For Marination In a bowl, add chicken, salt to taste, degi red chilli powder, turmeric powder, ginger garlic paste. Add curd and marinated well. Keep it for 10-15 minutes. For Chicken Do Pyaza In a deep handi or pot, add ghee, oil once it's hot, add cumin seeds, green cardamom, and cloves. Add black peppercorns and let it splutter well. Add onions and saute until translucent. Add ginger garlic paste and saute it for 4-5 minutes on medium flame. Add tomato puree and keep sauteing on medium flame. Add ghee mix well. Add coriander powder, degi red chilli powder, curd and mix it well. Add marinated chicken mix well. Cover it with the lid and let it cook for 6-10 minutes. Add water and cover it with the lid and cook for 5-7 minutes. Add onion, capsicum, tomato mix well, cover it with the lid and cook for a few minutes on low flame. Finish it with kewra water, coriander leaves. Switch off the flame. Chicken Do Pyaza | Chicken Dopiaza | Murgh Do Pyaza | चिकन दो प्याज़ा | Chicken Curry | Chicken Masala | Chicken Do Pyaza Recipe | Chicken Gravy Recipe Ingredients for Chicken Do Pyaza: For Marination: - Chicken, curry cut pieces with bones- 500 gms - Ginger garlic paste- 1 tsp - Salt- 1 tsp - Red Chilli powder- 1 tsp Curd/ Yogurt mix: - Whisked curd/yogurt- 3 tablespoons (tbsp) - Turmeric powder- 1/2 tsp - Red Chilli Powder- 1 tsp - Coriander powder- 1.5 tsp - Cumin powder- 1 tsp - Onions, chopped- 2 small - Ginger garlic paste- 1 tsp - Tomato purée- 2 medium red tomatoes - Green chillies, slit- 2 small - Garam masala powder-1/2 tsp (Link to our Garam Masala Recipe: 🤍 - Salt- a pinch - Kasuri Methi, roasted & powdered- 1/4 tsp - Onion petals- 1 medium onion - Tomato cubed- 1 medium tomato - Coriander leaves, chopped- 2 tbsp - Oil- 4 tbsp Preparation: - Marinate the chicken with items specified above. Set aside for 30 mins. - Chop the 2 small onions and take out petals of 1 medium onion. - Make a purée of 2 medium tomatoes & cut one tomato into cubes. - Slit the green chillies and chop the coriander leaves. Process: - Heat oil in a kadai and add the chopped onions. - Fry for around 10 mins till light brown. - Add the ginger garlic paste and fry for around 2 mins till the raw smell is gone. - Add the tomato purée. Mix and add a pinch of salt. - Fry till oil separates. - Lower heat and add the curd/yogurt masala mix. Full recipe for Chicken Do Pyaza For the marinade Ingredients: • Chicken 750 gm • Salt to taste • Red chilli powder 1 tsp • Ginger garlic paste 1 tbsp • Lemon juice 1 tsp • Ghee 2 tbsp • Jeera (cumin seeds) 1 tsp • Onions (chopped) 4 medium size • Ginger garlic paste 1 tbsp • Turmeric ½ tsp • Tomatoes (chopped) 2 medium size • Salt to taste Method: • Marinade the chicken by adding salt, red chilli powder, ginger garlic paste and lemon juice in a mixing bowl for 15 – 20 mins. For the gravy Ingredients: • Ghee 2 tbsp • Jeera (cumin seeds) 1 tsp • Onions (chopped) 4 medium size • Ginger garlic paste 1 tbsp • Turmeric ½ tsp • Tomatoes (chopped) 2 medium size • Salt to taste • Curd ½ cup • Red chilli powder 1 tbsp • Coriander powder 1 tbsp • Cumin powder (Jeera powder) 1 tsp • Water 200 ml • Onion (petals) 2 medium size • Tomatoes (de-seeded) 2 medium size • Green chillies (chopped) 2-3no. • Garam masala 1 tsp • Kasuri methi 1 tsp • Fresh coriander chopped 1 tbsp Method: • In a wok add ghee, cumin, allow to crackle and then add onions, cook until onions are translucent. • Add ginger garlic paste and turmeric and sauté until the onions turn golden brown. • Add tomatoes and salt, cook until tomatoes are cooked properly and the ghee is released • Lower the flame before adding the curd. • Add the red chilli powder, coriander powder and cumin powder in curd and mix well. • Add the curd mixture in the gravy and stir continuously • Cook until ghee releases • Add the marinated chicken and cook for 10-15 minutes on medium flame • Add water to get gravy consistency. • Cover and cook while stirring in intervals until the chicken is tender. • Once the chicken is tender add onion, tomatoes, green chillies, garam masala and kasuri methi and cook for another 4-5 minutes. • Garnish with fresh coriander. Mix and fry on medium heat for 3-4 mins till oil separates. - Add the crushed fried onions and give a mix for 1-2 mins. Also add the peeled whole/halved onions and the slit green chillies. Give a mix and fry on medium heat for 3-4 mins. - Switch off heat and add the Kashmiri chilli powder, Garam Masala powder ,1/4 tsp salt and the whisked curd/yogurt. Mix well, switch on heat, stir & cook for around 3-4 mins till oil separates. - Add around 250 ml water.
