ever wondered what to do with your okara after you've made soy milk? 😛 in this video i'll share 5 of my favorite ways to use okara in plant based japanese dishes. ✅ Plant based Japanese food made simple. Subscribe for NEW plant based japanese cooking videos each week! 🤍 okara has a ton of nutrition left over after extracting soy milk from the soy bean pulp. and because of that, okara is something that you should consider repurposing in some way. otherwise, it's kind of a waste if you just throw it out. because it has a mild flavor (most was extracted in the soy milk), okara is one of the most versatile ingredients you can use in your japanese cooking. okara makes a great replacement for potatoes for example, or a filling for gyoza or korokke as well as hambaagu (japanese style hambuger). and even better, if you LOVE your baked goods like bread, cake, cookies etc okara is the perfect way to make each of those things more nutritious than they could ever be without okara! some of my favorite ways to use okara are as follows- 🤸♂️hambagu with okaraハンバーグ mixed with a little bit of brown rice and or tofu kinda like what i made in this video japanese hamburger steak with tofu okara and shiitake (plant based) 🤍 all you need to make this a complete meal is a bowl of miso soup, some steamed veggies and maybe a side of rice or roasted potatoes. oishisoona! 🤸♂️ unohana or vegetables with okara 卯の花 this okara recipe gets it's name from the flower it resembles, if you've seen both, do they look alike? while there are many ways to make unohana, some of my favorites call for dashi and a mix of vegetables for a very refined and complex mixture of flavors and textures. 🤸♂️ korokke with okara コロッケ deep fried korokke (croquette), while you CAN bake this, nothing is quite as good as the real thing fried in oil, might be worth a try if you've never had it before, especially if you love savory fried foods! 🤸♂️ potato salad with okara ポテトサラダ a lot of different ways you can leverage the power of okara in salads, and one of my favorite is in a 'potato' salad, with which you can replace all of the potato 100% of it with okara or just a portion like 30-50 or 70% without much of an impact on flavor or texture 🤸♂️ baked goods with okaraパン if you've seen any of my live japanese cooking videos before you might have noticed i really loved baked goods - cookies, cakes, and bread or some of my favorite things to eat and okara helps to add moisture, texture and a little bit of density on top of the excellent nutritional value it adds to your food. how about that? did you also know if you can't use the okara right away, there are 2 ways to preserve it? 🤸♀️dry the okara. you can dry your okara in the oven on low heat, but the faster way to do it is in the microwave, on high 1-2 minutes and removed in between to mix and crush any lumps (which may become hard if you dont). once completely dry it will have a light and fluffy texture like fine panko (japanese bread crumbs) 🤸♀️ freeze the okara in a freezer safe glass container or ziplock with air removed. use within 2-3 weeks. 🙄question of the day - have you tried making any of these japanese dishes with okara before? if not which do you think you'd try first? lmk in the comments ! 📗:::GET THESE RECIPES and MORE::: as a newest member of the japanese cooking club- 🤍 LINKS 👉 japanese ingredients and cooking supplies 🤍 ✅ Plant based Japanese food made simple. Is this a fishless burger or more like a no-crab cake? You decide. This savory patty is pan-fried crispy on the outside but tender on the inside. A little bit of nori helps to bring that fishy flavour while leaving our fishy friends in the ocean! I imagine this is what a crab cake is like as they are kind of delicate, but then, I have only had crab cakes once in my life. The flavour though, is very much like a deep-fried “filet o’ fish,” but the texture is something else. Not at all in a bad way, I actually love them! Okara is full of fiber though, so just one small sea burger is quite filling. WHAT THE HECK IS OKARA? Okara is the pulp leftover from making soymilk. It's actually full of protein, fiber and other nutrients. You can also sometimes buy it from Asian markets, usually frozen. Here's the recipe for making your own soymilk: 🤍 Here's one for making tofu from that soymilk: 🤍 OKARA SEA BURGER RECIPE Makes 6-8 patties Click here for the