Pizza dough: 2 1/4 cup APF my favorite brand is King Arthur 1/4 oz rapid rise instant yeast 1 1/2 tsp sugar 3/4 tsp salt 1/4 tsp garlic powder 3/4 cup plus 2 tbsp warm water or 1 cup if you feel the dough is still a little dry don’t add more than 1 cup!!!! 3 tbsp olive oil plus extra to pat on dough Mozzarella cheese Pepperonis And of course pizza sauce you can make it homemade, or use your favorite store bought mine is CLASSICO traditional pizza sauce! This recipe can also be adapted for the regular home oven. Instructions for conventional oven: Preheat a pizza stone/steel for 30-40 minutes at the max temperature your oven can reach. Prepare the pizza calzone but don't top it just yet with the tomato sauce and cheese. Then cook the calzone on the pizza stone for about 5 minutes, or until the dough is cooked and has a nice brown color. After the dough is cooked, take the calzone out of the oven, add tomato sauce and mozzarella cheese on top, and return to the oven only 1-2 minutes to let the cheese melt. Preheat the pizza oven at 400C then lower flame to medium. 2. Cover pizza dough with semolina. Spread the dough starting from the outer edges then to the center. 3. Use gravity and lift the dough for the final stretch, making sure the edges are flat. 4. Spread 2-3 tbs of ricotta cheese on one side of the pizza base, but stay away from the edges. Add small pieces of salami and mozzarella cheese. Drizzle with olive oil, add salt & pepper. 5. Fold the pizza dough in half, making sure to seal the edge firmly. 6. This easy homemade calzone is a filling and easy recipe you and your kids will surely enjoy! The filling is packed ham and three types of cheese and only takes 20 minutes to bake! Calzone Dough (Yields: 2 Calzones) 1 1/2 Cups Warm Water (115 Degrees F) 2 Packages Active Dry Yeast (3 Tsp) Pinch of Sugar 2 Teaspoons Salt 4 Cups All-Purpose Flour Plus More, If Necessary 1 1/2 Tablespoons Olive Oil, Plus More for Coating Bowl Parchment Paper 1. Place the warm water in a large liquid measuring cup. Sprinkle the yeast and sugar and mix. Let sit for a few 5 minutes until foamy. 2. Place 3 ½ cups flour in a mixing bowl and attach the dough hook to your mixer. 3. Once the yeast has formed, pour into your mixer and let the dough come together, and let the mixer knead the dough for a few minutes. Slowly add more flour as needed. 4. Once the dough has formed a smooth ball, place on a floured board and knead for a few minutes. 5. Place in a well-oiled bowl, cover, and place in a warm place for 1 hour so that the dough can rise. Preheat oven to 450 degrees. 1. When ready to roll out calzone, take parchment paper and spread olive oil to coat paper. 2. Divide dough in half and place on oiled parchment paper. 3. Begin to roll the dough with a rolling pin or free form with your fingers, into a round shape. 4. Place ingredients in the lower half of the circle. 5. When filled, fold over the other half and crimp/roll the edges of the calzone together. 6. Brush additional olive oil all over the calzone. 7. Add 2 slits on the top of the calzone for release steam. 8. Cook until golden brown. Note: The ingredients inside are very hot. Let cool and eat with caution. - Mushrooms and Spinach Calzone (Filling for 2 Calzones) Olive Oil 1 8-Ounce Package Mushrooms, Sliced 2 Garlic Cloves, minced 1/2 Teaspoon Oregano, dried 4 Cups (Packed) Baby Spinach 1 1/2 Cups Grated Fontina Cheese 1/2 Cup Parmesan Cheese, Grated 1/2 Cup Whole-Milk Ricotta Cheese, drained 1/4 Teaspoon Dried Crushed Red Pepper, Optional 1. Heat oil in a heavy large skillet over medium-high heat. 2. Add mushrooms and sauté until soft, about 5 minutes. If mushrooms become dry, add just enough stock, wine, or water to coat the bottom. Continue to do this as the moisture evaporates and until mushrooms are cooked. 3. Add garlic and oregano; stir for 1 minute. 