor Mee, or minced meat noodles. This is a dish invented in Singapore so it's very uniquely Singaporean, and it’s originally made with a whole lotta pork. This version is pork-free, halal, kosher (i think I’m not sure sorry). There’s a lot of components in this dish, but each of the component is actually super easy to make. And this is also an easy short cut version, because we all want the quickest meal possible and I’m going to break down this recipe into each component. Ingredients: 2 Servings. - 200 grams Noodles: Mee Pok Noodle Toppings (you can add any of these): - Fish balls - Meatballs - Vegetables - Cilantro Minced Meat/Bak Chor - 200 gr Minced Chicken (or any other minced protein.) - 1 tsp soy sauce - 1 tsp oyster sauce - 1/4 tsp white pepper powder - 1 tsp sesame oil - 1 tsp cornstarch - 1/4 tsp sugar - Optional: I added 3 chopped shrimps for extra yumminess. Braised Mushrooms - 150 grams shiitake mushrooms - 500 ml water - 2 Tbsps dark soy sauce - 1 tbsp Fish Sauce - Optional: Cloves and star anise - 1 tsp sugar Easy Broth - 1 litre of water - 1 bouillon stock cube - 2 tbsps dried anchovies - (ikan bilis) Special Sambal - 1 tbsp dried shrimps, soaked in hot water and chopped - 3 tbsps Dried Chilli Paste (recipe: 🤍 - 2 tsps Sugar - Salt to taste (if needed) Assemble! Tossing sauce bowl mix for noodles: - 1 tsp light soy sauce - 1 tsp fish sauce - 1 tsp Chinese black vinegar - you can replace this with white vinegar + a bit of sugar or balsamic vinegar - 1 tsp of Sambal - 2 Tbsp liquid from braised mushroom - 2 Tbsp easy broth soup To make a soup version, simply add the easy broth to the bowl.

Bak Chor Mee (肉脞面) This is one of the classic dishes that you will invariably find in any hawker centre in Singapore. However, it can be quite difficult to recreate at home or when living abroad. Ingredients such as pork liver, pork balls, pork dumplings etc. are not always readily available, or may take up substantial preparation time. My Bak Chor Mee recipe therefore simplifies this hawker favourite by using basic ingredients that will still be able to satisfy those cravings. (: - - - - - - - - - - - - - - - - - - - - - - - INGREDIENTS Egg noodles Minced pork (marinated with white pepper and sesame oil) Stock (see A below) Stewed mushrooms (see B below) Sauce for tossing (see C below) Sliced fish cake Beansprouts Chopped spring onion *for garnishing Tang Cai (preserved vegetable) *for garnishing A. Stock (easy method as demonstrated) 1 pork cube 2L water bring to a boil (traditional method) 2-3kg pork bones 3L water 100g anchovies (ikan bilis) 2-3 slices ginger 3-4 cloves crashed garlic Run boiling water over pork bones twice, then boil with the rest of the ingredients over medium heat. Once boiling, remove scum and turn down the heat to low and boil for another 1.5 hours. B. In this video, we headed down to Jalan Tua Kong Lau Lim Mee Pok - the Art of Mee Pok at Simpang Bedok to do a Meepok Eating Challenge! Some of you guys mentioned that this is one of the best Meepok in the east so I had to give it try! We went with the $5.50 one which comes with a good amount of noodles, 2 large fishballs, some fish cakes slices and a bit of minced pork. They also have a $7.50 version that comes with some shrimp in there. We managed to put down a total of 20 bowls and it's definitely worth my trip all the way from the west. Today’s Bak Chor Mee Soup is inspired by Bedok 85 (Fengshan Centre) bak chor mee. Dedicated foodies go there strictly for the soup-based bak chor mee. There are actually two stalls, side by side to each other. Both stalls are frequented by loyal patrons and a constant queue can always be spotted. In this home-cooked version, I’m using pork ribs, yellow soy beans, dried anchovies and dried sole fish to make the soup base. The pork-centric bowl of noodles consists mainly of minced pork and pork balls. Based on my observation while waiting in line, the seasoned minced pork is scooped into a bowl before scalded briefly with the boiling soup. The cooked noodles are then tossed into the same bowl and topped up with more soup and pork balls. Even though the original version does not contain any pork lard, I went ahead and added some extra “happiness”. This piping bowl of umami-filled bak chor mee is guaranteed to warm you up on a cold rainy day. Ingredients: Main: 70 – 80g fresh thin yellow noodles (mee kia) - per person 2 red chillies - sliced 2 stalks spring onions – chopped Pork lard – as much as you like (click here on how to make your own) White pepper to taste Soup base: 5 litres water 500 to 700g pork spare ribs / pork bone 100g yellow soy bean – soaked for 1 hour 2 large dried sole fish – heat in pan over medium low heat until crispy 80g dried anchovies – gut and head removed, rinsed 2 tsp salt 1 tsp sugar Few dashes of white pepper 1 packet pork meatballs Minced pork seasoning: 300g minced pork 300 g water 1 ½ tbsp corn starch 1 tbsp soy sauce ¼ tsp fish sauce 1 tsp sugar 1 tsp sesame oil Few dashes white pepper Serves 4