printable recipe and full story: 🤍 INGREDIENTS 1 1/4 cup Okara (leftover pulp from making soymilk) [215g] 1/4 sheet nori, cut into confetti (about 1 tablespoon) [15 ml] 1 tablespoon miso paste [15 ml] 1 small potato, cooked 1-2 stalks green onion, minced (about 1/4 cup) [60 ml] 1 teaspoon onion powder [5 ml] 1 clove garlic, minced [about 5 ml] 1-3 tablespoons double strength vegetable broth, or as needed [30-90 ml] 2-3 tablespoons of cornstarch, or as needed [60-90 ml] Cooking oil as needed Pinch of salt DIRECTIONS Combine all the ingredients except for the broth and cornstarch. Mix the ingredients very well. Test the mixture to see if it will form a patty without breaking apart. If the mixture is too dry, add double strength vegetable broth a tablespoon at a time until the desired consistency is reached. Take 2 to 3 tablespoons of the mixture and squeeze it into a ball. Pat it down on the top and along the sides to form a burger shape. You may make your patties larger or smaller. Coat the patties in cornstarch by pressing them gently in a plate with some cornstarch on it. Heat a non-stick pan on medium high heat, along with one tablespoon of cooking oil. When the pan is hot, sprinkle a pinch of sea salt all over the surface. Add the okara patties, leaving at least once inch of room around each patty. Cook for 2 to 3 minutes per side, until nicely golden brown. Remove and serve! Enjoy! NOTES The ingredient amounts are approximate. Feel free to add or take out any of the spices or flavouring ingredients, however the potato acts as a binder so keep that in there or use another binding ingredient. If you have issues with the okara still tasting raw, you may want to steam the okara first before making these burgers. Also, make sure you cook the patties thoroughly. Uncooked okara tastes nasty. This is such a yummy and wholesome Vegan Ham Recipe that you can make with or without okara (soy bean pulp). It is great for sandwiches, wraps, pizza, omlettes and anywhere else you would use vegan ham. Vegan Ham Recipe with Okara 2 cups lukewarm water (more or less, depending how wet your okara is) 2 cups gram or yellow split pea flour 1 1/2 cups fresh okara 2 1/2 tsp ground coriander seed 2 1/2 tsp salt Heaped 1/4 tsp grated nutmeg (or 1/5 freshly grated nut) A pinch of black or white ground pepper A pinch of asafoetida compound (optional) 2-3 Tbsp beetroot juice (or 1-2 tsp beetroot juice powder) 1/2 cup coconut milk Vegan Ham Recipe (without okara) 2 cups lukewarm water 2 cups gram or yellow split pea flour 2 tsp ground coriander seed 2 tsp salt Heaped 1/4 tsp grated nutmeg (or 1/2 freshly grated nut) A pinch of black or white ground pepper A pinch of asafoetida compound (optional) 2-3 Tbsp beetroot juice (or 1-2 tsp beetroot juice powder) 1/2 cup coconut milk Get 2 cups of water to a boil and pour the prepared batter in, while whisking well. Get to the boil and simmer it on low while whisking often for 10-12 minutes. Pour into moulds, level and let it set in the fridge for a few hours. Are you struggling to use up your okara? Do you keep on searching for great okara recipes? These okara burgers are your answer! This is a great zero waste recipe after making your own soy milk and they taste amazing! They would work as vegan meatballs too. Okara Beetroot Burgers 1 1/2 cup okara (soy bean pulp) 1 cup cooked brown rice 2 medium size carrots, grated (or use slow roasted carrots) 2 small slow roasted beetroots 1 onion, chopped and fried 1 packet of shiitake mushrooms, chopped and fried 1 Tbsp tomato paste or ketchup 1 Tbsp white, brown or red miso paste 2 Tbsp mushroom powder 1-2 Tbsp nut or seed butter (optional) 1 green onion or a handful of chives, chopped 1/2 to 1 tsp salt 1 tsp onion powder 1 tsp cumin powder 1/2 tsp garlic powder 1/2 tsp smoked paprika 4 Tbsp psyllium husk Bake at 190 degrees Celcius for 30 min, flipping after the first 20 minutes. Pakora Soya Pulp- 3 tbsp Gram flour 3 tbsp Salt,cumin,chilli according to taste Gram leafy vegetables 2 tb so Chopped onion 1 /2 cup No need to add water, kneed and fry till crisp Halwa - Ghee 1tbsp Soya Pulp-1 tbsp Rava 1 tbsp Roast these till it leaves ghee. It's so delicious and also great for your gut as it has live bacteria in it (probiotics). In this video I show you 2 flavour combinations, but you can get creative and invent your own! Sometimes I like to make