Foolproof Rasmalai Serves 10-12 Recipe in English: Ingredients: -Doodh (Full cream fresh milk) 1 litre -Zafran (Saffron strands) 1 pinch -Hari elaichi (Green cardamom) 5-6 -Sugar 6 tbs ot to taste -Pista (Pistachios) 1 & ½ tbs -Badam (Almonds) 1 & ½ tbs -Doodh (Full cream fresh milk) 1 & ½ litre -Water ¼ Cup -Lemon juice 3-4 tbs -Cornflour 2 tsp -Sugar 1 Cup -Water 1 litre Directions: Prepare Saffron Milk: -In a pot,add milk and bring it to boil,add saffron strands,green cardamom,sugar,pistachios,almonds and mix well,bring it to boil and cook on low flame until milk is reduced to half (approx. 12-15 minutes) and keep mixing in between. Prepare Rasmalai Balls: -In a pot,add milk and bring it to boil then remove from flame and rest for 5-10 minutes to bring down the temperature. -In water,add lemon juice and mix well. -In milk,add lemon juice & water and mix well and rest until milk curdles completely. -In a bowl,place strainer,muslin cloth and strain the curdle mixture through the strainer to separate whey and rinse with tap water to remove lemon juice completely and squeeze well and hang for 10 minutes. -In a bowl,add strained cheese and mash well for 10 minutes until its smooth. -Add cornflour,mix well and knead the mixture until smooth (approx. 5 minutes). -Take a mixture (1 tbs) and make smooth rasmalai balls with no cracks then flatten the balls on your palm (makes 13-14). Prepare Sugar Syrup: -In a wok,add water,sugar,mix well and cook until sugar is dissolved. -In sugar syrup,add rasmalai balls & cook for 3 minutes in sugar syrup,cover & cook for 12-15 minutes or until double in size. -Turn off the flame,add ice cubes and let it rest for 8-10 minutes or until all the ice cubes melt. -In a serving dish,add prepared saffron milk and rasmalai balls. -Garnish with pistachios,almonds and saffron. -Refrigerate for 3-4 hours & serve chilled! Tips: -Do not add lemon juice in boiling milk.Wait for few minutes to reduce the milk temperature. -Knead the cheese curdle for at least 10 minutes to make rasmalai soft. -Note that after a proper kneading,curdle mixture should not stick to your hands or with spoon. -After adding lemon juice when curdles begin to form,do not stir the syrup. -Always prepare sugar syrup in wide wok/pot. Recipe in Urdu: Ajza: -Doodh (Full cream fresh milk) 1 litre -Zafran (Saffron strands) 1 pinch -Hari elaichi (Green cardamom) 5-6 -Sugar 6 tbs ot to taste -Pista (Pistachios) 1 & ½ tbs -Badam (Almonds) 1 & ½ tbs -Doodh (Full cream fresh milk) 1 & ½ litre -Water ¼ Cup -Lemon juice 3-4 tbs -Cornflour 2 tsp -Sugar 1 Cup -Water 1 litre Directions: Prepare Saffron Milk: -Pot mein doodh dal ker ubal lein,zafran,hari elaichi,cheeni,pista aur badam dal ker ache tarhan mix karein aur ubal anay ka bad halki ancch per doodh adha reh janay tak paka lein (approx. 12-15 minutes) and bech bech mein chamcha chalatay rahein. Prepare Rasmalai Balls: -Pot mein doodh dal ker ubal lein aur chulhay sa hata ker 5-10 minutes kliya temperature kum hunay kliya rakh dein. -Pani mein lemon juice dal ker ache tarhan mix karein. -Doodh mein lemon juice & pani dal ker mix karein aur milk curdle hunay tak chor dein. -Bowl mein strainer aur malmal ka kapra rakh dein aur curdle mixture ko strain ker ka whey alag ker lein phir tap water sa ache tarhan dho lein taka lemon juice nikal jaye aur haathon ki madad sa pani ko squeeze ker lein aur 10 minutes kliya hang ker lein. -Bowl mein strained cheese dal ker 10 minutes ya smooth hunay tak ache tarhan mash ker lein. -Cornflour dal ker ache tarhan mix karein aur 5 minutes kliya mixture ko smooth hunay tak ghond lein. -1 tbs mixture lein aur rasmalai balls bana lein (with no cracks) aur haath ki haateli per pheela lein (makes 13-14). Prepare Sugar Syrup: -Karhai mein pani aur cheeni dal ker ache tarhan mix karein aur cheeni ghul janay tak paka lein. -Sheeray mein rasmalai balls dal ker 3 minute kliya paka lein phir dhak ker 12-15 minutes ya size double hunay tak paka lein. -Chulha bund ker dein aur ice cubes dal ker 8-10 minutes ya ice cubes melt hunay tak chor dein. -Serving dish mein tayyar saffron milk aur rasmalai balls dal dein. -Pista,badam aur zafran sa garnish ker lein. -3-4 hours kliya refrigerate ker lein aur thanda serve karein!