-Tiong Bahru Lor Mee is the most popular hawker food around Singapore. Each bowl of lor mee is crowned with homemade ngoh hiang, lor bak, braised egg, fish cake, fried fish and fried dumplings and drowned with its special gravy. People are willing to go on queue just to have a bowl of lor mee. -Chai Chee Noodle Village Bak Chor Mee, which translates to minced meat noodles, is a Singaporean noodle dish popularly sold as street food in hawker centers and food courts. The noodles are tossed in vinegar, minced meat, pork slices, pork liver, stewed sliced mushrooms, meat balls and bits of deep-fried lard. Bak chor mee can be categorised into two variants, dry and soup version. Most dry versions come with slices of stewed mushroom, minced pork, slices of lean pork and sometimes, fried ikan bilis, atop noodles tossed in a punchy chilli-vinegar sauce, while soup versions are lauded for the depth of pork flavour in its broth. -Juan Ji Fishball Noodle serves Singaporean and Chinese cuisine. They offer Fishball Mee Hoon Soup, Fishball Noodles and more -Koh Brother Pig's Organ Soup has a long history of serving pig offal soup since the 1950s. The stall serves pork balls, lean pork slices and the various intestines. All the organs e.g. pig liver, belly, lean meat are tender and cooked to the right texture. Stir Fry Bak Chor Mee Pok Recipe #Shorts


#Shorts #bakchormee Boil some Mee Pok from redmart for a few minutes, then strain and retain the noodle water. In a wok, add 2 tbsp of garlic oil which we made from frying garlic chips a few nights ago. Bring the flame to a medium level and when it’s hot, add 3 chopped garlic and chopped white bits of 3 stalks of scallion. Stir until aromatic. Add in 200g of minced beef, you can substitute for pork or chicken or a combination also. Use a spoon or spatula to break up the meat clumps, toss if necessary to help loosen the meat. Season with 2 tbsp light soya, 1 tbsp dark soya, 1 tbsp Chinese wine, generous dashes of both white and black pepper and some of the noodle water if it gets too dry. Stir and mix everything well. Once the beef is cooked and tender, add 1 tbsp sesame oil and the green parts of the scallion. Mix well. Add the noodles and toss thoroughly to coat the noodles with the minced sauce. If it’s too dry, add more noodle water as and when necessary. Once the noodles are properly coated, add a tbsp of dark vinegar. This acidity will give the noodles a lovely balance as well as making it more appetizing. You will realize later than you might get hungrier as you eat more, hehe. Turn off flame. Add a bit more scallion and a few more tbsp of garlic oil. Then give one final toss. Pour onto a serving plate and simply enjoy. The meaty sauce will be so delectable that it’s likely you will be finishing this very quickly, and despite the amount of noodles, you might come away wanting more.
