I remember foraging for wild mushrooms with King Charles III and Antonio Carlucci on the 50,000 acre Balmoral estate. We came back and sautéed and froze enough wild mushrooms to last months for the royal table. In this video I am dehydrating wild mushrooms (they keep even longer) using the PARIS RHONE dehydrator and they have agreed to discount the price if you click on the link below and type in the code. I am also giving a dehydrator away on my Instagram page this week too. Here's the link to the PARIS RHONE dehydrator 🤍 Here is the discount code - but it's not available until 12/2/22 and only until 12/8/22 10FD001DM so watch the video of how to use it and then order on Friday. Don't forget to follow me on Instagram for the PARIS RHONE dehydrator giveaway! 🤍 My two cookbooks Eating Royally and The Royal Chef at Home are now both available around the world as E-Books, click here to find out more... 🤍 Check out my Dallas Based Catering Company 'Eating Royally' for Your Next Event! 🤍 King Charles loves Italian food and I remember cooking this for him. Here's the recipe; Wild Mushroom Risotto Makes 4 portions 2 cups dried mushrooms 4 cups chicken or vegetable broth 2 TBS olive oil 1 1/2 cups Arborio rice salt and pepper to taste 2/3 cup freshly grated Parmesan cheese ¼ cup fresh chopped fresh herbs Place the dried mushrooms in a bowl and pour two cups warm water over them rehydrate. Set aside for 30 minutes. Remove the mushrooms and the keep the liquid. In a heavy-bottomed pot add the rice and stir to coat the grains with butter. Add 2 full ladles of the chicken broth mixture to the rice. Stir and simmer over low heat until the liquid is absorbed, 5 to 10 minutes. Add the liquid from the mushrooms. Continue to add more broth one ladle at a time, stirring every few minutes. Each time, cook until the mixture seems a little dry before adding more. Add the wild mushrooms, Continue cooking until the rice is cooked through, but still al dente, nutty in texture, about 20 minutes total. When done, the risotto should be thick and creamy and not at all dry. Off the heat, stir in the cheese and sprinkle the chives on top before serving. 🤍theroyalchef.com

Update of an older video here. Mushrooms with garlic and parsley (persillade) is a classic with all kinds of variations, in Italian it might be called funghi la loro morte (cooked to their death). Similar preps are used in Spain, with most references there using whole Lactarius caps cooked on a griddle. It's a simple, tried and true way to prepare those shrooms.

How to grow any wild mushrooms. Mother Nature’s recipe.

