Blend to a smooth powder. Keep aside for later use. For Kebab ● Blend soy granules into fine powder and keep aside for later use. ● Blend chana dal into a blender to a smooth paste. (do not use water while blending). ● In a non-stick pan heat ghee. Add in ginger, green chilli and saute for a minute to release it’s rawness. ● Add in chopped vegetables, turmeric, coriander powder, cumin powder and saute for 2-3 minutes. Add in grated boiled potato, adjust salt and mix well. ● Transfer this mixture into a mixing bowl, add in soy granules powder, prepared kebab masala and mix well. ● Keep the mixture aside for 30 minutes. ● Now shape the mixture into long flat tubes onto ice-cream sticks or wooden bamboo skewers and place onto a hot greased grill pan. Cook for 2-3 minutes on medium flame until it turns golden brown, crisp from all the sides. Brush with ghee id required. ● Arranger cooked kebabs onto a serving plate. ● Serve with chutney, onion rings and mint, coriander leaves. For Chutney ● In a blender add in cucumber, capsicum, onion, green chilli, mint leaves, coriander leaves, salt and lime juice. Blend into a smooth paste. Full written recipe for Veg Hara Bhara Kebab Prep time: 10-15 minutes Cooking time: 20-25 minutes Serves: 3-4 people For kebab Ingredients: • Spinach 1 bunch • Green peas ½ cup • Salt a pinch • Ghee 1 tbsp • Cumin Seeds 1 tsp • Ginger 1 inch (chopped) • Garlic 2 tsp (chopped) • Green chillies 1-2 nos. (chopped) • French beans 1/3 cup (chopped) • Carrots 1/3 cup (chopped) • Cauliflower 1/3 cup (grated) • Salt to taste • Potato 1 nos. medium sized (boiled) • Paneer 50gms • Salt to taste • Black salt • Powdered spices 1. Spicy red chilli powder 1 tsp 2. Coriander powder 1 tsp 3. Cumin powder 1 tsp 4. Raw mango powder ½ tsp 5. Kasuri methi 1 tsp 6. Garam masala 1 tsp • Fresh coriander big handful • Fresh mint 1-2 tbsp (chopped) • Bread crumbs 4 tbsp • Corn flour 1 tsp • Cashew nuts as required (split) Method: • Set a stock pot on high heat, add ample amount of water in it & bring it to a boil, add the spinach to the boiling water along with green peas & salt, blanch them for 10-15 seconds then remove them using a spider & transfer into a bowl full of ice-cold water, strain them & squeeze out as much water as possible & transfer them into a chopper, now using the chopper grind the vegetables finely. • Set a pan on high flame & let it heat well, then add ghee, cumin seeds, ginger, garlic, green chillies, stir & cook on medium flame until the ginger & garlic starts browning a bit. • Further add the french beans, carrot & cauliflower, stir & cook on high flame for 4-5 minutes then add the spinach & peas paste to the pan, stir & add salt to taste, stir well again & cook until all the moisture is evaporated then transfer the cooked vegetables into a bowl & let them cool down. • Once cooled down grate the boiled potato along with the paneer, then add salt, black salt & all the powdered spices, fresh coriander, mint & mix the mixture well using your hands. • Now to bind the mixture well add the bread crumbs in batches & the corn flour, mix well using your hands again, once the desired consistency is achieved taste for salt & adjust it accordingly. • To shape the kebabs, coat your hands with a little bit of oil & take a spoonful of mixture in your hand, form a roundel of the mixture then apply pressure using your other hand & press it to form a tikki, then place a split cashew on the tikki & press it gently, your tikki is ready, shape the remaining mixture in the same way. • Set a handi on high flame & heat the oil for frying, the oil should be medium hot, carefully drop the tikkis in the hot oil, do not stir the kebabs for 1 minute so that a covering is formed that will hold the kebab in its shape, stir them around later & fry them on medium flame for 2-3 minutes, remove them from the oil using a spider & transfer them into a sieve for the excess oil to drip off. • Your hara bhara kebas are ready. Serve it hot with the dahi wali hari chutney. For dahi waali green chutney: Ingredients: • Fresh coriander 1 cup (packed) • Mint leaves ½ cup • Green chillies 2-3 nos. • Ginger 1 inch • Black salt 1 tsp • Aamchur powder ½ tsp • Cumin powder ½ tsp • Salt to taste • Ice cubes 2-3 nos. • Water as required • Curd ½ cup Method: • In a mixer grinder jar add the fresh coriander & the remaining chutney ingredients & grind it into a fine paste. • Now in a separate bowl add the curd & whisk it until smooth & lump free, then add the green chutney paste to the whisked curd & mix it well again. • Your dahi waali green chutney is ready. Recipe for Homemade Chat Masala - 🤍 Ingredients: 200 gms Potato boiled and grated 100 gms French Beans finely chopped 100 gms Cabbage shredded 2 Carrots grated 50 gms beetroot grated 50 gms paneer grated 100 gms Green Peas blanched 3 tbsp vegetable oil 4 tbsp gram flour 1 tbsp corriander cumin powder 1 tbsp chaat masala 1/2 tsp garam masala 2 tbsp ginger garlic paste 3-4 green chillies chopped 1 tbsp raisins chopped 2 tbsp chopped cashew nuts Salt as required Refined flour for dusting Method: - Take oil in a pan, add gram flour along with shredded cabbage, shredded carrots and chopped beans. - Add boiled green peas and cook the vegetables well. - Once the vegetables are cooked, remove it in a bowl and allow it to cool down. - Add chopped cashew nuts, chopped raisins, chopped green chillies in the vegetable mixture. - Add grated potatoes and grated paneer to the vegetable mixture. - Also grate beetroot in the mixture. - Add coriander and cumin powder, garam masala, ginger garlic paste, salt and chat masala. - Mix them well and bring the mixture together. - Roll them in the form of the cylinder and allow it to rest in fridge for 15 to 20 minutes. - Heat oil in a pan on moderate flame. - Dust flour over them and roll it. - Fry them in the frying pan from all sides. - As the kebabs are ready, garnish it with onions, red radish, lemons, green chillies, coriander and mint leaves. Vegetable SeekhKabab Makes: 8-10 Recipe in English: Ingredients: -Boiling water as required -Gajar (Carrots) cubes ½ cup -Matar (Peas) ½ cup - Kernel corns ¼ cup - Hari mirch (Green chilies) 2 -Pyaz (Onion) fried ¼ cup -Bread slices 2 large -Aloo (Potatoes) boiled 300 gms -Bund gobi (Cabbage) ½ cup -Hara dhania (fresh coriander) chopped 2 tbs -Hara pyaz (Green onion) finely chopped 1 tbs -Adrak lehsan paste (Ginger garlic paste) fresh 1 tsp -Zeera (Cumin seeds) roasted & crushed 1 tsp -Lal mirch powder (Red chili powder) ½ tsp or to taste -Garam masala powder ½ tsp -Chaat masala 1 tsp -Haldee powder (Turmeric powder) ½ tsp -Namak (Salt) 1 tsp or to taste -Maida (All-purpose flour) 1 cup or as required -Cooking oil for frying Directions: -In boiling water add carrots, peas and blanch for 2 minutes. Strain and rinse with cold water. -Add the blanched vegetables in a chopper along with corns, green chilies, and fried onion and finely chop, then add bread and blend again until incorporated until coarsely chopped. -In a bowl grate boiled potatoes and cabbage and then add fresh coriander, finely chopped green onion, ginger garlic paste, roasted and crushed cumin seeds, red chili powder, garam masala powder, chaat masala, turmeric powder, salt and the ground vegetables and mix properly. -Grease hands with oil and set the mixture on skewers and give them rest for 10 minutes to settle. -Dip the kebabs in all purpose flour and shallow fry them on medium heat until light golden. Handle gently while frying the kababs. In a bowl add rajam, elephant foot yam, fried cashew nuts, salt, ginger-garlic paste, degi red chilli powder and mix everything properly. Now add it in a grinder jar and grind it into a proper paste. Then remove it in a bowl and add fried onion, kebab masala, salt, gram flour and mix it properly until well combined. Take coal and burt it until red hot and then place in a metal bowl add cloves, ghee and keep this in the kebab mixture bowl and cover it for 5-6 minutes. Then remove the cover and the small bowl, mix the mixture ones and shape round kebabs of equal portion and keep aside for further use. After that heat a non-stick pan and add ghee on it and place the shaped kebab and fry until golden brown from both sides. Remove a serve warm with chutney. For Kebab Masala In a pan