this Spicy Szechuan chicken stir fry is made with Szechuan (Sichuan) peppers for that tongue-tingling heat. Plus plenty of dried red chillies too! If you like heat you're gonna love this one! Szechuan chicken, also known as Sichuan chicken, Mala Chicken or Laziji, is a beautifully spiced stir-fried chicken dish, usually served dry, rather than saucy, and characterised by the use of Szechuan peppercorns and lots of dried red chillies. Free printable recipe is available on our site: 🤍 INGREDIENTS: Chicken and marinade: ▢8 boneless chicken thighs - chopped into bitesize chunks ▢1 tbsp dark soy sauce ▢1 tbsp light soy sauce ▢1 tbsp Chinese rice wine ▢¼ tsp white pepper ▢2 tbsp cornflour - cornstarch For Frying: ▢240 ml (1 cup) sunflower oil ▢1 tbsp sesame oil ▢1 onion - peeled and chopped into chunks ▢25 dried red chillies - – chop 5 of them into small pieces and leave the rest whole ▢1 ½ tsp Sichuan peppercorns - ground using a pestle and mortar (the 1 ½ tsp is measured BEFORE grinding) ▢3 cloves garlic - minced ▢2 tsp minced ginger ▢5 spring onions - scallions roughly chopped ▢2 tbsp light soy sauce ▢1 tbsp Chinese rice wine ▢1 tbsp chilli bean paste - *See Note ▢1 tbsp sugar INSTRUCTIONS Place the chicken pieces in a bowl with the rest of the marinade ingredients. Stir together, cover and marinade for 30 minutes (or up to a couple of hours – place in the refrigerator if marinading for more than 30 minutes). Heat the oil (reserving 1 tbsp for later) over a medium-high heat in a large frying pan. Add the chicken, a piece at a time (you may need to work in 2 batches), and cook for 4-5 minutes, turning a couple of times, until golden. Remove from the pan and place on a plate. Heat the reserved 1 tbsp of sunflower oil along with 1 tbsp of sesame oil in a wok over a medium-high heat. Add the onion and dried chillies and stir fry for 2-3 minutes, stirring often, until the onion starts to soften slightly. Add in the ground Sichuan peppers and fry for a further minute. Add in the garlic, ginger and spring onions and stir fry for a further 30 seconds. Add in the soy sauce, rice wine, chilli bean paste and sugar. Stir together and fry for another minute. Add in the cooked chicken and toss everything together, heating for a further minute or two until the chicken is hot. Serve with boiled rice. ✎ NOTES Chilli Bean Paste - known as toban djan or doubanjiang – if you can’t find this, you can replace with Gochujang (a Korean Chilli paste that’s little sweeter, but still good), or at a push, hoisin sauce mixed with a good pinch of chilli flakes. #CookingShow #Recipe #Fakeaway

Get your printable recipe ▶ Ingredients ▢500 g Chicken thigh boneless skinless ( cut into bite-size cubes ) ▢1 Onion cut small dices ▢1 Bell pepper cut small squares ▢1 tbsp Garlic finely chopped ▢1 tbsp Ginger cut into thin strips ▢3 Spring onion cut into 1" pieces ▢1 tbsp Sichuan peppercorns toasted and grinded into fine coarse, see in note ▢8 Dried red chilli deseeded and cut into 1cm pieces, details in note ▢1 tbsp Sesame seeds ▢2 tbsp Oil for stir fry ▢Oil for shallow frying add 1 - 1½ cup of oil according to your pan size Chicken Marinade ▢2 tsp Sugar ▢1 tbsp Shao Xing wine Chinese cooking rice wine, see details in note ▢1 tbsp Soy sauce ▢¼ tsp Black pepper powder ▢½ tsp Baking soda Seasonings ▢1 tbsp Sugar ▢1 tbsp Soy sauce ▢1 tbsp Shao Xing wine ▢1 tsp Sesame oil Marinade the chicken with sugar, soy sauce, Shao Xing wine, black pepper, baking soda and corn starch. Mix it well to combine evenly and set aside for 15 minutes and prepare the vegetables. To shallow fry the chicken pieces in high heat about 350°F. Add oil about 1" high. Add the chicken pieces and fry for 5-6 minutes until