It looked beautiful, but it was too much work. So the second time I made it, I turned it into a simple two-layer carrot cake with icing just on the top. This recipe utilizes a natural sweetness of carrots and dates, a flour-like texture of ground coconut, and cream-like consistency of blended cashews. You'll need just a small slice to feel full for quite some time. You can freeze this crust-free-filling for tons of different raw vegan desserts. Once you taste it, you'll be hooked. I have warned you. I don't know if you can recreate any dessert using raw ingredients only, but cheesecake definitely does have a healthy raw version. I use cashews for the majority of my raw vegan cheesecake recipes because they have a rather neutral flavor and have a wonderfully smooth texture. If you never have Raw Chocolate Cake you know this is the sign and the time for you not to only eat it yourself but make it too! This is very easy and a no bake recipe. I promise you will LOVE this very simple but indulging recipe. Enough the talk, lets dive in. Crust 1/2 cup of mixed pecans and almonds 1/4 cup of combined cocoa and carob powder (you can use either one only) 3 tbsp syrup sweetener pulse the nuts fee times until forms rough crumbs (don’t get too fine) add in cocoa powder, mix. Pour in your choice of syrup sweetener, mix. Pack into 8 muffins tin evenly then freeze. Cream 1 cup soaked cashew (at least an hour with hot water) 1/4 cup of coconut oil 1/4 cup syrup sweetener 1/4 cup water 1/4 cup + 1 tbsp cocoa mixed with carob powder (or choose either one) blend all ingredients in food processor or high speed blender until all smooth. Pour into each muffin tins with the freeze base in it. freeze for at least 8 hours or until firm before serving. I topped mine with melted chocolate and pecan on each cake. Note you may substitute the syrup sweetener for crust into 2-3 pieces of pitted dates. my cake looks soft because I don’t freeze them enough, I was trying to film the result. This “cheesecake” is not only vegan but also raw, dairy-free, gluten-free, and free of sugar. This no-bake Vegan Blueberry Cheesecake only requires 7 ingredients: dates, cashews, almonds, coconut milk, lemon, maple syrup, and blueberries. The taste is light and fresh. This no-bake vegan blueberry cheesecake will not only satisfy your sweet tooth but give you nutrients. You can also make this recipe in individual ramekins. If you enjoyed this video, then make sure you subscribe for more videos :) 🤍 Ingredients (8-inch) CRUST • 1 ½ cups pitted dates • 3/4 cup raw almonds • A pinch of sea salt (optional) FILLING • 3 cups raw cashews soaked overnight • 1.5 Tbsp lemon juice • 3/4 cup full-fat coconut milk • 3 Tbsp maple syrup TOP • 1 1/2 cups blueberries (fresh or frozen) Instructions 1. Add cashews to a bowl, cover with cool water and let soak for 6-8 hours or overnight. Drain well and set aside. 2. Make the crust first - add all crust ingredients to a food processor and blend until a dough forms. 3. Add the crust mixture and carefully press with fingers to distribute. 4. Using a flat-edged drinking glass lined with parchment paper will help to pack it down. Place in the freezer to firm up. 5. Add all filling ingredients to a blender and blend until creamy and smooth. 6. Pour filling into the crust. 7. Add blueberries to a blender and pulse to make a puree. 8. Pour the puree on the cheesecake, cover, and freeze for 5-6 hours (or overnight). 9. To serve, set out of the freezer until slightly soft to the touch - about 15-20 minutes. Like my other raw cheesecakes, this one is made with CASHEWS as the base! If you’re skeptical about cashews’ ability to replace luxuriously creamy cream cheese, you wouldn’t be the first. I was skeptical for a while…until I tried it. ​​ Paired with coconut milk, a bit of coconut oil, maple syrup, lemon juice, and vanilla, it makes a pretty damn close replica to the cheesecake you know and love. This cheesecake will not only satisfy your sweet tooth, but give you nutrients. You can make this recipe in individual ramekins or as a whole cake! Ingredients For the base 1 cup OR 125 gr of walnuts 1/2 