dry roast all the whole masala until fragrant. Then cool them a little bit and grind it into a proper powder. Keep aside for further use. For Chutney In a bowl add curd, chopped walnuts, fennel seeds, green chillies and mix everything properly. These are crispy and tasty. You can also use these as patties for burgers. Serve them hot with mint chutney or curd dip. Ingredients Kabuli Chana - 1 Cup (Soaked Overnight) Water Onion - 1 N0. Chopped Green Chili - 2 Nos Chopped Coriander Leaves Mint Leaves Besan Flour - 2 Tbsp Turmeric Powder - 1/4 Tsp Kashmiri Chili Powder - 1 Tsp Coriander Powder - 1 Tsp Cumin Powder - 1 Tsp Chaat Masala - 1 Tsp Garam Masala - 1 Tsp Salt - 1 1/2 Tsp Oil for shallow frying To Make Curd Dip Curd - 1 Cup Coriander Leaves Mint Leaves Chili Flakes - 1/2 Tsp Chaat Masala - 1/4 Tsp Juice Of 1/2 Lemon Method: 1. Soak black chana overnight 2. Drain the water and pressure cook them till they are soft 3. Mash them coarsely and transfer it to a bowl 4. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, chat masala, salt, gram flour, chopped onions, green chilies, ginger garlic paste, coriander leaves, and mint leaves 5. Mix everything well 6. Make flat patties out of the mixture and keep them aside 7. Heat some oil for shallow frying 8. Fry the patties on both the sides till they are golden brown in color and crispy 9. Serve them hot with mint chutney or curd dip To make Curd Dip 10. In a bowl, take the hung curd, add mint leaves, coriander leaves, green chilies, chaat masala, red chili flakes and lemon juice 11. Mix everything well and serve it chillied. To pressure cook the potatoes – pour enough amount of water for 4 medium sized potatoes, cut them to half, add required salt and pressure cook it for about 3 to 4 whistles. 2. Now peel off the skin and mash the potatoes. 3. Cook 1 cup of green peas and some Palak leaf in water. 4. Then strain the excess water and allow it to cool. 5.  Grind – 3 nos green chills, a piece of ginger, cooked green peas, cooked Palak, add few fresh coriander leaves and add some salt as required. 6.  For the kabab patties mixture – to the mashed potatoes add ½ tsp of garam masala, ½ tsp of chat masala powder, ½ tsp amchur powder, 1 tsp of Kashmiri red chilli powder, salt as needed, ground mixture, 1 tbsp of besan/gram flour, finally add the remaining cooked peas, mix it well and form patties. 7. Corn flour mixture – take 3 tsp of corn flour powder to add some water to it and mix it well. 8. Now take the patties, dip it to the cornflour mixture, roll it on to the bread crumbs. 9. And shallow fry the kabab both sides on medium flame till it turns into some golden brown. 10. Garnish the kabab as you desire and serve it hot with some chutney of your own taste. These Veg kebabs are not only delicious but also quite like the real deal in their taste. The 3 veg kebabs I am sharing with you today are Rajma Galouti, Shami Kebab and Corn Kebab or Makai kebab. These veg kebabs can be excellent for all your parties and functions and for all occasions! Thank you for watching! 💫 And don’t forget to subscribe here: 🤍 Recipe : Rajma Galouti Kebabs Preparation Time: 20 minutes Cooking Time: 40 minutes Serves: 3-4 Ingredients: 2 cups boiled Red Kidney Beans 15 Cashew Nuts 2 Chironji 1 tbsp Poppy seeds 1/tsp Caraway seeds 5 Green cardamoms 2 Black cardamoms 4 Cloves 2” Cinnamon 1 tsp Kewra water 2 tbsp Ghee 1” Ginger chopped 10 cloves Garlic chopped 3-4 Green chillies finely chopped 4 tablespoons Mawa (khoya) grated 1 tsp White pepper powder ½ cup fried brown onion Salt to taste Method: Dry roast the poppy seeds, cashew nuts and chironji along with the whole spices till fragrant and lightly coloured. Grind to a smooth powder. Add fried onions and a little water ad grind to a smooth paste. Heat 1 tbsp ghee in a pan. add chopped ginger, garlic and green chilies and sauté till golden and fragrant. Add khoya and sauté till the khoya is soft. Add the mixture to the spice paste and blend further to make a smooth paste. Remove the paste to a pan. Add the boiled rajma, red chilli powder, white pepper powder and mix well. Cook till the rajma is all mashed and the mixture