Breakfast Spaghetti Squash (Bacon & Egg) Serving Size: 4 INGREDIENTS 1 spaghetti squash oil, to brush salt and pepper, to season 1/2 cup of bacon, chopped 4 eggs 1/2 cup cheddar cheese green onion, garnish PREPARATION Preheat oven to 400º F / 200º C. Half the squash and scoop out seeds. Brush the inner flesh with oil, season with salt and pepper. Place squash cut side down, and roast until tender, about 30 minutes. Then let cool. Use a fork to scrape the squash strands and “fluff” it up. Sprinkle bacon and cheese on top of the fluffed squash. Make a hole with a spoon and crack an egg inside. Place breakfast squash halves back in the oven, and bake until filling is hot and eggs reach your desired doneness, about 10 minutes. Garnish with chopped green onion and black pepper. Serve immediately and enjoy! Four Cheese Spaghetti Squash Serving Size: 4 INGREDIENTS 1 spaghetti squash oil, to brush salt and pepper, to season 1/4 cup butter 1/4 cup all-purpose flour 1 3/4 cups milk 1/2 cup parmesan cheese, divided in half 1/4 cup cheddar cheese 1/4 mozzarella cheese 1/4 monterey jack cheese chopped parsley, for garnish PREPARATION Preheat oven to 400º F / 200º C. Half the squash and scoop out seeds. Brush the inner flesh with oil, season with salt and pepper. Place squash cut side down, and roast until tender, about 30 minutes. Then let cool. Use a fork to scrape the squash strands and “fluff” it up. In a saucepan, melt butter, stir in flour, and cook for about 2 minutes, stirring continuously. Slowly stir in milk and beat until there are no lumps. Bring the sauce slowly to boil, stirring the whole time until the sauce is thickened. Add all four cheeses to the sauce and stir until melted. Pour the sauce into the squash halves, sprinkle salt and pepper to taste, and stir to ensure the squash is coated in the cheese sauce. Bake until the filling is hot, about 5 minutes. Garnish with chopped parsley. Serve immediately and enjoy! Chicken Enchilada-Stuffed Spaghetti Squash Serving Size: 4 INGREDIENTS 1 spaghetti squash oil, to brush salt and pepper, to season 2 cups of shredded chicken, cooked (rotisserie chicken) 1/2 teaspoon cumin 1/4 teaspoon garlic powder 1/8 teaspoon chili powder 1/4 teaspoon salt 3 tablespoon cold water 1/3 cup onion, chopped 1/3 cup bell pepper, chopped 1/4 cup black beans 1/2 cup red enchilada sauce 1/2 cup shredded Mexican cheese blend PREPARATION Preheat oven to 400ºF / 200ºC. Half the squash and scoop out seeds. Brush the inner flesh with oil, season with salt and pepper. Place squash cut side down and roast until tender, about 30 minutes. Then let cool. In a medium skillet, bring up to medium heat. Add onion and bell pepper, cumin, garlic powder, chili powder, and salt. Add water, then cook and stir until veggies have mostly softened and browned and water has evaporated, about 3 minutes. Transfer the veggies to a large bowl. Add chicken, black beans, 1/2 cup enchilada sauce, and 1/4 cup cheese. Mix until uniform. Use a fork to scrape the squash strands and “fluff” it up. Divide enchilada mixture between the hollow squash halves. Sprinkle tops with more cheese. Bake until filling is hot and cheese has melted, about 10 minutes. Serve immediately and enjoy! Tomato Meat Sauce Spaghetti Squash Serving Size: 4 INGREDIENTS 1 spaghetti squash oil, to brush salt and pepper, to season 1 pound ground beef 1 yellow onion, diced 3 cloves garlic, minced 1 can (15 ounces) crushed tomatoes 1 cup shredded mozzarella chopped parsley, for garnish INSTRUCTIONS Preheat oven to 400º F / 200º C. Half the squash and scoop out seeds. Brush the inner flesh with oil, season with salt and pepper. Place squash cut side down, and roast until tender, about 30 minutes. Then let cool. Use a fork to scrape the squash strands and “fluff” it up. In a skillet, heat up oil over medium-high heat. Stir in onions and cook until translucent, 5-8 minutes. Stir in garlic and cook until fragrant, 30 seconds. Add the ground beef and bit of salt. Cook until well-browned, breaking up the beef into small crumbles, 5-8 minutes. Stir in the crushed tomatoes and bring to a simmer. Divide the meat sauce mixture between the hollow squash halves. Evenly top with the 1/2 cup of cheese. Sprinkle with salt and mix well. The salt will help draw out water from the veggies. Stir the veggies for about five minutes, adding the garlic powder and any other seasonings you desire. Once the veggies have softened, remove them from the skillet and place in a colander to allow some of the water to drain off. Press on the veggies to squeeze the water out. In a large bowl, whisk an egg, then add in the squash, onion, cheddar cheese, carrot, sour cream, Italian seasoning, and half of the breadcrumbs or crackers. Stir until everything is well mixed. In a small bowl make your casserole topping: combine the remaining bread crumbs with 1 Tbsp of melted butter. Mix in theParmesan cheese. Pour the casserole mix into an oven safe dish and then top with the bread crumb topping. Make sure the casserole topping is level so it will cook evenly. Place the casserole in an oven preheated to 350˚F and bake for about 30 minutes, or until the breadcrumb topping turns golden brown.

Please subscribe to my channel as I’ll be sharing many more family recipes. 5-6 medium fresh squash 2 fresh zucchini 1 stick of butter medium onion (your choice) 2 tsp garlic salt(to taste) Wash and slice squash and zucchini, chop onion, melt butter in medium skillet, add in onion, let simmer a few minutes, add squash and zucchini. Cover, stir occasionally, cook down until a golden brown. Serve with any meat of your choice. Enjoy!!

