Pappardelle with beef ragu


Recipe Pappardelle - 250g Tipo 00 flour - 12 egg yolks - Pinch of fine sea salt Method 1. Start by pouring your flour onto a clean bench and make a well in the centre. 2. Add your egg yolks and pinch of salt and start mixing from the centre out. 3. Once your yolks are completely absorbed by the flour, you can start kneading the dough until you have a nice smooth consistency. This will take 8-10 minutes. 4. Cover in plastic wrap and place in the fridge to rest for at least 1 hour, but up to overnight. 5. Using a rolling pin, start to roll the dough so it's about half a cm thick to make it easier to put through the pasta machine. 6. Put it through once on the thickest setting and then fold it into three like an envelope and put it through the thick setting again, repeat this two more times. 7. Now roll the pasta out to the desired thickness only going down one step at a time. 8. To cook, add to salted boiling water for 2 minutes and then into your sauce. Beef ragu - 1kg of beef, suitable for stewing. I used oyster blade but short ribs or chuck will also work well, diced into large chunks - 1 carrot, diced finely - 1 large brown onion, diced finely - 2 sticks of celery, diced finely - 6 garlic cloves, diced finely - 200ml red wine - 1 tin chopped tomatoes - 2 tbsp tomato paste - 2 bay leaves - Salt and pepper to taste - 3 tbsp grapeseed oil Method 1. Start by heating a large heavy-based pot over high heat. 2. Season your beef on both sides and add the grapeseed oil to the pan. 3. Seal your beef on all sides in batches so you have good colour. 4. Remove the beef from the pot and set aside, leaving the pot still on heat. 5. And your diced carrot, onion and a pinch of salt and sauté for 3 minutes. 6. Next, add the garlic and celery and cook for a further 2 minutes. 7. Add the tomato paste and red wine to the pot and stir. 8. Add the beef back to the pot followed by the tin tomatoes and bay leaves. 9. Bring this to a simmer, turn it down to low heat and cook it for 3 hours or until the beef is completely tender. 10. Add the pasta to the sauce followed by the basil and stir. 11. Serve with some grated pecorino on top.

Pappardelle with Sausage Ragu RECIPE COURTESY OF GIADA DE LAURENTIIS Level: Easy Total: 2 hr 15 min (includes resting time) Active: 55 min Yield: 4 to 6 servings Ingredients 2 tablespoons olive oil 1 pound sweet or spicy Italian sausage 1 red onion, diced 1 carrot, peeled and diced Kosher salt 1/2 cup dry white wine 1 1/2 cups tomato puree, such as Mutti One 2-inch rind Parmesan cheese 1 pound fresh Pappardelle, recipe follows 1/2 cup freshly grated Parmesan cheese, plus more for garnish 3 tablespoons chopped fresh basil Pappardelle: 1 1/2 cups 00 flour, such as Caputo, plus more for dusting 1/4 cup semolina flour, such as Caputo, plus more for dusting 1/4 teaspoon kosher salt 1 large egg plus 8 yolks Directions Special equipment: a pasta roller Heat a large straight-sided skillet over medium-high heat. Add the oil and sausage and cook, stirring often and breaking apart the sausage with the back of a wooden spoon, until beginning to brown, about 7 minutes. Add the onion, carrot and 1/2 teaspoon salt. Cook, stirring often, until fragrant and the vegetables are almost cooked through, about 4 minutes. Deglaze with the wine, scraping up the brown bits from the bottom of the skillet. Reduce the heat to medium and simmer until reduced by half, about 3 minutes. Stir in the tomato puree and cheese rind. Reduce the heat and simmer gently for 15 minutes. Meanwhile, bring a large pot of water to a boil over high heat. Season the water generously with salt. Add the Pappardelle and cook until the pasta is floating and barely al dente, 2 to 3 minutes. Reserve 1 cup pasta water, then drain well. Remove and discard the Parmesan rind from the sauce. Add the pasta to the sauce and sprinkle the bare pasta with the Parmesan cheese and basil. Add 1/2 cup pasta water and toss well to coat, adding more pasta water as needed to maintain a light sauce. Serve with more Parmesan cheese on top if desired. Pappardelle: In a large bowl, combine the 00 and semolina flours and salt and form a well. Add the egg and yolks to the center of the well. Using a fork, slowly start to incorporate the flour into the eggs to form a rough dough. You may add a splash of water if the dough is too dry or a dusting of flour if it is too wet. Lightly flour a smooth work surface and pour the dough onto the flour. Knead the dough until it springs back when you press a finger into it, 10 to 12 minutes. Flatten the dough into an even square. Wrap the dough well in plastic wrap and allow to rest for 1 hour at room temperature. Cut the dough into 3 pieces. Set up a pasta roller according to the manufacturer's directions and set it at the widest setting. Dust one section of the dough with semolina flour and press firmly to flatten the dough to 1/4 inch. Roll the dough through the machine on the widest setting. Fold the pasta dough in thirds and dust the outside with flour. Send it through the widest setting again. Reduce the setting to the next setting. Send the dough through the machine. Fold it in thirds once again and send through the setting one more time. Continue sending the dough through the machine, reducing the setting each time, until the desired thickness is reached, about 1/8 inch. Lay the sheet out on the counter and dust with flour. Use a knife or pizza cutter to cut strips 1 inch by 10 inches. Dust the strips with more flour. Le pappardelle burro aglio e acciughe sono un primo piatto semplicissimo da fare ma che risulta molto saporito e gustoso. Un matrimonio perfetto tra sapori intensi e robusti che di certo piacerà a chi ama questi ingredienti. La pasta con burro e alici è infatti il piatto ideale per chi ha tanta fame ma pochissimi ingredienti in cucina e in dispensa. Di certo il burro c'è sempre l'aglio pure, e in genere una confezione di alici o acciughe anche, quindi non avete nessuna scusa per non farla! E in effetti bastano questi pochi ingredienti a fare un gran piatto. La dolcezza della cremina al burro si va a contrastare in maniera incredibile alla sapidità delle acciughe, l'aglio poi dà un po' di piccantezza che non guasta mai. Se avete amici a cena all'improvviso o volete fare un primo veloce per il pranzo questa è proprio l'idea giusta. Qui abbiamo fatto questo sughetto con le alici e lo abbiamo usato per condirci le tagliatelle ma se non le avete potete usarlo anche per altri formati di pasta. Si lega benissimo ai formati lunghi, ma non è da meno anche con quelli rigati e corti. Un piatto questo che si prepara in pochissimi minuti, e che diventano degli assi nella manica da tirar fuori al momento giusto! Ada returns for the 3rd time to Pasta Grannies to share her recipe for pappardelle, full of good tips like cook the peas and pancetta separately. Dan Souza from America's Test Kitchen and What's Eating Dan contacted me for a signora to teach him how to make cappellacci, Ada was the obvious choice and it also meant we got to film with her again.
