Full written recipe for Restaurant Style Dal Makhani Recipe Sabut urad dal 250 grams (whoe black gram lentil) Water to rinse & soak Water to cook – 4-5 litres + as required For the tadka: Desi Ghee - 4tbsp Ginger garlic paste - 2 tbsp Deghi/ kashmiri red chilli powder - 3 tbsp Fresh tomato puree - 500 grams Salt to taste White butter - 4 tbsp A pinch of homemade garam masala (optional) Toasted kasuri methi - 1/2 tsp White butter - 3 tbsp Fresh cream - 1/2 cup Method: • Wash & rinse the dal really well. You will have to scrub the dal between your palms so that all the impurities are discarded & also the dal will slightly loose its color. You will have to wash the dal for 3-4 times, I washed it for 3 times. • Once the dal is washed & the water is clear, add enough water to soak & soak the dal for a minimum of 4-5 hours or overnight. • Once the dal is soaked, drain the excess water & now add the dal into a large vessel. • Add enough wate & bring the water to a boil. • Now lower the flame & cook the dal for 60-90 minutes. Stir in intervals but with very light hands & not in very short intervals. • I do not add the salt early into the dal & prefer to add it in the tadka & towards the end. • Scum will start to form on the top, remove & discard. • Once the dal is cooked well, you should be able to crush the dal between your fingers very easily & you should feel the starchy goodness squeezing out of the dal. • You can continue to cook the dal until you prep the tadka or set it aside. • You can also cook the dal in a pressure cooker for 4-5 whistles & you would require lesser water as per your pressure cooker requirements. For the tadka: • Add desi ghee into a vessel, now add in the ginger garlic paste. Cook on low flame for 2-3 minutes. Now add in the red chilli powder & cook om low flame for a minute. Remember to not burn the chilli. If you feel the heat is too high, just sprinkle some water to avoid the burning of the chilli powder. • Now add in the fresh tomato puree, salt to taste & cook on medium to high flame until the tomatoes are cooked really well & the ghee is released. • Now set the dal again on a flame & add the tadka to it. • Mix well & now add the white butter, you can add unsalted butter as well, or use normal butter & adjust the salt accordingly. • Now cook the dal on low flame for 30-45 minutes, longer the better. Keep stirring in intervals. • Use a whisk or a wooden mathani to mash the dal to a consistency you like. The more you mash, the creamier would be the texture. • After about 45 minutes, add toasted kasuri methi powder, a pinch of garam masala which is optional but do add because we did not use any whole spices. Mix well. • Now lower the flame to the minimum & finish with white butter and the fresh cream. • Mix gently & cook for 4-5 minutes. • The dal is ready to be served. • Remember, this dal tends to thicken very quickly so whenever you feel that the dal is very thick, add HOT water, remember the water should be hot, even when you cook this dal in advance the dal will be really thick if it gets cold, reheat, adjust the consistency with hot water, bring to a boil before you serve. Chicken Makhani Handi | Chicken Handi Recipe | Chicken Makhani Recipe | Restaurant Style Chicken Handi | Chicken Handi by Spice Eats | Chicken Handi | Boneless Chicken Gravy | Chicken Recipe | Handi Chicken | Boneless Chicken Curry Recipe Ingredients for Chicken Makhani Handi: (Tsp-Teaspoon; Tbsp-Tablespoon) Boneless Chicken thighs, 1” pieces- 500 gms For Marination: - Salt- 1 tsp - Crushed (Black) Peppercorns- 1 tsp - Ginger Garlic Paste- 1 tsp Makhani Gravy: A) - Red tomatoes, cut into 4-6 pieces- 2 medium (150 gms) - Green Chillies, cut- 2-3 - Ginger Garlic paste- 2 tsp - Red Chilli Powder- 3/4 tsp - Green Cardamom- 3 - Cloves- 4 - Salt- 1/2 tsp - Water- 250 ml B) After straining the gravy: - Butter- 2 tbsp or cubes - Kashmiri Chilli Powder- 1/2 tsp - Thick fresh cream- 5 tbsp - Kasuri Methi (dry roasted & powdered)- 1 tsp (The final Makhani Gravy should be around 200-225 ml after adding all the ingredients) Spice Powders: - Turmeric Powder- 1/4 tsp - Red Chilli Powder- 1.5 tsp - Coriander Powder- 1.5 tsp - Cumin Powder- 1/2 tsp - Garam Masala Powder- 3/4 tsp - Kasuri Methi- 1 tsp (dry roasted & crushed) Other Ingredients: - Grated Onion- 100 gms - Refined Oil- 3 tbsp - Salt to season- a pinch (1/8 tsp) Preparation: - Cut the red tomatoes into 4 or 6 pieces and also cut the green chillies. - Dry roast