The Pizza Making Master of London - Massimo's Wood Fire Oven Sourdough Pizzas | Italian Street Food


If by chance you didn't know by now, Massimo is a Pizza making Master, not any ordinary master but he's also a dough spinning & tossing master, a master who serves up delicious pizzas at his street food stall going by the name of "Pizza Massimo". Massimo uses only Sourdough for the pizza base. I am in awe of the skills demonstrated by Master Pizzaiolo Massimo who has perfected his skills over the course of over 20 years; first starting in his home town in Sardinia, Italy. Ep 12: Pt 4. Making Pizza in the Wood Fired Oven


In Part 4 of the Pizza series I show you how I make pizzas in the Wood Fired Oven. Margherita Tomato sauce, fresh mozzarella, olive oil. Add fresh basil and olive oil after it has come out of the oven. Pancetta with dill Fontina cheese and sliced pancetta. Once out of the oven add some dill, and olive oil. Mushroom Tomato sauce and Fontina Cheese. Medley of mushrooms including button, shitake and morels. Some sage and dried oregano. Sausage pizza Pork fennel sausage partially cooked, whipped burrata. A mixture of sliced shallots, fennel, and leeks, and some Fennel powder. Pepperoni or Chorizo Tomato sauce and grated mozzarella Pepperoni or Chorizo, thin slices of red pepper (optional). Potato and rosemary Fontina cheese, and thinly sliced potatoes, rosemary, and olive oil. Anchovy Fontina cheese, sautéed onions, anchovies, black olives, and capers. Pizza with Ricotta and Rosemary Pesto Begin with garlic confit, chopped rosemary, and olive oil. Just before the pizza is done sprinkle over some toasted pine nuts. When the pizza is done add dollops of ricotta and rosemary pesto. Pizza Pomodoro A selection of roasted tomatoes, Mozzarella cheese, some garlic that I’ve poached in olive oil, grated parmesan cheese, and olive oil. When it comes out of the oven add some fresh basil Prosciutto di Parma Tomato sauce and fresh mozzarella. When it comes out of the oven sprinkle over arugula and lay on slices of Prosciutto Herb pizza Fontina cheese, dried oregano, and a selection of fresh herbs including Thyme, Sage, Parsley, Tarragon, Chives, cilantro, and fresh basil that I’ll sprinkle over the pizza once it comes out of the oven. And then lastly, I think it’s very important that you stay hydrated while making pizza, so try to have a lovely bottle of Barbaresco on hand.

Ep 12: Pt 2. Pizza Dough for the Wood Fired Oven


This recipe is enough dough for 10 pizzas, each dough ball being around 250 grams. If you want to follow this recipe, but don't want to make quite that much dough, then 10 is an easy number to divide, or you can just follow the baker’s percentages. I weigh all the ingredients in grams, including the water. Measuring by volume, like cups, is not very accurate and can result in an inconsistent dough each time you make it. 735g all-purpose flour 735g 00 flour 1000g water 30g salt (In bakers’ percentages: Flour 100%, Water 68%, Salt 2%) 15g fresh yeast (1%) or 7.5g active dry yeast. (0.5%) or 6g instant yeast (0.4%) Combine the flour, then the yeast on one side and salt on the other, and then add all the water. Using a dough scraper combine everything until there are no dry ingredients left, Turn out onto a work surface and knead for about 5 to 10 minutes until the dough soft and elastic. All the flour I need is already in the dough, so I’m not adding any more to my work surface. Kneading helps to develop the gluten, giving your dough strength and the ability to stretch. Rest overnight in the refrigerator where it will develop more flavor. (If you’re planning on making the pizzas the same day, let’s say around 4 in the afternoon then make your dough early in the morning, around 8am, so it can rest for at least 4 hours. Then divide and ball it up and let it rest in your proofing tray for another 3 to 4 hours.) The next day, about 4 hours before you are planning to make your pizzas, turn the dough out onto a floured work surface. Divide the dough into 10 equal balls and then place them into a floured proofing tray and let them rest at room temperature for around 4 hours, when they will be ready to shape into your pizzas.

