Sushi mat: 🤍 Knife (Gift): 🤍 Measuring cups: 🤍 Measuring spoons: 🤍 Salt & pepper mills: 🤍 STICKY SWEET CHILLI TOFU WRAP 1 block firm tofu, cut into 10 even slices 1/3 cup cornflour 1 tbsp oil Sticky Sweet Chilli Sauce: 1/4 cup maple syrup: 🤍 1 tbsp soy sauce 1 tbsp sesame oil 1 tbsp red wine vinegar 1 tbsp tomato puree 1/2 tsp chilli flakes Pinch salt Hummus 1/2 avocado 1 spring onion, sliced Lettuce 1 tortilla wrap Lightly coat each tofu slice one at time in the cornflour and then tap off any excess. Heat the oil in a large shallow pan, then place half the coated tofu slices in at a time and fry them off on both sides for around 5 minutes each so that they’re slightly golden in colour, then repeat with the other half. Make the Sticky Sweet Chilli Sauce by whisking all of the ingredients together until smooth. Coat one side of the tofu at a time, then turn them over to coat the other side and let them fry off in the sauce for a couple of minutes both sides. Store extra tofu in an airtight container once cool. For the wrap, warm the slightly then spread on a layer of hummus, mash on the avocado, place on 4 of the Sticky Sweet Chilli Tofu slices, add on the spring onion and some salad leaves. Roll tightly and cut in half. SWEET CHILLI TOFU & AVOCADO SUSHI 1 nori sheet: 🤍 1/3 cup sushi rice, cooked: 🤍 2 Sticky Sweet Chilli Tofu slices 1/2 avocado (from Monday’s lunch) Siracha #vegan mayo: 🤍 Slice the tofu slices into three strips, then slice up the avocado. Spread the sushi rice out on a nori sheet, smooth side down, on a sushi mat, making sure it’s spread out to the edges and leaving about an inch at the very end. Lay down the tofu across the width of the nori sheet, again leaving around an inch gap at the top, then add on the sliced avocado on the top. Roll tightly and slice into 8 pieces. SWEET CHILLI TOFU NOODLE SALAD 1 tsp sesame oil 1 tsp rice vinegar 1 tsp soy sauce Juice 1/4 lime Portion rice noodles, cooked 1 carrot, spiralized 4 Sticky Sweet Chilli Tofu slices 1/2 red pepper, sliced 2 spring onions, sliced Handful peanuts, crushed - Almond Biscotti: 🤍 Mix the sesame oil, rice vinegar, soy sauce and lime juice in a bowl, add in the noodles, carrot and half of the spring onions and peanuts, and toss to coat. Serve with the remaining Sticky Sweet Chilli Tofu slices, red pepper slices and garnish with crushed peanuts and the remaining spring onions. SMOKY BEAN TORTILLA SALAD Smoky Sauce: 1/4 cup ketchup 1 tbsp maple syrup 1tbsp soy sauce 1 tsp oil 1 tsp cajun spice mix 1 tsp onion granules 1 tsp smoked paprika 1/4 tsp cayenne Salt & pepper 1 tortilla wrap, sliced 1 can kidney beans, rinsed & drained Lettuce, shredded CHUNKY AVOCADO SALAD 1 avocado, cubed 1 tomato, chopped 1/2 red pepper, chopped 2 spring onions, chopped Juice 1/2 lime Pinch Chilli Flakes Salt & Pepper - Trek Salted Caramel flapjack: 🤍 Whisk all of the ingredients for the smoky marinade together until smooth. Toss the beans in the marinade. Add the beans to a pan on a medium heat and cook through for around 10 minutes. Allow to cool and reserve half for the following day. Make the Chunky Avocado Salad by mixing all of the ingredients together in a bowl, then reserve half for the following day. Place the other half in the bento box with the sliced tortilla, half of the avocado salad, lettuce and lime wedge. SMOKY BEAN SALAD WRAP 1 