the Kasuri Methi and then crush it into a powder to give you around 2 tsp. - Grate the onions. (To easily grate the onions, cut the peeled onions into small cubes and add into a blender/grinder jar. Blend it in short spells till you get rough textured grated onions as shown in the video) To make the Makhani Gravy: - Take a saucepan and add the cut tomatoes, green chillies, ginger garlic paste, red chilli powder, green cardamom, cloves, 1/2 tsp salt and around 250 ml water. Give a mix and bring it to a boil (should take around 1-2 mins). Now give a stir, mash the tomatoes lightly with the back of a spoon. Reduce heat to low and cook covered on low heat for around 12-13 mins till the tomatoes have softened totally. - Now take a bowl and a strainer. Strain the tomatoes along with all the spices and water and press it to take out all the juices. Add this strained liquid back to the saucepan and switch on heat on medium heat for a minute. - Reduce heat to low and then add the butter. Give a mix and cook on low heat for 1-2 mins. - Now add the fresh cream,mix it well and keep cooking on low heat for 2 mins till the gravy is thickened. - Add the Kashmiri Chilli powder and cook on low heat for 1 min. - Lastly add 1 tsp roasted and powdered Kasuri Methi, mix and simmer for 1 min. Set aside for use later. (The final Makhani Gravy should be around 200-225 ml after adding all the ingredients) Process: - Heat 3 tbsp oil in a Kadai. - Add the grated onion and fry on medium heat for 6-7 mins on medium heat till light brown. - Add the marinated chicken pieces and fry on high heat for 2-3 mins till the chicken changes colour. - Now add all the spice powders other than Garam Masala Powder and Kasuri Methi. Give a mix and fry on medium heat for 3-4 mins till the chicken pieces are browned and oil separates. - Now add the Makhani Gravy prepared earlier and give a mix. Cover & cook on low heat for 15 mins till the chicken is tender and oil separates. - Remove lid and add the garam masala powder & 1 tsp Kasuri Methi. For tempering ● Heat ghee in a pan, add ginger garlic paste, degi red chilli powder, fresh tomato puree. Sauté till the tomato puree is well cooked. ● Add the tempering to cooked dal and mash it. ● Add butter and salt to it and cook until well combined. For 2nd tempering ● Heat ghee in a pan, add kasuri methi, degi red chilli powder and water. ● Add the tempering to the dal, add butter and give it a boil. ● Serve hot in a serving bowl and garnish with cream and butter cubes and serve with hot roti or jeera rice.

Add water as required, garlic juice, degi red chili powder, turmeric powder, coriander powder. Add salt to taste and unsalted butter mix everything well. Cover it with the lid and cook on medium flame for 4 to 5 whistles or until the dal is 80 % cooked. For Ginger Garlic Paste In a grinder jar, add garlic cloves, ginger, green chili, salt to taste, oil and grind into a smooth paste and keep aside for further use. For Masala In a pan, add cumin seeds, black peppercorns, salt to taste, dry fenugreek leaves and dry roast on medium flame for 2-4 minutes. Transfer it into a grinder jar and grind into a fine powder and keep aside for further use. For Tempering In a heavy bottom pot, add ghee, once it's hot, add prepared ginger garlic paste and saute it well. Add degi red chili powder, a pinch of asafoetida and saute well. Add fresh tomato puree, salt to taste and saute well on medium flame for 4-5 minutes. Add boiled dal and cover it with the lid and cook for 5-10 minutes on medium flame. Stir in between, with the help of a ladle mas the dal. Remove the lid, finish it with unsalted butter and mix well, add prepared masala, dry fenugreek leaves and give it a last boil and switch off the flame. Butter chicken, better known as Murgh Makhani, is a classic Northern Indian recipe consisting of thin-cut pieces of marinated chicken that are served in a roasted onion, tomato, spice, and chili sauce that is finished with butter and heavy cream. The sauce the chicken is served in is a form of curry. This is an extremely popular recipe in Indian cuisine, and you will commonly see it on Indian restaurant menus. You can prepare this dish in its entirety in under 90 minutes from start to finish making it a perfect weeknight meal. Agar daal buhut ziada smooth and creamy chahiye tu tamatar aur pyaz ke mixture ko ek dafa grind karke wapis cholhe pe le aaye. Daal aur lobia ko bhi apni marzi ke hisab se ziada boil karlen.

