Slice tubes into 3/4" or 2cm rings. Slice larger tentacles in half if needed. Pour buttermilk brine over squid pieces and toss to combine. Cover and allow to marinate in the fridge for 30min-2 hours. To make the breading, add flour, cornstarch, baking powder, and black pepper to a med-lrg bowl. Whisk to combine. Use spider (or slotted spoon) to transfer the calamari pieces into the breading, making sure to drain off as much buttermilk as possible. Coat pieces with breading mix. Transfer pieces of calamari onto a sheet tray, shaking off excess breading as you go. To fry, add 2qts oil to a large, heavy bottomed pot. Preheat over medium heat or until oil reaches 365F/185C. Carefully add in 1/2 of the calamari. Use spider to move around calamari pieces, making sure they cook evenly and no pieces are stuck together. Fry for about 3min or until pieces are lightly golden brown. Scoop out of oil with spider and transfer to a towel lined tray. Sprinkle with salt. Fry second batch of calamari. MARINARA / "RED SAUCE" ▪800g or 1 28oz can crushed tomatoes ▪1/2g or 1tsp dried basil ▪1/2g or 1tsp dried oregano ▪1/2g or 1/2tsp dried chili flake ▪10g or 2 1/3tsp sugar ▪7g or 1 1/4tsp salt ▪50g or 3Tbsp tomato paste ▪25g or 2Tbsp (double glug) olive oil ▪15g or 2 cloves minced garlic Combine tomatoes, herbs, chili flake, salt, sugar and tomato paste in a high sided container and blend with immersion blender until smooth. Preheat saute pan over medium then add olive oil and garlic, stirring immediately to begin to cook (about 30sec). When aromatic, add tomato mixture. Stir then reduce heat to low. Simmer for 20-25min until thickened. It really means a lot to me. 🔄Kg to cups converter: 🤍 Convert grams to oz: 🤍 FRIED CALAMARI RECIPE | How to Make Crispy Fried Calamari INGREDIENTS: Sunflower (or vegetable) oil 3-4 freshly cleaned calamari (including tentacles) 1.5 cups flour 1.5 cups Semolina 3 teaspoons fresh or dried parsley 1-2 lemons INGREDIENTS FOR DIPPING SAUCE: Free range egg mayonnaise Sriracha sauce Lemon Parsley UTENSILS: Medium stainless steel fry pan (or small deep fryer) 2 x medium size mixing bowls Chopping board Scissors Sharp Knife Tablespoon Deep fryer (or medium fry pan) METHOD: 1. Fried calamari recipe starts with good quality oil for frying. Pour a generous amount of sunflower oil into a medium size stainless steel fry pan and leave to heat up to approx. 180 degrees celcius / 356F. 2. While the oil is heating up, cut the calamari on a chopping board, while they are lying flat, or use scissors for extra ease. Cut up the tentacles too, just in half or thirds dependent how big they are and put them into a mixing bowl. 3. This fried calamiari is so easy, by the time your oil is at the right temperature, the calamari rings will be ready! 4. In a medium sized mixing bowl, combine the flour and semolina, along with 3 teaspoons of parsley. 5. Next, add salt and pepper to season and mix dry ingredients together really well. 6. My fried calamari recipe has a few extra touches, and this one is my favourite! Squeeze the juice of half a lemon over the calamari along with a sprinkle of parsley and mix it through so it marinates them. This gives them extra zesty flavour and softens them slightly too! 7. Once you have let the calamari marinate for a few minutes, transfer them, draining them slightly, into your bowl of dry ingredients. 8. Mix them around until each piece of calamari is completely covered and doesn’t feel wet, again, leaving them for a couple of minutes to set. 9. Once the oil is ready, you should place the calamari pieces into a strainer and dust off the excess flour gently so there is not too much left in the oil. 10. Transfer the calamari to the oil and leave to fry for 1-1.5 minutes. 11. Once the calamari have started to crisp up and brown, strain them from the oil and transfer them over to crushed baking paper or paper towels to get rid of any excess oil. HOW TO MAKE THE DIPPING SAUCE: 1. This fried calamari recipe calls for some delicious dipping sauce and I have a simple one. 2. Mix mayonnaise, sriracha sauce, a squeeze of lemon and sprinkle of parsley together and mix well. 3. Leave to set until you’re ready to serve. This can be prepared ahead of time even before you make the fried calamari recipe. HOW TO SERVE: Prepare a plate with some crinkled up baking paper and serve these easy to make fried calamari alongside the delicious dipping sauce. For the final touch, serve with lemon wedges and each guest can squeeze this over their own serving so the calamari don’t get soggy while they are still in the serving plate! SUBSCRIBE and activate the notification 🔔 to see all of our weekly recipes! 