Rose Cookies? Did you ask for Rose Cookies? I'm glad you did. I enjoy making these because they're easy, quick, and of course, deliciously crunchy & crisp :) They are perfect additions to your box/plate of ‘Kuswar’ that you arrange delicately for family and friends at Christmas 🎄 The video has tips that may help you master the preparation of rose cookies! These Rose cookies have different names— Gulabi Puvvulu in Telugu, Acchu Murukku in Tamil, and Achapam in Malayalam. There can be slight changes where coconut milk is used instead of milk, or just water, for the batter, and egg/eggless recipes too. In my experience this recipe works best in terms of taste as well as crispness. For Other Christmas Sweets Recipes: 🤍 Goan Bebinca: 🤍 Goan Dodol: 🤍 Ingredients for Rose Cookies: 1 Whole Egg 1/4 teaspoon Salt 1/4 Cup Powdered Sugar 1/2 Cup Milk (room temperature) plus additional 1/3 Cup (approximately) for making a fluid batter 1 Cup Maida (All-Purpose Flour) 1/3 Cup Rice Flour 1 Tablespoon Cooking Oil 1 teaspoon Black Sesame Seeds Oil for frying • When preparing the batter, first make it thick; ensure that there are no lumps, then continue adding the additional milk a little at a time, till you attain the right consistency. When lifted off, the batter flowing off the whisk/ladle must form ribbons upon the surface of the batter that quickly spread and merge with the mix. • I bought my Rose Cookie mould from a local store near me. The handle has a bent arm with a rigid mould attachment, making it like a singular piece. That allows me to turn and tap the handle of the mould after dipping it in the batter. Also, it helps shake the mould and release the cookie into the oil. • The Milk can be substituted with Coconut milk. You may cut back a little on the Sugar if using the latter. • The mould must be heated enough before dipping it into the batter. Keep the gas-stove flame at low-medium. The oil mustn't get too hot; the cookie may fail to come off the mould then. In such a case, let the Oil cool a little. Use a fork/knife if the cookies don't detach from the mould by merely agitating the mould. • These cookies can last for weeks if stored properly in airtight containers. A delightfully easy Cheesy Garlic Bread that's super soft and delicious — that's one way to enjoy your weekend! Breads have a way of bonding, be it people or food. I have long believed that food needs to be cooked with love, and well, breads demand a lot of it! Warm Bread and the aroma they fill the home with... Nothing like a freshly baked bread :) And we Goans love our local breads, and the other varieties too😋 Do give this Cheesy Garlic Bread recipe a try and create moments of merriment for yourself and those with you. Dev Borem Korum Ani Mog Asum ❤️ Ingredients: (1 US Cup= 240 ml) 180 ml or 3/4 Cup lukewarm Water 1 & 1/2 Tablespoons Sugar 1 teaspoon Instant Yeast 2 Tablespoons Salted Butter (room temperature) 300 grams or 2&1/2 Cups All Purpose Flour 1 teaspoon Salt 150 grams Mozzarella Cheese 2-3 Tablespoons Chopped Garlic 1 - 2 teaspoons Chili Flakes Capsicum, chopped (optional) Sesame seeds (black and/or white) Egg yolk and Salt for the Egg wash (use Milk if vegetarian) Bake in a preheated oven at 180°C for 20 minutes In the Stove-top, preheat the vessel with salt till hot, then bake the breads for 30 minutes. — If you can, get yourself some Josef Marc Instant Yeast. I've been using it of late, and it's proved to be the best yeast I've ever used. It's available online. I recommend freezing any packet of yeast once opened. — Use proper Mozzarella Cheese. I could only get my hands on a pizza cheese (it had 22% Mozzarella) so it didn't melt as I had desired. — Using egg yolk for the egg wash gives it a better, richer brown, even if the bread is baked on the stove. — In my opinion, there wasn't any difference when the oven baked and stove-top bread were compared. Vegetarian Pasta for the season! This spicy, cheesy sauce can pair splendidly with your favourite Pasta 😋 I've used the spiral Fusilli, but you can have your pick— cylindrical Penne, bow-tie Farfelle, or the dear, common Macaroni :) This recipe can serve 3-4. Or 1. I mean, you can stretch that appetite. For this time of Lent, you may like to try these Vegetarian recipes: 🤍 1 US Cup = 240 ml Ingredients: 4 Large Tomatoes, boiled, peeled for a purée 2 Cups or 100 grams of uncooked Pasta (I've used Fusilli) [*Boil the Pasta as per packet instructions, or in 1 Litre water with 1 teaspoon Salt, till cooked] Oil, for cooking (and also to drizzle onto the pasta) 2 medium-sized Onions, diced 5-6 Garlic cloves, pressed 2 Green chillies, roughly chopped 1 teaspoon (heaped) Kashmiri Red Chili Powder 1 teaspoon (heaped) Red Chili Flakes Black Pepper, as desired Salt to taste 1/2 Cup of Water 1 teaspoon, heaped, Salted Butter 1/2 Cup or 120 ml Fresh Cream 50 grams of grated Cheese (I've used regular, processed cheese) Some more grated cheese for garnish Seasonings of choice