👇 Try this easy crock pot meal! Spaghetti squash is a great low-carb pasta substitute! It's unique texture mimics the shape of noodles. This tasty recipe is one you'll want to SAVE! CROCKPOT PESTO CHICKEN SPAGHETTI SQUASH: 1 medium spaghetti squash 1 cup heavy cream 1 cup chicken broth 1 Tbsp pesto 1/2 cup parmesan 1 tsp garlic ½ tsp salt, pepper, & xanthan gum 1 cup shredded mozzarella shredded parmesan ▪︎▪︎▪︎▪︎▪︎ Place spaghetti squash in crock pot. Cover with lid and cook on high for 2 hours. The quash is done when the shell becomes slightly tender Let squash cool for 15 minutes then slice in half. Scoop out seeds. Scrape flesh from shell and place back in crock pot. Top with heavy cream, chicken broth, pesto, parmesan, garlic, S&P, and xanthan gum then stir. Replace lid and cook on high an additional 2 hours Stir in mozzarella. Yellow summer squash with lemon, thyme, basil, garlic, and sun dried tomatoes is a healthy side dish with restaurant quality flavor! Join Eric from Simply Elegant Home Cooking as he demonstrates this amazing vegetable side dish recipe! One of the tricks to making this is to buy the best quality yellow squash that you can find. Today, Eric is using organic, locally grown squash from a nearby farm in Smithsburg, MD. The best way to cook zucchini and squash is quickly, over medium high heat. When cooked using this method, the exteriors of the squash will get a nice sear and develop amazing color and flavor while remaining crisp. Be sure to prep all of your ingredients before beginning the cooking process as this dish comes together fast! Ingredients: -3 medium sized yellow Summer squash -12 fresh basil leaves -6 thyme sprigs -2 garlic cloves -6 sun dried tomatoes -1/3 lemon -1 tablespoon Italian extra virgin olive oil -1 tablespoon butter -salt and pepper to taste Instructions: -Remove the end from the squash and then cut the squash into medium sided discs. Cut each disc into a half circle. -Remove the thyme leaves from the stems and then finely mince them with a sharp knife. -Roll the fresh basil leaves, several at a time, and then slice thinly. -Slice the sun dried tomatoes into thin strips and then chop across to cut them into small pieces. -Crush the garlic cloves using a garlic press. -Cut 1/3 of a lemon and reserve the remaining lemon for other recipes. -Preheat a large skillet over medium high heat and allow it to come up to full temperature. -Add the Italian extra virgin olive oil along with the butter and swirl to evenly coat the pan. -Add in the yellow squash to the pan and stir to incorporate. Season with salt and pepper. Cook for about two minutes before turning. As you cook the squash, be sure to not only stir but flip the squash periodically to ensure that all surface area gets cooked. -After about five minutes, turn the heat down to medium and add in the thyme and garlic. Stir to evenly incorporate the ingredients. -Several minutes after adding the garlic and thyme, add in the sun dried tomatoes and continue to stir and flip the yellow squash. -Once the squash is cooked to your desired liking, turn off the heat and juice the third of a lemon into the pan. Stir to incorporate. -Add in the fresh basil, and give a final stir. -Serve and enjoy!

The size of the spaghetti squash and how much squash you dig out will determine how much of the other ingredients you need; They are simple and fresh ingredients, so there really is no wrong way to make this dish. The best spaghetti squash doesn't get more super simple than that! Best Spaghetti Squash ...super simple, low fat, low carb recipe When buying a spaghetti squash, choose one that seems heavy for its size. carefully slice the squash into halves. Cut the squash across instead of lengthwise, this will make for longer "noodles". Place cut sides down in shallow water in a roasting pan. Bake for about 30-45 minutes at 350 degrees Fahrenheit. You can check on the squash after 30 minutes; the cooking time will vary according to the size of the squash. It's important not to overcook the squash, slightly crunchy strands of squash add great texture to a dish, and overcooking the squash will make the ingredient mushy. Remove squash from the oven and carefully turn halves over to check for doneness the water will be hot and steam will be trapped under the squash, so be cautious. Allow squash to sit 5-10 minutes to cool slightly for easier handling. Insert a fork and twist out strands of "spaghetti". Once the fork has done its job, use a spoon to scrape out the remaining squash; it's edible all the way to the rind, so don't waste any! Heat a skillet and melt cooking oil on medium heat. Add finely chopped garlic and cook 1-2 minutes until it begins to color up. If you like a bit of heat with your dish, add some red pepper flakes as well. Add a bit of butter for extra flavor (this is optional). Add the spaghetti squash to the skillet and mix with the garlic. Add salt and pepper to taste, add lemon zest and juice, and stir. Turn off the heat and add in a bit of dark, flavorful olive oil. You can also stir in a bit of freshly grated Parmesan Cheese if desire, but this is optional. Add fresh chopped parsley for bright flavor and color, and mix well. And that's it. This recipe makes a nice side dish or a very healthy entree. How to cook Crookneck Squash: Many people use these squashes as holiday decorations but they are actually edible. If you do let them go too long they do get pretty woodsy. You can tell when the squash are ready to eat because you can actually scrape a little bit off with your finger nail. Wash your squash and cut it into rings. Placed the squash on a baking sheet and season with olive oil salt pepper garlic blend and I used a little bit of 🤍traderjoes mushroom powder. Make sure you do both sides and put them in the oven for about 30 to 40 minutes depending on how big your squash is. Make sure to flip them halfway during the cooking process.