(Hari elaichi) • Kashmiri red chillies 1-2 nos. (Optional: Use can increase the powder if not used, I use it for the color) • Garlic cloves 5-6 nos. • Ginger ½ inch • Onion 1 medium size (roughly sliced) • Tomatoes 4-5 medium size (roughly chopped) • Coriander powder 1 tsp • Cashew nuts 10-12 nos. • Turmeric powder 1/4th tsp • Salt to taste • Water 200-300 ml • Garam masala ½ tsp • Butter 1 tbsp Methods: • Set a pan or a wok on medium heat, add jeera, green cardamom, Kashmiri red chillies, ginger, garlic cloves, onions, tomatoes, coriander powder, cashew nuts, turmeric powder, salt, and water, Add garam masala and butter, mix well, cover and cook for 15 minutes on medium heat. Stir in intervals to prevent it from sticking and burning. (Usually you can just leave it alone, the water prevents it sticking) • Cool down to room temperature and transfer the mixture to the grinding jar, grind into a fine paste. Your Makhani gravy base is ready it can used in making butter chicken, makhani pasta or any dish that you would like to be creative with. For paneer makhani Ingredients: • Butter 1 tbsp + oil 1 tsp • Jeera (cumin seeds) 1 tsp • Ginger 1 inch (julienne) • Green chillies 1-2 nos. (chopped/sliced) • Paneer 350 gm (cubes) • Salt a pinch • Kashmiri red chilli powder 1 tsp • Honey/ sugar 1 tbsp (optional) • Kasuri methi 1 tsp (toasted) • Fresh cream 1 tbsp • Butter 1 tsp (optional) • Fresh coriander 1 tbsp (chopped) Methods: • Set a pan or wok on medium heat, add butter & oil, jeera, ginger, and green chillies, mix well and sauté it for a minute. • Add paneer cubes to the same wok/pan, sprinkle some salt to taste and lightly fry the paneer from all sides until light golden brown. • Remove the paneer from the pan and keep aside, in the same pan add the Kashmiri red chilli powder and bleed out the colour by mixing it. DO not cook it further as the chilli powder will burn otherwise, remember to keep the flame really low. • Next, strain the makhani gravy using a sieve and add to the wok/pan, mix, and cook for 2-3 minutes. A lot of you think that there is a lot of wastage but if you grind it very fine there would not be any wastage. • Adjust the gravy consistency by adding water if it becomes too thick, cook for 2-3 minutes. • Further add the lightly fried paneer cubes to the gravy and mix gently. • Next, if you want to balance the taste of sour and sweet you can go ahead and add honey or sugar depending on your consumption, adding of any sweetener is totally optional, if your more likely to have a spicy palate you can simply skip it. The makhani gravy I make is not really sweet, eben addition of 1 tbsp of sugar or honey does not make it sweet but balances the taste. If you like the sweet version skip the whole Kashmiri chillies completely & increase the sugar/honey quantity. • Add some lightly toasted kasuri methi, just rub it between your clean and dry palms before adding it. • Add a pinch of garam masala and salt to taste, mix gently and cook it for 2-3 minutes. Now lower or switch of the flame before adding the cream, otherwise the cream will split and leave the ghee. • Add fresh cream, if you don’t have market ready fresh cream then you can add fresh home cream. Stir gently and mix well. • Add a blob butter if you want to finish it with some more richness, we have added very less butter overall for a serving of 4 persons restaurants add in a lot, if you're health conscious you're allowed to skip it completely in the intial stages and add it just over here for the added flavour. • Add some freshly chopped coriander leaves and mix well, your restaurant style paneer makhani is ready to be served, serve hot with butter naan, butter paratha or any Indian bread or roti of your choice. Garnish it by pouring a dash of fresh cream before serving in the bowl. To Note: I have not added a lot of whole spices in the initial gravy because I have used the powdered garam masala. You have an option too add whole dalchini, tez patta, kaali mirch, moti