Masala Fish Curry Recipe | Fish Curry Recipe | Fish Curry | Masala Fish Recipe | Rohu Fish Curry | Fish Recipe | Fish Curry by Spice Eats Ingredients for Masala Fish Curry: - Fish (Rohu, Katla, Asian Carp) - 500 gms For marination: - Turmeric powder- 1/4 tsp - Red Chilli Powder- 1 tsp - Salt- 3/4 tsp For Masala Paste: - Cumin seeds- 1 tsp - Dried Red Chillies- 2 - Garlic- 10 cloves - Green Chillies- 2-3 (cut into 2) - Red Chilli Powder- 1.5 tsp - Coriander Powder- 1.5 tsp - Turmeric Powder- 1/4 tsp Other Ingredients: - Onion, grated- 2 medium (around 130 gms) - Kasuri Methi (dried Fenugreek leaves)- 1 tsp - Curry leaves- 15-20 - Tamarind, soaked in water- 4 tbsp juice - Thick coconut milk- 4 tbsp - Salt to taste- 1/2 tsp - Coriander leaves for garnishing- 2 tbsp - Oil - 3 tbsp + oil for pan frying the fish pieces Preparation: - Clean, wash and pat dry the fish pieces. Add the turmeric, red chilli powder, salt and mix well. Set aside for 30 mins. - To prepare the Masala paste, take a pan and dry roast the red chillies and cumin seeds on low heat for 1 minute. Now add the garlic cloves and continue roasting on low heat for another 2 mins. Set aside to cool. Add them to blender/grinder along with the green chillies. Coarse grind. - Now add 3-4 tbsp of water and blend it into a smooth paste. The masala paste should have thin consistency so you can add more water to make into a thin consistency. - To pan fry the marinated fish, add oil to a frying pan and place the fish pieces side by side. - Fry on medium heat for 2 mins and turn it on the other side. Continue to fry on medium heat for 2 mins. Take these out on a plate. Process: - Heat oil in a flat pan or kadai. - Add the grated onions and fry on medium heat for 7-8 mins till light brown in colour. - Now add the masala paste and give a mix, add 1/2 tsp salt to it and continue to fry on medium heat for 3 mins till water dries up and oil separates. - Add the dried fenugreek leaves (Kasuri Methi) and fry 1 min on medium heat. Add the curry leaves and fry on low to medium heat for 2 mins. - Now add the tamarind juice, give a mix and then add 250 ml water. Cook it on medium heat till it comes to a boil. - Lower the heat and place the fried fish pieces side by side and cover & cook on low heat for 5 mins. - Remove lid and flip the fish pieces. Fish Curry in Coconut Gravy | Boneless Fish Gravy | Fish Curry Recipe | Fish Curry in Coconut Milk Recipe | Fish Curry with Coconut Milk | Fish in Coconut Sauce | Fish in Coconut Milk Recipe | Fish Curry | Fish Recipe | Fish Curry by Spice Eats Ingredients for Fish Curry: - Boneless fish fillets - 500 gms (Basa, Cod, Haddock,Sole or Catfish) For the Tempering: - Mustard Seeds- 1/2 tsp - Curry Leaves- 10-15 leaves - Green Chillies, chopped- 2-3 nos. Onion Masala paste: - Onion, cubed- 2 medium (150 gms.) - Ginger chopped- 1” piece - Garlic cloves- 6 - Cumin Seeds- 1 tsp Spice Powders: - Turmeric Powder- 1/2 tsp - Red Chilli Powder- 2 tsp Other Ingredients: - Tomato purée or paste- 3 tbsp (readymade) - Coconut Milk- 1 cup (225 ml) - White Vinegar- 2 tsp - Refined Oil- 3 tbsp - Salt- 1 tsp Preparation: - Make a paste of the cubed onions, peeled and chopped ginger, peeled garlic and cumin seeds. Remove and set aside. - Chop the green chillies and wash & take out the curry leaves. - For the coconut milk you can use readymade coconut milk or make fresh coconut milk from fresh coconut at home. - For the fish, take boneless fish fillets and cut them into thick slices. Process: - Heat oil in a pan and add the mustard seeds. Once it splutters, add the curry leaves and the chopped green chillies. - Give a stir and then add the Onion paste. Give a mix and continue to fry on medium heat for 7-8 mins till light brown in color. - Now add the tomato purée, give a mix and fry on low heat for 2 mins. - Now