crispy golden brown and set it aside. Stir fry chopped onions and follow with the dried chilli and continue stir fry for another 1 minute. Add chopped garlic,, ginger and stir for few seconds, then follow with the crushed Sichuan peppercorns and toss well with other ingredients. Place the fried chicken back in, pour the soy sauce, Shao Xing wine, sesame oil and sugar. Combine well with everything. Turn off the heat and add spring onions and sesame seeds. If you don’t have a thermometer, you can test the temperature with 1 small piece of chicken. If the chicken floats to the top and there are many bubbles coming out, it means you are good to go. - We are going to fry the chicken twice. The first time is to cook the chicken through. The second time is to get a nice color and make the surface a bit crispy. - Separate your chicken before you put them into the hot oil. It is very important to make sure your chicken doesn’t clump up together. Slightly push them a little bit to make sure they are fully separated. - After a minute, you can take it out. Don’t fry it too long because pieces of chicken this small cook quickly. Let it rest for few minutes. - Before you fry it the second time, you need to be careful with the hot oil. It will splash a lot because of the water from the first time you fry the chicken. - You only need about 40 seconds to get it really nice. - Take it out. Set that aside and we will start the stir fry process. - Heat up your wok on high for 10 seconds, then turn the heat to low. Add in 1/4 cup of oil along with all the aromatics (garlic, the ginger, the white part of spring onion, Sichuan peppercorn and the face heaven chili) Give it a little stir. Then add in the red dry chilies. Mix it together. - I like to add a tsp of salt, this will help release the flavor. - Stir this on low heat for about 3-5 minutes. Add your chicken into the wok. Mix everything together and add a splash of water from the side of the wok. A tiny amount of water will help the chicken become infused with the flavors. - Keep stirring it for 2 or 3 minutes. Take it out. Add some sesame seeds as garnish. You are done. Enjoy your meal! Marinade Ingredients: 3 tsp of corn starch 1 tsp of salt 1 Tbsp. of rice wine 1/2 tsp of white pepper 1 Tbsp. of soy sauce 1 shredded scallion 2 slices of ginger 4 chicken thighs, chopped into bite-sized pieces Other Ingredients: vegetable oil for frying 2 Tbsp. of Szechuan peppercorn 5 dried red chilies, chopped 50 whole dried red chilies 4 slices of ginger 1 scallion, chopped 1/3 cup of peanuts 1/2 tsp of sugar 1/2 Tbsp. of rice wine 1 Tbsp of sesame oil chopped scallions as garnish Directions: Combine marinade ingredients in a bowl, add the chopped chicken. Marinate for 10 minutes. In about 1 1/2” of oil, fry the chicken until browned and crispy. Remove and set aside. Heat oil in a wok or a large pan. Add the Szechuan peppercorn and dried red chilies. Fry until fragrant. Add the rest of the dried red chilies, ginger, scallion and peanuts. Fry for a minute. Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss to coat. Today I want to introduce to you a well-known chicken dish originated from the Szechuan province of China, called 辣子鸡. It is spicy and fiercely hot. This dish is one of the most popular Chinese dishes in restaurants, and I am not surprised that it is equally amazed by people worldwide. There are different versions of the Szechuan chicken, and this recipe is based on traditional Szechuan ways to prepare, with some of my interpretations. = Recipe: (Please download the recipe and read the full details at 🤍 ) Ingredients for the chicken (A) 600g chicken thigh 1 tsp salt 1 tbsp light soy sauce 1 tbsp Shaoxing wine 