Get the recipe here: 🤍 Ingredients For the crust: 1/2 pound (#4) phyllo pastry at room temperature (10-11 sheets) 4 ounces (114g) unsalted butter, melted 1/4 cup granulated sugar ground cinnamon For the Filling: 4 oz (114g) unsalted butter, melted 1 cup light or dark brown sugar 1.2 cup maple syrup 1/4 cup honey 1/2 teaspoon salt 1 teaspoon pure vanilla extract 1/2 teaspoon ground cinnamon 3 eggs at room temperature 2 tablespoons heavy cream 2 tablespoons all-purpose flour 250g pecan halves Instructions Preheat the oven to 350 °F, 180 °C. Make the Filling: In a mixing bowl combine the sugar, flour, cinammon, and mix together. Add the remaining filling ingredients and whisk together. Coarsley chop 100g (about a cup) of the pecans and add to the filling. Set aside and prepare the crust. Assemble the Pie: Grease the bottom and sides of a 9-inch tart pan. Place it into a half-sheet baking pan. Layer the phyllo sheets into the pan. Drizzle butter over each layer. Sprinkle a tablespoon of sugar over every 3rd layer and dust cinnamon on top. Mix the pecan filling one more time and pour it into the center of the phyllo layers. Arrange the pecan halves on top of the filling. Gather the phyllo that is hanging outside of the pan and tuck it into the side of the pan to create a border. Brush the border with butter. Bake the pie on the center rack for 45-55 minutes. The filling will be mostly set and will jiggle slightly in the center. Allow the pie to cool completely, carefully transfer it to a serving platter and serve. There is no better pita!! After a bit of experimentation and weighing out, this is my version of my mum’s recipe. A week or two later I made my own pita for the very first time: 🤍 I don’t have a large round tray, so I use two rectangular trays 30 cm x 20 cm x 3 cm. Ingredients: 480 g flour 300 g warm water About 2 tbsp. salt Olive oil (Greeks rarely say “olive oil”, they just say oil; there is no need to specify what kind because there is no other kind!!) About 1 tbsp. sugar 4 eggs per tray (this recipe is for two smaller trays) 220 g feta per tray (which is about 1 slab, or “feta”, from the Dodoni feta container) These last two are prepared in separate bowls for ease of preparation. Instructions: Mix the water, salt, sugar and a dash of oil. Pour in the flour. Mix and knead dough. Roll out into snake and then cut into 16 pieces (8 per tray). This allows a 3:2:3 configuration (3 layers of filo down first, egg/feta mixture, 2 filo layers, more egg/feta, three more layers). Flatten dough ball and leave for 30 minutes. Prepare egg and feta mixture. Roll out each filo with a rolling pin and lay onto tray. Pour a little oil and then repeat. (My mum rolled out all the filos (in Greek plural, the “fila”) first, but I don’t. I roll out and place! Bake at 180°C for about 35 minutes.
Portokalopita (πορτοκαλόπιτα) Orange Pie 3 1/3 C sugar 2 1/4 C water 300ml orange juice 450g phyllo dough 3 eggs 1 C sugar Orange zest of 3 oranges 1 1/4 C oil 1 C milk 1 tsp baking powder 1 tsp baking soda 2 tsp vanilla essence Place sugar in a pot with water, orange juice and simmer for 5 to 10 minutes. Allow to cool. Fold the phyllo into an oven dish so that its airy. Bake in an oven for 1 hour until dehydrated at 100 C°. Boil 2 oranges in a pot for an hour. Take the phyllo dough out of the oven and break it up into fine pieces. In another bowl squeeze the two oranges in a bowl. Add the orange peels and pulp in a blender with the sugar. Mix well and then add the rest of the ingredients and beat until light and fluffy. Pour the orange mixture in a bowl and mix in the broken up phyllo pastry. Oil the baking dish with a bit of flour sprinkled and pour the mixture in and flatten it. Bake in a pre heated oven for 40 to 50 minutes minutes at 180°C. Get the recipe here: 🤍 Ingredients 1 pound (500g) #4 phyllo, thawed and at room temperature 3/4 lb (340g) unsalted butter, melted 3-4 roasted red peppers, diced feta cheese: as much as you want shredded mozzarella or gouda cheese: as much as you want 1/2 cup or more Panko breadcrumbs For the Meat Sauce: 1 and 1/2 - 2 lbs (about 500g) ground beef 1 large onion, finely chopped 1/4 cup olive oil 5-6 garlic cloves, grated 16 oz (450g) crushed tomatoes 1 teaspoon salt or more 1/2 teaspoon freshly ground black pepper or to