Festive season is here & what can be better than an amazing Rasmalai recipe which can be prepared in no time & you will get the best results. These rasmalais turn out super soft, they wouldn’t be dry at all & would soak up all of that milky goodness & they won’t crack at all while cooking. I have worked around a recipe with which you can prepare these rasmalais in a microwave oven & they turn out amazing. Do try the recipe this festive season & let me know in the comments. #YFL #GiftNewBeginnings Full Written Recipe for Rasmalai Prep time: 10-15 minutes Cooking time: 35-40 minutes Serves: 17-18 rasmalai Masala milk Ingredients: • Cheeni (sugar) - 1 cup • Pista (pistachio) - 1/4 cup (slivered) • Badam (almonds) - 1/4 cup (slivered) • Elaichi (cardamom) a pinch • Kesar (saffron) - 10-12 strands • Milk 1 litre Method: • Take a big size microwave safe bowl, add all the ingredients and mix well, cook in the microwave at high power for 15 minutes. Using a big size bowl will prevent the milk form spilling out. You can use nuts of your choice, and adjust the sweetness as per your preference. • Your masala milk for rasmalai is ready. Cool down to room temperature. By the time you can make the chena. Rasmalai Ingredients • Milk 1 litre • Water 1/4th cup + vinegar 2 tbsp • Ice cubes as required • Cornstarch 1 tsp For sugar syrup • Sugar 1 cup • Water 4 cups Method: Set a heavy base wok or a stock pot on medium heat, add the milk and stir in intervals, bring to a boil, once it comes to a boil, switch off the induction or flame and stir to cool down a little bit. In a separate bowl, add vinegar & water, mix well and this mixture gradually to the milk, stir the milk lightly while curdling the milk. Keep adding gradually until the milk solids separates from the whey (green water). As the milk curdles, add ice cubes to stop the further cooking, use a sieve and place a muslin cloth on it, pass the milk solids (chena) through it and you can reserve the whey, rinse the chena with fresh water to remove the sourness. Squeeze the muslin cloth well to remove the excess moisture. You can quickly open the cloth and mix to squeeze it again to remove the excess moisture. But make sure the chena has to be slightly moist or the rasmalai won’t turn soft. Transfer the squeezed chena over a big size thali, start to cream the chena by doing it with the heel of your palms. You need to cream it well to break down the chena granules and until its smooth and creamy in texture. The creaming process needs to be done until your hand becomes greasy that is, the chena will leaves its fat, the texture should be very smooth and creamy. As soon as the chena start to leave the thal, collect the chena with light hands. At this stage you can add cornstarch for binding, am adding 1 tsp cornstarch, adding the cornstarch ensures the rasmalai will turn out to be perfect, you can avoid adding it if you feel your chena has the perfect consistency and won’t spoil when you shape them, it’s advisable to use cornstarch if you’re a beginner and don’t have the practice to make rasmalais. After adding cornstarch mix well, it’ll become a soft dough, you can add more cornstarch if you feel the chena is very moist, make sure not to overdo with the addition of the cornstarch. Once it becomes like a soft dough, the chena is ready to be shaped, cover it with a muslin cloth and make the syrup. For making the sugar syrup, take a big size microwave safe bowl that has a wide opening, add the water and sugar, stir well to dissolve the sugar granules, cook it microwave on high power for 12 minutes or until the chaashni starts to boil. By the time syrup is cooking you can shape the rasmalai tikkis. To shape the tikkis, divide the chena in small marble size roundels, start to shape them in mini size tikkis, by shaping them between your palms, while applying little pressure and doing in a circular motion. You can also shape them in by making perfect small size balls and flatten to make them small size tikkis. Cover the chena tikki with a moist cloth until you shape the entire batch, to avoid the chenas from drying. As soon the chaashni boils, immediately drop in the shaped tikkis and cover it with a cling wrap and prick with a toothpick to make holes, cook the chena in boiling syrup in microwave for 12 minutes on high power. The chena will double in size so make sure you drop in the rasmalai considering the space of the bowl, you're not supposed to over crowd while cooking. After cooking, remove the bowl and keep it covered, let the chena rest in the syrup for 10-12 minutes, allow it to cool down. Once the temperature drops down, squeeze the soft chena gently to remove excess syrup and immediately drop in the prepared rasmalai milk, make sure the milk is at room temperature. Let the rasmalai rest in milk for at least 4 hours to absorb the milk, refrigerate it. Rasmalai is ready, serve it chilled and garnish it with slivered nuts.

