It's absolutely delicious and everybody loves it- no doubt about that. Sometimes maybe you don’t know what to cook for dinner, this is it! It is better than your local take out fried rice AND healthier. Note: The product links below are affiliate links. I may earn a commission if you purchase an item on a linked website within 24 hours. INGREDIENTS FOR THE CHICKEN FRIED RICE [serve 1-2] For the chicken marinade - 150 grams of chicken - 1 tsp of corn starch - 1 tsp of soy sauce - 1 tsp of vegetable oil - a pinch of baking soda(NOT BAKING POWDER Sorry for the audio mistake in the video) FOR THE STIR FRYING - 2 eggs - 3 tbsp oil - 2 cups of cooked rice - 1 tbsp of minced garlic - 1/4 cup of red onion - 1/3 cup of green beans - 1/2 cup of carrot - 1/4 cup of spring onion FOR THE SEASONING - 1 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: 🤍 - 2 tsp of dark soy sauce [Pearl River Bridge Superior Dark Soy Sauce: 🤍 - 1/4 tsp of salt or to taste - pepper to taste HOW TO MAKE CHICKEN FRIED RICE - Cut the chicken into small pieces. Mix it with 1 tsp of corn starch, 1 tsp of soy sauce, 1 tsp of vegetable oil and a pinch of baking soda. Set it aside for 30 minutes. - Crack 2 eggs. Beat it well. - Heat up the wok. Add about 1 tbsp of vegetable oil. Give it a toss, so the bottom is coated nicely. - Wait until there is smoke coming out. Pour in the egg. Will take about 30-50 seconds to get the it fluffy. Break it into small pieces and set it aside. - Add more oil into the same wok. Heat it up and add in the chicken. Saute it about 1 or 2 minutes. Then push it to the side so you have room for the vegetables. Dump in all your veggies, which are 1 tbsp of minced garlic, 1/4 cup of onion, 1/3 cup of green beans and 1/2 cup of carrot. Stir-fry for 2 to 3 minutes. - When the onion should be transparent, Add some salt to taste. Mix it well. - Take it out. - Next is the rice. Loosen up the rice before frying. - Turn on the gas to high, Heat up the wok for about 15 seconds. Then add 2 tbsp of vegetable oil. Put in the rice right after that. Use your spatula to break down the big pieces. - You need to stir fry this for 3-5 minutes. Then add in our seasoning, 1 tbsp of light soy sauce, 2 tsp of dark soy sauce. - Now you really got to mix this. Do it fast. Because the wok is hot, the liquid will evaporate quickly- then you will never get to mix it evenly. Once can not see white rice, add in all the ingredients. Veggies, meat, oh and the egg... - Toss everything together. Give them about 2 minutes to be infused with each other. - Add in the spring onion right before serving. Hope you enjoy! Chinese Fried Rice is a simple and yet difficult to master dish but once you get the hang of it, you can fry this super yummy easy meal anytime. This is our Din Tai Fung inspired Shrimp Fried Rice. In case you haven't heard about Din Tai Fung, it is a chain of restaurants originating in Taiwan. Back in 1993, New York Times ranked them as the Top 10 Best Restaurants in the World. In 2010, the restaurant's first branch in Hong Kong at Tsim Sha Tsui was awarded one Michellin star and their second branch at Causeway Bay was also recommended by Michellin Guide. Although Din Tai Fung is known to specialise in xiao long bao (Chinese steamed dumplings), their egg fried rice with pork chop is also really popular amongst diners. Of course that includes us :). We actually stood outside DTF kitchen to figure out what ingredients were used. Opps - I hope we won’t be banned from Din Tai Fung because that’d be tragic. This video uses the traditional steaming method to prepare fried rice, albeit using a little 'hack' that we thought up to easily port the method to a western kitchen. 