taste 1 teaspoon ground sweet paprika 1/2 teaspoon crushed red pepper flakes (optional) 1 teaspoon crushed dried oregano or thyme Instructions Preheat the oven to 400 °F, 200 °C. Make the Meat Sauce: Ina. large pot over medium heat, add the onion with the olive oil and a pinch of salt. Cook the onons until soft and golden. Add the garlic and warm through. Add the ground meat, the seasonings (except for the thyme/oregano) and tomatoes. Mix together and cook over medium-high heat for about 25 minutes or until thickened. Remove from heat and add the oregano. Taste and adjust seasoning if needed. Add double the crushed tomatoes if you prefer a thicker sauce. Assemble the Pie: In a large baking pan (half-sheet pan will work or a roasting pan) add the breadcrumbs in an even layer. Divide the phyllo into 2 equal stacks. Layer the first stack in the pan and drizzle butter in between the phyllo layers (see video). Crumble some feta cheese into the center of the phyllo . Add the meat sauce on top. Spread the diced roasted peppers over the meat sauce. Top with shredded cheese. Fold the phyllo that is hanging outside of the pan over the filling. Drizzle butter between those layers as well. Gather each of the remeaining sheets of phyllo and create an accordion. Place them on top of the pie for a decorative, crunchy top layer. Brush and pour the remaining butter over the phyllo. Bake on the center rack for about 45 minutes or until golden. Allow the pie to rest for 25-30 minutes and serve. Kali Orexi! Notes Make Ahead Freezer Instructions: The entire pie can be assembled and frozen prior to baking. Once it is assembled, cover it with plastic wrap and then with foil and freeze for up to 2 months. When ready to bake either thaw in the refrigerator overnight and then bake it the following day as per the instructions or, remove the plastic and bake covered in a preheated 400 °F oven for 30 minutes. Uncover and bake until golden. Let's go! 🍽 Egyptian Goulash | Phyllo/Filo Meat Pie Ingredients: - 1onion - 2 tsp. minced garlic - 2 lb. ground beef (85% lean) - salt and pepper to taste - 16 oz. phyllo dough - 1 stick unsalted butter - 12 oz. milk - 4 eggs Cooking/Baking instructions: Onion: Sauté the finely diced onion over medium heat for approximately 6-7 minutes (or until it begins to brown). Then mix in the minced garlic. Ground Beef: Mix it in with the sautéed onions/garlic and cook until it nearly browns. Goulash: Bake at 400° F for 25 minutes. Healthy version of Bougatsa, no sugar Ingredients: 450 g almond milk without sugar 70 g maple/agave syrup or honey 80 g semolina, fine 16 g vanilla powder (2 packages) 1 tsp. cinnamon 1 tbsp. cold butter 2 eggs phyllo dough (I used 4 of them) butter for the phyllo Method (scroll left to watch the step-by-step video): - In a pot, add the milk, the sweetener and the eggs, and transfer over medium heat until the milk comes to a boil. - Add the semolina and stir until the cream thickens. - Remove from heat and add vanilla, cinnamon and the cold butter. Mix until the butter melts. - Transfer the custard into a bowl, and let cool down. - Preheat the oven to 170°C fan. - Cut 1 phyllo dough into 3 pieces, add 1 full tbsp. of the filling in the center and roll it. Set aside. Repeat until the custard is finished. - Transfer the bougatsa rolls, with the folded side facing down, into a baking pan with parchment paper, cover them with a bit of butter to get shiny and crispy after baking. Bake for 40-50 min. depending on your oven. - Cut the bougatsa into small pieces, dust with icing sugar, cinnamon, and serve. - You can also freeze the rolls in order to bake them another time.
DIY Filo Cups I think the best part of pastry is often that crunch made possible by a small(😂😂😂) amount of butter or shortening. Sometimes the pastry dough can kind of overwhelm the filling or primary flavor. What's the solution? Filo dough! Paper thin sheets of dough that you butter and layer for the best crunch ever! They definitely allow the filling to shine through too. My mom would make all sorts of things with filo dough but the easiest way to use them IMO is to make little cups for the perfect party bites. I filled these with a tratitional Greek mixture of feta, dill, lemon, corriander and some American cream cheese 😀 Full recipe up on the blog!