1/2 tsp ground white pepper 1/2 egg 2 tbsp cornstarch Other ingredients (B) 35g dried chili 80g groundnuts 2 tbsp Szechuan peppercorns 1 stalk scallion 4 cloves garlic 1 thumb-size ginger 1 tbsp doubanjiang 1 tsp douchi 2 tsp chili oil Vegetables oil for deep-frying Method: Marinate the chicken - Cut the deboned chicken meat skin-on into thumb size cubes. - Use a paper towel to absorb as much water as possible from the chicken. - Marinate the chicken meat with salt, light soy sauce, Shaoxing wine, ground white pepper, and half an egg for one hour. - After that, coat the cornflour as in ingredient A. Deep-fry the chicken - Heat some vegetable oil to the wok over medium heat. - Add the chicken pieces, and keep stirring to prevent them from sticking together. - Deep fry until light brown. Remove from heat immediately and drain in a colander. - Increase the temperature of the oil to 190°C/365°F. - Return the chicken to the oil to deep fry again. - Once the color has turned golden brown, remove and drain it on paper towels. Dried chilies - Cut the dried chilies into short sections. - Shake the chilies to remove the seeds. - Lastly, blanch the dried chili in boiling water for a minute, then drain. Groundnuts - Sieve the groundnuts with a colander to remove any debris and sand. - Deep-fry at 120°C/250°F until turning brown. - Remove them from oil and place them on a paper towel to cool. Stir-fry - Heat some oil in the wok. - Saute the minced garlic, ginger, and white section of the scallion until aromatic. - Also, the Szechuan chili oil, doubanjiang, douchi, Szechuan peppercorn (sieve to remove dirt), the soaked dried chilies, and two tablespoons of water. Saute until aromatic. - Return the deep-fried chicken to the wok. Szechuan hot bean sauce oil for frying - I use peanut or avocado oil 1 cup diced onions 1 cup diced bell peppers 1 cup diced celery 1/2 to 1 cup diced carrots 2-3 fresh red chili peppers - diced 3-5 dried red chili peppers 4-6 minced garlic cloves 1 tsp minced ginger In a hot wok or pan, add oil and chicken. Spread out chicken and let cook for 20 seconds before stirring. Cook and stir chicken until done and remove from the wok. This will take 3-5 minutes. A nice crust on the chicken will form. Add more oil and chili oil to wok/ pan. Add garlic, ginger and chopped fresh red chili peppers. Stir and cook for 20 seconds. Add crushed Sichuan peppercorns. Stir and cook for another 15 seconds. Add diced vegetables and dried chili peppers. Cook and stir for 3-4 minutes or until veggies are slightly tender. You can add some water to help steam and cook the veggies. Add meat and juices back into pan/wok. Add Szechuan hot bean sauce and sauce mixture. Cook and stir for 1-2 minutes to get well combined. Serve over jasmine rice. I agree. Saliva chicken is a gross name for a dish, especially when this dish contains absolutely zero saliva. Saliva chicken, probably should be known as mouthwatering chicken, is a direct translation from its Chinese name 口水鸡. I guess it means that when you look at them, your saliva will mysteriously start to well up in your mouth. LOL. I didn't use to like this dish at all because it looks so oily but when I first tried it in the US (haha out of all countries, right) when Roland and I were vacationing in the US, I fell in love with this dish instantly. Great for an easy weeknight meal. Check out all of my Bold and Zesty Recipes: 🤍 Don't forget to SUBSCRIBE to my channel! 🤍 Szechuan Chicken Recipe (How to Make Homemade Szechuan Chicken) Ingredients FOR THE SZECHUAN CHICKEN 1 pound chicken breast chopped into bite-sized pieces (you can also use chicken thighs if you'd like) 1/4 cup soy sauce Salt and pepper to taste 1/2 cup corn starch 1 tablespoon sesame oil or use olive oil 1 large bell pepper chopped 2 serrano pepper chopped (optional for extra spicy!) 