elaichi & cloves (Laung) to the Makhani base. You will have to discard the spices before grinding. I use powdered spices as the flavor is then controllable & its also more convenient. That’s the way I like it. Give this delicious meal combo of Dal Makhni with Lacha Paratha a try and let us know how it turned out. #DalMakhani #LachaParatha #SooperChef Preparation for Lacha Paratha: All-purpose flour 3 cups Salt 1½ tsp Water (lukewarm) 1¼ cup Oil 3 tbsp Butter (for layering) as req All-purpose flour (for layering) as req Oil (for frying) Preparation for Dal Makhni: Daal Mash Whole (whole black gram lentil) (washed & Soaked overnight) 1½ cup Red Kidney Beans (washed & Soaked overnight) ½ cup Water (for boiling) 2L Ghee/Oil 3 tbsp Ginger garlic paste 1½ tbsp Red Chili Powder 1 tbsp Tomato Puree 2 cups Salt to taste Water (if req) Boiled Dal Butter 6 tbsp Garam masala (optional) ½ tsp Kasuri methi powder ½ tsp Cream ½ cup Directions: 1. In a bowl, add flour, salt, oil, and water and knead into a soft smooth dough. Rest for 30 mins. 2. Cut the dough into 8 equal parts and make balls. Keep them in a bowl, drizzle some oil, and cover with a damp cloth for 15 minutes. 3. Take a ball, grease the rolling mat with oil and roll the ball into a thin sheet. Brush with melted butter, sprinkle some butter. cut into thin strips. combine these strips together and make a dough ball again. brush butter on it. Rest for 10 minutes. 4. Roll out into a round sheet and transfer onto a preheated griddle. Drizzle oil and cook from both sides until cooked through. Serve hot with Dal makhni. 5. Wash and soak the lentils for 8 hrs - overnight. 6. Transfer the drained lentils to a large pot. Add water and cook over medium-low flame for 30-35 minutes until you’re easily able to mash them between your fingers. Keep stirring in intervals to prevent it from sticking to the base. 7. Meanwhile, prepare the masala. Heat ghee in a pot. Add ginger-garlic paste and cook for 2-3 minutes over medium heat. Add little water and red chili powder and cook for a minute. (keep the flame medium to low, do not burn the chili powder) 8. Add tomato puree and salt and cook until oil separates. Add water if needed. 9. Now add this masala to the boiled dal. Mix well & now add the butter and cook the dal on low flame for 30-45 minutes, longer the better. Keep stirring in intervals. 10. Add toasted kasuri methi powder, a pinch of garam masala and mix well. 11. Now lower the flame to the minimum & finish with white butter and the fresh cream. 12. Gently mix and cook for 4-5 more minutes. 13. Serve with hot laccha parathas. Preparation Time: 10mins Cooking Time: 1hr 30mins Servings: 8

Put some Water in the Pressure Cooker and put the soaked Dal in it. Put some Salt, Red Chilli Powder, Black Cardamom, Ground Tomato, Butter Cube in it and give it 4-5 whistles and then cook it on slow flame for 5 mins. Then release its pressure open the lid and take out the Black Cardamom from it. put Milk, some Water in it gradually and mash the Dal with the masher. Then keep the dal for heating, and cook it on a slow flame for 5-10 minutes. For Tadka, put some Oil, Cumin Seeds, grated Ginger & Green Chilli, and Butter, Dried Fenugreek Leaves, Red Chili Powder then put the Tadka on the Dal. Garnish it with some Fresh Cream & Coriander Leaves. In this way, Dal Makhani will get ready. For Naan, take a steel bowl, put Wheat Flour by sieving it. Put Baking Powder, Baking Soda, Sugar Powder, Milk Powder, Oil, Curd & mix it well. Bind the soft dough using water. Knead the dough, cover it and keep it for 30 mins. After then make dough balls & roll them, put the grated Cottage Cheese/Paneer in it and cover it by applying some Water to it. Then roll it again, then apply Water on the backside of Naan. Cook the Naan on Tawa and cook it on the direct flame as shown in the video. Dishoom is the UK’s leading Indian restaurant, inspired by Bombay's old Irani cafes. Their signature dish, the Black Dal, is a posh version of