This crispy pork belly came out with epic crackling that was bubbly and easy to bite through, the meat was tender, juicy and full of flavour too! For me, the secrets to crispy pork belly have always been about preparation combined with high indirect heat. Taking the time to dry the skin out is key, using a jaccard really helps to create that bubbly crackling and high indirect heat helps crackling formation without it burning too fast. In the video i'll explain all of the above more in depth. Crispy pork belly every time #shorts


Ingredients - Pork belly (you want a piece from the centre of the belly preferably) - Salt, lots of salt… - Any seasoning or rub your little heart desires for the flesh Method 1. The day before, take the pork from the packet and dry it really well with a paper towel. 2. Score diamond patterns into the skin but make sure you don't cut past the fat, you just want to cut through the skin. 3. Place your pork belly onto a wire rack and season it heavily on the skin side. 4. Place in the fridge overnight. 5. The next day, pre-heat your oven to 180°C. 6. Take the pork belly from the fridge and brush off any excess salt on the top. 7. Season the flesh side with any barbecue rub or cracked pepper. 8. Place into the oven for 1 hour. After 1 hour, turn the oven up to 220°C on the grill or broil function but make sure your pork is still in the bottom half section of the oven. 9. Cook it like this for another 30 minutes or until the skin goes super crispy. Just be super careful you don't burn the crackling at this point as all ovens are different. 10. After a total of roughly 1.5 hours in the oven, your pork belly should be super crispy and still juicy in the centre. Remove from the oven and let it rest for at least 25 minutes before you slice it. 11. Enjoy!

Ingredients: [Pork rub] 500G Pork Belly 1 tsp five spice powder 1 tsp salt 1 tsp YumYum 1/2 tsp sugar 1/2 tsp white pepper 1/2 tsp chicken powder [Water] 3 Bay leaves 1 tsp White peppercorn 2 tbsp Chinese cooking wine [Pork skin] 1tsp baking soda 1tbsp vinegar oil Method: For best result, leave pork in fridge uncovered overnight. 1. Make cuts on the bottom side of the pork belly as shown in the video. 2. Mix all the seasonings together and rub into the meat. 3. Gently simmer the pork belly in a pot of water for 10mins. 4. Remove from pot to poke holes with a fork or needle. (More holes = crispier.) 5. Pat dry and brush with vinegar and baking soda. 6. Fry pork belly skin side down with oil on the lowest possible temp with lid on for 20mins. 7. Remove lid and check if all skin is crispy. (If not, add more oil and cook for 5-10 more minutes without lid). 8. Now you have roast pork without wasting time and resting in the fridge overnight like the other recipes. I made my 70 year old parents crispy pork belly


CRISPY PORK BELLY⤵️ 2.5-3 lb pork belly MARINADE (BROWN) 1 TBSP ketchup 2 tsp sugar 1 tsp salt 1 tsp five spice 1/2 tsp black pepper - mix this together VINEGAR MIXTURE (WHITE) 1/2 tsp salt 1 tsp vinegar - mix this together 1. Poke a bunch of holes onto the skin side of pork belly 2. On the meat side of your pork belly, cut slits into it. About 1.5 - 2 inches apart from each other and 1-2 cm deep 3. On the meat side of your pork, coat it with your MARINADE. Make sure you get in between the slits and on the sides 4. On the skin side, wipe off any marinade and any other liquids. Then coat it with your VINEGAR MIXTURE. 5. Then lay your pork belly on a piece of foil (skin side up) and form a boat around your pork belly with the foil. (watch video for clarification). -Then refrigerate your pork belly un covered for at least 3 hours 6. After 3+ hours, place pork belly onto an oven safe dish lined with foil — skin side down. Bake at 400F for 20 mins on the middle rack. 7. After 20 mins of baking, remove pork belly from oven and flip it over. The skin side should now be up. - Poke a bunch of holes into the skin and pat the skin dry. - Apply another layer of your VINEGAR MIXTURE all over the skin. You do not need to poke holes at this point. - Bake at 400F for another 20 minutes (total 40 mins bake time) 8. Repeat step 7 one more time. You’ll start to see bubbles on the skin at this point 9. After a total of 60 minutes baking, switch to broil and broil for 5 minutes. Keep an eye on your pork belly so it doesn’t burn. The skin will crackle/ bubble up some more. 10. Allow to cool skin side up (if you cool skin side down, the skin will become soggy and no longer crispy. Learn from my mistake) 11. Once cool, cut to desired side. I cut following the incisions I made. 12. Enjoy =)