on the top I topped my bowl of Pasta with Oregano. I am quite certain that Black Olives would taste magical. Also, if you find some fresh Basil they could make a great addition! There is something about Goa... A story about a young lady who was born & raised in a city and decided to experience how life would be in a small fishing village. The village's name was Palolem. The beach beside it is Palolem Beach. This is her story captured through my eyes & her voice. When was the last time we stopped running & start noticing the city passing by? When was the last time we sat in a room full of office colleagues to notice how each of them is going around doing their daily work? When was the last time we stood still to enjoy the sunset which we go on ignoring every day while we are returning from the office? Everyone who is born in the big city never gets a chance to stop & enjoy the world revolving around them. Every one busy running the rat race. Who has the time to stop & observe? The question to ask is that – is there any hard & fast rule that the rat race is the only form of living a fulfilling life? Is there nothing beyond the rat race? What is life beyond the race that we are constantly running without even knowing the end goal? I decided to move to a small fishing village in Goa. A place that was devoid of the constant honking, a place filled with people who smiled back when you smiled at them. A place where there is no weekend, there is no weekday. Every day is a day worth living for. Thus I continued. A one-way ticket & not knowing when I would come back to Kolkata. What would I do? I did not know. Where would I stay? I couldn’t know that beforehand. The only thing I did know is that whatever would happen I would want to experience it to its fullest. What I discovered while I was there in Palolem was something that I cannot possibly describe with the limited literary knowledge I possess. From experiencing Susegad (Derived from the Portuguese word sossegado meaning 'quiet') to experiencing the slow way of living life. Life should be experienced beyond just running in the rat race. If you want to experience it, you should definitely visit the small beach village of Palolem in the Canacona district of South Goa. Hopefully, the story narrated through a fellow traveler's voice can explain how special Palolem. Can’t wait to go back to the small fishing village of Palolem, Canacona in South Goa.

After many of us may have practiced abstinence from meat/poultry for the season of Lent, this is a great dish to celebrate a family occasion with :) Wishing you all a blessed weekend, as we approach Easter Sunday. We celebrate Jesus's death and resurrection, which have together brought us life. Dev Borem Korum Ani Mog Asum ❤️ Ingredients: 2 pieces of large Boneless Chicken Breasts (they weighed about 320 grams each; can be more or less) Salt as needed Crushed Black Pepper, as desired For the stuffing: 50 grams Spinach leaves (I used another 50 grams for plating), blanched 40 grams of Grated Cheese (regular, processed) 12 Garlic cloves, chopped 1 teaspoon Red Chili Flakes Black pepper 1/4 teaspoon Salt For the glaze: 2 Tablespoons Butter 6-7 Garlic cloves, chopped • Fry each side upon a medium flame for 3-4 minutes. A simple Chicken Spread (or Chicken Pâté) for any occasion. Fix a delicious sandwich for breakfast, lunch or a snack, and speaking of snacks, this spread can be layered onto a buttered toast, a cracker, a canape and topped with cheese, fresh/pickled veggies (peppers, cherry tomatoes, olives, etc) to create some pretty appetizers (aka hors d'œuvres). Stuff a pita bread, a bagel... you can be innovative in your approach to this recipe! Ingredients: Oil for frying 18-20 Garlic cloves, crushed* (missed mentioning it in the video) 1 Large Onion, sliced Salt to taste 1/2 teaspoon Sugar 500 grams boneless Chicken 1/2 Cup Water Black Pepper (as desired) 1-2 teaspoons Red Chili Flakes 2 Tablespoon Butter (Salted/Unsalted; accordingly adjust Salt whilst cooking) This can be refrigerated in an airtight container for a period of 7 days. The very sound of its name makes one's mouth water with the remembrance of the last time it was relished :) The Green Curry is flavorful, alive with the freshness of Coriander and the hint of Mint (the latter added at the very end), and is also an easy-to-do recipe. The Curry Paste can be used as a base for other meats/fish/vegetables. *I usually also add potatoes to this curry but skipped it for this video Try this Green Chicken Curry this weekend! Unlike the coconut milk pudding, this recipe uses the water, and I've also included the coconut flesh for some texture in the bite, as many of you had suggested before. Thank you for making this channel a better place :) Ingredients: 2 Cups Coconut Water (from Tender Coconuts) Coconut flesh, chopped into tiny pieces 1/4 Cup Sugar, adjust as per sweetness of the Water A Pinch of Salt 1/4 Cup Corn Flour Grated