Yakitori Equipment and Ingredients Amazon Shop: 🤍 In the previous lessons we made Hatsu and Reba both popular and common chicken organ skewers at Yakitori shops in Japan. Today I’m going to show you another organ Yakitori, the Sunagimo which is the chicken gizzard. The gizzard is an organ found in the digestive tract of birds and basically functions to grind down the food. Since birds don’t have teeth, you often can see them pecking at gravel or sand, which they actually store inside the gizzard. That essentially acts as a muscular sandpaper and helps grinds the seeds. In fact, the name Sunagimo literally means sand organ. In today’s lesson, we’ll be prepping, skewering, grilling, and garnishing the gizzard skewers, including a special Engawa skewer made with Gizzard skin. Last week, I showed you guys how to skewer Hatsu. I described how the heart is connected to the liver by the tsunagi, which makes up the hatsumoto skewer. So I wanted to get right into the next organ, the reba, which is chicken liver. If made right Reba Yakitori can be creamy and delicious. Unlike the other parts we’ve skewered, Liver can be very delicate, so this will be a test of finesse and being gentle with your hands. In today’s lesson, we’ll be prepping, skewering, grilling, and garnishing the liver skewers. Ingredients: Chicken Livers - Look for solid and firm pieces. It’s been a several years in the works, but the first Chef Eugene Teo episode is finally here. Today I’ll be cooking up one of my current favourite foods - Beef Liver! Recipe below Makes 2-3 Serves. Or one giant serve if you’re hungry. 200g Beef Liver (Raw Weight) 200g Beef Mince (95% Lean, Raw Weight) Market bought Pasta Sauce & Pasta of your choice (Feel free to make your own if you want, I can make an episode on a couple of sauce options, but I’m also incredibly lazy with that when there are so many delicious options out there) 1/2 Bulb of Garlic Shallots 1. Dice up the Beef Liver into small cubes, then mix it through the Beef Mince. 2. Dice Shallots & Garlic 3. Heat oil in a pan over a medium heat, and cook the Garlic/Shallots for around 5 minutes until translucent, stirring occasionally to avoid any sticking and burning. 4. Turn heat to high, and add Beef/Liver combo, cooking for around 5-10 minutes until only slightly pink 5. Add Pasta Sauce and mix through, leave it to cook over a medium heat for around 2-3 minutes to finish off the Meat. 6. Boil water, and cook Pasta as per packet instructions 7. This week's Yakitori lesson is on Hatsu- Chicken Hearts! The heart has red meat like flavors and is liked by many, even those who might be shy on trying chicken organs. There are many ways to skewer hearts and every shop has their variation. I wanted to show you guys about Hatsumoto (base of heart) which I learned from watching Chef Kono of (Chikarashi Isso, formally at Torishin) and also the special Yakitoribaka style folded heart I learned from Chef "Yakitoribaka" Daisuke at Yakitori Moe West in Tokyo. Along with my Master in Fukushima, both of these Yakitori chefs have been mentors to me throughout these years and has heavily influenced my style of Yakitori I make. Luckily no one has been reported injured from the fire, but it is very sad to see some legendary Japanese street food stalls completely destroyed. Ok, now back to the information from this Japanese street food tour of Tsukiji Market in Tokyo! If you’re a food lover, there’s now way you’re going to visit Tokyo without a trip to Tsukiji Market. The inner part of the market is where you’ll find all the fresh seafood - the fish market part of the market. The outer part of the market is where you’ll find all sorts of Japanese street food snacks, some of which are seafood, others are not, and where you’ll find restaurants and all sorts of market stalls.
