I used the all-purpose flour in here, you can also use cake flour to make 2. There are 25 grams (2 tbsp) of Sugar in total. Split it into 3 times to add. 3. The One Egg Souffle Pancake Recipe (2 small pancakes or 1 big pancake) 1 large egg (room temperature) 2 tbsp plain flour / all purpose flour 1 tbsp milk 1.5 tbsp sugar 1/2 tsp vanilla extract 3 - 4 drops of lemon juice / vinegar (for egg stabilization - omittable) - This recipe doesn't call for baking powder. Teflon baking sheet (amazon affiliate) : 🤍 Apron ( Amazon UK Merch) : 🤍 My baking and camera equipments: 🤍 *the time and heat level to cook the souffle pancakes (base on my electric stove, please adjust accordingly) * My stove has 9 heat levels, so 4/9 level means I use level 4 - Pre heat the pan at 4/9 level for 1 minute, grease the pan - Scoop 2/3 of the batter into 2 pancakes - Add 2 tsp (room temperature) water, cover and cook 2 minutes - After 2 mins, scoop the rest of the batter into 2 pancakes (adding the batter into 2 batches prevents the pancakes spreading too much so they can be higher) * Reduce the heat to 3/9, add 1 tsp water, cover and cook 5 minutes - Flip the pancakes, the pancake's bottoms should be strong enough to flip easily now - Cover and cook for extra 5 mins, let them sit inside the pan for 1 minute - Serve them hot with fruit, butter and powdered sugar / syrup For the one big pancake: Cook at 3/9 heat level for 7 minutes than flip and cook for extra 6 minutes Caution: each stove works differently, adjust accordingly ! It is more difficult to make 1 big fat pancake than 2 smaller pancakes because you need the cake ring and teflon paper (baking paper). Also, the bigger pancake requires slightly lower heat and slightly longer cooking time (total 13 - 14 minutes compared with 12 minutes for smaller pancakes). * Popular problems * 1. Whisk the egg white incorrectly (too soft). Suggested solution: Please check my whipped egg white (the meringue) in the video and see how it looks like when I stop whisking. 2. Over mix when combining egg yolk and egg white mixtures (deflate all the bubbles inside the batter so the batter turns watery). Suggested solution: Please mix the batter using a flat spatula, do not use a whisk to mix. And fold the batter like the motions in the video (look like I knead the batter with the spatula), please do it gently. 3. The pancakes rise well inside the pan and deflate after baking. The reason is incorrect heat level or timing. Suggested solution: do not open the lid too often during cooking, lower the heat and cook longer. But I think the heat level and timing in my video is low and long enogh through multiple tests I did. Crack open the eggs and drop the whites and yolks separately into two different bowls. 2. Refrigerate the egg whites. 3. To a large bowl, add the egg yolks and whisk them well. 4. Add milk and vanilla essence. Whisk it all again. 5. Add maida/all purpose flour, salt and baking powder into the bowl by sieving. 6. Blend all the ingredients and keep it aside. 7. Beat the chilled egg whites and add sugar in intervals. Keep beating until it becomes stiff, nice and fluffy. 8. Slowly and gradually mix egg whites mixture with egg yolks mixture. 9. Do not whisk too hard to maintain the fluffiness in the batter. 10. Heat a pan on low flame and apply some oil. Gently wipe off the excess oil with a kitchen towel or a tissue paper. 11. Gently place the pancake mixture 3 times with 3 spoonfuls gradually on the pan as shown in the video. 12. Pour water in the space left towards the sides of the pan. 13. Cover the pan with a lid and cook for 2 mins on low flame. 14. After 2 mins, add another spoonful of batter on each pancake. 15. Add water to the sides of the pan again and cover it. 16. Cook the pancakes for 2 mins and then flip them to the other side. Add water to the pan sides again. 17. Close the pan and cook for 2 mins on this other side as well. 18. Remove them from the pan to a plate. 19. Souffle Pancakes are ready to be served hot fresh with a cube of butter and some maple syrup or honey. I film alone, and it takes some time to move and adjust the camera while I film, which caused the batter to meltdown. If you closely follow the instructions from the video, your souffle would be much better looking than what you can see in the video. Don’t forget to click ‘subscribe’ and ‘like’. Welcome to the All We Knead :) Please SUBSCRIBE to my channel and see you every week! 🤍 Ingredients 2 Egg Yolks 3g Baking Powder 45g Cake Flour 25g Whole Milk 3 Egg whites 50g Sugar 1tsp Vinegar 100g Heavy Whipping Cream 10g Sugar Fruits, Syrup Timings to make meringue with HAND MIXER 1. Only egg white: 40 seconds on medium speed. 2. Add 1/3 amount of sugar and 40 seconds on high speed. 3. Repeat step 2. 4. Add the rest of the sugar and whip it on high speed for 6~7 minutes. It is complete if the meringue stays on the whipper like a ball of snow when it is lifted. Tips 1. Scoop diameter 8 cm & 6 cm 2. Because I film alone, the batter has melted more than it should in the video. If you actually make one, it would be more thick and adorable. 3. When you are making the meringue, use cold eggs and add some vinegar to stabilize it and remove the possible unpleasant smell from the egg. 4. You could use ¼ tsp of Cream of Tartar instead of the vinegar. 5. You also could add Vanilla extract if you want. 6. If you are using the frying pan, use the lowest heat for the same duration in the video. Hi, everyone. :) Today we'll show you how to make a delicious and fluffiest skillet pancake inspired by a famous Japanese TV series: Castella Pancakes. This castella pancake is very popular because of a Japanese TV series named "Solitary Gourmet (孤独のグルメ, Kodoku no Gurume) " which based on a bestselling comic. The story is about a traveling salesman Gorō visits lots of places on business, but he gets hungry easiely after visiting customer, so finding a local cuisine to enjoy is the most important thing of his day. This dessert appeared in the fourth episode of the eighth season. It’s fluffy and smell so good. You can tell it's the one of the most comforting food. In this video, we’d like to share with you how to make it at home, just use a cast-iron skillet. This pancake is a matter of time, so the most important thing is always serve immediately out of oven. :-) This is an #ASMR ver, you can check out the other ver that with BGM and Voices in Chinese if you like: 🤍 - Castella Pancakes/Skillet Souffle Pancake Recipes Cast-iron skillet size : Ø 16cm ✎ Ingredients egg 2 granulated sugar 35g (10g for yolk, 25g for egg white) honey 15g milk 30g cake flour 40g baking powder 2g butter, powdered sugar for garnish ✎ Instructions 1. Oil the skillet (Canola oil or grape seed oil is ok) 2. Separate egg yolks from egg whites. Place the egg white to freeze for 5-10 minutes. 3. Mix egg yolk with 10g granulated sugar, honey and milk, whisk until well combined. 4. Sift the flour and baking powder into the egg yolk mixture. Whisk until the flour is no longer visible. Set aside. 5. Beat egg whites on medium high speed. Gradually add sugar in thirds, beating until soft peaks form. 6. Add 1/3 of the meringue into egg yolk batter and mix well until the meringue are no longer visible. 7. Pour the batter into meringue, blend with a spatula to mix the batter to be smooth flowing and glossy. 8. Pour the batter into a 16cm cast-iron skillet, knock the pan lightly over the table to remove the larger air bubbles. 9. Preheat the oven to 180°C, bake for 20 minutes in total, at the 9 minute, take it out, use a sharp knife to cut a cross marking on cake's surface. Return into oven immediately, continue baking until cook though. 10. Remove from oven, top with a pad of butter and sprinkle some powdered sugar.