In the past I have made bread, with great results, using the retained heat after cooking pizzas. I would wait 3 to 4 hours for the oven to cool down enough. It works great. What if you just want to make bread, though? I use a different approach, especially in how to heat the oven. Join me as I make an artisanal bread in the style of Pane d'Altamura. This is a hearty, southern-italian bread. I made it in one day (no Biga, Poolish, or mother required) and it was lovely, bubbly and delicious. I mostly followed this recipe. Though, you will note in the video that I made a couple of small tweaks to the approach: 🤍 They are using cake yeast, which is what I would be using if I had a supply here. King Arthur Baking Company worked with earthen construction expert Richard Miscovich to demolish, restore, and rebuild the beloved oven. Downtown Disney Naples Pizza Recipe - Neapolitan Pizza Margherita - Wood Fired Pizza


Chef Jason Hill visits with Executive Chef Greg Stillman, where he learns how to make an authentic Neapolitan Pizza recipe from Naples in Downtown Disney in a wood fired pizza oven. Stillman — a veteran of California restaurants including French Laundry in Yountville, and Catal and Naples in Downtown Disney — starts out by making his Neapolitan pizza dough recipe with Caputo flour. After showing how to punch and spin the dough, he tops the traditional Neapolitan Margherita pizza with Antonina tomatoes, fresh cubes of mozzarella and a few torn leaves of fresh basil. The wood fired pizza oven — which reaches up to 800 F — takes just a few minutes to cook. In your home oven, cook it on a pizza stone at 500 F for at least 10 minutes on the bottom rack closest to your heating element. Naples Downtown Disney Pizza Recipe: Pizza Dough (Large Batch): 10.83 pounds ice water, strained (2 cups = 1 pound) 18.27 pounds red Caputo flour 8.2 ounces salt 3.3 ounces instant yeast Pizza Dough (Make small Batch of four balls weighing 8 oz. each): 19.6 oz. flour (red caputo) .5 oz. Kosher salt (14.7 grams to be precise) .2 oz. yeast (instant, not dry active or fresh) (5.6 grams) 11.6 oz. very cold water Pizza Sauce: 1 can whole peeled Antonina tomatoes (or San Marzano tomatoes) Salt to taste For pizza: Fresh mozzarella Fresh basil Directions 1. Pizza Sauce: Puree the can of tomatoes with an immersion blender until smooth. Season to taste with salt until highly seasoned and sharp but not salty. 2. Pizza Dough: Combine the flour, salt and yeast. Place the chilled water into a mixing bowl with a dough hook, add the dry ingredients. Set to speed 1 for 10 minutes and allow to run on low speed. Check the consistency; it should be smooth like a baby. Remove the dough and immediately scale the dough into 8 oz. balls and place into a dough box (12 per box). Place the boxes in the refrigerator to slow proof for use the next day.Yield: 30 pounds (60 - 8oz. dough balls) 3. For pizza: Punch and stretch pizza as shown in the video until you form a small circle. Cover with a ladle or two of tomato sauce, followed by a scattering of fresh mozzarella cubes and fresh torn basil leaves. Bake in a wood-fired pizza oven for 2 minutes, turning every 30-45 seconds, or bake on a pizza stone in the bottom rack of your home oven at 500 F for at least 10 minutes. Cover with a squirt of olive oil and serve. Notes: If you would like to make 4 pizza doughs each weighing 8 oz. (2 pounds total weight) the recipe would scale down with the second set of dough ingredients seen above. However it is best to have an ounce/gram scale preferably digital (but not mandatory) when working with doughs. This is because it depends heavily on flour weight and not volume. Home cooks may prefer to use cups instead of weight, but this just won't do for consistency.This Neapolitan Pizza from chef Greg Stillman, who used to run Naples restaurant at Downtown Disney, is one of the best I've tried.