tortilla wrap Hummus Remaining Smoky Beans Remaning Chunky Avocado Salad Lettuce, shredded - Lentil chips: 🤍 Warm a tortilla wrap, spread a layer of hummus down the centre, then add on the Smoky Beans, Chunky Avocado Salad and shredded lettuce. I recommend doing 3-4 per roll, so you get 2 rolls total for the kimchi a few tbsp vegan kimchi a handful of vegan pizza cheese (USE A NON STICK PAN) 1 serving of cooked rice cucumber, cut into ribbons using a vegetable peeler #2 Crispy Tofu Pesto Sandwich 4:15 Make your own Sandwich Bread: 🤍 2 slices of bread 6 - 8 slices of smoked tofu oil for the pan hummus vegan pesto 1 small pre-cooked beet, cut into slices everything bagel seasoning, or other spice mix of choice a handful of broccolini pieces about ¼ cup (60ml) of water for steaming (make sure the oil in the pan you used to fry the tofu isn’t hot anymore when adding the water! More Vegan Lunch Recipes here: 🤍 The Food Processor in this Video*: 🤍 Tag me in your recreations on instagram :) 🤍mina_rome Instagram: 🤍 50+ Recipe Ebook: 🤍 Email: minarome.yt🤍gmail.com Website: 🤍mina-rome.com ✨INGREDIENTS✨ #1 Sweet Potato Peanut Bowl 0:00 1 medium sized sweet potato (something like 400g or 14 oz) 1-2 handfuls of small cut frozen vegetables ( let them defrost by boiling the veggies alongside the sweet potato, adding them 4-ish min before the potato would be done) for the peanut sauce: 2 tbsp natural peanut butter 3/4 tbsp soy sauce the juice of ½ lemon spices of choice to taste (i added ¼ tsp smoked paprika + ¼ tsp ras el hanout) 3 tbsp of non dairy milk or water to adjust the consistency, add more if needed → mix well until smooth and creamy → add salt to taste if needed →perhaps add fresh spinach, roasted peanuts, grated carrot, flavoured tofu to your bowl If you don't like the soft texture of cooked sweet potato, perhaps roast the chunks: marinated them in a little bit of oil, add salt and other seasonings, lay the chunks out on a sheet with parchment paper and bake them for around 30 minutes at 200C or until they've gotten some nice color. serves 1-2 #2 Kimchi Zoodle “Quesadilla” 2:40 1 zucchini 1 clove of garlic oil for the pan ½ tsp lemon zest salt, seasoning to taste 2 small - medium sized tortillas ½ avocado or 1 tbsp hummus a squeeze of lemon juice vegan kimchi a handful of brown lentils or other lentil, bean of choice a handful of vegan pizza cheese optional: extra mashed avocado or hummus to smear on the second tortilla serves 1 #3 Sundried Tomato Tofu Toasts 4:21 1 block firm plain tofu (200g = 7oz) 7-10 sundried tomatoes, marinated in oil 1 ¼ tbsp white wine or balsamic vinegar 1 tbsp tomato purée a generous pinch of salt or to taste 3 tbsp non dairy milk 1 tbsp extra virgin olive oil, optional spices of choice to taste toast, cherry tomatoes, vegan cheese balsamic glaze → yields enough tofu spread for about 6 toasts → lasts up to 3 days sealed in the fridge #4 Sweet and Sour Noodles 5:43 ~125g noodles of choice (4,4oz) 1 clove garlic, finely chopped 1 tbsp corn starch 1 tbsp soy sauce 2 ½ tbsp date or rice syrup 1 tbsp miso paste 3 tbsp balsamic vinegar 100ml water (⅓ cup + 2 tbsp) → once you combine sauce + noodles taste test and see if you need salt and extra spices topping ideas: avocado, peppers, carrots, tofu, brown lentils, sesame seeds serves 1-2 #5 Blueberry Sweet Potato Smoothie Bowl 7:35 150g-175g