cup OR 50 gr of coconut shreds 1 cup OR 175 gr pitted dates 1 teaspoon of vanilla extract or vanilla powder Pinch of salt ‍For the blueberry layer 2 cups OR 300 gr of cashews, soaked for 8 hours 1 tbsp of vanilla extract or 1 tsp of vanilla powder 1/4 cup OR 52 gr of coconut oil, melted 1 lemon juiced 1/3 cup OR 113 ml of maple syrup 1 can of coconut milk (the creamy stuff at the top of a can) 1 cup blueberries ( reserve some for inside) Blueberry jam on top 1 cup blueberries 1/2 cup sugar Directions Step 1: In a high-speed food processor or blender, blend the mixed nuts, dates, coconut, vanilla, and salt (it should form a sticky dough). Press the dough into the base of the cake pan and smooth it out with your fingers or with the back of a spoon. Place in the freezer while you prepare the “cheesecake” layer. Step 2: Drain and rinse the cashews and place them in the blender. Add vanilla, melted coconut oil, lemon juice, and coconut milk, blueberries, maple syrup and blend on high until you’ve got a smooth consistency. Step 3: Pour over the first layer of your cake and add few blueberries into the cheesecake. Then pop it back in the freezer for 1-2 hours to set. Take the cake out to defrost slightly about 20-30 minutes before you’re going to serve it. Step 4: Make blueberry jam, in a pot add blueberries and sugar and cook for 15-20 min on low heat until jammy consistency. Decorate the finished cake with blueberry jam and berries. This Raw Vegan Neapolitan Cake is really great. A perfect chocolaty crust, chocolaty smooth layer, strawberry and vanilla layers follow after.. and topped with some cocoa nibs which bring a nice texture and taste to the final cake. You don't have to follow a raw or vegan diet, paleo or gluten free to enjoy this cake, this Neapolitan cake is simply a decadent, delightful dessert that everybody is going to love. Ingredients: Makes one 6 inch round cake, about 8-10 servings Crust 1 cup ground almonds 1/2 cup dates, pitted 1/4 cup cocoa powder 1 tbsp coconut oil Filling - Vanilla base 1 1/2 cups (240g) raw cashews, soaked in water 4-6 hours then drained 1/2 cup liquid sweetener of your choice (maple syrup, agave nectar, raw honey if not vegan) 5 tbsp lemon juice (juice of 1 large lemon) 1/2 cup coconut oil, melted 1 tbsp pure vanilla extract pinch of salt Additional Ingredients for Chocolate Layer 1/4 cup cocoa powder 1 tbsp liquid sweetener of your choice 1 tbsp coconut oil, melted Additional Ingredients for Strawberry Layer 1 cup frozen strawberries Directions 1. Prepare the crust: Place dates, ground almonds, cocoa powder in the bowl of a food processor and blend until crumbs form. Add coconut oil and process some more until the mixture is well combined and stick together when squeezed between your fingers. 2. Press well the crust mixture into the bottom of a 6 inch springform pan using your fingers or the back of a tablespoon or even the bottom of a glass. Set aside while you prepare the filling. 3. Prepare the vanilla base: Add all ingredients for vanilla base, presoaked cashews, lemon juice, liquid sweetener, melted coconut oil, vanilla extract and salt into the bowl of a blender and process until creamy and smooth. 4. Remove one third of the mixture into a bowl for the vanilla layer, and another third of the mixture for the strawberry layer, in another bowl. 5. Add the additional ingredients for the chocolate layer over the remained cashew mixture into the blender and process until smooth and creamy. Pour the chocolate mixture evenly over the crust using a rubber spatula to spread it out. Place in the freezer for 15 minutes to set before adding the next layer. 6. Meanwhile rinse the blender and prepare the strawberry layer. Add the vanilla base mixture from one of the bowls that were set aside into the blender, add frozen strawberries and blend until smooth and creamy. Remove the pan from the freezer and gently pour the strawberry layer evenly over the chocolate layer. Freeze for another 15 minutes or until set before adding the next layer. 