Balsamic Soy Glazed Salmon 00:00 Intro 01:10 Recipe 06:26 Broiler Troubleshooting Notes about salmon: you need a fatty salmon for this dish. Farm-raised works best, but king salmon (also known as chinook) also works. Although we aren’t eating the skin in this dish, it’s important that you get a salmon fillet with the skin to insulate it during cooking and protect the bottom from overcooking. 20g apricot preserves (4 tsp) 8g balsamic vinegar (1.5 tsp) 20g tamari style soy sauce (4 tsp) 1.5 Lb (680g) skin-on, boneless thick salmon fillet Salt and pepper to taste Set a rack as close to the broiling element as possible and another one in the bottom third of the oven. Preheat the oven to 350F (180C). In a small bowl, whisk together the apricot preserves, vinegar, and soy sauce. Place the salmon on a shallow metal baking sheet lined with foil. Sprinkle generously with salt and pepper. Spoon just enough glaze to cover the top of the salmon. Avoid puddles. Turn on the broiler and place an inverted pan on the rack if you need to get closer to the broiler element. Place the salmon under the broiler until the belly browns, about 4 min. Cover the belly with foil, add a bit more glaze to the thick part of the fillet and continue to broil until the entire salmon is brown, another 1-2 minutes. Remove the foil that’s covering the belly. Cut off the belly and remove to a plate by sliding the spatula between the skin and the flesh. Turn down the oven to 350F (180C). Pour the remaining sauce over the the thick part of the salmon and cook in the bottom third of the oven until the flakes separate, but are still translucent in the center. This will take 4-9 minutes, but it’s good to check very frequently. Put the belly back in the pan with salmon and cool to room temperature, about an hour. This Asian Fusion recipe is all about the combination of flavours and textures. The soy sauce and butter give the salmon a savoury and rich flavour, while the lemon juice adds a touch of acidity to cut through the richness. The spring (green) onion adds a subtle onion flavour. PATREON: 🤍 Ingredients 2 lb salmon fillet cut into four ½ lb pieces • 2 tablespoons Black Magic from 🤍Spiceology (or any other blackening seasoning) • 2 teaspoons Chef Ange Base Seasoning - 🤍 • olive oil Honey Garlic Glaze • 2 tbsp honey • 2 tsp soy sauce • 2 tsp maple syrup • 1 tsp rice wine vinegar or white wine vinegar • A dash of sesame oil • 1/2 tsp Black Magic from Spiceology (or any other blackening seasoning) • 1-2 cloves garlic finely shredded or finely minced Garnish • Thinly sliced scallion greens • Sesame seeds • Lemon slices Directions • Preheat oven to 425F. • Coat salmon in Black Magic or other blackening seasoning, Chef Ange base seasoning (🤍 and olive oil. Set aside and let salmon come up to room temperature for 15-20 min. • In a small bowl, mix honey, soy sauce, maple syrup, vinegar, sesame oil, garlic and blackening seasoning. Set aside for after salmon goes in the oven. (If you like a thicker glaze, you can reduce until thicker and/or add a touch of cornstarch in a small saucepot before using.) • Arrange seasoned salmon evenly on a baking sheet lined with aluminum foil and parchment paper. Place on a rack in the lower third of the oven. Bake 10-12 min or until the white proteins start to come out of the sides of the salmon. • Remove salmon from oven and brush on a thin coat of the honey garlic glaze and put back in the oven for 2-3 min to let glaze stiffen up a little. • Remove salmon from oven and transfer to a raised grate on a baking sheet lined with aluminum foil. • Brush on another thin coat of glaze and hit lightly with a kitchen torch. If you don’t have a torch, broil on high for 1-2 min. • Remove from oven and let cool to the touch on the baking sheet. • Remove skin or leave on if you like the salmon skin. • Garnish with sesame seeds and transfer to serving platter. • Finish garnish with sliced scallion greens and lemon slices. Ingredients: Salmon Half Orange 2 Limes or Lemon 1 tbls Sriracha 3 tbls Honey 5 tbls Soy Sauce 2 tsps Smoked Paprika 1 ½ tbls Garlic In a bowl mix: soy sauce, sriracha, honey, garlic, smoked paprika and orange juice, mix well. Cut up your salmon however you like and add it to the marinade. Let it sit for 1-2 hours. Place in a pan, cut up some limes and place the slices on top of the salmon. Let it cook at 450 Degrees for 10-15 minutes. Then, put it on broil for 5 minutes, but make sure to keep your on it, as broil can burn your salmon very quickly. While it is cooking in the oven, you want to make sure you baste your salmon every 5 minutes. Then take it out and let it cool for 5 minutes. Enjoy!

Instagram: 🤍 Facebook: 🤍 Twitter:🤍 BETH'S SOY GINER SALMON RECIPE "EN PAPILLOTE" Serves 2 INGREDIENTS: 1 Tbsp (15 ml) Toasted Sesame Oil 3 Tbsp (45 ml)Soy Sauce 1 ½ tsp (7.5 ml) honey 1 tbsp (15 ml) Mirin 1 ¼ tsp (6.25 ml) rice wine vinegar 1 clove garlic, minced ¼ tsp (1.25 ml) fresh ginger grated 6 slices of fresh ginger, abiout 1 inch long (2.5 cm) (2) 8 oz (230 g each piece) piece of salmon 2 baby bok choys ½ cup (75 g) sugar snap peas 2 scallions, whites and greens cut into small slices. ½ tsp (2.5 ml) sesame seeds METHOD: Preheat oven to 400F (200C). In a small bowl mix together the sesame oil, soy sauce, honey, mirin, rice wine vinegar, garlic and ginger. Set aside. Then cut 2 18” pieces of heavy parchment paper (45 cm each). Fold in half then cut out a half-heart. Open like a book. Place the ginger slices on one half of parchment paper, up the seam. Then, place 1 salmon fillet on top, beside the fish add the baby boy choy that has been cut in half, cut side down. Nestle the snap peas on top. Spoon half the sauce over the fish and veggies. Sprinkle fish with sesame seeds. Fold parchment over the cover fish, and starting at one end fold tiny creases along the side, forming a seal, until you have a little fish packet. Repeat the process with the other fillet. Place both packets on the baking tray and bake for 10-12 mins for a large 8 oz fillet 8-10 mins for a 6 oz fillet. Once done open parchment and top fish with fresh scallions on top. Enjoy!