Malai Ingredients: Whole milk 3 cup Crushed Almonds 1 tsp Crushed Pistachio 1 tsp Cardamom 1/2 tsp Sweet Condensed milk 1/4 cup Directions: In a large pan, heat milk until it comes to a boil. Keep stirring so milk does not burn at the bottom. Add sweet condensed milk, crushed pistachio, almonds and cardamom powder. Cook at medium heat until milk is reduced to 2 cups. Channa Ingredients: Whole milk 1 litre White Vinegar 1/4 cup Water 1/4 cup Corn starch 1/2 tsp Directions: Boil milk in a large saucepan at medium flame. Keep stirring so milk does not burn at the bottom of the pan. Once the milk comes to a boil, turn off the heat and add vinegar + water (mix vinegar and water) in little amounts until the milk curdles completely, gently stirring. You will see the water turning slightly green as the milk curdles. Drain excess water from channa using a cheese cloth and wash it well under cold water, to remove the acidic vinegar taste. Squeeze the excess water from channa. Let it rest for 15 mins. Knead it well for 10 minutes with corn starch and roll them into small cheese balls. Cover and set it aside. In another pan, add 4 cups of water and 1 cup of sugar. Let it come to a boil at high heat and add the cheese balls. Cover with lid and let it boil for 20 minutes. The cheese balls will double its size. Turn off heat and let it cool down for 10 mins. Once it has cool down, squeeze the water from each cheese ball and place it on your serving bowl. Repeat for all cheese balls. Add warm malai on top of cheese balls and let it rest for couple hours. Garnish with crushed pistachio and almonds. Enjoy! Once it gets thickened switch off the flame and keep aside. Recipe: Take the milk in a bowl and bring to a boil. Once the milk starts to boil, turn off the heat and stir constantly. Take a little vinegar, add a little water in it, put a mixture of vinegar and water in boiling milk and make it curdle. Then strain it and wash well, take a cotton cloth and put paneer in it and tie it tightly for 2 hours. Take the paneer on a plate and mash well. Then add a little flour and knead for 10 minutes.Make some small balls out of it. Put sugar and water in a bowl and mix well. When it starts to boil add the dumplings (rasakullas) and cover and cook for 20 minutes. Switch off and cool completely. Then remove from sugar syrup and put it in a tray. Add rabri and keep aside for 2 hours. Ready to serve. செய்முறை: ரப்ரிக்கு பாலை கொதிக்க வைத்து அனைத்து பொருட்களையும் சேர்க்கவும். கெட்டியானதும் தீயை அணைத்து தனியாக வைக்கவும். செய்முறை: ஒரு பாத்திரத்தில் பாலை எடுத்து கொதிக்க வைக்கவும். பால் கொதிக்க ஆரம்பித்தவுடன், தீயை அணைத்து, தொடர்ந்து கிளறவும். சிறிதளவு வினிகரை எடுத்து, அதில் சிறிது தண்ணீர் சேர்த்து, கொதிக்கும் பாலில் வினிகர் மற்றும் தண்ணீர் கலவையைப் போட்டு, தயிர் ஆக்கவும். பிறகு அதை வடிகட்டி நன்றாகக் கழுவி, ஒரு காட்டன் துணியை எடுத்து அதில் பனீரைப் போட்டு 2 மணி நேரம் கெட்டியாகக் கட்டவும். பனீரை ஒரு தட்டில் எடுத்து நன்றாக மசிக்கவும். பிறகு சிறிது மாவு சேர்த்து 10 நிமிடம் பிசையவும்.