Here is a recipe that I've been using for years now for my own homemade pizza crust from scratch! Don't be intimidated by making it at home. It's so easy and is the best crust there is! This is the same crust used in my pepperoni pizza video from a few years back. Enjoy! What you'll need: 3/4 cup warm water (about 100*F) 2 Tbsp granulated sugar 1 tsp active dry yeast 1 tsp salt 1 Tbsp olive oil 2 cups all-purpose or plain flour additional oil for greasing In a large bowl, combine water and sugar and sprinkle yeast on top to re-hydrate. Don't use too hot of water or you will kill your yeast. After yeast is a bit foamy, add in salt, 1 Tbsp oil and flour. Mix well until it comes together to form a dough. Knead until smooth and all flour is incorporated and dough is no longer sticky, about 3 minutes. Grease a bowl with another tablespoon of oil, coat dough ball with oil and cover with a damp towel. Let rise in a warm place for 1-2 hours or until doubled in size. To use, grease a pan with more oil, pat dough out using your finger tips to 14"-16" in diameter. Spread with sauce, top with cheese and toppings and bake in a preheated 450*F oven for 12-14 minutes or until crust is golden brown and cheese is melty. Makes (1) 16" pizza. Enjoy!! Pizza is arguably Italy's most famous dish and can now be found all over the world. We're most familiar with takeaway and even frozen pizza but once you've made your very own pizza from scratch, there really is no going back. In this video, Italian chef, Gennaro Contaldo shows you how to make homemade pizza at home - don't worry, you don't need a wood oven to follow this recipe. Here you'll learn how to make, knead and shape the dough before topping with delicious Parma ham and fresh rocket for a simple yet delicious meal! - Ingredients (makes 2 x large pizzas) For the dough 500g strong flour 5g salt 10g fresh yeast 325ml lukewarm water Topping for Margherita 150g tinned chopped tomatoes or tomato passata Salt & pepper 1 x tablespoons extra virgin olive oil & extra for drizzling 1 x tablespoon grated parmesan cheese 1 x ball mozzarella A few fresh basil leaves Topping for Prosciutto & Rocket Extra virgin olive oil for drizzling 1 x ball mozzarella 1 x tablespoon grated parmesan 4 x slices of Parma ham Handful of rocket Juice of ½ lemon Method First make the dough. Dissolve the yeast in the lukewarm water. Combine flour and salt in a large bowl. Gradually add the yeast mixture, mixing well until you obtain a dough. Place dough on a lightly floured work surface and knead for about 10 minutes. Cover with a cloth or cling film and leave to rest in a warm place for at least 30 minutes until the dough has doubled in size. Preheat the oven to 220 degrees centigrade. Take the dough, knock it back, then divide into two pieces, cover each with a cloth and leave to rest in a warm place for a further 30 minutes. Meanwhile prepare the toppings. For the Margherita, place tomatoes or passata in a small bowl, season with salt & pepper and stir in 1 tablespoon of extra virgin olive oil. Roughly chop the mozzarella. Sprinkle some flour onto a clean work surface and with your fingers spread each piece of dough into a roughly round shape with a border, make the dough as thin as you can but be careful not to tear it. Sprinkle some semolina or flour onto 2 large flat baking trays and place the pizza bases on them. Drizzle a little extra virgin olive oil over each base. On one, spread the tomato mixture evenly over, sprinkle with parmesan, scatter a few basil leaves over and top with mozzarella. On the other base, arrange mozzarella and parmesan all over, top with Parma ham. Place both pizzas into the hot oven and bake for 8 – 10 minutes. In the meantime, toss the rocket in a little extra virgin olive oil and lemon juice. Remove the pizzas from the oven, top the Parma ham pizza with rocket and serve immediately. My pizza cravings were strong this weekend so I wanted to see if I could make a good pizza dough in the same time it normally takes me to cook dinner. I also made a 72-hour fermented pizza dough so I could cook them up at the same time and compare. In a jar dissolve the salt and yeast in the water. 2. Then, in a large bowl pour your flour in and create a well in the middle. Pour in the water, yeast and salt mixture and, working from the centre out, start to bring the dough together. Once you have what looks like a shaggy mess, pour this onto a lightly dusted, clean bench and begin to knead until you have a nice smooth consistent dough. 