This is a classic recipe for a loved-by-everyone Uzbek Plov, also called Pilaf. Plov is the most classic dish of Uzbekistan, consisting of rice, onion, carrots and meat, all cooked slowly in layers in a traditional cast-iron Kazan (essentially, a cauldron). If you don’t have a Kazan lying around, you can sub it for a cast-iron casserole dish. The national dish of Uzbekistan is an aromatic rice pilaf known as plov. It is enjoyed as a weekday meal and specially prepared for holidays and wedding feasts. Plov has been a cornerstone of Uzbek culture and identity for over 1,000 years, and in 2016 it was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity because of its role in the traditions and hospitality of Uzbekistan. This is the classic rice pilaf recipe I was taught as an apprentice Chef, and I believe it's still the best. The only difference, it was cooked it in the oven, but to me the stove works equally well providing you have a very low burner. Rice pilaf is one of the most versatile recipe as you can use it as a side dish to almost anything. Perfect for chicken or fish, curries, casseroles etc. Add vegetables and make it into a meal. How ever you use it, rice pilaf done this way will always be fluffy, creamy, fragrant and delicious. Enjoy pilaf rice! Today we have a great recipe that is one of our absolute favorites. It's important to us both as heritage, and as how healthy and "bereketli" it is. Bulgur means boiled, dried and cracked wheat grains and it comes in different sizes. When it is coarsely ground, we use it to make pilav. Medium grind is usually used to make kısır and dolma. Finely ground bulgur is great for soups, meatballs and veggie balls. To give you a clear picture, if Asia is the homeland of rice, America, the homeland of corn, Anatolia is the homeland of bulgur wheat. We use bulgur in almost every dish. It is nutritious, fulfilling and a superfood so it is a good ingredient in times of famine as well. Today we will be making the ultimate Bulgur pilav the way my dad taught me. Use the tip of your spatula to mix the paste with the onion and garlic evenly. • Add the bulgur, carrot and chickpeas. Continue to stir after adding every ingredient. • Time to spice up the pilav! Season with dried mint, thyme, salt and black pepper and add 1 teaspoon red pepper flakes, if using sweet red pepper paste. •Pour in boiling water up to 2 cm higher than the level of the bulgur. It will take around 4 cups of boiling water depending on the size of your pan. •Add 1 teaspoon butter and simmer for 10-15 minutes-depending on the size of the bulgur- on low heat. Turkish bulgur pilaf is an extremely filling, satisfying and quite healthy dish that is easy to make and a really nice alternative to rice. Add the tomato paste and the chili paste and cook 1-2 minutes until fragrant 6. Add the tomato sauce or the grated tomatoes 7. Add the salt, dried mint, black pepper and the paprika powder; stir and cook for 1-2 minutes 8. Add 2 cups of bulgur and cook & stir for another 3-4 minutes 9. Add the hot water and stir until the ingredients are mixed 10. Add the remaining 1 tbsp butter and stir until the butter is melted 11. Cover the lid and bring to a boil, once it’s boiling bring to low heat and let it simmer 12. Cook for about 10-15 minutes until the bulgur is soft and no water remains 13. Gently stir to mix and combine all the ingredients 14. Place a paper towel or kitchen towel on top of the bulgur and cover the lid on top 15. Bulgur Pilav with Leeks, Carrots & Delicious Mushroom This creamy bulgur pilav is full of veggies; carrot, leeks and delicious mushrooms which are treated like meat. Bulgur is healthy, easy to make, economic and always delicious! Plus a great way to eat vegetables. #veggiesrecipe #vegetablesrecipe #pilafrecipe #veggiebulgurpilaf Servings:2-4 Difficulty: Medium Prep time: 5 minutes Cooking time: 20 minutes + 15 minutes resting 2 leeks, sliced diagonally 300 g mushrooms, roughly chopped 3 large cloves of garlic, thinly sliced + 3 large cloves of garlic, thickly sliced 1,5 cups coarse bulgur 1 heaped tablespoon tomato paste, or you can use 100-150 g tomato puree 1 carrot, grated 1 heaped tablespoon meatball seasoning mix (🤍 , or you can find the spice mixture below for this recipe) 1 tablespoon butter 6 tablespoons olive oil 4 cups boiling water 5 pinches of salt A pinch of red pepper, optional For serving, Strained yoghurt Parsley Red pepper flakes Sour pickle juice • Heat a large frying pan (preferable ceramic coated). Pour in 2 tablespoons olive oil, then add the leeks and toss with a good pinch of salt on high heat until partially browned. Transfer them on a plate. • Pour 2 tablespoons olive oil to the pan and toss the mushroom like leeks. Add in thinly sliced, 3 cloves of garlic. After a minute add the meatball mix and toss for another 30 seconds. Add the mushrooms on leeks. Wipe the pan if there is any spice left to prevent them burning. • Add in the butter 2 more tablespoons olive oil to the pan. After butter melted, add the rest of the garlic. Add the tomato paste and mix until paste loosen. • Mix in the bulgur and stir until all of the bulgur mix with the tomato paste. • Put back in the leeks and mushrooms. Add 3 pinches of salt and red pepper. Give it a good stir. • Pour