add the Turmeric, Red Chilli Powder and salt. Give a mix and fry on medium heat for 2-3 mins after adding 3 tbsp water till oil separates. - Add the coconut milk and 200 ml water, give a mix and cover & cook on low heat for 5 mins till oil separates. - Now add the boneless fish pieces and give a mix. Cover & cook on low heat for 10 mins. - Add the white vinegar, shake the pan to give a mix. Mix it well and set aside for 1 hr. Process: - Take a frying pan and heat the oil. - Now place the fish pieces side by side and fry on medium heat for 3 mins. Mix well & set aside for around 30 mins. - Make a paste of the quartered onions, tomatoes and one or two green chillies. - Prepare coconut milk or use store-bought coconut milk. - Pan-fry the fish pieces in 2 batches. Remove & set aside. - Chop the coriander leaves. Process: - Heat oil in a kadai & add the onion-tomato-chilli paste. - Fry on medium to low heat for around 7-8 mins. - Add the ginger garlic paste. - Mix & continue to fry for another 15 mins on medium heat, till the paste is cooked & has a little grainy texture. Make sure that the masala doesn’t burn or become brown in color. - Add the red Chilli powder, Coriander powder, Cumin powder & 1/2 tsp salt and mix it well. Add all the ingredients for the marinade, mix well and set aside for 30 mins. - Slice the onions and tomatoes. - To make the Onion-Tomato paste, heat 1.5 tbsp of refined oil in a pan and add the sliced onions. Fry on medium heat for 3-4 mins till it starts turning brown. Now add the sliced tomatoes, give a mix and fry on medium heat for 2-3 mins till it becomes soft. - Allow it to cool and then add in a blender. Blend it once and then add around 150 ml water. Blend it into a gravy like paste. Process: - Heat oil in a pan and add the marinated fish pieces side by side. - Fry the fish pieces on medium heat for 3 mins on each side till slightly browned. - Now add the onion-tomato paste, give a gentle mix and cook on low heat for 4-5 mins till oil separates. - Add 200 ml water, Garam masala powder and 1/4 tsp (or to taste) salt to season and give a gentle mix. Cover & cook on low heat for 10 mins till oil separates. - Remove the lid and add the Chaat Masala and roasted & powdered Kasuri Methi (fenugreek leaves). For Frying In a pan heat mustard oil and fry the marinated fish on medium high heat from both sides until golden brown. Remove and keep aside. Then add the potato wedges and also fry them until golden brown in the same oil. Remove them and keep aside for further use. For Fish Curry In the same pan with the remaining oil add bay leaf, onion seeds, ginger julienne, green chillies and saute for a few seconds. Now add onion paste and continue cooking on medium heat until it turns light brown and oil starts separating. Then add fried potato, degi red chilli powder, water, salt and cook until the potatoes are completely cooked. Add cubed tomatoes, fried fish and stir it properly with light hands. One of the dishes that is both popular, and always hits the spot is a Kerala style Kottayam fish curry. And so today we’re going to make it, together. We had Kottayam fish curry a number of times throughout Kerala, home cooked, in the jungle and homely restaurant, and at a legendary toddy shop, known for serving extra spicy Indian food. They were all extremely delicious. Ok, let’s get started on this recipe: Ingredients: ½ kg. King Mackerel 3 tbsp coconut oil 1 tbsp mustard seeds 1 tbsp fenugreek seeds 10 - 15 dried whole chilies 4 - 6 stems of curry leaves 50 grams ginger 1 head garlic 6 small shallots 20 grams dried pot tamarind - soak in 300 ml water for 15 minutes. 