homemade soy milk because fresh milk is always best. After squeeze the milk, you get Okara (soybean meal).But I don't like the texture of the Okara which has full of nutrition. I tried to make meat balls, cookies, pancakes,etc...I couldn't enjoy that. But this bread was taste great. Hope you try this recipe. = Ingredients = -For homemade soy milk Soy beans 150 g Water 350-450 ml -For dough All purpose Flour 230 g Okara 230 g Molasses 2 Tbsp Active dry yeast 1/4 Tsp Salt 1/4 Tsp Warm water 50 ml + Oil 2 Tbsp Black Sesame seeds for topping = Recipe = -Making homemade soy milk Wash the soy beans & soak in water for about 7-12 hours. Remove water & wash the beans.Place the beans & water in blender. Blend it about 2-3 minutes. Pour the large pan & cook for about 15-30 minutes in medium heat. Remove bubble on top.using fine cloth or nut bag for dividing liquid & meat. -Making dough Warm water, molasses, yeast into bowl and let activate yeast for about 5 minutes. Put Okara & flour and salt into a large bowl and pour yeast mixture. Mix until all dough come together. Add oil & knead by hand until smooth surface. Cover dough and let it rest for 30- 60 minutes. Stretch the dough & roll it.. Place the dough on baking pan. Preheat oven for 190°C or 375°F. This Okara(Soy pulp) and black sesame cookie is one of your on the go snacks. It’s healthy. From toddler to adult can try this one. You can adjust the sugar in this recipe like me. Since I don’t introduce much sugar or sweets to my toddler I adjusted the amount of sugar and serve her as her snacks. Ingredients: Okara powder- 4 Tbsp (19.5G) Cake flour- 80g Millet sugar- 4Tbsp (44.2g) *you can adjust this part it’s fine 2-3tbsp 👍 Black sesame - 15g Olive oil or salad oil- 4Tbsp (39.5g) Milk- 30g *you can make it to 45g if you want to👍 Instructions: *Preheat the oven first. • Put all the dry ingredients in a zippered storage bag and close it and mix. • Add the oil and milk , close and mix. • Spread the dough with a rolling pin while opening the mouth of the zippered storage bag to let the air escape. • Cut the sides and open the zippered storage bag and cover it with a cooking sheet, and turn it over. • Cut into your desired pieces and line up the dough at intervals in a baking sheet lined with a parchment paper. • Baked in a preheated oven at 190 degrees Celsius for 15minutes. This is such a quick and simple way to use up your okara - Okara Pancakes! And the best part is that you can use them either with sweet or savoury sauces. Okara Pancakes WET: 1 1/2 cup fresh okara (cooked) 1/2 cup vegan yogurt ( I used soy) 1/4 cup nut butter (I used peanut butter) 1 tsp vanilla essence (if making sweet pancakes) 3/4 to 1 cup water (to get the right consistency, watch the video) DRY: 1 1/2 cup whole wheat flour (or use spelt or gluten free flour mix) 1/2 tsp bicarb soda 1/2 tsp salt Fry on medium low heat for 3 minutes on one side and 2-3 minutes on the other side. La recette de la vidéo : Les ingrédients : - 200 g de beurre végétal maison ou commerce - 125 g de sucre de canne - 200 g de farine de riz, blanche ou complète - 100 g de poudre d’amandes - 40 g d’Okara torréfié - 1 c à café de bicarbonate - 2 c à soupe de Cognac Le matériel : – Balance pour les pesées – Bol mélangeur + une spatule et robot ménager – Plaque à four – Papier cuisson – Boite métallique pour conserver les sablés bien croustillants La préparation : - Réduire en pommade au batteur le beurre végétal, le sucre et le Cognac - Ajouter peu à peu le mélange farine, amandes, okara, bicarbonate et continuer à mixer pour avoir un sable grossier. - Stopper l’appareil et ramener la pâte en boule. - La laisser reposer 20 minutes au réfrigérateur. - Prélever des petites quantités de pâte de 25 g environ. Les façonner rapidement en billes entre la paume des mains. Les ranger sur la plaque de cuisson garnie d’un papier cuisson. On a 26 sablés… - Les aplatir à l’aide d’une fourchette trempée dans l’eau. Ne pas trop écraser les sablés, ils doivent garder une épaisseur pour ne pas se briser. - Mettre au four pour 15 minutes à 180°C. Surveiller la cuisson car chaque four est différent, et adapter - Laisser refroidir les sables en les surélevant, puis les ranger dans une boite métallique ou un bocal à sablés. - Astuce : Conserver les sablés dans une boite métallique garnie de papier cuisson pour leur garder tout le croquant !
