Servings: 8-10 INGREDIENTS 2 pounds sirloin steak, cut into 1-inch cubes 1 tablespoon cumin 1 tablespoon chili powder 1 tablespoon garlic powder 1 teaspoon salt 1 teaspoon pepper 2 green bell peppers, cut into 1-inch pieces 2 red bell peppers, cut into 1-inch pieces 1 large white onion, cut into 1-inch pieces 8-10 bamboo skewers, soaked in water for 20 minutes INSTRUCTIONS 1. Preheat grill to medium-high heat. 2. Combine the steak, cumin, chili powder, garlic powder, salt, and pepper in a bowl, mixing until the steak is evenly coated. 3. Slide a piece of steak down the skewer, followed by pieces of green pepper, red pepper, and onion. Repeat until there is a 1-inch gap on the top of the skewer. 4. Repeat with the remaining skewers. 5. Grease the surface of the grill by rubbing the grates with a tongs and an oiled paper towel. 6. Grill the skewers for about 10-15 minutes with the lid closed, flipping them halfway. 7. Serve! Roasted Veggie Skewers Servings: 8-10 INGREDIENTS ¼ cup olive oil 2 tablespoons lemon juice 1 tablespoon dried oregano 1 teaspoon salt 1 teaspoon pepper 2 zucchinis, sliced into rounds 3 cups cremini mushrooms 2 medium red onions, cut into 1-inch pieces 2 red bell peppers, cut into 1-inch pieces 2 yellow bell peppers, cut into 1-inch pieces 4-5 bamboo skewers, soaked in water for 20 minutes INSTRUCTIONS 1. Preheat grill to medium heat. 2. Combine the oil, lemon juice, oregano, salt, and pepper, stirring until mixed. 3. Slide a zucchini slice down the skewer, followed by pieces of mushroom, red onion, and peppers, repeating until there is a 1-inch gap at the top of the skewer. 4. Repeat with the remaining skewers and vegetables. 5. Brush each skewer liberally with the oil mixture. 6. Grill the skewers for 12-18 minutes with the lid closed, flipping halfway. 7. Serve! Teriyaki Chicken Skewers Servings: 4-5 INGREDIENTS 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes 1 cup soy sauce ¾ cup brown sugar 1 tablespoon sesame seeds ¼ cup green onions, chopped 1 pineapple, diced into 1-inch cubes 4-5 bamboo skewers, soaked in water for 20 minutes INSTRUCTIONS 1. Preheat grill to medium heat. 2. Combine the chicken, soy sauce, brown sugar, sesame seeds, and green onions, stirring until evenly coated. 3. Chill and marinate for at least 2 hours. 4. Slide a piece of chicken down the skewer, alternating between chicken and pineapple, until there is a 1-inch gap on the top of the skewer. 5. Repeat with the remaining chicken, pineapple, and skewers. 6. Grease the surface of the grill by rubbing the grates with a tongs and an oiled paper towel. 7. Grill the skewers for about 12-18 minutes with the lid closed, flipping them halfway. Brush the skewers with the leftover marinade during grilling, if desired. 8. Serve! BBQ Chicken Bacon Skewers Servings: 4-5 INGREDIENTS 1 pound boneless, skinless, chicken thighs, cut into 1-inch cubes 1 cup bbq sauce 1 teaspoon salt 1 teaspoon pepper 4-5 bacon strips 4-5 bamboo skewers, soaked in water for 20 minutes INSTRUCTIONS 1. Preheat grill to medium heat. 2. Combine the chicken, bbq sauce, salt, and pepper, stirring until evenly mixed. 3. Threading one end of the bacon onto the end of a skewer. Add a piece of chicken, and weave the bacon around the chicken and back through the skewer, creating a wave pattern between the chicken. Move the bacon and the chicken down the skewer, repeating until the other edge of the bacon is threaded through. 4. Repeat with the remaining chicken, bacon, and skewers. 5. Grease the surface of the grill by rubbing the grates with a tongs and an oiled paper towel. 6. Grill the skewers for about 12-18 minutes with the lid closed, flipping them halfway. 7. Serve! Soy Glaze Servings: 1 cup INGREDIENTS 1 cup soy sauce ¼ cup rice vinegar ¼ cup sake ¼ cup sugar PREPARATION In a medium pot, combine all ingredients and bring to a boil until the bubbles start to become sticky and glossy. Remove and set aside. Glazed Chicken Skewers Servings: 6-8 INGREDIENTS 1 pound boneless, skinless, chicken thighs, cut into 1-inch chunks 1 cup green onions, sliced into 1-inch long pieces ½ cup soy glaze, see recipe above 3 tablespoons canola oil 6-inch bamboo skewers Thinly sliced green onions to garnish PREPARATION Skewer 3-4 pieces of chicken and green onions in an alternating pattern on a bamboo skewer. Repeat with remaining chicken & onions. Heat oil in a pan over medium-high heat. Sear 3-4 skewers at a time and flip when the undersides are golden brown. Brush the glaze on the skewers evenly and cook for about 4 more minutes, flipping every minute and glazing occasionally. Cool, then serve with additional green onions on top! Bacon Mushroom Skewers Servings: 8 INGREDIENTS 8 slices bacon 2 cups mushrooms, halved Salt Pepper 3 tablespoons canola oil 6-inch bamboo skewers PREPARATION Thread one end of the bacon onto the end of a skewer. Add a mushroom half, and weave the bacon around