அதிலிருந்து சில சிறிய உருண்டைகளை உருவாக்கவும். ஒரு பாத்திரத்தில் சர்க்கரை மற்றும் தண்ணீரை ஊற்றி நன்கு கலக்கவும். கொதிக்க ஆரம்பித்ததும் உருண்டைகளை (ரசகுல்லா) சேர்த்து மூடி வைத்து 20 நிமிடம் வேகவிடவும். அணைத்து முற்றிலும் குளிர்விக்கவும். பிறகு சர்க்கரை பாகில் இருந்து இறக்கி ஒரு தட்டில் வைக்கவும். ரப்ரி சேர்த்து 2 மணி நேரம் ஒதுக்கி வைக்கவும். பரிமாற தயார். Then switch off the flame. Then add 2 tsp vinegar, Stir until it curdles and add cold water. Then pour the muslin cloth and drain the water. Paneer is ready. Take the paneer make into the small dumplings. Heat water in a pan, sugar, milk, boiled it and add lime juice boiled it once. Sugar syrup is ready. Then add rasmalai dumplings boiled it for 10-15 minutes. Then add some cold water. Transfer into the rasmalai on sugar syrup soaked it. Boiled milk in a pan, add sugar, saffron water, cardamom powder mix it well. Cool it once and add rasmalais, badam, pistas mix it and serve it. RASMALAI CAKE Ingredients 10-12 ready-made rasmalai Angoori rasmalai for garnish 1 cup castor sugar ¾ cup oil 1 cup yogurt ½ cup milk 1 tsp screw pine (kewra) water 1 tsp rose water A large pinch of saffron, soaked in ½ tbsp warm water 2 cups refined flour (maida) ½ tsp baking soda 2 tsps baking powder ½ tsp green cardamom powder Layering 2 cups sweetened whipping cream, whipped 10-15 saffron strands, soaked in ½ tbsp water ½ tsp green cardamom powder Method 1. Preheat the oven at 180ºC. 2. Take castor sugar in a large bowl, add oil and beat with an electric beater till the sugar melts. 3. Add yogurt and continue to beat for 1-2 minutes. Pour the milk and mix well. Add screw pine water, rose water and soaked saffron and mix well. 4. Sift the refined flour, baking soda, and baking powder directly into the bowl. Add green cardamom powder, and gently fold till a smooth batter is formed. 5. Divide the batter equally into two greased and lined 7” x 4” round cake tins. Place them in the preheated oven and bake for 25-30 minutes. 6. Bring the cake out of the oven and allow to cool completely. De-mould and trim the top of each cake. Horizontally cut the cakes in half. 7. Take whipped cream in a large bowl, add soaked saffron, green cardamom powder and mix well. 8. Horizontally cut each rasmalai in half. 9. Apply some of the whipped cream mixture on the base of a flat plate. Place one layer of the cake, brush the rasmalai milk evenly over it and add a portion of the whipped cream mixture and spread it evenly. 10. Arrange a few rasmalai halves and apply a little of the whipped cream evenly over it. Place another layer of the cake and repeat the same process. 11. Place the third layer of the cake, apply a little of the whipped cream evenly over it. Evenly cover the cake with a thin layer of the whipped cream from all sides. 12. Keep the cake in the refrigerator for 1-2 hours. 13. Apply some more whipped cream on the sides and the top of the cake. Spread it evenly. 14. Transfer remaining whipped cream mixture into a piping bag fitted with star nozzle. 15. Pipe out rosettes at equidistant on top of the cake, arrange angoori rasmalai over the rosettes. Garnish with saffron strands, dried rose petals and silver warq.