4. Add spinach; stir just until wilted, about 1 minute. Transfer to a medium bowl. 5. Season with salt and pepper. Calzone assembly (Working on ½ of the dough, leaving 1-inch plain border) 1. Spread ½ ricotta cheese 2. Sprinkle ½ Parmesan 3. Increase speed to high and continue to mix for another 4 minutes or until dough is clearing the bowl. Flip dough out onto work surface and divide into 8 equal pieces (125g each). Round into balls using method shown 🤍1:23. Once rounded into balls, move all 8 pieces into a lightly oiled sheet tray and cover or wrap well to prevent drying. Either refrigerate for 8-48 hours OR leave dough out at room temp for 2 hours. I recommend the 8-48 hour fridge ferment for additional dough flavor. If refrigerating, remove dough from fridge and allow to come to room temp for 1 hour. MARINARA SAUCE (makes sauce for 8 calzones - 4 with sauce inside, and 4 for dipping only) ▪Olive oil ▪½ onion, grated ▪3-4 cloves garlic, minced ▪28oz/795g crushed tomatoes ▪5g or 1tsp salt ▪10g or 2 1/2tsp sugar ▪1g or 1tsp dried basil ▪1g or 1/2tsp dried oregano ▪Pinch Chile flake Blend crushed tomatoes, salt, sugar, basil, oregano, and chile flakes with an immersion blender until smooth. Preheat a sauce pan over medium. Add a long squeeze of olive oil, grated onion, and minced garlic. Stir to combine and fry until onions have softened. Add in tomato mixture and cook heat until sauce begins to bubble. Reduce heat to low and cook to reduce for 15-20min. When done, sauce should be thick enough to hold its shape when you pass a spoon through. FOUR CHEESE CALZONE ▪Nice, fresh ricotta ▪Flaky salt ▪Pepper ▪Fresh mozzarella, sliced thinly (use fior di latte if you can find it) ▪Full fat aged mozzarella, shredded ▪Aged parmesan, grated ▪Egg wash (1 egg whisked with about 10g/2 teas water) ▪Sauce for dipping (recipe above) Flour your work surface and 1 dough ball and pat down to degas. Roll ball out into about a 9”/23cm round. Add 1/2c/100g of ricotta to lower half of dough. Season with a pinch of flaky salt and pepper. Top that with about 2 slices of fresh mozzarella followed by about 1/4c/30g of the shredded aged mozzarella, and a large pinch of parm. Wet your fingertips with water and dab around the edge to moisten the perimeter of the dough. Fold top half of dough over the bottom to enclose cheeses and press around the edges to seal well. Fold edges of dough over to pleat as shown 🤍6:29. Place on a sheet tray lined with parchment and sprinkled with semolina. Snip or cut the top of the calzone twice to allow steam to escape, then brush the top with egg wash. Bake in preheated 55F/288C oven on top of preheated pizza steel for 10 min. PEPPERONI CALZONE ▪Marinara sauce (recipe above) ▪Pepperoni, sliced ▪Pepperoncini’s, chopped ▪Fresh mozzarella, sliced thinly (use fior di latte if you can find it) ▪Full fat aged mozzarella, shredded ▪Aged parmesan, grated ▪Egg wash (1 egg whisked with about 10g/2 teas water) Flour your work surface and 1 dough ball and pat down to degas. Roll ball out into about a 9”/23cm round. Add about 3 large spoons of sauce to bottom half of dough and spread (leaving room around all edges). Add a few pinches of sliced pepperoni followed by 1-2 pinches chopped pepperoncinis. Add 2-3 slices of fresh mozzarella, a large pinch of shredded mozz, and a pinch of parm. 300g pizza dough (head on over to my Instagram 🤍cooking_with_rocco, and DM me if you want the pizza dough recipe 😌) 1/2 pound ricotta, drained 1/4 cup Pecorino Romano 1/4 cup Parmigiana Reggiano Fresh Mozzarella (optional) Few Cracks black pepper, to taste Ahead of making the calzone, place the ricotta in a fine mesh sieve set over a small bowl, cover with plastic wrap, and let the ricotta drain for a minimum of 2 hours (to overnight). Place your pizza steel/stone on the upper third of your oven, and preheat your oven to 500°. Once the oven comes to temp, allow the stone to heat in the oven for 30 minutes. Once the ricotta is drained, mix in pecorino, parm, and black pepper. Taste and adjust seasoning as needed. Transfer the dough to a lightly floured work surface. Use a rolling pin and roll the dough to about 12 inches in diameter. Add the ricotta mixture to half the dough, top with mozzarella (if using), then fold the other half over and pinch the edges to seal the calzone. Using a pizza peel, transfer the calzone to your pizza steel/stone and bake for 25-30 minutes, rotating halfway though cooking. Once done remove the calzone and let it rest for 5 minutes prior to cutting.