0:00 - Preparing the Rice 0:38 - The Par-boil and Steam Method 2:45 - Frying up Osmanthus Egg (optional) 3:27 - Frying Rice 4:22 - Why do people tell you to use day old rice? TO STEAM THE RICE Rinse 230g (~1 metric cup) of Jasmine or any other medium grain rice (e.g. Calrose). Par boil for three minutes. Drain, keeping in a strainer. Rinse your pot and add in two inches of water, and get that up to a boil. Spread the rice evenly on the strainer, and poke a couple holes in the rice. Place the strainer on the bubbling pot. Cover, wrapping the lid with a damp towel (foil is also ok). Steam for 15 minutes. Transfer to a plate. SIMPLE EGG AND SCALLION FRIED RICE Add ins: Egg, ~2, beaten; Scallion, ~40g Seasoning for the egg: salt, 1/8 tsp; sugar, 1/8 tsp Soy sauce, ~2 tsp Seasoning for the rice: salt, ½ tsp; sugar, 1 tsp; white pepper, ¼ tsp; MSG, ¼ tsp Lard/oil for frying: 1 tbsp for the egg, 1.5 tbsp for the rice Add the seasoning to the egg and beat well. Slice the scallions. If going for osmanthus egg, over a medium low flame add the egg in a thin stream while stirring constantly. Continue to ‘smush’ it against your pan/wok for ~3-4 minutes until the egg is set and quite broken up. Alternatively, just scramble the egg. Either way, scooch to the side. Add the remaining lard/oil, mix with the rice. Once combined, mix everything together. Fry for about ~1 minute, then add in the soy sauce. Fry for another minute. Add in the seasoning, and mix well. Add in the scallions, heat off. PINEAPPLE FRIED RICE Add ins: Pineapple, ~1/2 cup; Egg, ~1, beaten; spam, ~150g; scallion, ~2 sprigs Dice the pineapple and the spam. Season the egg with a sprinkle of salt and sugar. Slice the scallions. Fry the egg, followed by the rice. Add in the spam and the seasoning. Fry those together for ~30 seconds, then add in the pineapple chunks. Shut off the heat, add in the scallions, mix. Optionally serve in a cored pineapple topped with pork floss. SHACHA BEEF FRIED RICE Add ins: Beef loin, 200g, marinated (see marinade below); garlic, 3 cloves; ginger, ~1cm; Teochew Shacha sauce (沙茶酱), 4 tsp Marinade for the beef: salt, 1/2 tsp; sugar, 1 tsp; cornstarch, 1 tsp; soy sauce, 1/2 tsp; liaojiu a.k.a. Shaoxing wine, 1 tsp; oyster sauce, 1 tsp; oil to coat, 1 tsp Finely dice the beef (or just use ground beef, also ok), mix it with the marinade. Mince the garlic and the ginger. Fry the beef, scooch to the side. Fry the aromatics until fragrant, then add in the Shacha sauce. Fry for ~30 seconds. Add in the rice, and after quick coat with the oil, combine everything and fry for ~2 minutes. Add in the seasoning and give it a quick fry. WESTERN FRIED RICE Video on the topic is here: 🤍 Add ins: Onion, ½; Ketchup, 5 tbsp; Hotdog or Spam, ~75g; Char Siu BBQ Pork or Honey Ham, ~75g; Tomato, ½; Red Bell Pepper, ½ Finely mince the onion. Dice the hot dog, Char Siu, tomato, and red bell pepper. Fry the onion until translucent, then add in the ketchup. Fry for ~3 minutes until the oil separates from the ketchup. Add the hot dog and the Char Siu, fry for ~30 seconds. Optionally hit with ~1 tbsp of Shaoxing wine, add in the rice. Fry everything together for ~2 minutes. Optionally season with a teaspoon of soy sauce, and add in the seasoning. Add the tomato and bell bepper, ~15 second fry. GUIZHOU-ISH GUAILU FRIED RICE ‘Ish’ because the following’s got a couple western sourcing related shortcuts. Full video is here: 🤍 Add ins: Hunan Chopped Chilis or Lao Gan Ma Pickled Chili, 1 tbsp; Garlic, 3 Cloves; Ginger, 1 inch; Scallion, ~2 sprigs, white and green parts separated; Bacon, 2-3 slices; Suancai fermented cabbage or Kimchi, 15g; Canned Kidney Beans, ~1/4 cup; Cilantro, ~2 sprigs Dark Soy Sauce, 