3. Cover your dough and leave somewhere warm to bulk ferment until it has doubled in size. This will take anything from 6 to 10 hours depending on how active your yeast is and how warm the air temperature is. 4. Once it has doubled in size, get it back on the bench and fold in on itself two or three times and make into three even size dough balls. They should all be just over 270g each. 5. Roll each dough ball in on itself, using the back of your hand and the friction of the bench, pull towards yourself so they are nice and tight. Place in an airtight container and in the fridge for 24-72 hours. 6. Remove 1 hour before you need to cook. 1-Hour Dough - 470g type ‘00’ flour - 10g sea salt - 10g dry yeast - 10g caster sugar - 330g warm water 1. Turn your oven on the lowest setting it will go. 2. In a jar dissolve the salt, sugar and yeast in the water. 3. Then, in a large bowl pour your flour in and create a well in the middle, pour in the water, yeast and salt mixture and, working from the centre out, start to bring the dough together. Once you have what looks like a shaggy mess, pour this onto a lightly dusted, clean bench and begin to knead until you have a nice smooth, consistent dough. 4. Turn the oven off. 5. Cover the dough and leave it in the oven warm to bulk ferment until it has doubled in size. This will take anything from 30mins to 1 hour depending on how active your yeast is and how warm the oven temperature is. 6. Once it has doubled in size, get it back on the bench and fold in on itself two or three times and make into three even size dough balls. They should all be just over 270g each. 7. For reference, here's my first pizza video, from a year ago: 🤍 My video about how dough changes as it ages in the fridge: 🤍 My video about pizza stones vs. pizza steels: 🤍 *RECIPE, MAKES FOUR PIZZAS* (NOTE: Quantities here are slightly updated from those shown in the video) For the dough 2 1/4 cups (530 ml) warm water 1 tbsp sugar (12g) sugar 1 tbsp (9g) active dry yeast 2 tbsp (30 ml) olive oil 1 tbsp (18 g) kosher salt 5 cups (600g) bread flour, plus more for working the dough additional oil for greasing the dough cornmeal, semolina flour, or coarse-ground whole wheat flour for dusting For the sauce 1 28 oz (828 ml) can crushed tomatoes (I like Pastene 'Kitchen Ready') 2-4 tbsp (30-60 ml) olive oil 1 tsp (4g) sugar 2 tsp (a fraction of a gram, I don't know) dried oregano For the cheese 24-32 oz (680-910 g) whole-milk, low-moisture mozzarella, freshly grated (6-8 oz / 170-225 g per pizza) grated parmesan for dusting (maybe 10 g per pizza?) Start the dough by combining the water, sugar and yeast in a large bowl and let sit for a few minutes. If the yeast goes foamy, it's alive and you're good to proceed (if it doesn't, it's dead and you need new yeast). Add the olive oil and salt and 5 cups (600g) of bread flour. Mix until just combined, then start kneading. Add just enough additional flour to keep the dough workable (i.e. not too sticky) and kneed until you can stretch some of the dough into a thin sheet without it tearing. (NOTE: You will probably need to add a lot more flour. The quantity I give here is just a base line to get your started.) Divide the dough into four equal balls and put them in four containers (ideally glass) and lightly coat the balls and the interior of their containers with olive oil. Cover, and either rise at room temperature for two hours, or put them in the refrigerator and let them rise for 1-7 days. (I prefer the long, cold rise.) When you want to bake, put a pizza stone or pizza steel into your oven (mine works best on a high rack position but every oven is different) and preheat to your highest possible temperature, ideally convection, for a full hour. For the sauce, simply mix together the ingredients. Liberally dust a pizza peel with cornmeal (or something similar). Take the cold dough out of the fridge and dust it in flour. Stretch to the widest size and shape that will fit on your peel and stone/steel. Top with just enough sauce to lightly coat the surface. Dust the sauce layer with parmesan, then cover with the mozzarella. Transfer the pizza to the stone/steel and bake until the crust is well-browned and the cheese has browned a bit (but, ideally, has not started oozing out an orange grease layer), 6-7 minutes.