10 dried chile de arbol peppers optional for extra spicy, or use other dried peppers you love 1 tablespoon Szechuan peppercorns or use black peppercorns 1/4 cup peanuts chopped (plus more for garnish - cashews are great here, too!) FOR THE SZECHUAN SAUCE 1/4 soy sauce 2 tablespoons rice vinegar 1 tablespoon sesame oil 1 tablespoon ground ginger fresh minced ginger is good too 1 tablespoon honey or more for sweeter 1 tablespoon chili garlic sauce 1 teaspoon garlic powder fresh minced garlic is good too 1 teaspoon sriracha or more to taste 1 teaspoon crushed red pepper flakes 1/2 cup chicken stock 1-2 tablespoons cornstarch for thickening 1/2 - 1 teaspoon szechuan peppercorns lightly toasted and ground or use black peppercorns instead 1/2 - 1 teaspoon Chinese 5 spice FOR SERVING Cooked white rice or noodles, spicy chili flakes Cooking Directions Add the chopped chicken to a large bowl. Add soy sauce, salt and pepper and toss to coat. Marinate for 10 minutes. FOR THE HOMEMADE SZECHUAN SAUCE While the chicken is marinating, whisk all of the ingredients except the cornstarch together in a small pot. Bring the pot to a boil, then reduce the heat and simmer for 3 minutes. To thicken the sauce, dissolve 1 tablespoon cornstarch in 2 tablespoons of water until well mixed. Stir it into the szechuan sauce and stir until it thickens up, 2-3 minutes. For thicker szechuan sauce, use 2 tablespoons cornstarch. Remove from heat and set aside. FOR THE SZECHUAN CHICKEN Heat the oil in a large pan to medium heat. Toss the chicken with 1/2 cup corn starch to coat. Add it to the pan and cook, stirring, 5-6 minutes, or until it is cooked through. Remove the chicken and set it aside. Heat the pan back to medium-high heat and add the peppers. Cook for 5 minutes to soften. Add the chiles de arbol, peppercorns and chopped peanuts and cook another 2 minutes, stirring. Add the chicken back to the pan along with the homemade Szechuan sauce. Reduce the heat and simmer for 5 minutes. Serve with rice or noodles. Garnish with extra chopped peanuts and spicy chili flakes. Resep Ayam Szechuan : Bombay - 1/2 bh Bawang putih - 3 siung Jahe - 2 cm Daun bawang - 2 btg Cabe merah kering - 7 bh Marinasi ayam : Ayam tanpa tulang - 300 gr Lada putih - 1/2 sdt Garam - 1/4 sdt Maizena - 2 sdm Kecap manis - 1 sdm Bumbu saus : Kecap manis - 3 sdm Saus tiram - 2 sdm Kecap ikan - 1 sdm Saus sambal - 1 sdm Minyak wijen - 1 sdm Saus tomat - 1 sdm Cara pengerjaan : 1. Campur ayam, lada putih, garam, maizena dan kecap manis dalam mangkok. Sisihkan. 2. Campur semua bahan saus dalam mangkok. 3. Panaskan wajan, masukan bawang putih, bombay, jahe dan cabe merah kering. Aduk. 4. Masukan ayam, bumbu saus dan sedikit air. 5. Ketika saus mengental masukan daun bawang. 6. Matikan api dan sajikan hangat. Schezwan Chicken Recipe : Onion - 1/2 no Garlic - 3 cloves Ginger - 2 cm Green onion - 2 nos Dried red chilli - 7 nos Marinade : Chicken boneless - 300 gr Pepper powder - 1/2 tsp Salt - 1/4 tsp Cornflour - 2 tbsp Soy sauce - 1 tbsp Sauce : Soy sauce - 3 tbsp Oyster sauce - 2 tbsp Fish sauce - 1 tbsp Chilli sauce - 1 tbsp Sesame oil - 1 tbsp Tomato sauce - 1 tbsp Instructions : 1. In a mixing bowl, add chicken, pepper, salt, cornflour and soy sauce. Mix it and put aside. 2. In another bowl, put all sauce ingredients and mix well. 3. Heat oil, add finely chopped garlic cloves, dried chilli, finely chopped onion and ginger. Saute for a minute. 4. Add chicken, sauce and a little water. 5. Once the sauce thickens, add the green onion and mix. 6. Remove from heat and serve hot.
