I had chorizo, potato, and cheese empanadas at this restaurant and it was my absolute favorite. Then they took it off the menu and I was very sad. I've looked for something like it every since, but alas, to no avail. I'll have to come up with figure it out.

Hey John, quick question.. So if you would have added sugar to the dough would it have been pie crust.?
And why does pie crust need to chill but that didn't.?

I will DEFINITELY try your dough recipe. For yrs. I bought store bought pre made discs/dough but the awful oils used in the ingredients made me stop and just make homemade. we like small cut potatoes with chorizo and cheese. Thank you

I made this empanadas with 5c. Flour, 1cup water,1 1/2 eggs, 2 bars of butter, 1 teaspoon salt. And the dough came out perfect just as you described. All my friends and family were impressed and asking for the recipe. They were also admiring how pretty they looked.