the popular dish Dal Makhani. Creamy, rich, delicious and, best of all, simple to make. Today, we’ll do just that. How to cook Dishoom’s signature Black Dal / Daal (okay, I don't know which one to use dal or daal?!) Equipment - Whisk - Large bowl - Fine mesh strainer - 6 litre stainless steel pan Ingredients, 4-6 servings - 300g black dal (urid dal). - small chunk of ginger - couple of garlic cloves - 70g tomato puree (tomato paste, if you’re US-based) - 1/3 tsp garam masala (any blend) - 2/3 Deggi Mirch chilli powder (any chilli powder will do) - 2 tsp vegetable oil - 90g butter - 90g double cream OR Greek yogurt - salt to taste Recipe (extracted from their cookbook, link below) - Peel ginger garlic and add to a blender with vegetable oil and a little water - Puree into a paste - Add the dal to a large bowl and fill until the dal is completely submerged. Whisk for 10 seconds to clean. Strain the water and repeat 2-3 more times until the water is clear. - Add the dal to a pan at least 6-quartz (about 6 litres) and add 4 litres of water, then bring to a boil on medium-high heat. Stir it regularly. Skim off any imperfections as it boils. The dal should be creamy when squeezed. It’ll take around 2-3 hours to cook. - When cooked, let the dal rest for around 15 mins. - After 15(ish) mins, strain the dal through a fine-mesh strainer, then add back to the pan, submerged in about 3-4cm of water. Bring to a boil over medium-high heat. - Meanwhile, we’ll make our paste. Mix together your ginger/garlic paste, tomato puree, chilli powder, garam masala and a few generous pinches of salt until fully combined. - Back to the dal — once the dal is at a boil, stir and continue stirring constantly. Add the butter and spice mix, then cook at a boil for 30 minutes. - After 30(ish) mins has passed, reduce to a simmer and let it simmer for 1 hour 30 min. - Add cream/yogurt, mix in and let it simmer for another 15 minutes. - Serve hot with rice or chapati. Soak the whole black gram and Rajma in 6-8 cups of water overnight separately in two different bowls. 2. In a kadhai boil water, add black dal and rajma, bring to a boil and drain. Refresh in cold water. 3. In same kadhai add water allow it to boil , add the strained dal rajma mixture , turmeric , ginger julienne , green chilli slits , salt and allow it to boil and cook for 1 hour 30 mins on a slow flame . 4. Initial 10 mins keep it on high flame , then cook it on a low flame until dal goes soft , cover with a lid . 5. In a deep bottom kadhai , add oil , Nutrilite Probiotic Butter , Shahi jeera , garlic and sauté it nice lt for 1 min . 6. Now add tomato puree into it and saute it well for around 5 mins . 7. Add dal mixture and allow it to cook on a slow flame . 8. Meanwhile in a small bowl , add kashmiri red chilli powder , water , make a nice slurry , add it into the dal mixture . stir well . 9. Now add a slab of Nutrilite Probiotic Butter , stir well , mash the dal mixture using wooden masher . 10. Now add salt , cover with a lid and cook it for 1 hour , stir occasionally to avoid sticking in bottom . 11. After 1 hour of cooking , add fresh cream , give a nice stir . 12. Now add kasuri methi mix it well , cover with a lid allow it to cook for 2-3 mins . 13. Transfer the dal into the serving bowl . 14. Sprinkle kasuri methi on top , garnish with fresh cream and cube of Nutrilite Probiotic Butter on top . 15. Serve hot along with parathas , green chilli and onion . Diese indische Linsensuppe ist einfach wie geschaffen für die kalte Jahreszeit. Dal Makhani übersetzt sich wortwörtlich zu Butterlinsen. Es ist also zugegeben nicht das kalorienärmste Gericht aus Indien, aber eine reichhaltige Mahlzeit mit viel Protein, die hervorragend zum Winter passt. Das Dal Rezept ist sehr einfach in der Zubereitung und schmeckt durch seine leckere Gewürzmischung würzig und wärmend. Wir haben euch sämtliche Zutaten auch unten verlinkt, falls ihr kein indisches oder asiatisches Lebensmittelgeschäft um die Ecke habt. Und