😀 ~ RECIPE ~ Yield: 2 Serves Preparation Time: 20 Minutes Cooking Time: 10 - 12 Minutes INGREDIENTS - Calamari / Squid (2 Tubes) 450g - Salt 1tsp - Ground Pepper 1tsp - Egg (Beaten) 1 - Tapioca Starch 150g (Substitute by Corn Starch or Potato Starch) - Vegetable oil for deep frying (Can also be done in an Air Fryer) METHOD (1) Rinse the Calami Tubes well under cold water then pat dry before transferring onto the chopping board. Cut open the Calamari Tubes then using a knife, remove all the extra skin on the surface (Makes the Calamari rubbery when cooked) then pat dry using kitchen towel. (2) Cut the Calamari Tubes in half then using a sharp knife, score the calami as shown in the video. Portion into 5 equal pieces or desired shape. (3) Season the calamari pieces with Salt and Pepper, then add 1 beaten Egg and mix well. (4) Gently coate the Calamaries with Tapioca Starch, shaking off any extra Starch. (5) Deep fry or fry using an Air Fryer at 190C | 380F for 10 - 12 Minutes or until golden and crispy. Pull out the clear cartilage inside the tube and discard. With a knife, cut the head and the ink sack from the tentacles. Set aside the tentacles. Peel the spotted outer membrane from the squid and discard. Under cold running water, wash the tentacles and the tubes inside and outside to remove any remaining tissue or debris. Drain well and pat dry. Cut the body into rings by slicing vertically or keep them whole depending on size. In a bowl, place milk and cleaned squid. Marinate in the refrigerator for at least 30 minutes or up to 4 hours. Drain squid and discard milk. In another bowl, combine flour and cornstarch. Stir to combine. Toss the squid in the flour mixture to fully coat. In a wide pan or wok over medium heat, heat about 3-inches deep oil to 350 F. Add coated squid in batches and deep-fry, turning as needed, for about 1 to 3 minutes or until crisp and golden. With a slotted spoon, remove from pan and drain on a wire rack set over a baking sheet. Season with garlic powder, salt, and pepper to taste. Serve immediately with lemon wedges or spicy vinegar. Clean the squid properly and remove the outer skin before slicing. 2. Season the sliced squid with salt, pepper, granulated seasonings & minced garlic. 3. Mix them well and marinate it for atleast 30 minutes. 4. Prepare 1/4 cup flour, 1/4 cup bread crumbs and beat 1pc egg for coating. 5. Coat the marinated squid with flour, then egg and bread crumbs. 6. Preheat a pan with 1-2 cups cooking oil. 7. Deep fry the coated squid over medium heat until golden brown. 8. Olive oil (45 ml) 2 cloves garlic, chopped 1 small onion, sliced 3 large oyster mushrooms , torn gently by hand ¼ cup Nicoise olives, pitted and cut in half(125 ml) 2 tbsp. Pine Nuts, toasted (25 ml) 6 grape tomatoes, quartered 1 tsp. dried oregano (5 ml) Fresh chopped parsley and lemon wedges for garnish Frozen squid can be used, cleaned and ready to use. If using fresh, make sure you remove ink sack, remove head and discard innards. Turn bodies inside out and rinse thoroughly. Slice bodies into thin rings and leave tentacles whole. Rinse well and pat dry. Season with salt and pepper. Dredge in flour . Meanwhile, in a large skillet heat pan dry. Add 2 Tbsp. Olive oil on high. Add the squid and toss vigorously until golden about 2 minutes. Remove from heat immediately and set aside. In same pan, heat remaining olive oil until hot. Add the oyster mushrooms and toss. Add the onion and saute for a minute. Add garlic, olives , tomatoes and oregano. Sprinkle with parsley and pine nuts and return squid to pan. Toss several times and adjust seasoning. If you can't find squid in your area, it can be purchased at most Asian markets, and online as well. I used a Cajun seasoning in this video made by Frog Bone Cajun Sauces, to give it a Cajun kick, and it was delicious! I actually purchased it in a set from Amazon.com. Here is the link: 🤍 Ingredients Calamari 1 Pound Buttermilk 1 Cup (16 tbs) All purpose seasoning 2 Tablespoon (Frog Bone) Grape seed oil 4 Cup (64 tbs) (For deep frying) FOR COATING MIX All purpose seasoning 4 Tablespoon (Frog bone) Masa de harina 1⁄2 Cup (8 tbs) (Fine cornflour) All purpose flour 1⁄2 Cup (8 tbs) Directions GETTING READY 1. Clean Calamari by removing its inner gizzard, wings and skin. Clean the tentacles. 2. Slice calamari into 1/4 inch rings. 3. Mix 2 tablespoon all purpose seasoning into buttermilk. Soak calamari in buttermilk for about two hours. 4. Heat oil in deep fryer to about 375 F. MAKING 5. Mix fine cornflour with all purpose flour and all purpose seasoning to make coating mix. 6. Coat the squids in coating mix and deep fry for not more than 1 1/2 to 2 minutes. SERVING 7. Serve fried calamaris with a marinara sauce and lemon slices.