4 tbsp. Kashmiri chili 4 tbsp. Strong chili 2 tbsp. Coriander powder ½ tbsp. Turmeric powder ½ tbsp. Black pepper Salt to taste Method: Pound ginger and garlic into a coarse paste. Slice shallots. Set all dry spices aside on a plate so you can use them quickly. Soak dry pot tamarind in water and set aside for at least 15 minutes to extract the flavor. Begin cooking by heating coconut oil in pot. When hot, immediately toss in mustard seeds, fenugreek seeds, curry leaves, and whole dried chilies. Fry for a few seconds until smoky and fragrant. Add ginger garlic paste and shallots and stir fry until golden and fragrant. Add all dry spices, if it gets to dry add a little water, and make into a paste. Add pot tamarind water, and mix into spices. You can also add some extra water to make it liquid. Season with salt to taste. Taste test to balance spices, pot tamarind sourness, and salt. Add more if needed. Final step is to add the fish - and once you add it - don’t stir your curry. Make sure fish is submerged into curry sauce. Simmer to 5 - 10 minutes depending on how big your fish is. When fish is cooked, curry is ready. Eat with rice, or tubers. Dhaba Style Fish Curry | Rohu Fish Curry Dhaba Style | Fish Curry Recipe | Masala Fish Curry Recipe | Fish Curry | Masala Fish Recipe | Rohu Fish Curry | Fish Recipe | Spice Eats Fish Curry Ingredients Dhaba Style Fish Curry: - Fish- 500 gms (Rohu, Trout, Asian Carp) For Marination: - Gram Flour (Besan)- 1 tbsp - Kashmiri Chilli Powder- 1 tsp - Turmeric Powder- 1/2 tsp - Coriander Powder- 1/2 tsp - Cumin Powder- 1/2 tsp - Salt- 1 tsp - Lemon Juice- 2 tsp - Refined Oil- 2 tbsp - Water- 1 tbsp For Onion-Tomato paste: - White Onion, cubed/quartered- 2 big (200 gms) - Ginger, chopped- 1” piece (9 gms) - Garlic cloves- 5-6 (9 gms) - Red Tomatoes, cubed- 2 big (200 gms) Spice Powders : - Turmeric Powder- 1/4 tsp - Red Chilli Powder- 1 tsp - Coriander Powder- 1 tsp - Kashmiri Chilli Powder- 1 tsp - Cumin Powder- 3/4 tsp Other Ingredients: - Mustard Seeds- 1/2 tsp - Green Chillies chopped- 2-3 nos - Kasuri Methi (Fenugreek leaves)- 2 tsp - Refined Oil- 3 tbsp & oil for pan frying the fish pieces - Salt for seasoning- 1/2 tsp - Coriander Leaves chopped- 2 tbsp Preparation: - Mix the items for the marinade in a bowl. Add all the fish pieces and mix them to coat the fish pieces with the masala mix. Set aside for 30 mins. - Cube or quarter the onions and tomatoes, peel the ginger & garlic. Chop the ginger, green chillies and coriander leaves. - To make the Onion-Tomato paste, add the onion, tomatoes, ginger and garlic into a blender/grinder and blend it into a smooth paste. - Dry roast the Kasuri Methi (Fenugreek leaves). Crush it with your hand once cooled. Process: - Heat oil in a pan for shallow frying and add the marinated fish pieces side by side. - Fry the fish pieces on medium heat for 3 mins on each side till slightly browned. Continue to fry on high heat for 2 mins on both sides. Remove and set aside on a plate. - Now take another wok or kadhai and heat oil. Add the mustard seeds and when it splutters, add the chopped green chillies. - Now add the onion-tomato paste, give a mix and fry on high to medium heat for 20 mins till the paste is fried & reduced and oil separates. - Now add the spice powders and salt, give a mix and continue to fry on medium to low heat for 5-6 mins till the masala is cooked & granular and oil separates. - Add 400 ml water, give a mix and add the fried fish pieces. Cover and cook on low heat for 10 mins till oil separates. - Remove the lid and add the roasted & powdered Kasuri Methi (fenugreek leaves). Pat dry - Fine chop the curry leaves and coriander leaves. Marination: - Add 1 tsp salt and the turmeric powder to the fish pieces. Rub it on both sides and set aside for around 10 mins. - For the 2nd marinade, take a bowl and add all the items for the marinade specified above. Mix it well and then add the marinated fish pieces. Mix well and set aside for 1 hr. Add chopped tomatoes and cook until the tomatoes are mushy. Add the curry leaves. 