The Perfect Prime Rib: full recipe below, with two updates since last year! Change # 1: Remove bones and cook separately -The bones act as a heat barrier. Removing them allows the top and bottom to cook evenly at the same rate. -Without the bones we develop flavorful bark across the entire prime rib. -The bones will be more flavorful with better bark and rendering since they are exposed to seasoning and heat on all sides. Change # 2: Apply paste earlier -Last year I recommended adding the paste right before the searing step. After testing, adding the paste before going into the oven the first time, led to better caramelization. Recipe: 1.Remove silverskin and trim rib roast 2.Remove bones by following the curve with your knife 3.Tie up roast with butchers twine. Don’t go too tight, roast will slightly expand while cooking 4.Season prime rib and rack of ribs with a coarse rub like montreal steak seasoning 5.Leave in fridge uncovered overnight to dry brine (or at least 1 hour) 6.Remove from fridge and apply paste (recipe below) over all sides of prime rib 7.Place roast and ribs into a 250F oven (try to have the prime rib in the middle of the oven) 8.Remove once prime rib hits 123F internal for rare/medium rare and 133F for closer to medium 9.At this point the ribs should be fully cooked, but leave in oven during the rest if they aren’t quite tender 10.Rest prime rib for 30 min (hour tops) then place back into oven at the highest temp, searing for 5-10 min. Remove as soon as color looks good 11.Immediately slice, serve with horseradish sauce (recipe below) Notes: -this was a 10lb bone in prime rib. Not to be confused with the grade of the beef, prime rib is named for its origin in the primal rib section. It can be cut a number of different ways, but comes from between the 5th and 6th rib on the chuck and the 12th and 13th rib on the hindquarter. A whole prime rib (bone in) will usually be 7 bones. If you make this boneless, it becomes a beef ribeye roast. Seth trims down to a 4 bone prime rib roast that should weigh 5-6 pounds. Here's a neat trick, Seth cuts the bones off but ties them back on for presentation. Season heavily with good quality salt. Allow butter to soften on the counter for a while before making your compound butter. Mix 1 tbsp diced rosemary and thyme with 1 stick of soft butter, garlic paste, herbs de provence, and seasoning. Once roast is close to room temp, finish seasoning with onion powder, garlic, black pepper, and optionally some BBQ rub. Next, rub the compound butter over the roast. Preheat oven to 500 degrees. Place roast in roasting rack after adding stock/wine/veggies/ and herbs to the bottom. Place in the oven for 5 minutes per pound and then turn the oven off and set the timer for 2 hours. Allow the roast to rest for 30-45 minutes before slicing and serving. Strain the pan drippings into a saucepan and use for gravy. Use slurry to thicken the gravy if needed as seen in the video.
Holiday Prime Rib (Thicc crust) Prime rib can go two ways. The first is a pale, overcooked and bland slice of roast beef. The second is a rosy pink and juicy slice of perfection. Our goal is the latter and here are a few points to keep in mind: Choose the right roast: good marbling with a large cap muscle The crust: prime rib has extremely low surface area to volume, so focus on a thick & flavorful crust Dry brine: due to that low surface area, the inside can be bland/unseasoned. A visually stunning Christmas beef centrepiece with prime rib meat, French-trimmed for eye-catching presentation, and left on the bone for maximum flavour - this is a special alternative to turkey for your Christmas dinner. FULL RECIPE BELOW. Remove your joint from the packaging, pat dry and bring to room temperature. Preheat your oven to 160°C for fan assisted or 180°C for ovens without a fan (gas 5). Choose a flameproof roasting tray and set over a medium heat. Season the rib generously with good quality sea salt then sear the joint all over starting on the fat side which will render, releasing beautiful fat to sear and baste the meat. Place the beef fat side down on the tray, add some thyme and a split bulb of garlic then place in the centre of the oven and roast for 15 minutes plus 12 minutes per 500g reaching a core temperature of 52°C before resting for a medium rare joint. Remember to baste the joint a few times as it roasts. Remove from the oven, put onto a clean tray and keep warm by covering with a sheet of foil. Rest for a minimum of 30 minutes before carving. Wagyu Tallow Dry Aged Prime Rib Dry aging has many benefits, but one downside is the necessity to trim off the dry outer layer (known as the pellicle). Between moisture loss and trimming, dry aging can lead to upwards of 30% “waste”. By covering the outside in things like butter or in this case wagyu tallow, we can reduce the need for excess trimming. After 30 days the beef underneath looked perfect, and I added a wagyu tallow compound butter before smoking, which was easily the best part. A prime rib can be an intimidating recipe- but we've got a fool-proof method and easy recipe for a killer prime rib or standing rib roast that is perfect for the holidays, special occasions or just to enjoy some good beef! Prime Rib 5 - 6 lb Standing Rib Roast / Prime Rib 1 stick butter, softened 2 tbsp Coarse Ground Pepper 2 tbsp Coarse sea salt 1 tbsp Smoked Paprika 2 tsp Red River Ranch Mesquite (optional) available here: 🤍 1 tsp fresh thyme, minced 1 tsp fresh rosemary, minced 4 cloves. garlic, minced tbsp olive oil 1. Let the roast set on the counter for 3 - 4 hours or until room temperature to ensure an even cook. 2. Pre heat the oven to 500 degrees F. 3. In a mixing bowl, whisk together the butter and remaining ingredients until smooth. 4. Rub the roast with the mixture so it is evenly coated on all sides. Place the roast, rib side down, in a dish or roasting pan. Generously sprinkle the top with additional sea salt. 5. Roast for 30 minutes (5 minutes per pound). Then turn off the oven. Let the roast set in the oven for 2 hours - DO NOT open the oven door during this time. 6. Remove the roast from the oven and check the temperature - it should be in the 120 - 125 degree range. Lightly cover with tinfoil and let for 5 - 10 minutes. During this time the internal temperature will rise slightly to bring it to the medium-rare range, roughly 130 degrees F. 7. This Dry Aged Prime Rib came out absolutely delicious and was easy work for the Brisk It Origin 580 Smart Grill. This Prime rib had an incredible dry age and smoky flavor. I dry aged this ribeye roast for 40 days. I cooked this on the Brisk It Origin 580 Smart Grill at 300 degrees Fahrenheit for about 3 and a half hours. I went then raised the heat to 450 degrees Fahrenheit the last 5 minutes to get a nice sear.