the mushroom and back through the skewer, creating a wave pattern between the mushrooms. Move the bacon and the mushrooms down the skewer, repeating until the other edge of the bacon is threaded through. Repeat with remaining bacon and mushrooms. Heat oil in a pan over medium-high heat. Sear 3-4 skewers at a time, seasoning with salt and pepper, and flip when the undersides are golden brown. Season the other side with salt and pepper and cook until bacon is as crispy as you’d like. Cool, then serve! Chicken Meatball Skewers Servings: 6-8 INGREDIENTS 1 pound ground chicken ¼ green onions, thinly sliced 1 tablespoon ginger, minced 1 teaspoon sesame oil 1 cup soy glaze 3 tablespoons canola oil 6-inch bamboo skewers Sesame seeds, to garnish PREPARATION Combine the ground chicken, green onions, ginger, sesame oil, and ¼ cup of the soy glaze in a bowl until evenly mixed. If the mixture does not hold its shape when rolled into a ball, add ¼ cup of panko bread crumbs, mix evenly, and re-roll the meatballs to test their structural integrity. Roll about 1-inch meatballs, then skewer 3-4 meatballs on a skewer. Repeat with remaining mixture. Heat oil in a pan over medium-high heat. Sear 3-4 skewers at a time and flip when the undersides are golden brown. Brush the glaze on the skewers evenly and cook for about 5 more minutes, flipping every minute and brushing additional glaze as necessary. Cool, then serve! Steak & Asparagus Skewers Servings: 6-8 INGREDIENTS 1 pound sirloin steak, cut into 1-inch chunks 2 cups asparagus, cut into 1-inch pieces Salt Pepper 3 tablespoons canola oil 6-inch bamboo skewers PREPARATION Skewer 3-4 pieces of steak and asparagus in an alternating pattern on a bamboo skewer. Repeat with remaining steak & asparagus Heat oil in a pan over medium-high heat. Sear 3-4 skewers at a time, seasoning with salt and pepper, and flip when the undersides are a dark brown. Garlic and Chili Chicken Skewers, BBQ Thai Style


These Garlic and Chili Chicken Skewers, BBQ Thai Style are an adaptation from Southern Thai street food. You can make them at home by using your oven broiler or outside on your BBQ. First you make a spicy garlic marinade, divide it in two and let your chicken marinate overnight in one part, or at least two hours. The chicken needs to be sliced very finely; this allows more surface caramelization. You then add a little corn starch or corn flour to the other half of the marinade and use it for your coating mix. By grilling your chicken under your oven broiler or grill, you get that nice BBQ flavour we all love. Of course, a wood char BBQ is even better if you have that option. The chicken is grilled then coated in the coating mix and grilled again. This step is repeated three times allowing a thick caramelized coating for an intense flavour. If using chicken thighs, the chicken remains nice moist. The best grilled salmon skewers you will ever taste. If you think dill and salmon is odd just try it and come back to me. Dill and salmon go hand in hand and it is probably one of the most underrated herbs to cook with and one of my favourite herbs to use. We are huge lovers of dill in Bulgaria and use it in many of our dishes. It is such a beautiful and refreshing herb and it goes perfectly with a salmon and lemon marinade like mine. You will absolutely love it. Feel free to use rainbow trout or any fish you like for this recipe. Everything is to “taste” I never have exact measurements for seasonings as it’s really a personal preference and how much you like. You will need: ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 pieces of salmon (take the skin off or ask your grocery store to do that for you) 2 teaspoons olive oil — or avocado oil salt , pepper , garlic powder to taste 1-2 tablespoons freshly and finely chopped dill juice of 1/2-1 lemon — up to you ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Please note: Feel free to use any oil you love. If you use wooden skewers you can wet them under some water before you skewer on the salmon so that they don’t burn. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cut the salmon into equal size pieces. I take the skin off my salmon by cutting it with my knife gently but if you cannot do this please ask your fishmonger or grocery store to cut off the skin for you. Add your equal size pieces to a bowl and season with salt, pepper, lemon juice, olive oil, finely chopped dill, and garlic powder. Massage gently with clean hands and add each piece onto your wet skewer (if using a wooden one). Add a touch of avocado oil spray or any oil to your grill pan and let it heat up. Place your skewers onto the hot pan and make sure they sizzle. Turn it over when you see them golden and grill marks on each side. Grilled Chicken Skewers with a Brown Sugar Bourbon Marinade cooked on Weber Kettle Grill #brownsugarbourbonchicken #chickenskewers #howtobbqright Brown Sugar Bourbon