Separate the egg yolk form the white. 3. Add bell pepper, chives, and a little salt to the egg whites and mix well. 4. Add a little salt and 1.5 tbsp of refined rice wine in the yolk and beat it well. 5. Put some cooking oil in a pan over low heat and roll the whites first. 6. When all the whites are used, pour the yolk and continue to roll. 7. 🔪 BROWSE MY KITCHENWARE - 🤍 ❤️ SUPPORT THE CHANNEL - 🤍 Today, we are making a recipe from my childhood memory, 猪肉蛋卷. Zhurou means pork, and Danjuan means eggroll. Unlike the deep-fried egg, the wrapper is not made with flour, it is made with egg. I think it is more like rolled omelette. This is one of those Chinese recipes that you can’t find that much information about on the internet in English, but it is so delicious and easy to make that it deserves to be shared. So, let’s get started. 🥢PRINTABLE RECIPE - 🤍 INGREDIENTS FOR THE MEAT FILLING 450grams of ground pork 30 grams of tapioca starch (Amazon Link - 🤍 1.5 tsp of finely diced ginger 2 tbsp of finely diced garlic 2 tbsp of Chinese cooking wine (Amazon Link - 🤍 1.5 tbsp of soy sauce (Amazon link: 🤍 1 tbsp of oyster sauce (Amazon Link - 🤍 1 tbsp of sesame oil (Amazon Link - 🤍 3/4 tsp of salt 1 tsp of sugar 1/2 cup of diced scallion 2 eggs INGREDIENTS FOR THE EGG WRAPPER 4 eggs 2 tbsp of tapioca starch (Amazon Link - 🤍 1.5 tbsp of water DIPPING SAUCE 3 tbsp of soy sauce [Amazon link: 🤍 1 tbsp of diced scallion 1/2 tbsp of diced garlic 1 tsp of diced hot chili INSTRUCTIONS You will need 450 grams (1 lb) of ground pork. Season it with 1.5 tbsp of soy sauce, 1 tbsp of oyster sauce, 2 tbsp of Chinese cooking wine, 3/4 tsp of salt, 1 tsp of sugar, 1.5 tsp of diced ginger, 2 tbsp of diced garlic, 1 tbsp of sesame oil, and 30 g of tapioca starch. Starch is optional, but I like to add it is because it gives the filling a slight gooey and tender texture. If you are on a keto diet, you can leave it out. Add 1/2 cup of diced scallion and 2 eggs. Mix and stir the filling within 1 direction for 5-6 minutes, Set it aside. Beat 4 eggs. Mix 2 tbsp of tapioca starch with 1.5 tbsp of water and add it to the egg. Take out 2 tbsp of the egg mixture and reserve it on the side. That will be the glue to seal the egg wrapper later. Now, let’s pan fry the egg wrapper. Normally, it is done by a Teflon coated frying pan because it is non-stick and easy to handle. Today, I want to take the chance and show you how to do it with a carbon steel wok because I hear too many people complaining that their food always sticks to their wok. Turn the heat to high and heat the carbon steel wok until you can see some smoke coming out. Drizzle in some cooking oil along the side of the wok. Toss the oil around so it covers the whole bottom. Continue to heat the wok until the oil is smoking, then turn off the heat. Pour out any excess oil. Tilt the wok. Pour in half of the egg mixture. Slowly turn the wok to let the egg run and cover the bottom. Once the whole bottom is covered by the egg, turn the heat back on low and cook it a little more or until the top part of the egg is set. Turn off the heat. Get a dining knife to loosen up the edge. Carefully flip it. Turn the heat back on to cook the other side of the egg for just 5-8 seconds. Take it out. Now we have 1 egg wrapper made. Put it aside. Do the same thing and make the second egg wrapper. My egg wrappers are 11 inches in diameter. I made 2 of them, which are just enough to use all filling. I also put some parchment paper under each wrapper. This will help you to transfer the rolls to the steamer without breaking it. Brush a little bit of the egg mixture on the egg wrapper. Add half of the filling on the top. Evenly spread it out. Then brush the remaining egg on the edges of the egg wrapper and the top of the meat. roll it into an omelet. Fill the steamer with some water then place the rack on. Transfer the rolled omelet onto the steamer rack. Poke lots of holes all over the rolls. Turn the heat to high. When the water is boiling, start counting the time. Let it steam for 20 minutes. While waiting, you can quickly make a dipping sauce. In a small sauce bowl, add 1 tbsp of diced scallion, 1/2 tbsp of diced garlic, 1 tsp of diced hot chili, and 3 tbsp of soy sauce. Now the rolled omelet should be done. Tamagotaki. It takes practice😌 To be honest I’m not the best at it😝. They say once a sushi