Making the dough is the first step in making pizza. All it takes are just four ingredients and you’re well on your way to making better-than-take-out pizza at home. HOMEMADE PIZZA DOUGH MAKES ENOUGH FOR ONE 12 TO 14-INCH PIZZA One 1/4-ounce packet active dry yeast 1 cup warm water (about 110 degrees) Pinch of granulated sugar 1 ½ teaspoons salt 1 ½ tablespoons extra-virgin olive oil, plus more for bowl 2 ½ to 3 cups all-purpose flour, plus more for surface In a glass measuring cup, combine yeast, water, and sugar and stir well to combine. Set aside until foamy, about 5 minutes. Transfer to the bowl of an electric mixer fitted with the dough hook. Add salt, olive oil, and 2 ½ cups flour to yeast mixture, and mix until thoroughly combined, dough pulls away from the sides of the bowl, and forms a ball. Transfer dough to a lightly floured work surface and knead to form a smooth and elastic dough that is not sticky, 5 to 7 minutes, adding more flour as needed. Lightly oil a 2 to 3-quart bowl to coat. Add dough and cover bowl with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour. This is one of the best pizza dough I’ve ever tried. This dough can stay fresh in a fridge for 72 hours. You can make this dough in the evening and bake the next day. Thanks for watching ♥ If you like this video, please subscribe. 🍅 TOMATO PIZZA SAUCE: 🤍 Ingredients: 300g (2 cup + 2 tbsp) – all-purpose flour 1,6g (2/3 tsp) – dry yeast 215g – water 10-13g (3/4 - 1 tbsp) – granulated sugar 5g (1 tsp) – salt 15g (1 tbsp) – vegetable oil *1 cup is 240ml I converted the recipe from gram to cup, but recommend always using grams if you can. All cups are different (US, UK, Australian cup etc.) and gram measuring always gives better result. 🍕About water temperature: 30-35°C (86 - 95°F) is perfect. If you add cold water is not a problem, but maybe your dough needs more time to rise. 🍕I use a basic gas oven and usualy preheat it with a baking sheet inside to 240C at least for 1 hour. This is the perfect pizza dough recipe for your homemade pizza. It is very easy to make with a few simple ingredients. This dough recipe is great for grilled pizza, baked pizza, or pizza on a pizza stone. My favorite Active Dry Yeast is SAF Red Yeast: 🤍 My favorite Bread Flour is this "00" flour: 🤍 If you need a good Pizza Stone, this one is fantastic: 🤍 Canon G30 used to shoot this video: 🤍 Pizza Dough Ingredients: 1 1/2 Cup Warm Water (divided) 2 1/4 tsp Active Dry Yeast (1 packet of yeast) 2 1/4 tsp Sugar 4 Cups Bread Flour 1 tsp Salt 1 tsp Garlic Powder (optional) 1/4 Cup Olive Oil Instructions: To a small bowl, add 1/2 Cup warm water, yeast, and sugar. Stir yeast mixture until well blended and sugar is dissolved. Let yeast bloom for at least 5 minutes. While yeast is blooming, add 4 Cups Bread Flour, Salt, and Garlic Powder to a large mixing bowl. Stir together dry ingredients until blended. Add yeast mixture to flour mixture. Add Olive Oil Add 1 Cup Warm Water Mix everything on slow speed until dough ball is formed (usually 1-2 minutes) Turn mixer up to a higher speed and mix dough for additional 5-8 minutes or until a smooth dough ball is formed. Take dough out of mixing bowl, spray mixing bowl with non-stick olive oil or use real olive oil. Form dough into a tight ball and place into mixing bowl. Coat outside of dough ball with olive oil to prevent a skin from forming on the ball. Cover mixing bowl with a kitchen towel or plastic wrap and let the dough rise until double in size. (usually 1 hour) After dough has doubled in size, punch the dough down, cover it once again and let it rise a 2nd time. After the 2nd rising, your pizza dough is ready to be used to make pizza crust.