in the boiling water and transfer the pan on a smaller burner. Simmer for 15-20 minutes until some juice of the pilav left. This way pilav will be creamy and not dry. • Then, turn off the heat and cover the pan with a clean kitchen towel. Put the lid on and let it rest at least 15 minutes. • After resting, mix in the carrot and transfer on a serving dish. Make a hole in the centre and place the yoghurt in. Then sprinkle some parsley and red pepper. If you have some pickle juice pour a ladle on the pilav and insanely delicious, vegetarian dream bulgur pilav is ready! To make the spice mix, mix a teaspoon of cumin, a teaspoon red pepper, a levelled teaspoon garlic powder and half teaspoon black pepper. Uzbek Plov (also called Pilaf or Pulao) is the national dish of Uzbekistan and is often made during large gatherings and celebrations, therefore this is the perfect recipe to make for your loved one during Eid or any celebration. This is a one-pot rice dish that is made with long grain rice, tender chunks of lamb, onions, and carrots. Uzbek Pilaf is really simple to make and tastes amazing, especially when served with a yogurt dip and salad. This is a special feature, as the tomato gives a special tenderness to the pilaf🥰 Drain the rice, add salt and turmeric to the rice, stir. It is especially important to add salt to the rice, because this gives the rice a special crispness. For making the authentic traditional Uzbek Plov, the ingredients you will need: 5-6 carrots 4 cups of round rice 1.5 cup of vegetable oil 1 big onion 2kg of meat (lamb/beef) 1 teaspoon of Zira (cumin), black pepper, and paprika 1.5 tablespoon of salt Clean and delicious water as needed 3 bulbs of garlic Optional: 2-3 hot peppers (put them same as garlic) Instructions for How to make Uzbek Plov: Heat the oil until its very hot (starts to smoke) Cut the meat into big pieces (about 3cm^3) Fry the meat until golden brown Chop onions and carrots as shown Once meat is ready, throw in the onions and fry until the onions are golden red Then add the carrots and fry until the carrots become loose and soft Add water until the meat is covered Place the garlic and hot peppers on top. Simmer for 10-15 minutes Wash the rice Take off the garlic and hot peppers Gently spread the rice on top of everything Add water so when you put the spatula at 30 degrees angle, the water reaches almost half of the spatula. Keep stirring the rice only Once the water has evaporated, form a dome and make a hole in the center. Place back the garlic and peppers on top of the rice. Seal tight and put fire in the slowest mode. Let stay for 40 minutes. Uncover, flip the top of the rice upside down. Cover for another 10 minutes and it will be ready! Beef pilaf or Pilove is a classic rice dish. It is said to be a masterpiece of Uzbek; although it has made its way into many countries and has developed rumours as to its origin in each country. Its beginnings, nevertheless, are irrelevant. Beef pilaf's unique taste and texture are what captures the hearts of most cooks and chefs. The dish can be made with chicken or lamb too. When I first saw the dish and heard about its contents, I thought it would certainly be boring. This is clearly not the case, however. With its spices it certainly offers a unique hint of the Middle East - most food of which I love. The cumin and coriander certainly make the dish distinct. Ingredients: 1 pound or 1/2 kilo of stewing beef or chuck 1 small onion, chopped 4 cloves of chopped garlic 1/2 tsp of black pepper corns 1 tsp of ground coriander 1 tbsp of ground cumin 1/2 tsp of pepper corns 1 cup of water for simmering beef Method: In a pan over medium high heat, add the beef, sir and brown for about 6 to 8 minutes. Add in the onion and garlic. Stir and saute for about 1 or 2 minutes until fragrant. Place in the pepper corns, cumin, coriander, and stir until meat is covered with the spices and they are activated. Pour in the water, cover, and bring to a boil. Reduce the heat to low and allow to simmer for about 45 minutes until the beef tenderizes. Be sure to stir occasionally. After about 45 minutes, remove the lid, add in the carrots and rice. Stir and mix. Pour in the water, sprinkle with saffron, increase the heat, and bring to a boil. Place the lid back on, reduce the heat and allow to simmer for about 15 minutes until the rice is tender and cooked Turn off the heat, fluff, and serve. Try this plant-based protein recipe with bulgur, chickpeas and green lentils. Ingredients 1 cup of Extra Extra Coarse Bulgur 1 tablespoon of olive oil 1 small onion (finely chopped) 1/3 cup of chickpea (pre-boiled) ½ cup of green lentils (pre-boiled) ¼ red capia pepper (diced) 1/2 teaspoon of pepper paste 1 teaspoon of butter 1/2 teaspoon of flaked chilli 1/2 teaspoon of black pepper 1/2 teaspoon of salt 2 cups of hot water 1 Put the olive oil and butter in a broad and shallow pan. When melted, add onions and saute them until pinkish. Add diced red capia peppers and saute for a minute more. 2 Add pepper paste and bulgur and mix for 1 minute more. After sauteing them, add boiled chickpeas and green lentils. 3 Add flaked chilli, black pepper, salt and hot water, cover the lid and cook for 15 minutes or until water is absorbed. 4 Rest for 20 minutes before serving.