How to grow many different Mushrooms on the site. On the Internet, you can find many ways to grow porcini mushrooms at home. You can even buy mushroom spores and mycelium that look more like rotten sawdust. This video is not about that. We will not expose the scammers today. To do this, watch our video "How to grow a lot of porcini mushrooms at home" This video is about how you can actually grow mushrooms. Well, they grow like themselves in nature ...? Do not they? 1. For this you will need several acres (the more the better) of old healthy forest 2. Fresh ripe mushrooms that you want to grow 3. And most importantly, you need a good agronomist, soil scientist, mycologist and Park ranger in all one … And we found it – Let me introduce - Red American Squirrel (Tamiasciurus hudsonicus) Who knows best how, when and where to plant mushrooms. But seriously, after spending a lot of time in the forest, we noticed one interesting thing, That most of the various mushrooms grow exactly where tourists like to camp and put up tents, which is contrary to logic. You probably think that IT SHOULD BE MORE MUSHROOMS WHERE FEWER PEOPLE present. WHERE IN REALITY IT IS THE OTHERWISE. We collected various boletus, honey mushrooms, suilluses right where we set up our tent Maybe this is due to the fact that here in Ontario , tents can be set up only in a strictly defined camping sites , and not anywhere. Therefore, from year to year, people stay at the same camping sites. People bring a lot of different yummy snacks with them : cookies, candies, apples and nuts. All forest animals are well aware of this, and especially squirrels, which quickly get used to human food and are looking forward to tourists. They have already learned how to open tourists bags and even plastic containers. As soon as you turn your back squirrel will eat your apple or banana ... or even opens a plastic jar with your cereal...And yet it seems to me that all squirrels suffer from `` “ADD” They cannot sit still, and when they have free time from opening bags and stealing your food , they actively plant mushrooms staying close to the camp site. We noticed that as soon as we show interest in any mushroom we found , Out of nowhere appears a squirrel and the mushroom disappears, very often we found disappeared mushrooms on the branches of nearby trees. Very rarely did we manage to get ahead of the fast rodent. Squirrel was always faster. It is especially interesting that the squirrel will not pick unripe mushrooms and patiently waits when they are fully ripe. The squirrel does not bury mushrooms in the ground like nuts, it hangs them on tree branches so that the spores of the mushrooms can scatter as far down the wind as possible. Where does it know all this from? Who taught it? Once, having left a variety of collected mushrooms on the ground, we noticed that the squirrel is mainly interested in mycorrhizal mushrooms and it is completely indifferent to parasitic ones. You cannot judge the edibility of mushrooms by the squirrel. Red squirrel eats and plants the death cap (amanita phalloides) and amanita muscaria that toxic to humans. The squirrel knows perfectly well which mushroom at what time, and which tree to hang, so that it is not blown away by the wind. In 3-4 years of its short life, the squirrel will not see the result of its hard labor, but without squirrel there will be no mushrooms and without mushrooms there will be no forest and without forest ... there will be no us either. Cream of Wild Mushroom Soup RECIPE COURTESY OF INA GARTEN Level: Intermediate Total: 1 hr 50 min Prep: 20 min Cook: 1 hr 30 min Yield: 5 to 6 servings Ingredients 5 ounces fresh shiitake mushrooms 5 ounces fresh portobello mushrooms 5 ounces fresh cremini (or porcini) mushrooms 1 tablespoon good olive oil 1/4 pound (1 stick) plus 1 tablespoon unsalted butter, divided 1 cup chopped yellow onion 1 carrot, chopped 1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided Kosher salt Freshly ground black pepper 2 cups chopped leeks, white and light green parts (2 leeks) 1/4 cup all-purpose flour 1 cup dry white wine 1 cup half-and-half 1 cup heavy cream 1/2 cup minced fresh flat-leaf parsley Directions Clean the mushrooms by wiping them with a dry paper towel. Don't wash them! Separate the stems, trim off any bad parts, and coarsely chop the stems. Slice the mushroom caps 1/4-inch thick and, if they are big, cut them into bite-sized pieces. Set aside. To make the stock, heat the olive oil and 1 tablespoon of the butter in a large pot. Add the chopped mushroom stems, the onion, carrot, the sprig of thyme, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, until the vegetables are soft. Add 6 cups water, bring to a boil, reduce the heat, and simmer uncovered for 30 minutes. Strain, reserving the liquid. You should have about 4 1/2 cups of stock. If not, add some water. Meanwhile, in another large pot, heat the remaining 1/4 pound of butter and add the leeks. Cook over low heat for 15 to 20 minutes, until the leeks begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until they are browned and tender. Add the flour and cook for 1 minute. Add the white wine and stir for another minute, scraping the bottom of the pot. Add the mushroom stock, minced thyme leaves, 1 1/2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the half-and-half, cream, and parsley, season with salt and pepper, to taste, and heat through but do not boil. This is the second episode in our new mini series where we travel around Sweden, explore local ingredients and traditions and cook with friends. A few weeks ago we were out in Tullinge forest learning about new (to us) edible mushrooms that we cooked over open fire together with our friend and professional forager Niki Sjölund: 🤍 We learned that mushrooms often grow around trees and under the moss. And that there are a lot more edible varieties out there than just chanterelles and porcini mushrooms. Not only did we cook with the mushrooms we found, but also with some wild forest herbs that Niki found. It might be an old cliché but outdoor cooking truly is the best. Although next time, I think we will bring spoons and bowls :) Subscribe to get notifications when we release new videos. Music by Graeme Wylie: 🤍 Wild Mushroom & Cabbage Skillet Serves 4 2 generous glugs of oil 6-8 potatoes, sliced 1/2 white cabbage, shredded 1 clove garlic, peeled & chopped 1 tsp spruce infused syrup or raw honey 1 tbsp vinegar 4 large handfuls mixed wild mushrooms, sliced 250 ml (1 cup) vegan oat cream or regular heavy cream 1 juniper sprig (or dried juniper berries) 1 apple, cored and sliced 2 sprigs heather flowers Heat oil in a skillet, add the potatoes. Heat oil in a second skillet and add the cabbage. Let fry and caramelize over medium heat, until both are tender, add the garlic to the potatoes midway through. Stir spruce syrup and vinegar through the cabbage. Combine potatoes and cabbage into one skillet and set aside. Heat oil in the empty skillet and add the sliced mushrooms. Fry on high heat until tender, don’t stir too much, let them get a bit of color on one side. When done, add them to the potato and cabbage pan, and place it back on the heat. Add oat cream, juniper and salt and let simmer for a couple of minutes. Taste and adjust the flavours to your preference. Remove from the heat and sprinkle with heather flowers and raw apple slices. In this video Aaron Hilliard, creator of Mushroom Wonderland, walks through the forest of the Pacific Northwest in autumn and identifies 10 completely wild mushrooms growing alongside the trial. Some of these are poisonous mushrooms, some of them are choice edible mushrooms, and some are somewhere in between! I come across golden chanterelles, the false chanterelle, amanita muscaria and its cousin amanita pantherina, delicious king boletes, tree loving pholiota, as well as several more. I am not a professional mycologist, just a total mushroom geek who has been picking and identifying wild mushrooms for 35 years, an avid member of a mycological society, administrator of a Facebook group, as well as the creator of Mushroom Wonderland. I also studied video production and photography in college and have a degree in integrated multi-media, so it only makes sense to combine my love for mushrooms and my passion for film and photography and make these videos, with the hope that I can spark interest in the hobby of mushroom foraging as well as raise public awareness and interest in wild mushrooms, and their medicinal, culinary, and spiritual value. Please come along and hit subscribe to watch and follow this unfolding video journal of mushroom info and discovery.

To find your own edible mushrooms, check out this list of great mushroom foraging guides: 🤍 There are quite a few Florida edible mushrooms; unfortunately, not all of them are easy to identify. And if you identify a mushroom improperly, then eat it, you may, in fact, die. Today, however, we'll look at some of the safest wild mushrooms you can find. Though Florida may not be the first state you think about when you go shrooming, there are certainly some wonderful edible Florida mushrooms. Today we look a five of my favorites: boletes, puffballs, chanterelles, ganoderma and the indigo milk cap.