sweet potato chopped and peeled (5.3oz - 6.17oz) 150g frozen blueberries (1 cup) a handful of frozen raspberries 1 tbsp ground flax seeds ½ tsp vanilla ¼ tsp cinnamon 1 tbsp vegan vanilla protein powder ½ tbsp ground hemp seeds, optional ⅓ cup non dairy milk or orange juice (80ml) my toppings were whole wheat cereal, green apple, a sprinkle of coconut sugar and a squeeze of lemon juice serves 1 🎵 MUSIC 🎵 intro by Your Neighbors: 🤍 flughand: 🤍 🤍 jeremy sullivan: 🤍 trees and lucy: 🤍 🤍 Grace Chiang - midnight - 🤍 outro by Yot Club 🤍 Much love, Mina this video is not sponsored

Tag me 🤍mina_rome My 50+ Recipe Ebook: 🤍 Instagram: 🤍 Email: minarome.yt🤍gmail.com Website. 🤍mina-rome.com Ingredients: #1 Tomato Tofu Basil Spread 1 onion 1 tbsp olive oil for the pan ¼ cup tomato purée 1 block firm tofu (200g) ¼ tsp salt, or to taste 1 tbsp white wine vinegar or juice of ½ lemon 2 handfuls of fresh basil *enough for 2-3 sandwiches, keep stored in the fridge, stays good for 3-4 days #2 Peanut Butter Raisin Granola 1 cup small cut oats (90g) ½ cup rolled oats (45g) ⅓ tsp salt 2 tbsp semi ground flax seeds (or chia) ⅓ cup peanuts (40g) 2 tbsp coconut oil, solid ½ tsp cinnamon 4 tbsp agave 3 ½ tbsp peanut butter ¼ cup raisins, or more if you want (40g) *stays good for 2-3 weeks #3 Creamy Jackfruit Tomato Curry Jackfruit: 1 can jackfruit, in salt water 1 inch piece of ginger, minced 1 tsp garlic, dried or 1 clove of garlic 5 tbsp plain vegan yogurt 1 tsp curry powder other spices of choice 2 tsp soy sauce oil for the pan ~ 1 cup tomato sauce* water to thin out the sauce juice ½ lemon 2-3 tbsp vegan cream, optional spring onion salt, pepper to taste *lasts in the fridge for 3-4 days max! weighs 240g-280g without the liquid *homemade tomato sauce: 1 onion 1 carrot Oil for the pan 1-2 tbsp tomato puree 1 can crushed tomatoes 2 tsp agave Salt, pepper, dried herbs to taste ½ cup vegetable broth (125ml), more if needed ~ yields 3 - 4 servings (you can sub the jackfruit for either plain or smoked tofu - 200-300g) ! Don't pre cook the rice like I did in the video ! Apparently it's linked to food poisoning so better to cook one portion the day of or maybe the night before. ! Sorry for getting this wrong. #4 One Pot Lentil Soup 3 small yellow potatoes 1 leek 3 spring onions 1 medium sized carrot 1 inch piece of ginger 1 tbsp oil 1 tbsp tomato puree 2 cups vegetable broth (500ml) 225g brown lentils (1 cup + 1 tbsp) (keep adding water or vegetable broth as it's cooking - another cup or so) *add ⅓ cup (80ml) white or red wine after you've mixed in the tomato purée, let it continue to cook for 2-3 minutes. This step is optional but highly recommended! *3-4 servings *lasts in the fridge for 3-4 days max! #5 Chocolate and Coconut Clif Bars 100g dates (4oz), pitted 90g + 1 tbsp small cut oats (1 cup + 1 tbsp) 50g cereal (1.76 oz)* 1 ½ tbsp unsweetened cocoa powder 4 tbsp shredded coconut ¼ tsp salt 2 tbsp flax seeds, semi ground 3 tbsp sunflower seeds 4 tbsp agave 5 tbsp nut or seed butter of choice, I used 2 ½ almond coconut and 2 ½ tbsp hemp seed butter → flavours will obvs differ depending on which one you use melted vegan chocolate, optional → lasts in the fridge for up to 2 weeks, sealed tightly in some sort of lunch box *the conversion rate between grams, ounces and cups can differ a lot depending on what cereal you choose.
