Pour short grain rice into a bowl. Add water, wash and drain. Repeat until the water drains clear. Soak the rice in clean water overnight. 2. Strain the rice and grind in a food processor until fine. Sift into a bowl. Some rice pieces are big to sift, so you must grind them again in a food processor. 3. Add salt to the flour and boiling water one tablespoon at a time mixing completely before adding another. How much water you need depends on the moisture of your flour. Knead until you have a soft and smooth dough. 4. Place the rice cake dough in a steamer and steam over medium high heat for 30 minutes. 5. Spread sesame oil on work surface. Put steamed rice cake on work surface and pound with a pestle, until the dough becomes smooth and elastic. This can take a few minutes. The longer you pound, the chewier the rice cakes will be. 6. Divide into 4 equal pieces. Take one piece and knead until soft. Roll into a long cylinder, and cut into 5cm pieces or the size you desire. Repeat with the rest of the dough. 7. Spread sesame oil on your hands and rub the rice cakes. It gives good flavor and prevents them from sticking to each other. They taste best fresh. Transfira o arroz para um processador de alimentos e triture os grãos até obter uma farinha fina. Peneire a farinha para uma tigela. Alguns pedaços de arroz são grandes para peneirar, por isso vai ter que triturá-los novamente no processador de alimentos. 3. Adicione o sal à farinha, e aos poucos 4-5 colheres de sopa de água fervendo. A quantidade depende da umidade da sua farinha. Misture com uma colher e depois amasse até obter uma massa homogênea. 4. Cozinhe no vapor em fogo médio por 30 minutos. 5. Espalhe o óleo de gergelim na superfície de trabalho. Coloque a massa de arroz cozido no vapor na superfície de trabalho. 🤍 Ingredients: 2 cups of short grain rice flour ½ ts salt ¾ cup of boiling water if using a microwave, 1 cup of boiling water if using a steamer 1 ts sesame oil* If you want to make your own homemade rice flour, check this out. Directions: Making rice cake with a microwave: Combine the rice flour, salt, and boiling water in a bowl. Cover it with plastic wrap, leaving a small gap to let the steam release. Microwave for 2 minutes. Mix the rice cake dough with a rice scoop or wooden spoon. Re-cover with the plastic wrap and cook for another 2 minutes. Spread ½ ts sesame oil on your cutting board. Put the hot rice cake in the oily spot on the cutting board. Pound it with a pestle for about 5 minutes, until it becomes smooth and elastic. Making rice cake with a steamer: Combine the rice flour, salt, and boiling water in a bowl. Line a steamer rack with parchment paper. Add the rice cake dough and steam for about 25 minutes over hight heat. Spread ½ ts sesame oil on your cutting board. Put the hot rice cake in the oily spot on the cutting board. Pound it with a pestle for about 5 minutes, until it becomes smooth and elastic. The rest of process is the same as the method of using a microwave oven. Prepare the rice cake for ddeokbokki: Cut it into 8 equal pieces, then roll each piece out into a 4 inch long cylinder shaped rice cake. Put ½ ts sesame oil onto your hands and gently rub the rice cakes to coat them in a thin sheen of oil. This will give them a nice flavor and keep them from sticking to each other. Prepare the rice cake for ddeokguk (rice cake soup): Cut it into 2 equal pieces, then roll each piece out into two 10 inch long cylinder shaped rice cakes. Let them cool at room temperature for several hours, then slice diagonally into thin discs. Use right away, or put in a plastic bag and freeze for later use. This amount is for 1 serving of ddeokguk, so if you want to make two bowls of soup, make two batches.