4. Add red chilli powder, coriander powder, turmeric powder and salt. Cook for 2 mins. 5. Add the black peppercorns, cumin seeds and mix well. 6. Add the grated coconut and continue to saute for 2 mins. 7. Add the tamarind and saute for a minute. 8. Remove from heat, allow it to cook and transfer it to a mixer grinder jar. Add 1 Cup of water and grind it into a smooth paste. 9. In another Kadai, heat Gingelly oil. Add mustard seeds, fenugreek seeds and allow the spices to splutter. 10. Add curry leaves, dried red chilli. 11. Add the chopped shallots, sliced ginger and garlic cloves. Add ½ tsp of salt and saute until the onions turn golden brown. 12. Add the ground masala paste, 3 cups of water and simmer for 15 mins or until the oil separates from the curry. 13. Add the fish pieces and cook for 5 mins or until the fish is cooked. 14. Add chopped coriander leaves and remove from the heat. 15. Serve hot with steamed rice. Fish Curry Village Style | Fish Gravy Recipe Andhra Style | Fish Curry Recipe | Fish Curry | Chepala Pulusu Andhra Style | Rohu Fish Curry | Chepala Pulusu Recipe | Fish Recipe | Fish Curry by Spice Eats Ingredients for Fish Curry: - Fish- 1 Kg (Rohu, Trout, Asian Carp) Onion-Tomato-Chilli Paste: - Onion, quartered- 3 medium - Tomatoes, quartered- 2 medium - Green Chillies, cut- 3 Roasted Masala Powder: - Coriander Seeds- 1.5 tsp - Cumin Seeds- 3/4 tsp - Methi Seeds(Fenugreek seeds)- pinch (1/8 tsp) Tempering: - Mustard Seeds- 1 tsp - Curry Leaves- 15-20 Other Ingredients: - Ginger Garlic paste- 2 tbsp - Turmeric Powder- 1 tsp - Red Chilli Powder- 5-6 tsp - Tamarind pulp- 50 gm tamarind soaked in 200 ml water & strained - Oil- 6 tbsp - Salt- 2 tsp + 1/4 tsp for seasoning Preparation: - Soak 50 gms of tamarind in 200 ml of warm warm for 30 mins. Strain it to remove the seeds and get a thick tamarind pulp. - Alternatively you can also use readymade tamarind paste but you will have to add less since that is more sour. - Peel & quarter the onions and tomatoes, cut the green chillies. - Add all these into a grinder/blender and blend into a smooth paste. - Dry roast the items for the Spice Powder (coriander, cumin and methi seeds) in a pan on low heat for 2-3 mins. Remove onto a plate to cool and then grind it into a powder. Process: - Heat oil in a pot/pan and add the mustard seeds and curry leaves. Give a stir and then add the Onion-Tomato-Chilli paste. Fry on medium heat for 5 mins and then add the Ginger Garlic paste. Mix and continue to fry on medium heat for another 5 mins till the paste is cooked and no raw smell remains. - Now add the Turmeric, Red Chilli Powder & salt, give a mix and continue to fry on medium to low heat for 3-4 mins till the masala is cooked. - Add the tamarind pulp, give a mix and add 450 ml water. Give a mix and cover with a lid. - Cook covered on low heat for 10 mins till the gravy is cooked & oil separates. - Slide in the fish pieces side by side and gently stir them in the gravy. - Cover & cook on low heat for 10 mins. - Remove the lid and add in the roasted masala powder. Shake the pan gently to mix. - Add salt for seasoning. 🤤 RECIPE: 🤍 Fish head curry is commonly enjoyed in Malaysia and Singapore. With South Indian origins, fish head curry uses a combination of various spices and ingredients to create the delectable taste loved in Southeast Asia. Here is an easy fish head curry recipe with all the tips needed. One of the most sought after curry in both Malaysian and Singapore is fish head curry. Commonly found at many Indian eateries like mamak, fish head curry is ordered as a side dish for steamed white rice. Just like other dishes found in Singapore and Malaysia, the recipe adapts to the local taste since it was introduced by the Indian migrants when they moved to the region. Thus, it is