coconut, for garnish (Optional) Refrigerate this for 3-4 hours, and upon un-moulding/de-moulding, I recommend letting the pudding come nearer to room temperature before consumption. With a thick Coconut based curry, this dish awakens the taste buds so dramatically, it charges you up for the whole day :) I remember as a young girl, a lady would sell this dish at school, and her stock would vanish in under minutes; it was that good! I've tried over the years to replicate that flavour, and I would say this recipe seems closest to that nostalgic taste that still lingers. I hope you'd give this a try. I made a Date paste since that's not easily available where I am. This Date paste wrapped up in the Shortbread cookie pastry make a beautiful pair it— for the eyes and the tongue too :) Set a Date for these swaddled babies! Alle Belle: These Jaggery-And-Coconut stuffed pancakes (or crepes) have been a favorite tea-time snack for many Goans. The pancake batter is super quick to prepare and even the cooking time is short. I have memories of my kids stuffing their own pancakes with the 'choon' (the coconut and jaggery filling) when young to growing up and trying their own hand at attempting to create the roundest crepes! Meals and moments can tell a story, if we only choose to listen :) If you may like to watch my video on Goan Holle (a 15th August Special), click here: 🤍 Ingredients: 1 Cup Maida (All-purpose Flour), sifted Salt to taste 1 Whole Egg 1/2 teaspoon Vanilla Essence 1 & 1/4 Cups Water, adjustable Vanaspati/Ghee for frying For the filling (called 'Choon' in Konkani): 1 Cup fresh, grated Coconut 1/4 Cup Cane Jaggery 1/4 Cup Palm Jaggery Tips: -Ensure that the batter is lumps-free. Sifting the flour helps. Prepare a thin batter by adjusting the water as needed. -Keep the flame on Medium-Low. Well we are not here to give you GYAAN on travelling to Goa after lockdown. But it goes without saying that if possible please avoid travelling for some more time. Butter Biscuits | No Oven, 3-Ingredient Eggless Biscuits

Butter biscuits (or cookies, for some) made with just 3 ingredients: Sugar, Butter and Flour in a 1:2:3 ratio, by weight. However, I have reduced the Butter by a little, which also worked well. The twist that I have introduced is the cooking style— Bake this on a stove-top and then cut it, so you can prepare a larger batch of biscuits in less time. This can also be baked in an oven (details below). Ans yes, the biscuits can be layered with chopped dried fruits and nuts, if desired! Ingredients: 50 grams or 1/4 Cup Sugar (powdered) 80 grams or 3/4 Cup Salted Butter (Chilled; chopped into pieces) 150 grams or 1&1/4 Cup All-Purpose Flour (If using Unsalted Butter, add 1/4 teaspoon of Salt) My tin measure 9 inches X 4.5 inches. You can use any metal dish for the stove-top baking. Preferably, the thickness of the biscuit should be 1 centimeter or less to ensure that it bakes well. Notes: -Preheat the vessel with a bed of Salt for at least 15 minutes, on high flame. -Bake, covered, for 20-30 minutes (on high flame), or till the sides turn golden brown. Do not open the lid of the vessel too frequently during baking. Even after turning off the flame, let it remain covered in the vessel for 30-40 minutes. -When still warm, de-mould, and cut into biscuits, and then let it cool and harden further. -If Baking In An Oven, bake at 180 degrees Celsius, for 20 minutes or till they appear golden brown. I was learning some Saraswat Goan recipes and decided to experiment. There's still a lot to discover in the realm of Goan cooking and I'm glad I get to document it on this channel. I hope you give this recipe a try. It's healthy and satisfying and also to some of us, something new! Dev Borem Korum Ani Mog Asum ❤️ Ingredients: (1 US Cup = 240 ml) For the Curry Paste: 1 Tablespoon Oil 4 Cloves 4 Black Peppercorns 1/2" Cinnamon 1 Tablespoon Coriander Seeds 4 Red Chillies (Kashmiri, for colour) 1 medium-sized Onion, sliced 4 Garlic cloves 1 Cup fresh, grated Coconut 1/2 teaspoon Turmeric Powder Water for grinding For the Curry: 1 large Onion, chopped 1 Tomato, chopped The above Curry Paste Approximately 1 & 1/2 Cups Water Salt (keep in mind the eggs) 1/2 teaspoon Sugar 4 Eggs Coriander leaves for garnish #ExperienceSusegad Clyde D'Souza has described the beauty of Goa's culture in his book ‘Susegad: The Goan Art of Contentment’ 🤍 It's now available internationally: 🤍 Clyde has also launched a podcast about Goa and its people. We're 6 days into 2023, and I wish you the Absolute Best of health and all things necessary for all the coming days of this year❤️ Also, Boas Festas to those celebrating the Three Kings Feast :) The Goan Vindaloo (pronounced vin-dah-loo) is famous, no doubt about that. Usually a pork curry, this dense, sour and spicy paste can also be used with Chicken to create a delicious addition to a meal. Top your rice/pulav with it or dip your pao/poee/sanna in it— you'll be glad you did.
