Traditional Uzbek PLOV Recipe | Pilaf Recipe


Learn how to make traditional Uzbek plov outdoors. Plov (also known as pilaf) is a traditional rice dish in Uzbekistan. Plov is usually made with lamb, beef, lots of carrots, onions and whole garlic head. After trying a lot of rice dishes around the world, I can tell that plov is my favourite rice dish. If you've never tried Plov, I highly recommend it.

Plov / ПЛОВ Kochen | Russisches Reisgericht | Olga kocht Rezept


Heute werde ich euch zeigen wie man Plow / Plov einfach und Lecker zubereiten kann. Plov / Plow - Reistopf mit Fleisch u. Möhren - altes Gericht aus Usbekistan bzw. Zentralasien. Kein anderes Gericht hat in Usbekistan einen so hohen Stellenwert wie Plov. Das Zubereiten dieses Reisgerichts gilt als besonders schwierig und viele Usbeken sind nach wie vor der Meinung, dass ein „richtiges“ Plov nur von einem usbekischen Meisterkoch gekocht werden kann. Folgende Zutaten benötigen wir: - 800g Entenbrust Filet - 300g Goldkorn Reis (alternativ andere Reis Sorte) - 2 Zwiebeln - 2 Karotten - 4 Esslöffel Sonnenblumen Öl - 1 Teelöffel Paprika (nach Geschmack) - 1 Teelöffel Pfeffer (nach Geschmack) - 1 Esslöffel Salz (nach Geschmack) - ca. 800ml Wasser (hängt von eurer Pfanne ab) - 3 Knoblauch Zehen - 1 Lorbeer Blatt - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - Plow - Reis mit Fleisch Rezept: 1. Als erstes den Reis in eine Schüssel geben und 1 EL Salz dazugeben, danach die Schüssel mit Wasser füllen und umrühren. Den Reis ziehen lassen, bis alle Vorbereitungen beendet sind. 2. Die Zwiebel in kleine Würfel, die Karotten in kleine Streifen und schließlich, dass Fleisch in grobe Stücke schneiden. 3. Etwas Öl in eine Pfanne geben, dann das Fleisch goldbraun anbraten. In der Mitte der Pfanne Platz machen und die Zwiebeln dazugeben, danach glasig anbraten, ungefähr 1-2 Minuten. 4. Die Karotten in die Pfanne geben, dann ebenfalls ungefähr 2 Minuten braten. Die Karotten geben dem Plow eine schöne Optik. 5. Die Gewürze(Salz, Pfeffer, Paprika) dazugeben, dann 200ml Wasser in die Pfanne gießen. 6. Einen Deckel auf die Pfanne legen, allerdings nicht ganz schließen, dann den Inhalt auf mittlerer Hitze 30 Minuten langsam kochen lassen. 7. Das Wasser aus der Schüssel mit Reis ausgießen, danach noch 3-4 Mal die Schüssel mit Wasser füllen und wieder ausgießen, bis das Wasser klar ist. 8. Den Reis löffelweise in die Pfanne geben, dann die Pfanne mit 600ml Wasser auffüllen. 9. Noch ein Lorbeerblatt und drei Knoblauchzehen in die Pfanne legen, danach den Plow auf niedriger Stufe noch 30 Minuten kochen lassen. 10. Nach 30 Minuten ist der Plow fertig, den Knoblauch noch rausholen und anrichten. 11. For making the authentic traditional Uzbek Plov, the ingredients you will need: 5-6 carrots 4 cups of round rice 1.5 cup of vegetable oil 1 big onion 2kg of meat (lamb/beef) 1 teaspoon of Zira (cumin), black pepper, and paprika 1.5 tablespoon of salt Clean and delicious water as needed 3 bulbs of garlic Optional: 2-3 hot peppers (put them same as garlic) Instructions for How to make Uzbek Plov: Heat the oil until its very hot (starts to smoke) Cut the meat into big pieces (about 3cm^3) Fry the meat until golden brown Chop onions and carrots as shown Once meat is ready, throw in the onions and fry until the onions are golden red Then add the carrots and fry until the carrots become loose and soft Add water until the meat is covered Place the garlic and hot peppers on top. Simmer for 10-15 minutes Wash the rice Take off the garlic and hot peppers Gently spread the rice on top of everything Add water so when you put the spatula at 30 degrees angle, the water reaches almost half of the spatula. Keep stirring the rice only Once the water has evaporated, form a dome and make a hole in the center. Place back the garlic and peppers on top of the rice. Seal tight and put fire in the slowest mode. Let stay for 40 minutes. Uncover, flip the top of the rice upside down. Cover for another 10 minutes and it will be ready! We had arrived at the airport in Tashkent at