Mix together to combine and stir constantly for 5 minutes 10- Once the oils start to seep out of the walnut, add the tomato paste and pomegranate molasses 11- Cook this for a few more minutes until the mixture appears glossy then add the salt, black pepper, cinnamon, saffron water and stock 12- Mix thoroughly with the walnut and onions, till the walnut paste has dissolved into the liquid and the bottom of the pot feels clean 13- Add your poultry back to the pot, then turn the heat up to high 14- Once it comes to a simmer, turn the heat down to a very low setting and cover with a tight fitting lid 15- Allow it to cook for 2 hours (1 hour chicken) and then check your meat for tenderness. Remove it from the pot when soft and cooked through 16- Place the pot back on the stove and allow it to continue cooking till it has simmered for a total of 3 hours 17- Add the meat back to the pot, allowing it to warm through, then serve immediately 18- Garnish with pomegranate seeds and parsley, serve with steamed basmati rice

Hi Guys! I am so excited to share this video with you all. For so long now, I have been asked to do a video on making Ghormeh Sabzi, and I finally got around to doing it! This was the first recipe my mom ever taught me so it's very near and dear to my heart! I hope you all enjoy! Please see the recipe below. :) Ghormeh Sabzi - Persian Herb Stew Ingredients: Serves 4-6 2 pounds meat (lI used beef but you can use chicken or lamb as well) washed and cubed 2 15 oz. cans of Red Kidney Beans 1 large yellow onion, finely chopped 4 bunches curly parsley 2 bunches cilantro 2 bunches of green onions (green parts only) 1 small bunch fresh fenugreek, or 2 tablespoon dried fenugreek (shanbalileh), too much fenugreek will cause ghormeh sabzi to taste bitter 4-5 dried lemons (limoo amani), or 3 tablespoons freshly squeezed lemon juice 2 tbs of turmeric Salt and pepper to taste Olive Oil Water Method: Clean and wash the herbs, dry thoroughly and chop finely in a food processor. Heat 3 tbs of olive oil in a large skillet over medium heat and saute the chopped fresh herbs for about 10 minutes, stir frequently. Set aside. In a large stew pot, saute chopped onions in 2 tablespoons of olive oil until they become golden brown. Add the meat, turmeric, salt, pepper and fry until all sides are brown. Add the fried vegetables and dried lemons. Pour in enough water to cover the mixture by about 2 inches, bring to a boil on high heat for just a couple of minutes, lower the heat, cover and cook on medium to low heat for 1 1/2 hours. Taste and adjust the seasoning as necessary and add a little more water if needed. Add the kidney beans and reduce the heat to its lowest setting and simmer for another 30 minutes. The longer ghormeh sabzi simmers the better it tastes. ( khoob ja miofteh). It would also taste better reheated the next day. Taste and adjust the seasoning before serving. NOTE: If you are vegan, replace the meat for chopped crimini or portobello mushrooms and add them in at the same time as the kidney beans. This would be such a delicious version of this recipe! By popular demand, I have finally made you guys a video on how to make Persian Rice with Tahdig. Ingredients: Serves 4-6 3 cups long grain white basmati rice Butter or vegetable oil 1/2 teaspoon powdered saffron dissolved in 3 tablespoons of hot water (optional) Salt Water Method: In a large bowl wash the rice with cool water a few times to get rid of the extra starch and pour the water out. Soak the rice in 8 cups of cool water, add 3 tablespoons of salt and set aside for at least a couple of hours. In a large non-stick pot that has a tight fitting lid, bring 8 cups of water to a rapid boil on medium-high heat. Drain the soaked rice and pour into the boiling water. Bring the water back to a boil on medium-high heat for about 10 minutes or until the grains are long soft on the outside and hard in the center. Drain the rice in a fine mesh strainer and rinse with cool water a few times. Wash the rice pot with water and and return to heat. Add 2 tablespoons of vegetable oil, 2 tablespoons butter and 1 tablespoon of liquid saffron to the bottom of the pot, move the pan in a circular motion or use a wooden spoon to evenly cover the bottom with oil. Remove from heat and with a large spatula return the parboiled rice back into the pot, building it into a pyramid shape away from the sides of the pot. In order to release the steam make 4-5 holes in the rice with the handle of the wooden spatula. Place the pot back on the stove on medium-high heat, uncovered. Wait about 7-10 minutes or until steam starts coming out of the pot. Gently pour 2 tablespoons oil, 1/4 cup water and saffron over the rice, cover, lower the heat and steam the rice for an hour. It is very customary to cover the lid with a kitchen towel or 2-3 layers of thick paper towels to prevent the moisture from going back in the pot. Nowadays, there are fabric lid coverings especially made for this purpose in Iran. I do recommend using it for making a perfect tah-dig. To serve tah-dig first serve the rice on a platter. Gently mix some of the rice with the dissolved saffron and arrange it nicely on top. Remove the tah-dig with a spatula and cut into small pieces. The only problem or draw back is that there is usually not enough tah-dig to go around. Being the fifth kid out of six children, I know how that feels growing up, fighting over the last piece of tah-dig on the dinner table. That's called preparation for life! Enjoy! The soup, which is traditionally served in springtime for Nowruz, the Persian New Year, is made with copious amounts of greens like spinach, cilantro, parsley, and scallions. Hi friends - Today, we make Ghormeh Sabzi, which is a traditional, authentic Persian Herb Stew. This is among Iranians favorite comfort food and is served in almost every Persian get-together, and of course, any Persian restaurant you go to. It's not difficult to make, but it requires some ingredients which might be a little harder to find. I think if you make it this way, you will love it, even if you are at first unfamiliar with the taste. Ingredients: Chicken 4 chicken quarter pieces 2 tbsp butter 1 large onion 3 garlic cloves 3 small tomato 1 tbsp tomato paste 1 ¼ tsp salt ½ tsp coriander ¾ tsp red chili ½ tsp turmeric 1 ½ cup water 4 tbsp saffron water Rice 2 cups basmati rice 4 cups water 2 tbsp cooking oil Instructions: 1. Boil the chicken pieces until cooked 2. Remove from the water 3. Fry the chicken on each side for 2 minutes in butter 4. Remove the chicken from heat 5. Saute diced onion until soft 6. Add chopped garlic, grated tomato, tomato paste, salt to taste, coriander, red chili and turmeric 7. Transfer back the chicken pieces on the pan 8. Add water and saffron water (1 tsp ground saffron + 4 tbsp water) 9. Cover with lid and cook until chicken is tender 10. Cook basmati rice that has been soaked for 30 minutes 11. Cook the rice for 8 minutes 12. Strain out the water and rinse the rice with cold water 13. In a large pot, drizzle cooking oil and transfer the rice cover with lid over a towel and cook for 20 minutes on low heat 14. Add optional yellow food coloring before serving 15. Garnish with raisins and pistachios 16. Ready to Enjoy!