to no surprise that fish head curry is not known in India. ### But, why fish head? It may be disturbing to many. However, the meat of red seabream found at the jaws located below the gills and also on the back of the neck is sweet and delicate. It is the layers of fine meat structure that is able to absorb the flavours of curry or any sauce that comes with it, when eaten together. I have seen those who would only seek out for the fish head when the whole fish is served especially in dishes like steamed [Cantonese steamed fish](🤍 Due to its popularity, there is now a variety of fish head curries depending on the ethnic flavour profiles such as Nyonya Fish head curry or even Thai fish head curry. While there many different types of fish head curries, the Indian fish head curry still tops my list of all fish head curries. Indian fish head curry is also known as the healthier version among all as it does not use any coconut milk but yet is able to deliver the thick and luscious curry flavours. You need a few tricks to make that perfect fish head curry and I have you covered! ### 1. Fish curry powder Fresh fish curry powder mix is a must. The quality and composition of the fish curry powder will affect the taste. Look out for Malaysian or Singaporean made fish curry powder mixture. If you are located in Malaysia or Singapore, fresh curry powder mixture can be bought at the wet market. ### 2. Type of fish As mentioned, red seabream is typically used in fish head curry. Other white fleshed fishes such as sea bass, gilt-head bream or talapia are also suitable for this flavourful curry. In most western countries, fish heads are not available unless the whole fish is bought. It is of course possible if you plan to cook the whole fish (chopped into three parts). If there is still reluctance to cook fish head, use fillets or cutlets as a replacement. Most importantly, only use fresh fish and do not over cook them or the flesh will be tough! ### 3. Make fish head curry thick Fish head curries must be thick in consistency. There is no discussion! There are two main steps to make the curry thick. First of all, use rice. Having rice as an ingredient in curry may be unusual to many. However, the starch in the rice will act as a thickening agent. Secondly, the curry needs to be simmered down until it reaches the desired thickness! Therefore, vegetables such as okra and aubergine are perfect since they soften in the curry as it is simmered. There you go, three main tips to cook your perfect fish head curry as found in most Indian eateries! This dish goes perfectly well with white rice and other side dishes for Banana Leaf Rice. It is also easier to prepare compare to many other curries. This delicious curry recipe is simple and easy to make and can be relished with hot steamed rice. Ingredients 11 pods of garlic 2 onions, chopped 1 tomato, chopped 1 inch piece of ginger 1 cup freshly shredded coconut 1 tsp fennel seeds 2 tsp coriander seeds 1 tsp mustard seeds 2-3 green chillies Tamarind soaked in water 2 pieces of Indian mackerel Coconut oil Method For masala In a pan add coconut oil, 3-4 cloves of garlic, 1/2 inch of ginger, 1 chopped onion, 1 chopped tomato and cook it until the onions turn brown. In a blender add the cooked onions and tomato, 1 cup shredded coconut, 1 tsp of fennel seeds, 2 tsp of coriander seeds and blend it into thick paste. For curry In a pan add coconut oil, 1 tsp mustard seeds, 6-7 pods of garlic, 1/2 inch of ginger, 2-3 slit green chillies, curry leaves, 1 chopped onion, salt, ground masala and give them a mix. Add 1/2 tsp turmeric powder, 2 tsp of red chilli powder, tamarind water and mix it well. Fill the pan half with water, add some coriander leaves and allow it to cook for 8-10 mins. Add 2 pieces of Indian mackerel and cook it for next 5-7 mins on low flame.