about 4 am in the morning, and at 9 am we were ready to start eating our way through the city. First we met up with Bekruz and Akbar both from the Ministry of Tourism Uzbekistan (Bekruz is the one who invited me to Uzbekistan and arranged everything for us, so thank you Bekruz!), and Ravshan (check out his channel: 🤍 a local food vlogger in Uzbekistan. Two of the most important phrases you should know in Uzbek are: Assalomu Alaykum - Hello / Greeting Rahmat - Thank you Bread Bazaar, Tashkent - We started this ultimate street food tour at the bread bazaar in Tashkent, a market dedicated fully to bread, with a little fruit and other things mixed in. We bought some break, some kaymak, and some fruit and then went to a nearby restaurant where they laid everything on the table for us, along with tea. Uzbek breakfast was a great way to get started. Chorsu Bazaar - The grandest bazaar in Tashkent is Chorus Bazaar, and it’s a perfect place to get a feel of Uzbek culture and food. We first stopped at the food court to try hanum, a type of dumpling filled with potato and somsa. Then we continued to the dome shaped iconic part of the bazaar, filled with fresh meat and spices. It’s one of the coolest market structures anywhere in the world. Plov Center - We kind of had to rush out of Chorsu Bazaar because although they prepare 1,500 Kilos, seriously, of rice plov per day, it only takes 2 - 3 hours before they run out everyday. So we got there, already one of the monster swimming pool pans was finished, but they still had a few others going and serving. Plov is the national dish of Uzbekistan, a food that’s eaten on every and all occasions. For Tashkent plov, it’s pretty heavy on the meat at oil, with rice, chickpeas, and raisins. Also it included, qazi - horsemeat sausage which is a delicacy. It was incredibly delicious, and proper meal experience. Total price - 100,000 UZS ($12.21) Plov is love, remember that when you’re in Uzbekistan. National Food Restaurant - After strolling around for a while in the afternoon, we continued to a National Food restaurant, a laid back family style restaurant that serves all things Uzbek food. Along with a number of dishes, the main dish I was most interested in was the naryn, thin slices of dough mixed with minced meat and horse. It was interesting, and quite good, as were the other dishes. Total price - 110,000 UZS ($13.43) Sultan Suleyman Restaurant - For dinner we went to a bit of a fancy trendy restaurant, and had another platter of food. This time, dough noodle like sheets topped with meat, horse sausage again, and green onions. PLOV o ARROZ CON CARNE de UZBEKISTÁN Ingredientes: carne de cordero o de vaca (500gr) arroz (350 gr) 2 cebollas grandes 2 zanahorias (400-450 gr) 200 ml de aceite de girasol sal, pimienta al gusto comino, berberis, curcuma, paprika azafrán (opcional) Preparación: Lavar el arroz como mínimo 7 veces y dejarlo remojar en el agua salada durante 1,5-2 horas. Cortar la carne en pedazos de 20-30 gramos de peso (o como vosotros deseáis) y freírla en una sartén con aceite de girasol hasta que esté bien dorada. Luego añadir la cebolla cortada en juliana y seguir friendo hasta que ésta se ablande. Añadir la zanahoria cortada en juliana, el agua (la proporción del agua y el arroz debe ser 1:1), sal, codimentos y estofarlo todo durante 25-30 minutos. Añadir el arroz, nivelar bien la superficie y dejarlo cocinar sin tapar la olla hasta que el líquido esté absorbido por el arroz completamente. Hacer una “montaña” de arroz, tapar la olla y seguir estofando todo a fuego mímino unos 35-40 minutos. Luego apagar el fuego y mezclar todo con mucho cuidado. Emplatar y, si deseáis, decorar el plato con perejil picada. ¡Buen provecho! Добавить рис, разровнять поверхность и готовить плов, не накрывая посуду крышкой, до тех пор, пока рис полностью не впитает в себя жидкость. Собрать рис горкой, накрыть крышкой и тушить всё вместе на минимальном огне 35-40 минут. Затем выключить огонь и всё аккуратно перемешать. Подавать плов, украсив его петрушкой (по желанию).