Chicken Skewers WHAT MALCOM USED IN THIS RECIPE: - Red Handle 6" Knife 🤍 - Black Nitrile Gloves 🤍 - White Insulated "Hand Saver" Gloves 🤍 - McCormick Grill Mates Brown Sugar Bourbon 🤍 - Clear Plastic Rub Shaker 🤍 - Captain Rodney's Boucan Pepper Glaze 🤍 - Killer Hogs The BBQ Sauce 🤍 Brown Sugar Bourbon Chicken Skewers This recipe is great for your summertime get togethers. You can do all the prep ahead of time so when you’re ready to fire up the grill, the cooking will be fast. I use boneless skinless thighs for this cook. Trim any excess fat and slice the thighs into 2” strips. Place a couple strips on each skewer and get them in some marinade. I used a McCormick Grilling marinade for this recipe but you could use any marinade even Zesty Italian dressing out of the bottle is great. Cover the skewers in the marinade and let them hang out in the refrigerator for a couple hours before grilling. When you’re ready to fire up the grill, create a two zone fire by placing all of the hot coals to one side leaving a cool zone on the opposite side. Take the skewers out of the marinade and season the outside with a mixture of 1/4 cup brown sugar, 1/4 cup turbinado raw sugar, and 1 teaspoon ground cayenne. I place it all in a dredge shaker and give it a good mix. Place each skewer over the hot side of the grill fist to sear the outside. It’ll take about 3-4 minutes; just keep an eye on them and turn often. When you get the a good sear move everything to the cool side to slow it down. Keep cooking until the internal temperature reaches 165-170 in the thickest part. Brush the outside of each skewer with my favorite Captain Rodney’s glaze - Boucan. This will make them sticky and sweet with just a touch of heat. Move each skewer back over the hot coals just for a minute or two to caramelize the glaze and char the outside just a little more. The whole cook only takes about 10-12 minutes. I like to serve them with my BBQ sauce for dipping; just make sure you make plenty because folks will love them! Ingredients: - 2lbs boneless skinless Chicken thighs - 1 package McCormick Brown Sugar Bourbon grilling marinade - 10-12 wooden skewers - 1/4 cup brown sugar - 1/4 cup turbinado sugar in the raw - 1 teaspoon ground cayenne pepper - 1/2 cup Captain Rodney’s Boucan glaze Directions: 1. Trim excess fat from chicken thighs and cut each thigh into 2” strips 2. Place two strips of thigh meat on each skewer and arrange on a platter or shallow baking dish. 3. Pour marinade over the top and rotate each skewer so all of the chicken is covered in the marinade. 4. Refrigerate for 1-2 hours. 5. Prepare charcoal grill for 2 zone cooking (hot side and cool side). 6. Combine the brown sugar, turbinado, and cayenne is dredge shaker and sprinkle over the top of the skewers. 7. Place the skewers on the hot side of the grill to sear. Cook for 3 minutes each side or until the outside starts to char. 8. Move the skewers to the cool side and continue to cook until the internal temperature reaches 165-170°F. 9. Brush each skewer with Captain Rodney’s Boucan glaze and move them over to the hot side of the grill for a final sear to caramelize the glaze. 10. Serve with your favorite BBQ sauce for dipping. Print the Recipe here: 🤍 Ingredients wooden skewers, soaked in water 1 pound (455g) boneless skinless chicken thigh meat 2 bell peppers 2 zucchini 1 red onion The Marinade: 1/3 cup olive oil 1/2 cup fresh lemon juice or vinegar 4 garlic cloves, grated 1-2 teaspoons dried oregano or thyme 1 teaspoon salt 1/2 teaspoon freshly cracked black pepper 2 tablespoons finely chopped fresh parsley 1 teaspoon dried coriander powder Instructions Soak the wooden skewers in water for at least an hour. Cut the chicken thigh meat into about 1 and 1/2 inch (4cm) pieces. Cut the vegetables into 1 and 1/2 inch pieces. The zucchini can be sliced about 1/2 inch (1.25cm) thick. Make the marinade: combine all of the marinade ingredients together in a large bowl. whisk together and then add the chicken pieces to the bowl. Toss to coat and set aside for an hour at room temperature or refrigerate overnight. Bring the meat to room temperature before grilling. Add the veggies to a large bowl. Drizzle with 2-3 tablespoons of olive oil and season with salt and pepper, to taste. Add a teaspoon of oregano and toss together. Thread the chicken and veggies onto the skewers. About 4-5 pieces of chicken per skwer and the rest veggies. Preheat a grill, grill pan, or electric griddle to high heat. Grill the skewers about 4-5 minutes per side. When the internal temperature of the chicken reaches 165 °F (74 °C) it is ready. Serve with tzatziki, whipped feta, salad, and rice pilaf. Roasted green beans pair well with this recipe. For the Roasted Green Beans: Place the washed, dried, and trimmed green beans onto a baking tray in an even layer. Drizzle with 3-4 tablespoons of olive oil and season with salt and pepper to taste.
