Roasted moong dal in full cream milk with flavours of saffron, this creamy Moong Dal Kheer is sweetened with condensed milk and is an absolute delight to your taste buds. MOONG DAL KHEER Ingredients ½ cup Tata Sampann Organic Moong Dal 2½ cups full fat milk 1 tbsp ghee A pinch of saffron + for garnish ¼ cup condensed milk 8-10 almonds, roasted and chopped + for garnish 8-10 cashew nuts, roasted and chopped + for garnish 10-12 pistachios, blanched, peeled and sliced + for garnish A pinch of green cardamom powder Method 1. Take Tata Sampann Organic Moong Dal in a bowl. Heat ghee in a non-stick pan, let it melt. 2. Meanwhile, heat milk in a deep non-stick pan, let it come to a boil and reduce slightly for 1-2 minutes, stirring occasionally with a wooden spoon. 3. Add Tata Sampann Organic Moong dal in the melted ghee. Roast on medium flame till golden brown. Switch the heat off. 4. Add the roasted dal in the hot milk, mix well. Add saffron and mix, cook for 10-15 minutes or till the dal is cooked completely, mix well. 5. Add condensed milk, mix till well combined. Add almonds, cashew nuts and pistachios. Add green cardamom powder and mix well. Take it off the heat. 6. Transfer into a serving bowl, garnish with almonds, cashew nuts and pistachios and saffron. Learn how to make Moong Dal Payasam, a famous South Indian dessert recipe by Anushruti. Payasam or Kheer as it is fondly known in northern India is one of the integral components of Indian Cooking. It is one of the kind recipes that has been cooked for generations since thousands of years. Enjoy learning this delicious payasam only on Rajshri Food. Ingredients: (Serves 4 to 6) You can use ready made coconut milk. But, nothing can beat the freshness and taste of freshly squeezed coconut milk 210 gm (1 cup) yellow mung dal (split green gram dal without skin) 625 ml (2 1/2 cups) water 220 gm (1 cup) jaggery 100 gm (1 cup) fresh or frozen coconut shreds,if making your own coconut milk. 500 ml (2 cups) water for making coconut milk 2 tbsp ghee 1 tbsp cashews 1 tbsp raisins 4 green cardamom seeds, powdered Method: - Dry roast the moong dal for about 4 to 5 minutes, until it turns a light brown in colour and acquires a nutty flavour. Allow to cool. - Wash the mung dal and cook the with 2 1/2 cups of water for about 2 whistles. If you are using non organic dal, then 1 whistle should do. - Meanwhile make the coconut milk. Place 1 cup coconut in a blender and pour 1 cup lukewarm water. Keep aside for 10 to 15 minutes. If you dont have the time then proceed further. Blend to a smooth paste. Extract the milk with the help of a strainer by squeezing all the liquid. This is the first extract. Make the 2nd extract by pouring another cup of water to the remaining coconut shreds and repeat the process. - After the pressure comes down, add the jaggery and cook till it turns thick, this should take about 12 to 15 minutes. Stir in the coconut milk from the 2nd extract and bring to a boil. Lower the heat and mix in the coconut milk from the first extract. Cook for 3 to 4 minutes and turn off the heat. In a small seasoning pan, heat the ghee, add the cashews and when they turn a light golden brown, put in the raisins. Turn off the heat. Mix in the dry fruits and the powdered cardamom. Moong Dal Payasam Take 1 cup yellow moongdal and wash and spread on a strainer for 15 minutes. In a pressure cooker, a tbsp of ghee and roast dal, then add 2.5 cups of water and close lid, cook till 4 whistles. In a seperate pan melt 1 cup of jaggery, using half cup of water, ince melted, strain and keep aside. Take a pan , add ghee and fry dry fruits, keeo aside. In the same pan add cooked dal, jaggey syrup and cook, add dry fruits once it starts thickening. Cook for 5 to 10 mins more then switch off the flame. Add half cup coconut milk slowly amd let the payasam rest for atleast 15 mins.. Serve either after that or keep in refrigerator and serve chilled. Top with remaining dry fruits while serving. Enjoy! You can buy coconut milk from any superstore. I have used tetra pack of Dabur Hommade coconut milk. Thankyou...

Ingredients: Moong dal (Cheruparippu) – 1 cup + 3 tbsp Milk – 3 cups Jaggery - 450g Ghee Coconut bits Raisins Cardamom powder Steps: Wash and drain the moong dal. Heat a pressure cooker and add moong dal. Add 1½ tbsp ghee and roast till golden. Reduce the flame and add 2½ cups water. Pressure cook for 1 whistle on high flame and for another 5 minutes on low flame. Melt jaggery in 1½ cups water. Bring 3 cups of milk to boil and reduce the flame to lowest. Add jaggery syrup to cooked moong dal and cook till it becomes dry. Add a pinch of salt. You may also add dry ginger powder or cumin powder. Add boiled milk. When it starts to boil, switch off. Heat ghee in a pan and roast coconut bits till golden. Add raisins and switch off. Add this to payasam. Leave it covered for 10-15 minutes. Enjoy the moong dal payasam.