7. Remove the pan from the freezer and gently pour the remaining third of vanilla base from the bowl that was set aside over the strawberry layer. Smooth out evenly again using a rubber spatula.layer. Place in the freezer to firm up for 15 minutes while you prepare the chocolate glaze if desired. If not just let it freeze for at least 2 or 3 hours. I let it overnight. 8. If you want to decorate the cake with some chocolate start preparing the chocolate topping by combining the ingredients into a bowl. Cut the corner of a small plastic bag making a 1/8 inch or even smaller hole, and place the mixture into the bag. Remove the pan from the freezer and create a chocolate spiral or drizzle it anyway you desire over the cake. Place in the freezer until ready to serve. 9. Store the cake in the freezer, but leave it out for 15 minutes to thaw out before serving. Decorate the cake edges with cocoa nibs for a wonderful look and texture. Heavenly Blueberry Cheesecake on Hazelnut Crust with Chocolate Icing There is nothing better than a dessert full of good fats and protein and on top of it loaded with antioxidants! Enjoy this elegant little tart with its happy purple colour and delightful flavour combinations. You can use strawberries instead of blueberries, which makes it pink and ever so lovely too. Enjoy the abundant summer berries, but do note that this recipe makes a small cake tin, so if you want a regular size just double the ingredients. Too easy. For a small round cake tin 17cm Serves 8 Crust ingredients 1/2 cup hazelnuts, roughly chopped and roasted 1/4 cup desiccated coconut 6-8 Medjool dates 1 pinch salt 1 tbsp coconut oil Filling ingredients 1 cup raw organic cashews soaked overnight in water, or 4 hours, strained 1/4 cup cacao butter 1/4 cup coconut oil 1/4 cup lemon juice 1/4 cup maple syrup, depends on your desired sweetness 1 pinch salt 1 punnet/120-150g fresh blueberries, if using frozen they must be defrosted Chocolate layer ingredients 1/4 cup coconut oil 1 tbsp cacao powder 2 tbsp maple syrup Vanilla Pinch salt Garnish Cacao powder, nibs, or nothing ACTION! Take a little coconut oil in your hands and oil a small round cake tin with your fingers. Blend the crust ingredients and press them into the cake tin. Melt the butter and oil in a double-boiler (a bowl that’s sitting on top of a pot of hot water—make sure it's not boiling, and the bowl isn't touching the water). Blend the filling ingredients for about 2 minutes until really creamy. Pour onto the crust and refrigerate until nearly firm. To make the chocolate icing melt all the ingredients in a double-boiler, gently, and pour over the cake. Sprinkle with cacao nibs or cacao powder and chill until the icing goes hard, which may take around 1 hour. Even better make this a day ahead and chill the whole cake overnight to guarantee all the layers are firm. Cut with a knife dipped in hot water, so it's nice and hot and cuts neatly. You can, of course, decorate your raw cake creation with edible flowers for an extra enticing and heavenly touch, making it immediately fit for a fine dinner party, celebration or purely to show off. Tip When you exchange the blueberries for strawberries or raspberries, add 250g and also try exchanging the hazelnuts for almonds—delish!

This Raw Vegan Zebra cake is a delightful dessert not only for the ones who follow a raw vegan diet but even for those who doesn’t. The cake is made with a chocolaty nutty crust and a smooth creamy filling, alternating vanilla with blueberry and blackberry filling. To print the recipe check the full recipe on my blog: 🤍 Ingredients Makes 8-10 servings Crust 1 cup (100g) pecans (or walnuts, almonds, hazelnuts) 1/2 cup (60g) dates, pitted (about 8-10 dates) 2 tbsp (16g) unsweetened cocoa powder 2 tbsp (10g) unsweetened shredded coconut 1 tsp (5ml) water 1/4 tsp (1g) salt Filling Vanilla Filling 2 cups (280g) raw cashews (soaked for 4-6 hrs or overnight) 1/3 cup (120g) liquid sweetener, (pure maple syrup, agave syrup or honey ) 1/2 cup (100g) coconut oil, melted 1 tbsp (10g) vanilla extract 4 tbsp (60ml) lemon juice, from about one large lemon For Berry Filling 1/2 cup (75g) frozen blackberries 1/2 cup (75g) frozen blueberries 1. Prepare the crust: Place nuts (I've used pecans), dates, shredded coconut, cocoa powder in the bowl of a food processor and process until crumbs form. Add water and process some more until the mixture is well combined and stick together when squeezed between your fingers. 