chef masters the art of making a tamagoyaki they are finally considered a true chef and is allowed to move onto preparing fish. I know right? If you have a chance to dine at a sushi bar, ask for tamagoyaki as your first dish. You’ll be considered a “tsu” or a seasoned sushi connoisseur😉 Moving on. Tamagoyaki is also a traditional side dish in Japanese obento boxes. Every household has their very own version depending on how their mom prepares it:) It can be sweet, savory, with vegetables, cheese, seaweed, soft, hard, fluffy, thick, thin, there’s really no right or wrong! And Kids love it❤️Just create your own! Tamagoyaki is traditionally made with a tamagoyaki-ki. A pan made specifically for tamagoyaki. The best ones are made with copper but can be a little pricey and difficult to use when you’re just starting out. The pan I used is a teflon pan which makes it easier to flip and slide:) You can find one at any japanese market. Recipe(serves 2) 3 eggs 1/8 teaspoon or pinch of salt 1 teaspoon sugar (coconut sugar used here) 2 tablespoons water oil for cooking 1. Crack all eggs in a bowl. 2. Stir gently “breaking” or separating the egg whites as much as possible. 3. Add salt, sugar, water and mix. 4. Strain (optional step). I find by straining it smooths out the mixture. 5. Heat pan to med-hight. Add oil and apply to the entire pan using a folded paper towel. You can also use a cooking spray. 6. Add a drop of egg mixture to the pan. Once you hear a sizzle the pan is ready! 7. Pour about a quarter of the egg mixture into the pan making sure it covers the entire pan. 8. If there are any bubbles, poke and release the air. 9. Once the mixture has set and the top is somewhat cooked through, start from the top and fold into thirds (see video). Then move the egg to the top. Make sure to apply oil every time. 10. Pour the same amount of egg mixture into the pan and again cover the entire pan. 11. Make sure to lift the rolled portion of the egg to let some of new mixture in underneath so that it blends together. 12. Repeat until you’re done. 13. Shape into a nice rectangle and turn off the heat. 14. Remove and place on a bamboo mat(sushi roll mat). Wrap to cool and shape. I used a chopstick to create a small opening at the bottom to prevent the egg from becoming too soft. 15. Cut into bite size pieces and enjoy! CONGRATULATIONS!! These usually are prepared in a rectangular omelette pan called a makiyakinabe. There are several types of tamagoyaki. It is made by combining eggs, and sometimes sugar or soy sauce. Additionally, sake and mirin are used in some recipes. Tamagoyaki is served around the world in the form of nigiri, and also appears in many types of sushi rolls. In Japan, it is also served as a breakfast dish and in other preparations. As part of a sushi/sashimi dinner tamago is usually taken as the final course, in essence a dessert bite. In Japanese, it's 卵焼き or 玉子焼き, literally "grilled egg", also called tamago or dashimaki (Dashimaki Tamago ダシ巻き玉子焼).

Datemaki is a sweet egg omelette that's usually eaten in Osechi during the Japanese New Year. Subscribe for more videos! 🤍 PURCHASE ONLINE mirin 🤍 sake 🤍 bamboo mat 🤍 square pan 🤍 INGREDIENTS: 110g hanpen 4 eggs 2 tbsp mirin 1 tbsp sake 1 tbsp sugar 1/2 tbsp soy sauce 1 tsp honey DIRECTIONS: First cut a sheet of parchment paper to fit a square pan. Place into the pan and set aside. Next, chop the hanpen into small pieces. If you can't find hanpen, you can use white fish or shrimp instead. Put cut up hanpen into a food processor with mirin, sake, soy sauce, honey and sugar. Beat eggs in a small bowl and pour into hanpen mixture. Process until smooth. Strain mixture through a fine sieve and pour into lined pan. Bake for 20 minutes at 390 degrees F. You want the top to be lightly brown in color, but not burnt. Once it's done, take the omelette by grabbing a hold of the parchment paper. Do this while it's still hot. Carefully peel off the sides. Now place a bamboo mat on top with the smooth side facing up. Flip it over and carefully remove the parchment paper. With a sharp knife, make shallow cuts 1/2 inch apart to help it roll easier. Roll tightly with the bamboo mat and shape into a nice cylinder. Secure with rubber bands and cover with plastic wrap. Stand it up vertically so it holds its shape for 2-3 hours. When ready, unmold and cut into slices. Enjoy!