wie immer gibt es auch einen kleinen Ausflug in die Geschichte Indiens und die Entstehung dieses Rezepts. Oh, und wenn euch die Servierschale gefällt, findet ihr sie hier: 🤍 Zutaten: 200g Urad Linsen (trocken) (🤍 50g Adzukibohnen (trocken) oder kleine weisse Bohnen (🤍 45g Butter (Für Veganer Albaöl: 🤍 30g Knoblauch-Ingwerpaste 1/2TL Kashmiri Chili Powder (🤍 150g Tomatenpassata 1TL Kasuri Methi (🤍 800ml Wasser Etwas Sahne Für das Finishing: 1 gehackte Knoblauchzehe 2EL Öl (Sonnenblumenöl) Gewürze: 1 Zimtstange 1 Schwarze Kardamom (🤍 3 grüne Kardamomkapseln Asafoetida (anstelle von Zwiebeln) (🤍 1TL Kreuzkümmel ½ TL Kurkuma 1TL Korianderpulver (🤍 ½ TL Garam Masala Basic (Hier zum Video: 🤍 Salz Zubereitung: Wascht zunächst eure Linsen waschen und lasst sie über Nacht einweichen. Dadurch werden sie leichter verdaulich. Schüttet das Einweichwasser weg. Bringt nun 800ml Wasser in einem Topf zum Kochen. Gebt eure Linsen dazu und lasst sie schön weich kochen. Im Schnellgarer dauert es ca. 30 Minuten. Tellerlinsen brauchen ca. nur 15 Minuten im Schnellgarer. Sobald die Linsen ausreichend weich sind, stellt sie zur Seite, aber schüttet das Kochwasser nicht weg! Kleiner Tipp: Dal Makhani sollte eine schöne cremige Konsistenz haben, dafür sollten einige Linsen zerfallen sein. Wenn das nach dem Garen immer noch nicht der Fall ist, könnt ihr ganz kurz mit dem Stabmixer ein paar Linsen pürieren und schon wird euer Dal Makhani schön cremig. In einem weiteren Topf erhitzt ihr Butter. Hebt ein kleines Stück Butter für später auf. Veganer können die Butter zum Beispiel mit Alba-Öl ersetzen. Zimtstange, schwarzen Kardamom, grünen Kardamom, Kreuzkümmelsaat und Asafoetida (gibt ein Zwiebelaroma) kommen jetzt in die heiße Butter. Wer kein Asafoetida hat, kann eine klein gehackte Zwiebel in die Butter geben und bräunen lassen. Eine Zwiebel ist aber nicht zwingend notwendig. Das Daal wird auch so schön herzhaft. Danach geben wir die Knoblauch-Ingwerpaste, Kurkuma, Korianderpulver, Kashmiri Chili Pulver und etwas Salz hinzu. Wenn die Gewürze schön angeröstet sind, fügt ihr die Tomatenpassata hinzu. Lasst die Sauce kochen bis sie eindickt und beginnt zu glänzen und von den Seiten wieder Öl hervortritt. Gebt die gekochten Linsen mit der Flüssigkeit in die Masalagrundlage und lasst alles bei geschlossenem Deckel ca. 20 min köcheln. Wer möchte kann ein Knoblauch Finishing herstellen, indem ihr eine Knoblauchzehe kleinhackt und in in Öl anröstet bis sie leicht braun ist. Schaltet nun die Hitze aus und rundet alles mit einer Prise Garam Masala (Basic) ab. Anschließend wird das Finishing auf das Dal Makhani gegeben. Wer diesen Schritt überspringt, sollte trotzdem zum Schluss etwas Garam Masala in das Daal geben. Thank you for watching! 💫 And don’t forget to subscribe here: 🤍 Recipe : Dal Makhani Ingredients: 1cup Blabk Urad Dal ¼ cup Rajma (chitra) 4-5 cups Water 100gms Butter 1tbsp Ginger, finely chopped 1 large Onion, chopped 1 tbsp Garlic, finely chopped Salt to taste 1st Tempering: 50g Butter 1 ½ cup Fresh tomato Puree 1½ tbsp Kashmiri Chilli Powder 1 tbsp Butter ½ tbsp Garlic chopped 1 tsp Kashmiri Red chili powder 2nd Tempering: 2 tbsp Butter 1 tbsp Garlic, finely chopped 1 tsp Kasuri methi ¾ cup Cream Method: Soak the dal & rajma together for at least 3 hours. Scrub the dal well and wash it clean. Add 5 cups water, chopped onion, chopped ginger and boil in a pressure cooker till dal splits and becomes thick (approx.. 6-7 whistles) Roughly chop the tomatoes and puree them. In a pan melt butter and the Kashmiri chili powder, stir and immediately add the tomato puree. Cook the tomatoes till they turn very thick & butter oozes out. Add the cooked tomatoes to the dal. Add salt to taste and more water as required. Cook the dal for at least 30mins. In a separate pan heat remaining butter and add chopped garlic. Brown the garlic and Add kasuri methi. Stir and immediately add it t to the boiling dal. Finish by adding cream to the dal, mix well and remove from heat.