1 tbsp Soy Sauce, 1 tsp Seasoning: salt, 1/8 tsp; sugar, ½ tsp; MSG, ¼ tsp; dark Chinese vinegar, 2 tsp In a mortar, pound together the chopped chili together with the garlic, ginger, and white part of the scallion. Cut the bacon into ~1 inch strips. Rinse the slime off the kidney beans. Mince the fermented vegetable. Slice the cilantro and scallion greens. In a bit of oil or lard, fry the bacon until it renders out all of the grease. Remove, set aside. Add in the pounded chili paste mixture, fry for ~3-5 minutes until the oil’s obviously clear again. Add in the fermented vegetable and beans. Quick fry, add in the rice. Fry for ~2 minutes, then swirl in the soy sauces. Fry for another minute until incorporated. Add in the seasoning, mix, add in the scallion greens and cilantro. Let's begin Ingredients: 1/2 red onion 2 pieces garlic 3 sticks green onion 1/2 carrot 60g broccolini 4 spears baby corn 3 rehydrated shiitake mushrooms 70g extra firm tofu 1/2 tbsp soy sauce 1 tsp dark soy sauce splash of toasted sesame oil 2 tbsp chili oil (🤍 1 cup overnight rice (pre-cooked jasmine rice) 1 tsp white sesame seeds 1/4 cup pomegranate seeds Directions: 1. Dice the red onion and finely chop the garlic. Chop the green onions and dice the carrot. Chop the broccolini and baby corn 2. Rehydrate the dried shiitake mushrooms by soaking them in hot water for a couple of hours. Then, squeeze out the water and very carefully remove the stalks. Chop them into small cubes 3. Pat dry the extra firm tofu with a paper towel. Then, slice it into small bite sized strips 4. Make the sauce by combining together the soy sauce, dark soy sauce, and toasted sesame oil 5. Heat up a nonstick pan to medium heat. Add the chili oil followed by the tofu and red onions. Sauté for a couple of minutes 6. Add the garlic, carrots, and broccolini. Sauté for 3-4min. Add the baby corn, green onions, and shiitake mushrooms. Sauté for a couple of minutes 7. Add the rice and sauce. Sauté for another couple of minutes 8. Ingredients per person - 2 cups cooked cold rice - 1 egg - 1 spring onion, sliced thin - 100g ham - 50g frozen peas - 2 tbsp soy sauce - 3 dashes maggi seasoning - 2 tbsp grapeseed oil Method 1. Heat the oil in a wok or large frypan. 2. Add your beaten egg and scramble. Once cooked, remove from the wok and set aside. 3. Once the wok is hot again, add the ham and cook for 2 minutes and then add the spring onions. 4. Once the temperature is back in the wok, add the cooked rice and stir well. 5. Next add the peas, the cooked egg, and then the soy sauce on the outside of the wok. 6. Season with the maggi and white pepper. 7. Finish with the spring onion greens and enjoy!

Save this recipe for whenever you have leftover white rice and need to make dinner quickly under 30 minutes! Once you master this recipe, you will never do Chinese take out again, it’s that easy and delicious! Adjust all ingredients to your preference especially the sauces. Enjoy! Feel free to subscribe if you like my content. Ingredients I used 8 cups of cooked day old jasmine rice ( 4 cups uncooked) 1-1.5 lbs raw shrimps 1 cup julienned carrots 1 small diced yellow onion (optional) Dark soy sauce Regular / low-sodium soy sauce Oyster sauce 1 Tbsp crushed garlic 1 Tbsp sesame seed oil 2 eggs scrambled 2 Tbsp butter for the eggs Vegetable oil Salt Black pepper Chili pepper flakes 3/4 cup chopped spring onions for garnish Note: cook the rice at least a day before and refrigerate overnight. I froze mine for about 1 hour before cooking. Make sure to break any lumps in the rice before adding it to the wok ( trust me, your arms will thank me lol). Add the spring onions after you turn off the heat to avoid wilting.
