Here's the recipe; Wild Mushroom Risotto Makes 4 portions 2 cups dried mushrooms 4 cups chicken or vegetable broth 2 TBS olive oil 1 1/2 cups Arborio rice salt and pepper to taste 2/3 cup freshly grated Parmesan cheese ¼ cup fresh chopped fresh herbs Place the dried mushrooms in a bowl and pour two cups warm water over them rehydrate. Set aside for 30 minutes. Remove the mushrooms and the keep the liquid. In a heavy-bottomed pot add the rice and stir to coat the grains with butter. Add 2 full ladles of the chicken broth mixture to the rice. Stir and simmer over low heat until the liquid is absorbed, 5 to 10 minutes. Add the liquid from the mushrooms. Continue to add more broth one ladle at a time, stirring every few minutes. Each time, cook until the mixture seems a little dry before adding more. Add the wild mushrooms, Continue cooking until the rice is cooked through, but still al dente, nutty in texture, about 20 minutes total. When done, the risotto should be thick and creamy and not at all dry. Off the heat, stir in the cheese and sprinkle the chives on top before serving. 🤍theroyalchef.com

As soon as you turn your back squirrel will eat your apple or banana ... or even opens a plastic jar with your cereal...And yet it seems to me that all squirrels suffer from `` “ADD” They cannot sit still, and when they have free time from opening bags and stealing your food , they actively plant mushrooms staying close to the camp site. We noticed that as soon as we show interest in any mushroom we found , Out of nowhere appears a squirrel and the mushroom disappears, very often we found disappeared mushrooms on the branches of nearby trees. Cream of Wild Mushroom Soup RECIPE COURTESY OF INA GARTEN Level: Intermediate Total: 1 hr 50 min Prep: 20 min Cook: 1 hr 30 min Yield: 5 to 6 servings Ingredients 5 ounces fresh shiitake mushrooms 5 ounces fresh portobello mushrooms 5 ounces fresh cremini (or porcini) mushrooms 1 tablespoon good olive oil 1/4 pound (1 stick) plus 1 tablespoon unsalted butter, divided 1 cup chopped yellow onion 1 carrot, chopped 1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided Kosher salt Freshly ground black pepper 2 cups chopped leeks, white and light green parts (2 leeks) 1/4 cup all-purpose flour 1 cup dry white wine 1 cup half-and-half 1 cup heavy cream 1/2 cup minced fresh flat-leaf parsley Directions Clean the mushrooms by wiping them with a dry paper towel. Don't wash them! Separate the stems, trim off any bad parts, and coarsely chop the stems. Slice the mushroom caps 1/4-inch thick and, if they are big, cut them into bite-sized pieces. Set aside. To make the stock, heat the olive oil and 1 tablespoon of the butter in a large pot. Add the chopped mushroom stems, the onion, carrot, the sprig of thyme, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, until the vegetables are soft. Add 6 cups water, bring to a boil, reduce the heat, and simmer uncovered for 30 minutes. Strain, reserving the liquid. You should have about 4 1/2 cups of stock. If not, add some water. Meanwhile, in another large pot, heat the remaining 1/4 pound of butter and add the leeks. Cook over low heat for 15 to 20 minutes, until the leeks begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until they are browned and tender. Add the flour and cook for 1 minute. Add the white wine and stir for another minute, scraping the bottom of the pot. Add the mushroom stock, minced thyme leaves, 1 1/2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the half-and-half, cream, and parsley, season with salt and pepper, to taste, and heat through but do not boil. This is the second episode in our new mini series where we travel around Sweden, explore local ingredients and traditions and cook with friends. A few weeks ago we were out in Tullinge forest learning about new (to us) edible mushrooms that we cooked over open fire together with our friend and professional forager Niki Sjölund: 🤍 We learned that mushrooms often grow around trees and under the moss. And that there are a lot more edible varieties out there than just chanterelles and porcini mushrooms. Not only did we cook with the mushrooms we found, but also with some wild forest herbs that Niki found. It might be an old cliché but outdoor cooking truly is the best. Music by Graeme Wylie: 🤍 Wild Mushroom & Cabbage Skillet Serves 4 2 generous glugs of oil 6-8 potatoes, sliced 1/2 white cabbage, shredded 1 clove garlic, peeled & chopped 1 tsp spruce infused syrup or raw honey 1 tbsp vinegar 4 large handfuls mixed wild mushrooms, sliced 250 ml (1 cup) vegan oat cream or regular heavy cream 1 juniper sprig (or dried juniper berries) 1 apple, cored and sliced 2 sprigs heather flowers Heat oil in a skillet, add the potatoes. Heat oil in a second skillet and add the cabbage. Let fry and caramelize over medium heat, until both are tender, add the garlic to the potatoes midway through. Stir spruce syrup and vinegar through the cabbage. Combine potatoes and cabbage into one skillet and set aside. Heat oil in the empty skillet and add the sliced mushrooms. Fry on high heat until tender, don’t stir too much, let them get a bit of color on one side. When done, add them to the potato and cabbage pan, and place it back on the heat. Add oat cream, juniper and salt and let simmer for a couple of minutes. Taste and adjust the flavours to your preference. Remove from the heat and sprinkle with heather flowers and raw apple slices. In this video Aaron Hilliard, creator of Mushroom Wonderland, walks through the forest of the Pacific Northwest in autumn and identifies 10 completely wild mushrooms growing alongside the trial. Some of these are poisonous mushrooms, some of them are choice edible mushrooms, and some are somewhere in between! I come across golden chanterelles, the false chanterelle, amanita muscaria and its cousin amanita pantherina, delicious king boletes, tree loving pholiota, as well as several more. I am not a professional mycologist, just a total mushroom geek who has been picking and identifying wild mushrooms for 35 years, an avid member of a mycological society, administrator of a Facebook group, as well as the creator of Mushroom Wonderland.