starts coming together like a ball. Remove from heat and add the kewra water. Allow to cool down. Shape the kebabs and cook over medium heat in a pan till the kebab are golden, adding a little ghee at a time. Serve hot with chutney. Shami Kababs Preparation Time: 20 minutes Cooking Time: 40 minutes Serves: 3-4 Ingredients: 2 cups soaked Bengal Gram (kala chana) ½ cup chopped onions 1 tbsp chopped garlic 1tbsp chopped ginger 2 black cardamoms 1 tsp cumin seeds 2” cinnamon 5-6 cloves ½ cup chopped onion 2 tbsp chopped coriander leaves 2 tbsp lemon juice Salt to taste Oil as needed Method: Pressure cooked the drained chana with chopped onions, ginger, garlic, whole spices, salt to taste, ½ cup water for 4-5 whistles. Cool and grind to a smooth paste. Add chopped onions, chopped coriander, red chilli powder, garam masala powder, lemon juice, mix well and shape into kebabs and cook over medium heat in a pan till the kebab are golden, adding a little ghee at a time. Serve hot with chutney. Corn Kebab Preparation Time: 20 minutes Cooking Time: 40 minutes Serves: 3-4 Ingredients: 2 cups sweet Corn 1 Boiled potato 2 tbsp chopped Coriander Mint Cardamom powder Khoya Powdered Spices Method: Boil the corn with ½ cup water and ½ tsp turmeric powder, chopped ginger till well cooked. Remove, drain, cool and grind to a coarse paste. Grate 2 boiled potato add to the corn paste. Grind together the cardamoms, mace, white pepper powder and a little salt. Heat a little ghee in a pan. add the caraway seeds and allow to splutter. Add the khoya and cook over low heat till the khoya is lightly pink. Add the chopped green chilies, the corn past eand mix well. Add th cashew paste and mix well. Add the powdered spices and the soaked saffron and cook till the mixture starts coming together like a ball. Remove from heat and cool doen slightly. Add chopped coriander and mix well. shape into kebabs and cook over medium heat in a pan till the kebab are golden, adding a little ghee at a time. Veg Seekh Kabab is a ground/minced kebab that is skewered & cooked over a barbeque. You can use any veggies of your choice to prepare this kebab & if you are not in the mood to light up the barbeque then just cook them over a pan or a tawa. This vegetarian kebab can be shaped like a tikki/patty as well. #VegSeekh #VegSeekhKebab #HarpalSinghSokhi Veg Seekh Kebab Cauliflower Grated 1 1/2 Cup French Beans Chopped 6-7 No. Green Peas 1/2 Cup Carrot Chopped 1 No. Potato Grated (Boiled) 1 No. Oil 1 tbsp + 1 tbsp Shahi Jeera 1 tsp Ginger Chopped 1 tbsp Green Chilli Chopped 3-4 No. Gram flour 3 tbsp Coriander Powder 1 tbsp Turmeric Powder 1/2 tsp Red Chilli Powder 1 tsp Black Pepper Crushed 1/4 tsp Garam Masala Powder 1 tsp + 1/2 tsp Cardamom Powder 1/2 tsp Chaat Masala 1/2 tsp + for sprinkle Salt to taste Method: 1. Heat 1 tbsp of oil in a pan, Add grated cauliflower and chopped carrot, mix well and saute for 10 min. 2. Add French beans, green peas and salt, mix well and saute for 5 min. 3. Remove in a bowl and cool it in room temperature. 4. Transfer them to the mixer jar and grind coarsley. Keep it aside. 5. Heat 1 tbsp of oil in a pan, add shahi jeera and saute for 20 sec. 6. Add chopped ginger and green chillies, mix well and saute for 2 min. 7. Add gram flour, mix well and saute for 2 min. on medium flame. 8. Add coriander powder, turmeric powder, red chilli powder, black pepper crushed and garam masala powder, mix well and saute for 30 sec. 9. Add vegetable mixture, mix well and saute for 4-5 min. 10. Remove in a bowl and cool it in room temperature. 11. Add boiled potatoes and mix well. 12. Add green cardamom powder, chaat masala and garam masala powder, mix well and keep it in the fridge for at least 1 hour. 13. Apply some water in finger and plam. 14. Take a wooden skewers, apply ball size portion of the vegetable mixture, press evenly and give it cylindrical shape. Place it in a plate. 15. Make the remaining in similar way. 16. Heat grill pan,place the kebab on hot grill. 17. Grill them until golden brown from all the side. 18. Transfer in serving plate, sprinkle some chaat masala on top and serve hot with green chutney and salad.