2. Press the crust mixture into the bottom of a 7 inch (18cm) springform pan using your fingers or the back of a tablespoon or even the bottom of a glass. Set aside while you prepare the filling. 3. Prepare the filling. Add all ingredients for vanilla base, pre-soaked cashews, lemon juice, liquid sweetener, melted coconut oil and vanilla extract into the bowl of a blender and process until creamy and smooth. 4. Transfer in a bowl a bit more than half of vanilla mixture. 5. Add frozen blackberries and blueberries over the remaining vanilla mixture into the blender and process until well combined and smooth. Transfer the mixture into a bowl. 6. Assembly. Use a tablespoon for each mixture to create the zebra effect. Begin from the middle of the pan, take one spoon of vanilla mixture and add it over the crust then over it add a spoon of berry mixture and repeat this steps until all batter has been used. 7. Rap the pan for few times, cover and freeze for at least 2 hours. 8. Store the cake in the freezer, but leave it out for 15 minutes to thaw out before serving. Are you after Gluten Free Vegan Desserts? :) This No-Bake Blueberry Chocolate Cheesecake is vegan, plant-based, gluten-free, and healthy as all the layers are full of “antioxidants”! Raw cacao powder is one of the highest sources of magnesium in nature, full of antioxidants, calcium, zinc, copper, and selenium. Blue Spirulina is a blue-green algae that grows in ponds, lakes, and alkaline waterways. Phycocyanin is a blue pigment derived from spirulina which gives the algae its dark blue pigment when extracted. The great news about Blue Spirulina is that it does not have a fishy taste, unlike green spirulina. It is rich in protein, vitamins, minerals, carotenoids, and antioxidants. Blueberries pack a powerful antioxidant punch, whether eaten fresh or from the freezer. 'Anthocyanins', a group of antioxidant compounds, are responsible for the colour of blueberries, and since most of the colour is in the skin, freezing the blueberries actually improves the availability of the antioxidants. Make the crust - add all ingredients to a food processor, blend until it becomes like wet sand. 2. Press the crust into the bottom of a cake tin, and set aside. 3. Make the chocolate layer. Drain cashews and rinse, then place in a blender with remaining ingredients and blend until very smooth. Pour over the crust and set in the freezer to firm up. 4. Make the blue chocolate layer. This Raw Chocolate Orange Vegan Cake is a tender, naturally sweetened, and topped with an orange cashew frosting. Free from gluten, eggs, dairy. INGREDIENTS For the Crust: ¾ cup dried prunes, soaked in water for 20 minutes 1 cup walnuts soaked overnight 3 large medjool dates, pitted and soaked in water for 20 minutes ½ cup unsweetened shredded coconut 3 tablespoons raw cacao powder For the Filling: 2 cups raw cashews soaked overnight Grated orange zest from one orange 1 cup freshly squeezed orange juice 1/4 cup maple syrup or agave 1 tsp pure vanilla extract ½ cup cacao butter, melted ¼ tsp pink salt 1 teaspoon turmeric (for color) PREPARATION 1. Prepare 7-inch round cake springform and line it with baking paper or transparent kitchen foil. 2. To make the crust, first put the walnuts in your food processor and process until you get finely ground walnuts. Add shredded coconut, dates, dried prunes, cacao powder, and continue mixing until you get the compact mixture. 3. Transfer the mixture into prepared cake pan and use your fingers to press it into the bottom of the pan. Set aside until you prepare the filling. 4. To make the filling, put all the filling ingredients into your blender and blend for about 2 minutes until it's smooth and creamy. 5. Pour the filling over the crust and let set in the freezer for 30 minutes or until the filling sets and than transfer to the refrigerator. 6. Decorate the cake to your liking.
